  • This study was carried out to investigate the effects of various dietary lipid sources on the growth performance, body composition, and fatty acid profiles of juvenile fancy carp (Cyprinus carpio var. koi). Three replicate groups of fish (initial mean body weight, 15.1±0.18 g) were fed one of five experimental diets containing fish oil (SLO), soybean oil (SO), linseed oil (LO), lard (LA), or a mixture of SLO, SO, and LO (Mix) for 8 weeks. Fish fed the LA diet gained less weight than did fish fed the LO diet. The feed efficiency and protein efficiency ratio of fish fed the LA and Mix diets were lower than those of fish fed the SO and LO diets. The body lipid content of fish fed the SO diet was lower than those of the other groups. Whole-body fatty acid compositions reflected the fatty acid compositions of dietary lipid sources. Fish fed the SO diet had high concentrations of linoleic acid and arachidonic acid, whereas fish fed the LO diet were rich in linolenic acid. Fish fed the SLO diet had significantly higher levels of eicosapentaenoic acid and docosahexaenoic acid compared with fish fed the SO, LO, and LA diets. The results of this study suggest that SO or LO could be used as a replacement for SLO in the diets of juvenile fancy carp without any negative effects on growth and feed utilization when the dietary essential fatty acid requirements are satisfied for juvenile fancy carp.

배소김과 조미김의 지방질 산화 안정성에 대한 저장 조건의 영향 (Effect of Storage Conditions on the Oxidative Stability of Lipid in Roasted and Roasted-Seasoned Laver(Porphyra tenera))

  • 배소김과 조미김의 저장중 지방질 산화의 변질요인을 조사하기 위하여 몇가지 광원, $a_w$, 포장 및 온도의 영향을 시험하였다. 배소김의 주요 지방산 조성은 16 : 0(14.9%) 및 20 : 5(46.4%) 이었다. 배소김과 조미김의 지방질 산화는 형광등 하에서 가장 심하였고 다음이 백열등, 암소저장 순 이었으며, 또한 지방질의 산화는 $a_w$가 증가할수록, 저장온도가 높을수록 급격히 증가하는 경향을 보였고 기체 및 광 차단 효과가 큰 포장지에 포장한 시료일수록 산화가 억제 되었다. 배소김과 조미김의 지방질 산화를 kinetics 측면에서 고찰한 결과 조미김의 지방질 산화가 배소김 보다 약 3배 빨랐으나 chlorophyll 감소량은 배소김이 조미김 보다 약간 많았다.

Optimization of Phototrophic Growth and Lipid Production of a Newly Isolated Microalga, Desmodesmus sp. KAERI-NJ5

  • In this study, a novel microalgal strain, Desmodesmus sp. KAERI-NJ5, was isolated, identified, and evaluated as a candidate for biodiesel feedstock. In a preliminary study, the effects of four general microalgal growth factors, including temperature, pH, light intensity, and concentration of nitrogen source ($KNO_3$), on the microalgal photoautotrophic growth were evaluated. With the exception of light intensity, the growth factors needed to be optimized for the microalgal biomass production. Optimization was done using response surface methodology. The optimal conditions for biomass production were pH 6.54, $27.66^{\circ}C$, and 0.52 g/l $KNO_3$. The biomass production at the optimal conditions was 1.55 g/l, which correlated well with the predicted value of 1.5 g/l. The total lipid and fatty acid methyl ester contents of the cells grown at the optimal conditions were 49% and 21.2% of cell dry weight, respectively. To increase the lipid content of the biomass, microalgae were challenged by nitrogen starvation. Enhancement of total lipid and fatty acid content up to 52.02% and 49%, respectively, were observed. Lipid analysis of the nitrogen-starved cells revealed that C16 and C18 species accounted for 95.9% of the total fatty acids. Among them, palmitic acid (46.17%) and oleic acid (39.43%) dominantly constituted the algal fatty acids. These results suggest Desmodesmus sp. KAERI-NJ5 as a promising feedstock for biodiesel production.

Inhibition of lipid and protein oxidation in raw ground pork by Terminalia arjuna fruit extract during refrigerated storage

