Rapid Freshness Evaluation of Mackerel Scomber japonicus Using Sensor Gas Chromatography System (Sensor Gas Chromatography 시스템을 이용한 고등어(Scomber japonicas)의 신속한 신선도 평가 방법)

  • We developed a method to rapidly evaluate the freshness of fish using a sensor gas chromatography (SGC) system. Mackerel Scomber japonicus was stored at $4^{\circ}C$ for 12 days to create an environment similar to the natural decomposition process. Trimethylamine (TMA) content in mackerel muscle was measured at 3-day intervals using a spectrophotometer. The gas-phase concentration of TMA in whole mackerel was also determined using an SGC system. The muscle TMA content increased over time during storage, as did the gas-phase concentration of TMA. Therefore, this study demonstrated that an SGC system can be used to rapidly measure the gas-phase concentration of TMA in fish during processing.

Analysis on the body size selectivity for multi-species of discarding juvenile fishes in the bottom trawl

  • Discarding juvenile fishes under girth 16 cm nearly equal to inner perimeter of codend mesh size collected by a cover net method in bottom trawl. The body size of the main five species (mackerel, horse mackerel, sea bream, melon seed and black throat seaperch) was measured for their body length, girth, weight, height and width and analyzed size selectivity. Frequency of penetrating fish as retention in a cover net was less than 40% of total number of juvenile discarding fish. The most of body length or girth of five species were significantly different between in the codend and in the cover net. The 50% selection girth in the cover net ranged 8-11 cm were smaller than those in the codend ranged 9-13 cm by the species respectively. The 50% selection body length was significantly related with the ratio of body height (H) by body width (W) both for in the codend or in the cover net while 50% selection girth was not significantly related with H/W. Furthermore 50% selection fish size by fish species between in the codend and in the cover net was not significantly different both in body length or girth. Therefore, the girth selectivity represented possibly as one unique value regarding fish body shape was considered as more useful method for multi-species catch in trawl.

A Comparison of the Biochemical Characteristics of Different Anatomical Regions of Chub (Scomber japonicus) and Blue Mackerel (Scomber australasicus) Muscles (고등어 및 망치고등어육의 부위별 생화학적 특성 비교)

  • Chub and blue mackerels are popular fish resources in Korea, but little is known about each biochemical characters of different anatomical regions. To investigate biochemical characters of chub and blue mackerels, three ordinary muscle regions were identified by their fin position; namely anterior, median, posterior. In addition, red muscle, as a dark muscle, was obtained from beneath the lateral line to compare with ordinary muscles. Proximate and lipid-class compositions did not show any discernible trends in the different anatomical ordinary muscles from mackerel of the same kind, while significant differences between ordinary and red muscles in the same mackerel, or between chub and blue mackerels, were observed. Red muscles from both mackerels had higher levels in lipids with higher neutral lipid class compared with ordinary muscles. The major difference between chub and blue mackerels was the levels of lipids and neural lipid class, indicating that all muscles from chub mackerel showed higher levels of neural lipids compared with those of blue mackerel (P<0.05). Fatty acid compositions showed that the percentage of polyunsaturated fatty acids (PUFA), especially docosahexaenoic acid (DHA, 22:6n-3), in median and posterior was higher compared with anterior muscle from both mackerels. When compared with chub mackerel, blue mackerel showed higher percentage of DHA in all muscle regions. In amino acid analysis, taurine concentration was much higher in the red muscle than in the ordinary muscles. But levels of histamine, glutamic acid, leucine and lysine were higher in the ordinary muscles. Our results indicated that chub mackerel contained more lipids than blue mackerel and that red muscle had higher levels of neural lipid and taurine compared to ordinary muscles.

