편의점 도시락의 식단형태별, 가격대별, 편의점 브랜드별 영양성분 함량 평가 (Evaluation of Nutritional Content in Convenience Store Lunchboxes by Meal Type, Price, and Store Brand)

  • Objectives: This study investigated the menu and nutritional contents of convenience store lunchboxes, and evaluated the nutritional content by meal type, price, and store brand. Methods: In September 2019, 93 convenience store lunchboxes from the top five franchise stores were purchased. Relevant information on price, food weight, food ingredients, cooking methods, and nutrition labeling were subsequently collected. Nutritional content was evaluated based on the daily value (DV) and Index of Nutritional Quality (INQ), and energy contribution of carbohydrate, protein, fat, saturated fat and sugar was compared with the recommended range. Results: Most lunchboxes included the food groups; grains/starches, meats/fish/eggs/legumes, and vegetables. However, none provided fruits, and only a few lunchboxes provided milk/milk products. Stir-frying, deep-frying, and pan-frying were the most frequent methods of cooking. The average energy content of the lunchboxes was 736.6 kcal, whereas the average contents of protein, fat and saturated fat were higher than 40% of the DV, and sodium content was 66.8% of the DV. The contents of most nutrients in traditional type lunchboxes were higher, as compared to nutrients in onedish type lunchboxes. Considering pricing of lunchboxes, protein and sodium contents were higher in the higher-priced lunchboxes as compared to lower-priced lunchboxes, but there were no differences in the INQs. The contents of energy, protein, fat, saturated fat, and cholesterol significantly differed by brand. Conclusions: Our results indicate that convenience store lunchboxes contain high levels of protein, fat, saturated fat, and sodium. The nutritional contents differed by meal type, price, and store brand, and higher price did not imply higher nutritional quality. We propose the need to educate consumers to check nutrition labels and purchase appropriate lunchboxes. Manufacturers also need to make efforts to reduce the amounts of fat, saturated fat, and sodium, and not provide protein in excess.

취약계층 아동의 배달도시락에 대한 중요도-만족도 분석 (Importance and Satisfaction Analysis of Delivery Lunchboxes for Children from Low-Income Families in Korea)

  • The purpose of this study was to investigate the quality attributes and importance that affects their satisfaction with respect to lunchboxes amongst children from low-income families in Korea. In case of $1-3^{rd}$-grade elementary school, 57.1% received lunch box through the community child center, while 45.2%, 68.5% and 80.7% of $4-6^{th}$-elementary school, middle school, and high school students received the lunch box from home, respectively. Typically, in 40.2% of all grades, the time to eat the meal was within 1~2 hours of delivery, and 34.0% consumed the lunch within 2~6 hours of delivery. With respect to intake of the contents of lunchboxes, 72.0% of the participants answered that they ate 80% of the lunchboxes delivered and 24.9% only ate 50% of the content of lunchboxes. The largest leftover were vegetables (26.9%), and the reason for leaving food was 'do not like to eat (36.1%)' followed by 'no taste (32.6%)'. Regarding improvements in delivery lunchboxes, elementary school students selected 'taste', while middle school and high school students selected 'variety of menu'. The 'nutrition (3.69 point)' of the lunchboxes was the highest satisfaction and the 'variety of menu (3.34 point)' was the lowest. In all grades, 'nutrition' and 'hygiene' were considered to be important as quality attributes of the delivery lunchboxes, and satisfaction was also high. On the other hand, in the $1-3^{rd}$-grade elementary school, 'variety of menu' and 'amount of side dish' were important but satisfaction was low. The $4-6^{th}$-grade elementary school, middle school and high school students stated that 'taste' and 'variety of menu' were important, but satisfaction was low.