  • Objective: Terminalia arjuna plant, specially its leaves, bark, and roots, are widely used in traditional herbal medicine due to presence of bioactive components and being a rich source of natural antioxidants. But its fruit has not been used for any such purposes despite its potential to retard oxidation. Hence, the antioxidant potential of Arjuna fruit extract (AFE) in retarding lipid and protein oxidation of raw ground pork was evaluated during refrigerated storage for 9 days. Methods: The AFEs were prepared using different solvents viz. ethanol (EH), water, ethanol: water (60:40) and methanol:hot water (60:40). The AFEs were analysed for total phenolic content (TPC), 2, 2-diphenyl-1-picrylhydrazyl radical scavenging activity and reducing power. Water extract (WE) and ethanol-water extract (EH-WE) were selected and incorporated at 1.0% into freshly minced pork meat and compared with a synthetic antioxidant, in retarding lipid and protein oxidation during storage. Results: The TPC in AFEs using different solvents ranged from 11.04 to 16.53 mg gallic acid equivalents/g and extracts exhibited appreciable scavenging activity ranging from 50.02% to 58.62%. Arjuna extracts significantly (p<0.05) improved the colour score of meat samples by reducing the formation of metmyoglobin during storage. Both the AFEs (WE and EH-WE) significantly (p<0.05) lowered the thiobarbituric acid reactive substances value, peroxide formation and formation of protein carbonyls in raw pork than control sample during storage. Upon sensory evaluation of all samples, it was found that AFE treatment could prolong the storage period of meat samples, without influencing the colour and odour score, up to 6 days. Conclusion: AFEs used at 1% improved the oxidative stability, colour and odour score and prolonged the refrigerated shelf life of ground pork up 6 days. Therefore, AFE could be explored as an alternative natural antioxidant in retarding lipid and protein oxidation in meat products.

Anti-adipogenic and Pro-osteoblastogenic Activities of Spergularia marina Extract

  • This is an Open Access article distributed under the terms of the Creative Commons Attribution For decades, Spergularia marina, a local food that is popular in South Korea, has been regarded as a nutritious source of amino acids, vitamins, and minerals. While several halophytes are reported to possess distinct bioactivities, S. marina has yet to be promoted as a natural source of bioactives. In this study, the effects of S. marina on the adipogenic differentiation of 3T3-L1 fibroblasts and the osteoblastic differentiation of MC3T3-E1 pre-osteoblasts and C2C12 myoblast cells were evaluated. The anti-adipogenic effect of S. marina was assessed by measuring lipid accumulation and adipogenic differentiation marker expression. S. marina treatment significantly reduced lipid accumulation and notably decreased the gene levels of peroxisome proliferator-activated receptor ${\gamma}$, CCAAT/enhancer-binding protein ${\alpha}$, and sterol regulatory element binding protein 1c. In addition, S. marina enhanced osteoblast differentiation, as indicated by increased alkaline phosphatase activity and increased levels of osteoblastogenesis indicators, namely bone morphogenetic protein-2, osteocalcin, and type I collagen. In conclusion, S. marina could be a source of functional food ingredients that improve osteoporosis and obesity. Further studies, including activity-based fractionation, will elucidate the mechanism of action and active ingredients of S. marina, which would provide researchers with a better understanding of the nutraceutical and therapeutic applications of S. marina.

DHA 함유 지질 추출소재로서 수산부산물의 검색 (Screening of by-products derived from marine food processing for extraction of DHA-contained lipid)

  • 수산부산물을 식품소재와 같이 효율적으로 이용하기 위한 일련의 기초 연구로서 DHA 함유 지질 추출소재로서 붕장어, 칼치의 내장 및 두부, 꽁치, 포클랜드산 및 뉴질랜드산 오징어의 내장 등과 같은 부산물에 대하여 검토하였다. 수산부산물의 건물당 지질함량은 $40.5{\sim}48.0%$이었고, 지질조성은 중성지질이 $92.1{\sim}99.0%$로 추출 소채에 관계없이 거의 대부분을 차지하였다. 중성지질은 트리글리세리드가 $50.0{\sim}69.9%$로 절반 이상을 차지하였고, 유리지방산이 $7.8{\sim}20.3%$, 스테롤류가 $3.5{\sim}13.9%$, 탄화수소가 $4.2{\sim}10.2%$ 및 디글리세리드가 $3.5{\sim}9.3%$를 차지하였으며, 모노글리세리드는 2% 내외 이었다. 수산부산물에서 추출한 총지질의 지방산조성 중 폴리엔산의 조성비는 포클랜드산 및 뉴질랜드산 오징어 내장유가 각각 41.0% 및 38.2%로 어류 부산물유의 $27.7{\sim}33.3%$에 비하여 높았다. DHA조성비는 뉴질랜드산 오징어 내장유가 21.1%로 가장 높았고, 다음으로 포클랜드산 오징어 내장유(16.3%), 갈치 부산물유(13.9%), 붕장어 부산물유(11.7%) 및 꽁치 부산물유(10.7%) 등의 순이었다. 총지질을 구성하는 주요 지방산은 지질 추출 소재인 부산물의 종류에 관계없이 16:0, 18:1n-9, 20:5n-3 및 22:6n-3 등이었다.

