  • 전갱이 회수단백질은 동결저장 기간이 경과함에 따라 잔여지질의 산화생성물도 크게 증가하였으며, 백조기와 전갱이 회수단백질의 갈변도는 저장 90일 이후에 크게 증가하였다. 일반세균의 수는 전갱이 회수단백질이 백조기 회수단백질에 비하여 높았으나, 시판 수리미에서 검출되는 생균수와 거의 일치하였다. 백조기 회수단백질 가열 젤의 파괴강도, 변형 값 및 백색도 값은 저장 120일까지 큰 변화를 보이지 않은 반면, 120일동안 동결저장한 전갱이 회수단백질은 가열 젤을 형성하지 못했다. 가열 젤 형성능과 파괴강도 및 변형 값에 미루어 수산가공을 위한 중간소재로서 백조기와 전갱이 회수단백질의 동결저장 한계는 안정성을 고려할 때 각각 90일과 60일이 적당할 것으로 예측하였다.

Rubber seed oil and flaxseed oil supplementation on serum fatty acid profile, oxidation stability of serum and milk, and immune function of dairy cows

  • Objective: This study was designed to investigate the effect of diet supplementation with rubber seed oil and flaxseed oil on serum fatty acids profile, oxidation stability of serum and milk, and immune function of dairy cows. Methods: Forty-eight mid-lactation Holstein dairy cows were randomly assigned to one of four treatments for 8 wk, including basal diet (CON) or the basal diet supplemented with 4% rubber seed oil (RO), 4% flaxseed oil (FO) or 2% rubber seed oil plus 2% flaxseed oil (RFO) on a dry matter basis. Results: Compared with CON, all the oil groups increased the levels of trans-11 C18:1 (vaccenic acid), cis-9, trans-11 C18:2 (conjugated linoleic acid, CLA) and C18:3 (${\alpha}$-linolenic acid, ALA) in serum. Both the activity of glutathione peroxidase and catalase in serum and milk in oil groups were decreased, which were negatively correlated with the levels of cis-9, trans-11 CLA and ALA. The concentrations of proinflammatory factors (tumor necrosis factor ${\alpha}$ and interferon ${\gamma}$) in serum of oil groups were lower than that from the CON cows. Conclusion: These results indicate that diet supplementation with RO or FO could alter serum fatty acid profile and enhance the immune function of dairy cows. However, the negative effect on milk oxidation stability should be considered when feeding these n-3 polyunsaturated fatty acid-enriched oils in dairy production.

Changes in Quality Characteristics of Pork Patties Containing Antioxidative Fish Skin Peptide or Fish Skin Peptide-loaded Nanoliposomes during Refrigerated Storage

  • Marine fish skin peptides (FSP) have been widely studied due to their antioxidant and antimicrobial properties. We aimed to use a natural antioxidant, FSP, to replacing synthetic preservatives in a pork patty model, which is safer for human body. Moreover, nano-liposome technology can be applied for masking the fishy smell and improving the stability of this peptide. Therefore, in this study, the effects of FSP and FSP-loaded liposomes (FSPL) on pork patty were evaluated through the tests of thiobarbituric acid reactive substances (TBARS), color, cooking loss, texture, volatile basic nitrogen (VBN), and the pH value, during 14 d of refrigerated ($4^{\circ}C$) storage. The results showed that all FSP-treated patties had lower TBARS values than control patties, which indicated an inhibitory effect of FSP on lipid oxidation. This effect in the patties depended on the FSP concentration. However, FSPL-treated patties showed significantly higher and undesirable TBARS values compared to the control, and this effect depended on the FSPL concentration. None of the physicochemical results showed remarkable changes except the pH and VBN values. Therefore, this study provides evidence that FSP has great potential to inhibit the lipid oxidation of pork patties and is capable of maintaining the quality and extending the shelf life. However, it is necessary to study the application of FSP treatments greater than 3% to improve the antioxidant effect on pork patties and search for other coating materials and technology to reduce the drawbacks of FSP.