식생활 라이프 스타일에 따른 편의점도시락 이용 현황과 만족도에 관한 연구: 서울, 경기 및 충청지역 성인을 대상으로 (A Study on the Utilization and Satisfaction of Convenience Store Lunchbox by Food-Related Lifestyle: On the Adults in their 20s and older in Seoul, Gyeonggi and Chungcheong Provinces)

  • 본 연구는 편의점 도시락을 이용한 경험이 있는 성인 817명을 대상으로 식생활 라이프 스타일에 따른 편의점 도시락 이용현황과 만족도 차이를 분석하였고 편의점 도시락 시장에 효율적인 메뉴 구성과 개선 방향을 제안하는 기초자료를 제공하고자 하였다. 식생활 라이프 스타일 유형을 군집분석한 결과는 미각추구 집단, 경제추구 집단, 편의추구 집단, 건강추구 집단 등의 4가지 집단으로 군집화되었다. 도시락 이용현황을 살펴보면 도시락 제품 구매가격은 3,500~4,000원이었고, 도시락은 주로 점심 식사용으로, 혼자 먹는 것으로 나타났다. 편의점 도시락에 대한 정보를 얻는 곳으로는 편의점 매장, 인터넷 SNS 순이었다(p<0.05). 도시락은 영양성분을 고려하여 구매하였고(p<0.001) 중요한 영양소는 단백질, 열량, 나트륨이라고 하였다. 도시락의 용기는 위생적이고 청결해야 하며 용기 표면에 제품에 대한 정보를 부착하는 것을 중요하게 생각하고 있었다(p<0.01). 4개의 군집 중 경제추구집단은 도시락의 맛(3.66점)과 양(3.60점)에서 가장 만족도가 높았고(p<0.001), 다음은 가격(3.49점), 열량(3.43점)순이었다(p<0.01). 건강추구 집단은 메뉴의 다양성(3.76점)에서 만족도가 높은 반면 편의추구 집단은 메뉴의 다양성(3.47점)에서 만족도가 낮게 나타났고(p<0.05), 모든 집단에서 도시락 구매의 편리성(p<0.001)과 제품브랜드의 신뢰성, 다양한 할인제공도 만족하는 것으로 나타났다. 그러나 음식의 영양과 조미료의 첨가 여부는 상대적으로 낮은 만족도를 보였다. 도시락의 밥종류로는 백미밥을 선호하였고(p<0.001) 좋아하는 식재료는 육류인 것으로 나타났다(p<0.01). 모든 집단에서 밥과 찬으로 구성된 도시락을 좋아하였고 저염식과 고단백식을 지향하였으나 유의적인 차이는 없었다. 앞으로도 편의점 도시락은 계속 이용할 것이며(p<0.01), 주변인에게 구매의 편리함과, 저렴한 가격, 신선한 재료, 풍부한 영양 등으로 도시락 이용을 추천하겠다고 하였다. 본 연구의 조사결과 모든 집단에서 가장 중요한 요인은 맛으로 나타났으며, 편리성에서 가장 높은 만족도를 보였지만 음식의 영양과 조미료의 첨가 여부는 상대적으로 낮은 만족도를 나타냈다. 따라서 편의점 도시락 시장이 성장하기 위해서는 도시락의 품질개선과 다양한 메뉴 개발 등이 이루어져야 할 것으로 보인다.

진주지역 국민학교 5학년 아동의 도시락에 의한 영양섭취에 관한 조사연구 (Study on Nutritional Contents of Lunchboxes Carried by 5th Grade Students in Jinju)

  • This reseach was undertaken to investigate the nutritional contents of lunchboxes of 5th grade students in the elementary school living in Jinju city. The survey was conducted from July 4 to July 7, 1988. Cereals and side dishes in the lunch box were weighed and nutrients were analyzed from the food composition table. Questionaires were used to determine family background and the food preference. The results were summarized as follows : 1) The average education of mother was 10 years and the average number of children in the family was 2.8. 2) The average food weight of 151 boys was 289g and that of 164 girls was 253g. The average number of side dishes was 1.7. 3) The average nutritional value and the percentage of Recommended Dietary Allowances of boys were calorie 578 Cal, 75%, protein 24.6g, 113%, calcium 128mg, 55%, iron 3.89mg, 78.0 %, vitamin A 807IU, 122 %, thiamin 0.32mg, 81 %, riboflavin 0.26mg, 56 %, niacin 4.07mg, 81 %, ascorbic acid 6.33mg, 38%. 4) The average nutritional value and the percentage of Recommended Diatary Allowances of girls were calorie 547 Cal, 82 %, protein 23.0g, 113 %, calcium 135mg, 58 %, iron 3.37mg, 56 % ,vitamin A 911IU, 137 % , thiamin 0.27m9, 732 % , riboflavin 0.26mg, 64 % , niacin 4.03mg, 93 % , ascorbic acid 7.40mg, 44 % . 5) The calorie ratios of carbohydrate, protein and fat from boys and girls were 75 : 18 : 7 and 76 : 17 : 7, respectively. 6) The favorite food for cereals were plain rice, breads, noodles, rice with beans and the favorite food for side dishes were ham, sausage, beef and chicken.

