Packaging of dairy products: an overview

  • Dairy products, including milk, cheese, cream, yogurt, and butter, constitute excellent sources of essential nutrients such as calcium, proteins, and vitamin D; therefore, nutritionists recommend a constant daily dietary intake of dairy products. Packaging is an important feature that ensures high-quality products are delivered to consumers; different packaging materials and forms are required depending on the products. Packaging forms include pouches for butter, cheese, and milk powder; cartons for liquid, frozen, and coagulated milk; packets for pasteurized liquid milk; bottles for milkshakes and other liquid products; and cups for frozen and coagulated products. The increase in mobile lifestyles among consumers will lead to smaller households and greater preference for convenience, which will promote individual and smaller packaging for dairy products. This article reviews the development of packaging materials and forms, packaging requirements, and future considerations for the packaging of dairy products.

A study on Calcination Characteristics of Powdered Oyster Shell (굴패각 재활용 방안에 관한 기초연구 -굴패각 소성가공특성-)

  • The objective of this study was to investigate the proper conditions of calcination and calcium extraction from powdered oyster shell. The physical characteristics such as particle size distribution, surface morphology, and thermal gravity were examined. The following result were obtained. As the powdered oyster shell was ignited in high temperature of $650^{\circ}C$ to $950^{\circ}C$, the calcination reactions was effectively progressed. The amount of weight loss during calcination would be matched with the generation of carbon dioxide gas. In the calcination of powdered oyster shell, the amount of weight loss increased according to the increased of calcination temperature and the decrease of mean particle size. It was founded that the proper temperature and retention time of calcination was $850^{\circ}C$ and 40 minute. In the extraction of calcium into liquid form using acid addition, the calcination oyster shell was more effective than the non-calcinated shell. The liquid calcium extraction technique using the calcinated oyster shell needed more researches considering cost evaluation.

Study on the Development of Practical Application of Indigo Dyes (실용화를 위한 쪽 염료의 관한 연구)

  • The process of making or cultivating indigo dyes is very cumbersome and complex. The dye extraction and dyeing methods using general plant dye, moth repellent dye, fast acting natural dye, and other dyes are very different. This research investigates the extraction of indigo dye and liquid dye extraction of polygonum(indigo) plants using calcium oxide water. While extracting indigo dye the concentration of purified indigo dye may be controlled by adjusting the pH level. Due to the various uses of dyes the adjustment of surface color must be considered. In regard to the change according to different concentrations of reducing agents, it was found that cotton fabrics and ramie fabrics show the highest color difference at 0.4% and 0.3% respectively. As the reduction temperature increases, the color difference increases as well. The maximum color difference was found to appear at $90^{\circ}C$. Cotton fabrics and ramie fabrics showed 70.55 and 67.01 respectively. The color difference increases as the concentration of dyes increases, but at a concentration of 300%, cotton fabrics was found to show 6.22PB in H value using the Munsell color system, containing purple and blue color. The pH of the polygonum dyes extracted through this experiment were adjusted by adding calcium oxide to the experimental water, without directly adding calcium oxide to the liquid polygonum extract. In a refine state, it was mixed with polygonum extract to extract a more refine and highly concentrated indigo dye. When lye and reducing agents are added to extracted indigo dye and sealed for long-term storage, it can be effective and easily used for dyeing.

Effects of Fruit Surface Spray of Lime Fertilizer on the Mineral Content of Fruit Skin and Quality in 'Campbell Early' Grapes (석회비료 과면살포에 따른 포도 '캠벨얼리' 과피의 무기성분 함량 및 과실 품질에 미치는 영향)

  • The experiment was conducted to evaluate the effect of fruit skin spray of the lime fertilizer in 'Campbell Early' grapes. The T-N, P, K, Ca and Mg of fruit skin and cluster weight, berry weight, cluster length showed no difference between control and lime fertilizer. But soluble solids in fruit was reduced by fruit skin spray of liquid calcium fertilizer extracted from oyster shell after bagging(LCaB). The anthocyanin content of fruit skin was decreased by air-slaked lime(HCa) and LCaB treatment. Also, occurrence of fruit skin bloom was significantly reduced by HCa and oyster shell powder(OS-CaP) treatment. The berry firmness was significantly increased through liquid calcium fertilizer extracted from oyster shell(LCa) and HCa treatment. Conspicuously, berry elasticity was rather decreased by OS-CaP treatment. However, there was no difference of weight loss of fruit among treatments during room temperature storage.