Effect of acid whey and freeze-dried cranberries on lipid oxidation and fatty acid composition of nitrite-/nitrate-free fermented sausage made from deer meat

  • Objective: This study evaluated the effect of acid whey and freeze-dried cranberries on the physicochemical characteristics, lipid oxidation and fatty acid composition of nitrite-free fermented sausage made from deer meat and pork fat. Antioxidant interactions between acid whey and cranberry compounds were also explored. Methods: Four formulations of fermented venison sausage were prepared: F1 (control), F2 (with 5% liquid acid whey), F3 (with 0.06% of freeze-dried cranberries), and F4 (with 5% liquid acid whey and 0.06% of freeze-dried cranberries). Each sample was analyzed for pH, water activity ($a_w$), heme iron content, 2-thiobarbituric acid reactive substances (TBARS) value and conjugated dienes at the end of the manufacturing process and at 30 and 90 days of refrigerated storage. Fatty acid composition was measured once at the end of the manufacturing process. Results: At the end of ripening, all samples presented statistically different values for a pH range of 4.47 to pH 4.59. The sum of the unsaturated fatty acids was higher, while the conjugated diene and the TBARS values were lower in sausages with freeze-dried cranberries as compared to the control sausage. The highest content of heme iron (21.52 mg/kg) at day 90 was found in the sausage formulation with the addition of freeze-dried cranberries, which suggests that the addition of cranberries stabilized the porphyrin ring of the heme molecule during storage and thereby reduced the release of iron. The use of liquid acid whey in combination with cranberries appears to not be justified in view of the oxidative stability of the obtained products. Antioxidant Properties of Lotus Leaf (Nelumbo nucifera) Powder and Barley Leaf (Hordeum vulgare) Powder in Raw Minced Pork during Chilled Storage

  • The effects of additions of lotus leaf (0.1 and 0.5%) and barley leaf powder (0.1 and 0.5%) on the lipid oxidation and microbiological analysis of raw minced pork were investigated after 1, 4, 7, and 10 d at chilled storage. Days of storage caused (p<0.05) decreases in pH values in samples with lotus leaf (LP) and barley leaf powder (BP). $L^*$ and $a^*$ values decreased, and $b^*$ values increased in the treatments with increasing lotus leaf and barley leaf powder contents, respectively. The decrease in $a^*$ values was lowest (p<0.05) in the treatment with 0.1% BP. Thiobarbituric acid reaction substance values and free fatty acids in 0.5% LP were lowest (p<0.05) on day 10. Thus, the addition of lotus leaf powder significantly improved lipid oxidative stability in the raw minced pork during chilled storage of 10 d. Furthermore, the raw minced pork treatments with LP and BP presented low peroxide values and total microbes as compared to control (-) (without LP and BP). These results indicate that LP and BP can be incorporated into raw minced pork as natural additives to retard oxidation.

쌀 도정시 분리되는 쌀눈의 일반성분과 저장 중 유지 안정성 (Chemical Composition of the Rice Germ from Rice Milling and its Oil Stability during Storage)

  • 쌀 도정시 분리되는 쌀눈은 영양학적 가치로보아 식품자원으로 활용할 수 있어 이에 필요한 기초 자료로 쌀눈의 일반성분과 함께 저장 중 문제가 될 수 있는 유지의 변화를 처리방법별, 저장온도별로 관찰 하였다. 쌀눈의 주성분은 당질 36.5%, 조지방 21.6%, 조단백질 18.7%였고 열풍$(80^{\circ}C)$으로 6 시간 건조한 쌀눈과 처리하지 않은 (비처리) 쌀눈을 $60^{\circ}C$에 저장하면서 산가를 비교한 결과, 비처리 쌀눈 중 유지의 산가가 2배 상승하는데 소요되는 기간이 약 2일 이었으나, 건조쌀눈의 겨우 31 일 경과 후에도 1.15배에 그쳐 안정화 되었고, 이때 추출된 유지의 산패유도기간은 처리별로 큰 차이를 보이지 않았다.

Investigation of muscle-specific beef color stability at different ultimate pHs

  • Objective: This study was aimed to investigate the muscle-specific beef color stability at normal and high ultimate pHs. Methods: The impact of muscle (Longissimus lumborum [LL] vs psoas major [PM]) and pH (normal ultimate pH [Np] vs high pH dark cutting beef [Hp]) on color stability, indicated by basic color traits, metmyoglobin reducing activity (MRA) and oxygen consumption (OC), as well as the lipid oxidation, were determined over 7 days of display at 4℃. Results: Hp-LL had the highest pH (6.92), followed by Hp-PM (6.01), Np-PM (5.76), and Np-LL (5.52). Hp-LL had increased (p<0.05) a, chroma and % oxymyoglobin during display. Hp-LL also had the highest metmyoglobin (MMb) reducing activity and OC among all the samples, thus, the greatest color stability, although very dark throughout storage, with lowest values for lightness (L) and yellowness (b). Np-LL also exhibited relatively high color stability, as a result of its lower % MMb and OC and higher MRA than psoas muscle samples. The 0.2 unit difference of the pH between Hp and Np psoas muscle, resulted in the difference of the color intensity, not the color stability. Interestingly, high pH psoas muscle (Hp-PM) did not have better color stability than Np-PM, and in fact had lower color stability than even Np-LL. The similar level of OC and lipid oxidation cannot explain the difference in color stability between Hp-PM and Np-LL. Conclusion: The Hp does not always show better color stability compared with Np beef, which depends on the muscle type. The balance of MRA and OC is important to keep the color in great intensity and stability in the meantime.