식생활라이프스타일에 따른 판매 도시락 이용 실태와 만족도에 관한 연구 (A study on the Utilization and Satisfaction of Commercially available Lunchbox by Dietary Lifestyle)

  • Objectives: This study investigated the utilization and satisfaction of lunchbox by considering the dietary lifestyle of the consumer, in order to refine the purchasing behavior of adults with experience in using lunchboxes, and to provide basic data for efficient menu configuration and direction towards improvement. Methods: A total of 600 adults in Seoul and Gyeonggi-do answered a self-administered questionnaire designed to investigate general characteristics, utilization, menu preference, satisfaction, prospection, and improvement of lunchbox, according to the dietary lifestyle. Results: The study subjects were classified into 5 groups: 'taste seeking group', 'safety seeking group', 'health seeking group', 'economic seeking group' and 'convenience seeking group. Considering purchase value of the lunchbox, the 'taste seeking group' had a high utilization rate (35.1%) for prices less than 4,000 won (P < 0.05). Lunchboxes were mainly purchased at the lunchbox store (43.3%) and convenience store (37.7%). The important factor that contributed to purchasing a lunchbox was taste (61.3%), which was highest in the 'taste seeking group' (P < 0.01). The 'health seeking group' showed the highest preference for the low-salt diet lunchbox menu (26.0%) (P < 0.05). The satisfaction of 'health seeking groups' was lowest when considering addition of condiments (2.34%), origin of ingredient (2.59%), and provided calorie (2.81%) (P < 0.05). The overall response indicated future use of the lunchbox (69.6%) (P < 0.01); 35.8% respondents recommended the purchase of lunchbox, where convenience of purchase was the highest factor contributing to recommendation (50.2%) (P < 0.05). Conclusions: Taken together, our results indicate that taste was emphasized in every group purchasing the lunch box. Convenience of purchase was the highest factor contributing to satisfaction, which was relatively low when considering addition of condiments, nutrition and origin of ingredients. We propose that it is necessary to improve the development of various menus for increasing satisfaction by selecting the right ingredients contributing to good health of the consumer.

가정간편식의 영양성분 함량 모니터링 및 평가 (Monitoring and assessment of nutritional content in home meal replacements (HMRs))

  • 본 연구에서는 가정간편식으로 판매되고 있는 편의점도시락 50건과 볶음밥, 스파게티, 떡볶이 등의 즉석조리식품 50건에서 영양성분의 함량을 분석하고 제품의 표시사항과 비교하였다. 그 후 분석 결과를 바탕으로 1일 영양성분 기준치, 한국인 영양소 섭취 기준등과 비교하여 평가하였다. 식단별 영양성분의 함량은 열량, 탄수화물, 나트륨의 경우 볶음밥에서 높았으며 볶음밥의 나트륨 함량은 1,978 mg이었다. 지방, 단백질, 칼륨은 편의점도시락의 정식류에서 높게 나왔으며 당류는 떡볶이가 다른 식단에 비해 높은 수치를 나타내었다. 편의점 도시락의 경우 정식류가 일품음식류에 비해 열량, 단백질, 지방, 당류, 칼륨의 함량이 높은 수치를 나타내었다. 가정간편식 각 제품의 영양표시 대비 분석 함량을 비교한 결과 31%의 제품이 표시기준을 초과하거나 기준 미만이었다. 가정간편식의 영양평가 결과 모든 식단형태에서 나트륨의 %DV가 50% 이상, 볶음밥의 경우 최고 98.9%를 나타내었다. 전체 가정간편식의 나트륨 INQ가 1보다 높았으며 특히 떡볶이에서는 최고 2.6으로 열량 대비 권장량 이상 함유되어 있는 것으로 나타났다. 반면 당류는 전체 가정간편식에서 1 미만으로 나타났다. 에너지적정비율(%)은 탄수화물의 경유 볶음밥(68%), 면류(56%), 떡볶이(100%)에서 상당부분 권장범위 이상에 해당하였다. 단백질의 경우 일품음식류에서 93%가 권장범위 미만이었으며 지방의 경우 떡볶이에서 전부 권장범위 미만이었다. 당류의 경우 대부분 권장범위내에 해당하였으나 면류의 경우 44%가 총 에너지의 10% 이상이었다. 나트륨 칼륨비는 WHO에서 권장한 1을 기준으로 하였을 때 전체 가정간편식에서 1을 초과하였으며 일품음식류, 떡볶이, 볶음밥에서 10 이상으로 나타났다. 연구결과 가정간편식은 열량대비 나트륨이 권장량 이상 함유되어 있으며 식단 형태별로 일부 영양성분에 있어 부족하거나 치중되어 있었다. 이에 영양을 충족시킬 수 있는 식사로 가정간편식을 이용할 수 있도록 소비자와 제조업체 모두의 노력이 필요할 것이다.