  • The effects of Gypsophila saponin, sodium dodecylsulfate (SDS) and Triton X-100 on volume changes and fragility of red blood cells were compared to ginseng saponin to elucidate whether there are any difference in their action on membrane lipid. Cell volume was decreased to about 38% in 1M NaCl and increased to about 20% in 1/10M NaCl. Hematocrit value was decreased by Gypsophila saponin, SDS, and Triton X-100 which caused hemolysis in isotonic NaCl solution. These detergents also inhibited increase of cell volume and accelerated hemolysis in hypotonic solution. However, ginseng saponin did not influence to osmotic volume changes and hemolysis of red blood cells. These results suggest that the disruptive effect of plant saponin on membrane barriers induced by removing membrane lipid is different from their source and ginseng saponin has very low affinity to membrane lipid.

음식물을 통한 어린이와 그들의 어머니에 대한 PCDDs/PCDFs 섭취량 평가 (Estimation of PCDDs/PCDFs Intake for Korean Children and Their Mothers Through Daily Foods)

  • This study was performed to evaluate the congeners of polychlorinated dibenzo-p-dioxins(PCDDS) and polychlorinated dibenzofurans(PCDFs) in Korean foods among children in Korea, in comparison with the findings in their mothers. The PCDDs and PCDFs intakes of 24-h diet duplicates were estimated from the previous Korean reports. In Korean children and their mothers of this study, major sources of lipid intake were plant-based foods(62% for children, 66% for their mothers). The women took 34% of lipid from animal sources, among which meats were leading sources of animal lipids(30%). Fish and shellfish were accounted for 4% in total lipid intake. Daily intake of PCDDs and PCDFs in the children md their mothers were 0.002-3.188 and 0.002-2.717 pg WHO-TEQ/day in animal sources and ND-0.283 and ND-0.296 pg WHO-TEQ/day in plant sources, respectively. PCDDs/PCDFs intake from animal origin was the major exposure source for both children and their mothers in Korea. Among the 17 PCDD/Fs congeners, 2,3,4,7,8-pentachlorodibenzofuran was assumed to be the effective exposure marker for diet intake.

지방산 조성이 다른 식이 지방이 흰쥐 간 미토콘드리아의 지질조성과 Adenine Nucleotide Translocase 활성도에 미치는 영향 (Effects of Different Dietary Oils on Hepatic Mitochnodial Lipid Composition and Adenine Nucleotide Translocase Activity in Rat)

  • This study was done to investigate whether dietary fats differing in their fatty acid compositions change hepatic mitochondrial lipid composition and thereby change adenine nucleotide translocase activity. Male Sprague-Dawley rats were fed 5 different wxperimental diets for 6 weeks, which were different in their fatty acid compositions. The dietary fats were beef tallow(BT), olive oil(OO), corn oil(CO), perilla oil(PO) and sardine oil(SO) as a source of saturated fatty acid, oleic acid, n-6 linoleic acid, n-3 $\alpha$-linolenic acid and n-3 eiocosapentaenoic acid+docosahexaenoic acid respectively. Body weight of PO group was significantly higher than that of either BT or SO group. This increase in body weight of PO group was due to the increase of food intake. Although there was no difference in liver weight, % liver weight per body weight of SO group was significantly higher than BT and OO groups. Analysis of mitochondrial lipid composition showed that dietary oils differing their fatty acid compositions altered mitochondrial fatty acid patterns, especially n-6/n-3 ratio, cholesterol/phospholipid ratio and phopsholipid composition. The n-6/n-3 ratio was highest in CO group but lowest in SO group whereas the ratio of Chol/PL was highest in SO group but lowest in CO group. Such changes in mitochondrial lipids did not lead to a significant alteration in the activities of adenine nucleotide translocase, which is embedded in mitochodrial inner membrane.

향미성 Natto의 섭취가 흰쥐의 지질 대사에 미치는 영향 (Effects of Spice Added Natto Supplementation on the Lipid Metabolism in Rats)

  • The purpose of this study was to investigate the effects of Natto supplementation on lipid metabolism in rats. Male rats were fed on casein(CON group), steamed soybean(SS group), conventional Natto(N-1 group), garlic(2%) added Natto(N-2 group), red pepper oleoresin(0.2%) added Natto(N-3 group) and galic(2%) and red pepper oleoresin(0.2%) added Natto(N-4 group) as a protein source for 4 weeks. Serum and liver cholesterol levels were significantly lower in the experimental groups than in the control group. Especially, dietary N-2, N-3 and N-4, compared with CON, reduced markedly the concentration of serum cholesterol. The concentration of serum HDL-cholesterol was higher markedly in the N-4 group than in the control group. The concentration of serum triglyceride was significantly lower in the N-1, N-2, N-3 and N-4 groups than in the control group. Garlic and red pepper added Natto fed groups(N-2, N-3, N-4) showed more excreion of fecal bile acid when compared with those values of casein fed group. The results indicate that spice added Natto supplementation may have more beneficial roles in lipid metabolism through reduced cholesterol levels and increased fecal bile acid excretion.