Effects of Electrolytic Alkali Water Washing on Mackerel (Scomber japonicus) Muscle Protein Heat Gel Rheology (고등어육 단백질 가열겔 물성에 대한 알카리 전해수세수 효과)

  • In this study, the alkiline water washing condition of mackerel(Scomber japonicus) dark meat was investigated to improve processing conditions of red muscle fish meat paste heating gel. Chemical alkaline water(CWM) and electrolytic alkiline water(EWM, pH 12) were used for washing the mackerel raw meat. Washed meats were minced with 2.5% salt and heated at $90^{\circ}C$/15 min to testing texture profile analysis. Moisture of CWM and EWM was increased with both washing times(p<0.05). Crude lipids and protiens were decreased with washing times. Lightness of chemical alkaline water washed mackerel heated paste gel(CWHPG) was higher than electrolytic alkaline water washed mackerel heated paste gel(EWHPG). Redness and yellowness were more decreased than control meats. Jelly strength of CWHPG and EWHPG was not increased more than 2 times wased meat and was increased with protein decrease. Texture profile analysis, max force1 of CWHPG and EWHPG was higher hardeness than the control meat except gel strains. From these results, it could be suggested that electric alkialine water washing is also effective in advance the red meat paste heating gel process of kamaboko industry.

Development of a Time-temperature Indicator for Managing the Distribution Temperature of Frozen Mackerel Scomber japonicus (냉동 고등어(Scomber japonicus)의 유통 온도 관리를 위한 Time-temperature Indicator 개발)

  • We developed a time-temperature indicator (TTI) that rapidly determines whether frozen mackerel Scomber japonicus has thawed during its distribution. Our TTI was made from filter paper capable of absorbing mackerel exudate that was soaked in a 20% citric acid solution at pH 4.0 and then dried. The dried absorbent paper was cut and attached to blue litmus paper with a 2 mm overhang. The fixed litmus paper was covered with a polypropylene film and sealed. The indicator was placed inside a polyvinyl vacuum package containing the mackerel sample. The vacuum-sealed packaged was frozen at $-20^{\circ}C$ for 24 h. After freezing, the color change and time dependence of the indicator were observed at room temperature ($25^{\circ}C$) and demonstrated the utility of this TTI for rapidly determining whether frozen mackerel underwent thawing during distribution.

Frozen Stability of Proteins Recovered from Fish Muscle by Alkaline Processing (알칼리 공정으로 회수한 어육 단백질의 동결 안정성)

  • Frozen stability of proteins recovered from white croaker and jack mackerel have been tested by measuring oxidation of residual lipid, browning, total plate count, and texture of gel during storage at $-20^{\circ}C$. The oxidation of residual lipid in recovered protein from Jack mackerel increased up to 60 days, and then decreased. Both browning values significantly was increased after 90 days. Total plate count was $1.2{\times}10^4\;CPU/g$ for proteins recovered from white croaker and $3.2{\times}10^4\;CPU/g$ for proteins recovered from jack mackerel in 60 days. The breaking force, deformation, and whiteness of gel formed from proteins recovered from white croaker did not change up th 120 days significantly, while proteins recovered from jack mackerel did not form heat-induced gel in 120 day. Frozen storage of the recovered protein was limited to 90 days for white croaker and to 60 days for jack mackerel considering the gelling ability and textural properties.

Availability of Fish Processing By-Procucts Substituted for Frozen Round Fish in Moist Pellet Diets for Flounder, Paralichthys olivaceus (넙치 Moist Pellet용 생사료 대체원으로서 어류가공부산물의 효과)

  • A feeding experiment was carried out to investigate the availability and feasibility of fish processing by-products as a substitute for frozen round fish in moist pellet diets for flounder, Paralichthys olivaceus. A control diet was prepared by incorporating $50{\%}$ frozen horse mackerel and $50{\%}$ commercial binder feed. In test diets the frozen horse mackerel of the control diet was replaced with either tuna scrap, tuna viscera, flatfish offal, deskinned hagfish, or tuna viscera ($20{\%}$) with frozen horse mackerel ($30{\%}$). Eighty flounders, 13.4 g in mean body weight, were stocked in 12 aquaria ($250\;{\ell}$ each) and fed six experimental diets for the first 28-day experiment. For the second 23-day experiment, forty flounders,44.8 g in mean body weight, were stocked and fed the same experimental diets. All treatments were duplicated. There were no significant differences in growth, feed efficiency and nutrient utilization among fish fed experimental diets containing either frozen horse mackerel, deskinned hagfigh, flatfish offal or tuna viscera with frozen horse mackerel. However, the feeding performances of fish fed experimental diets containing tuna scrap or tuna viscera were significantly lower than those of the control diet (P<0.05). There were no significant differences among the treatments on the proximate analysis values of the whole body. However, the crude lipid content of liver of the fish fed the experimental diet containing tuna scrap was significantly lower than that of the others. The results indicate that deskinned hagfish, and flatfish offal could be successfully substituted for frozen fish portion of moist pellet diets for flounder, but tuna viscera could only be partially substituted.