장서각 소장 사찬발기를 통한 조선왕실의 사찬음식 연구 - 탄일, 출산, 가례, 상례를 중심으로 - (A Study on Joseon Royal Cuisine through Sachanbalgi of the Jangseogak Archives - Focusing on Royal Birthday, Child birth, Weddings and Funerals-)

  • This study investigated the Sachanbalgi, which record the royal feasts given by the royal family of the Joseon Dynasty of Korea. These records are contained within the Gungjung Balgi, which recorded the types and quantity of items used in royal court ceremonies. The Eumsikbalgi is the general name for the records of food found within this document. Using these Eumsikbalgi, and in particular the Sachanbalgi, this study investigated the food eaten and bestowed by the Joseon royal family. The Sachanbalgi describes four categories or occasions of feasts: royal birthdays, childbirth, royal weddings, and funerals. These records allow us to reconstruct who the attendees were and what the table settings and food were for instances not directly indicated in oral records, books, or other documents. The food at these Sachan (feasts) was diverse, being related to the specific event, and its contents varied based on the position of the person who was receiving the food. Usually, Bab (rice) was not found at a Sachanbalgi, and only on two occasions were meals with Bab observed. Specifically, it was served with Gwaktang (seaweed soup) at a childbirth feast. There were seven kinds of soups and stews that appeared in the Sachanbalgi: Gwaktang, Yeonpo (octopus soup), Japtang (mixed food stew), Chogyetang (chilled chicken soup), Sinseonro (royal hot pot), and Yukjang (beef and soybean paste). Nureumjeok (grilled brochette) and Saengchijeok (pheasant), and Ganjeonyueo (pan-fried cow liver fillet) and Saengseonjeonyueo (pan-fried fish fillet) were eaten. Yangjeonyueo, Haejeon, Tigakjeon (pan-fried kelp) and other dishes, known and unknown, were also recorded. Boiled meat slices appeared at high frequency (40 times) in the records; likewise, 22 kinds of rice cake and traditional sweets were frequently served at feasts. Five kinds of non-alcoholic beverages were provided. Seasonal fruits and nuts, such as fresh pear or fresh chestnut, are thought to have been served following the event. In addition, a variety of dishes including salted dry fish, boiled dish, kimchi, fruit preserved in honey, seasoned vegetables, mustard seeds, fish, porridge, fillet, steamed dishes, stir-fried dishes, vegetable wraps, fruit preserved in sugar, and jellied foods were given to guests, and noodles appear 16 times in the records. Courtiers were given Banhap, Tanghap, Myeonhap, wooden bowls, or lunchboxes. The types of food provided at royal events tracked the season. In addition, considering that for feasts food of the royal household was set out for receptions of guests, cooking instructions for the food in the lunchbox-type feasts followed the cooking instructions used in the royal kitchen at the given time. Previous studies on royal cuisine have dealt mostly with the Jineosang presented to the king, but in the Sachanbalgi, the food given by the royal family to its relatives, retainers, and attendants is recorded. The study of this document is important because it extends the knowledge regarding the food of the royal families of the Joseon Dynasty. The analysis of Sachanbalgi and the results of empirical research conducted to reconstruct the precise nature of that food will improve modern knowledge of royal cuisine.