  • Efficient snow-removing work is one of important processes of winter road management. Calcium chloride has been used as a typical deicing agent in Korea. It presents superial performance as snow deicing agents, however it has been known to give serious environmental problem and to deteriorate durability of concrete structure in road by corrosion. The environment-friendly road deicing agents made from the waste material which is liquid phase organic matter that is Ca Mg and reactant of organic acid (nitric acid and propionic acid) have been introduced by number of researchers. They indicated the calcium magnesium salt of organic acids have advantage over the calcium choride in terms of lower production unit cost by resources recycling and can solve environmental problem and durability deterioration of structures. In this study, the deicing performance of calcium magnesium salt of organic acids(CMO) is investigated based on the series of experiments including the test for heat of dissolution, freezing point, ice melting test and ice penetration test.

Elution profiles of metronidazole from calcium sulfate beads

  • Background: Antibiotic beads are used to treat local bacterial infections by delivering high drug concentrations to infected tissue. Objectives: This study examined the elution characteristics of metronidazole from metronidazole-calcium sulfate (MCa) and metronidazole-calcium-potassium sulfate (MCaK) beads over 20 days and the antibacterial efficacy of the beads after storage. Methods: The MCa and MCaK beads were prepared by mixing 250 mg of metronidazole and 10 g of calcium sulfate hemihydrate with water and a 3% potassium sulfate solution, respectively. The beads were placed in phosphate-buffered saline for the elution study. The metronidazole eluents were determined using high-performance liquid chromatography. The microstructures were examined by scanning electron microscopy (SEM), and the antimicrobial activity was evaluated by a microbioassay. Results: For the 20-day study, the total amount of metronidazole released was greater in the MCa beads than in the MCaK beads by 6.61 ± 0.48 mg (89.11% ± 3.04%) and 4.65 ± 0.36 mg (73.11% ± 4.38%), respectively. The amounts of eluted drugs from the MCa and MCaK beads were higher than the minimum inhibitory concentration at 0.5 ㎍/mL against anaerobic bacteria at both 20 days and 14 days. SEM showed that calcium crystals on the outer surface had dissolved after elution, and thinner calcium crystals were prominent in the MCaK beads. The MCa and MCaK beads exhibited antibacterial activity after setting, followed by storage at room temperature or 4℃ for 21 days. Conclusions: The MCa beads could release more drug than the MCaK beads, but all eluted metronidazole amounts were effective in controlling bacterial infections. Both metronidazole beads could be stored at ambient temperature or in a refrigerator.

A study of dental erosion prevention by calcium contents of fermented milk (칼슘함유량에 따른 유산균 발효유의 치아부식증 예방에 대한 연구)

  • Objectives: The present study aimed to evaluate the preventive effects of exposure to liquid fermented milk containing various concentrations of added calcium on dental erosion, and to investigate the optimal concentration of calcium effective in reducing dental erosion. Methods: The present study consisted of a total of 6 experimental groups: a mineral water group, a fermented milk with no added calcium (0%) group, and four fermented milk with various concentrations of added calcium (0.1%, 0.5%, 1%, and 2%) groups. Twelve specimens were immersed for 1, 3, 5 and 10 minutes in each experimental drink and the change in surface microhardness was measured. Additionally, the surface was observed using a scanning electron microscope. Results: The difference in surface microhardness before and after 10 minutes of immersion in the experimental drink was the highest in the Ca 0% group, followed by the Ca 0.1%, 0.5%, 1%, 2% group and the mineral water group, in that order. The groups with a calcium concentration of more than 0.5% showed statistically significant differences in surface microhardness compared to the Ca 0% group. In addition, when the surface morphology of enamel was observed under a scanning electron microscope, the results showed that the highest level of surface damage was observed in the Ca 0% group, followed by the Ca 0.1%, 0.5%, 1%, 2% group, in that order. Conclusions:The present study confirms that a higher calcium concentration in fermented milk is associated with a higher possibility of preventing dental erosion. The addition of 0.5% calcium, which is a relatively low concentration, did not completely prevent dental erosion, but significantly inhibited dental erosion compared to fermented milk without any added calcium. Therefore, it is suggested that consumers should be educated and provided with guidance to consider the calcium content when choosing fermented milk.