Forecasting common mackerel auction price by artificial neural network in Busan Cooperative Fish Market before introducing TAC system in Korea (인공신경망을 활용한 고등어의 위판가격 변동 예측 -어획량 제한이 없었던 TAC제도 시행 이전의 경우-)

  • Using artificial neural network (ANN) technique, auction prices for common mackerel were forecasted with the daily total sale and auction price data at the Busan Cooperative Fish Market before introducing Total Allowable Catch (TAC) system, when catch data had no limit in Korea. Virtual input data produced from actual data were used to improve the accuracy of prediction and the suitable neural network was induced for the prediction. We tested 35 networks to be retained 10, and found good performance network with regression ratio of 0.904 and determination coefficient of 0.695. There were significant variations between training and verification errors in this network. Ideally, it should require more training cases to avoid over-learning, which leads to improve performance and makes the results more reliable. And the precision of prediction was improved when environmental factors including physical and biological variables were added. This network for prediction of price and catch was considered to be applicable for other fishes.

  • We developed an age-based spawner-recruit model incorporating environmental variables to forecast stock biomass and recruits of pelagic fish in this study. We applied the model to the Tsushima stock of jack mackerel, which is shared by Korea and Japan. The stock biomass of jack mackerel (Trachurus japonicus) around Korean waters ranged from 141 thousand metric tons (mt) and 728 thousand mt and recruits ranged from 27 thousand mt to 283 thousand mt. We hind-casted the stock biomass to evaluate the model performance and robustness for the period of 1987~2009. It was found that the model has been useful to forecast stock biomass and recruits for the period of the lifespan of fish species. The model is also capable of forecasting the long-term period, assuming a certain climatic regime.

Studies on the Development of the Fishing System of Set Net in the Coast of Jeju Island - II. Comparative of Fishing Efficiency of Rectangular Set Net and Pound Net in Fishing Ground - (제주도 연안 정치망 조업시스템 개발에 관한 연구 -II. 조업어장에서의 각망과 낙망의 어획성능 비교-)

  • For the purpose of providing the basic data on the improved fishing gear and the man power saving, which contribute to enhance fishing efficiency of set net in the coast of Jeju Island, this study analyzed the catch of two fishing place for the past 3 years in order to compare the fishing efficiency between rectngular set net and pound net, which have been used for fishing with being attached to the set net fishing place in coast of Jeiu Island, Thereby the result is as follows ; 1. When using pound net, the total amount of catch during 1997 to 1999 was 2 times more than that of when using rectangular set net. 2. When using Pound net, the catch of squid, mackerel, rabbit fish and Yellow tail during 1997 to 1999 was 1.8 times more than that of when using rectangular set net.. 3. In case of rectangular set net, CPUE marked 10.1㎏ with horse amckerel, 20.5㎏ with squid, 18.0㎏ with rabbit fish and 2.2㎏ with Yellow tail, and in case of pound net, CPUE marked 57.5 ㎏ with horse mackerel, 30.0㎏ with squid, 25.0 with rabbit fish and 4.7㎏ with yellow tail, and on the whole CPUE of poind net marked higher. 4. In case of rectangular set net, the catch ratio for fishing operation marked 64% with horse mackerel, 79% with squid, 39% with rabbit fish and 14% with yellow tail, and in case of pound net, the catch ratio fishing operation marked 18% with horse mackerel, 85% with souid 40% with rabbit fish and 14% with yellow tail, and accordingly it showed the result that the catch ratio for fishing operation was higher with the case of rectangular set net, but higher with the case of pound net.