마늘맛 조미 김의 산화안전성 및 저장특성 연구 (Oxidation Stability of Lavers Made with Garlic-Salt and Their Characteristics during Storage)

  • 건조된 마늘을 분쇄하고 비율을 달리하여 소금과 혼합하여 마늘 소금을 개발하였고, 배소 시 김에 도포하여 마늘맛 조미 김을 개발하여 1, 6, 12주 동안 저장하면서 품질변화 및 지방산 산화정도를 측정하였다. 저장기간 및 마늘 첨가량에 따른 일반성분의 차이는 나타나지 않았다. 마늘 맛김의 tocopherol 함량을 분석한 결과 저장기간에 따라 ${\alpha}$-tocopherol은 감소하였고 특히 마늘 33% 첨가 시 감소량이 가장 적었다. ${\gamma}$-Tocopherol 함량은 저장기간에 따라 증가하였다. 또한, 지방산 중 linoleic acid 함량이 가장 높게 측정되었으나 저장기간 증가에 따라 큰 차이는 나타나지 않았다. 저장기간에 따른 TBARS 함량 변화는 대조군이 크게 증가한 반면, 마늘 맛김에서는 산화 억제효과가 나타났다. 마늘 파우더 33% 첨가는 12주 후에도 조미 김의 TBARS 생성량을 강하게 억제한 것으로 나타났다. 관능평가 결과 33% 마늘 소금을 첨가한 김이 색과 향 면에서 대조구와 유사하게 나타났다. 따라서 마늘의 첨가비율을 달리하여 제조한 마늘 소금으로 조미 김을 제조한 결과, 소금 대비 33%로 제조한 김이 다른 첨가군에 비교해 성분 및 관능적으로 우수하게 측정되었다.

  • DHA(cis-4,7,10,13,16,19-docosahexaenoic acid)가 첨가된 분유와 보통분유의 저장중 지방의 산화안정성을 thiobarbituric acid법에 의해 살펴보았다. 두 종류의 분유는 지역의 슈퍼마켓에서 구입하여 시료병에 $2{\pm}0.05\;g$씩 넣어 암소와 빛의 존재하에서 저장하였다. DHA가 첨가된 분유 지방 산화는 보통 분유보다 증가되었고 특히 빛의 존재하에서 산화는 더욱 촉진되었다. 빛과 DHA를 포함한 불포화지방산은 분유지방을 산화시킴에 있어 상호 역할을 강화시키고 있었다. DABCO (diazabicyclooctane)를 분유에 첨가하면 빛에 노출된 분유의 지방 산화를 줄였는데 이는 분유에서도 일중항산소에 의한 광산화가 발생함을 암시한다. DABCO에 의한 유지방의 산화 억제 정도는 DHA가 첨가된 분유에서 높게 나타났다.

Changes in physicochemical and microbiological properties of isoflavone-treated dry-cured sausage from sulfur-fed pork during storage

  • This study was performed to investigate the physicochemical and microbiological properties of isoflavone-treated dry cured sausage from sulfur fed pork (0.3%) during storage at $15^{\circ}C$ for 45 days. Groups were divided into three treatments: dry-cured sausages produced with pork fed general diet as the control group (CON), sulfur-fed pork (SUL) and isoflavone-(0.25%) treated sulfur-fed pork (ISO). Moisture content in all groups decreased dramatically from 55-57% to 10-11% during storage, whereas crude protein, crude fat, and ash content increased (P < 0.05). The ISO group showed excellent antioxidant effect compared to CON during storage. Redness and lightness of ISO was higher than that of CON during storage. VBN in the ISO group was significantly lower than that in the CON and SUL treatments during 30 and 45 days of storage (P < 0.05). A total plate count of ISO was significantly lower than that of CON at 45 days (P < 0.05). In this study, adding isoflavone to meat products indicated prevention of lipid oxidation and improved color stability in meat products.