Synthesis of scheelite-type nanocolloidal particles by pulsed laser ablation in liquid and their size distribution analysis

  • A novel pulsed laser ablation process in liquid was investigated to prepare scheelite-type ceramic [calcium tungstate ($CaWO_4$) and calcium molybdate ($CaMoO_4$)] nanocolloidal particles. The crystalline phase, particle morphology, particle size distribution, absorbance and optical band-gap were investigated. Stable colloidal suspensions consisting of well-dispersed $CaWO_4$ and $CaMoO_4$ nanoparticles with narrow size distribution could be obtained without any surfactant. Particle tracking analysis using optical microscope combined with image analysis was applied for a fast determination of particle size distribution in the prepared nanocolloidal suspensions. The mean nanoparticle size of $CaWO_4$ and $CaMoO_4$ colloidal nanoparticles were 16 nm and 30 nm, with the standard deviations of 2.1 and 5.2 nm, respectively. The optical absorption edges showed blue-shifted values about 60~70 nm than those of reported in bulk crystals. And also, the estimated optical energy band-gaps of $CaWO_4$ and $CaMoO_4$ colloidal particles were 5.2 and 4.7 eV. The observed band-gap widening and blue-shift of the optical absorbance could be ascribed to the quantum confinement effect due to the very small size of the $CaWO_4$ and $CaMoO_4$ nanocolloidal particles prepared by pulsed laser ablation in liquid.

Selective separation of Strontium in the solution containing Calcium by Supported Liquid Membrane (함침형 액막을 이용한 Calcium 함유 용액으로부터 Strontium의 선택적 분리)

  • In order to separate $Sr^{2+}$ selectively from environmental sample solutions containing $Ca^{2+}$, supported liquid membranes(SLM) were prepared and their characteristics of separation were investigated. The contents of carriers, DC18C6 and DNNS, in SLM affected the permeabilities of metal ions and selectivities of $Sr^{2+}$. The selectivity of $Sr^{2+}$ reached to 93.3% in a SLM with 0.1 M DC18C6 and 25 mM DNNS. When the ratio of $Sr^{2+}$ to $Ca^{2+}$ concentration in the feed solution was in the range of 1/25 to 1/50, the selectivity of $Sr^{2+}$ was greater than 90 %. Therefore, it is considered that the SLM prepared in this study is capable of treating environmental sea-water samples for strontium measurement.

Prevention of Dental Erosion Due to the Use of Calcium and Fluoride When Ingesting Lactic Acid Bacteria Fermented Milk (유산균발효유 섭취 시 칼슘과 불소 사용에 따른 치아부식증 예방효과)

  • The purpose of this study was to determine the incidence of dental erosion according to the type of lactic acid bacteria fermented oil and to identify a method for preventing dental erosion. For the lactic acid bacteria fermented milk, liquid fermented milk, condense-stirred type fermented milk, and condense-drink type fermented milk were used, and bovine tooth specimens used in the experiment were used. As a method to prevent dental erosion, the method of adding calcium to the lactic acid bacteria fermented milk, the method of applying high and low concentrations of fluoride to the teeth before exposure to the lactic acid bacteria fermented milk, and the method of applying these two methods together were measured to measure the preventive effect of dental erosion. As a result of immersing the specimen in the experimental beverage, the surface hardness of liquid fermented milk decreased the most. When comparing the difference in surface hardness before and after prophylaxis care, the Ca 2% group and the NaF 0.05%+Ca 0.5% group showed no significant difference from the negative control group, confirming that it is an effective method for preventing dental erosion. However, considering the change in taste and the stability of ingredients, a method of adding calcium at a low concentration rather than adding a high concentration of calcium is proposed. Therefore, it is recommended to use low-concentration calcium and low-concentration fluoride together to recognize the possibility of dental erosion when ingesting lactic acid bacteria and to prevent dental erosion caused by it.
