Impacts of post-mortem ageing prior to freezing on technological and oxidative properties of coarse ground lamb sausage in a model system

  • Objective: The objective of this study was to evaluate the effects of ageing time of lamb loins prior to freezing on technological characteristics and oxidation stability of coarse ground lamb loin sausage using in a model system. Methods: Lamb loins (M. longissimus lumborum, n = 25) were aged at $-1.5^{\circ}C$ for 0, 1, 2, 3, and 8 wk and then frozen for the remaining days (a total of 30 wk). The aged/frozen/thawed lamb loins were ground, and model sausages were formulated with 75% aged/frozen/thawed lamb loin, 25% water, 1.5% sodium chloride (NaCl) and 0.3% sodium tripolyphosphate. The pH and thaw/purge loss of aged/frozen/thawed lamb loins were evaluated, and protein functionality (protein solubility and emulsifying capacity), water-holding capacity and textural properties of model sausages were determined. Cooked model sausages were vacuum-packaged in a plastic bag and displayed under continuous fluorescent natural white light ($3^{\circ}C{\pm}1^{\circ}C$). Colour and lipid oxidation of the cooked model sausages were evaluated on 0 and 21 d of display storage. Results: Ageing prior to freezing had no impact on pH and purge/thaw loss of lamb loins and the colour of cooked sausages (p>0.05) made from the loins. Lamb loins aged for at least 3 wk prior to freezing numerically improved total and myofibrillar protein solubilities (p>0.05) and emulsion activity index (p = 0.009) of meat batter, but decreased cooking loss (p = 0.003) and lipid oxidation (p<0.05) of model sausages. Conclusion: This study suggests that post-mortem ageing of raw meat prior to freezing could improve water-holding capacity and lipid oxidative stability of sausage made from the meat.

Effects of Feeding the Mixture of Linseed and Sunflower Seed Oil on the Lipid Components of Serum in Dietary Hyperlipidemic Rats (아마인유와 해바라기 종자유의 혼합급이가 식이성 고지혈증 흰쥐의 혈청 지질 성분에 미치는 영향)

  • This study was carried out to investigate the effect of the feeding mixture of linseed oil, rich in n-3 PUFA and the sunflower seed oil, rich in n-6 PUFA on the lipid metabolism in the dietary hyperlipidemic rats. After male Sprague-Dawley rats were induced hyperlipidemia by feeding the diet containing lard, butter and cholesterol for 3 weeks, then they were fed with the diet containing lard 3.0 % and butter 12.0% for control, the mixture in different proportion of both linseed oil and sunflower seed oil and antihyperlipidemic drugs for 2 weeks. Analysis of the lipid component of the serum showed following results. Concentration of total cholesterol in serum was significantly lower in the other groups except group 2 (lard 3.0 % + olive oil 12.0%) than in the control group , especially in groups 3 (cholestyramine 2.0%) and 5 (lard 3.0% + linseed oil 12.0%). HDL-C and the ratio of HDL-C to total cholesterol concentration were higher in groups 1, 3, 5 and 9 (lard 3.0% + sunflower seed oil 12.0%) , while the atherosclerotic index was low in groups3, 5. Concentrations of free cholesterol and choesteryl ester in serum were significantly lower in the other groups except group 2 than in the control group, especially lower in grop 5. Concentration of LDL was significantly higher in group 2 while it was remarkably lower in groups 3 and 5, while those of triglyceride in groups in 3 and 4 (lipraroid) were significantly higher than in the control groups. From the data on concentration of total choelsterol , HDL-cholesterol, LDL, phospholipid and triglyceride in serum, the results suggested that the feeding mixed with 3.0% lard and 12.0% linseed oil or 2.0% cholestyramine were most effective for the improvement of the serum lipids.

Effect of Seatangle Oligosaccharide Drink on Serum and Hepatic Lipids in Rats Fed a Hyperlipidemic Diet (해조 올리고당 음료의 고지혈증 유도 쥐에 있어서 혈청 및 간장의 지질 변화에 미치는 영향)

  • In this study, we investigated the effect of seatangle drink and seatangle extract product on weight gain and serum and hepatic lipid composition in rats fed a hyperlipidemic diet. In the dietary hyperlipidemia induced rats, it was observed that serum triglyceride, phospholipid, total lipid, LDL-cholesterol level and atherosclerotic index were higher, while the HDL-cholesterol level was lower when compared to the normal group. Total hepatic lipid and cholesterol content of the dietary hyperlipidemia induced rats was conspicuously decreased by seatangle drink and seatangle extract product treatment. Especially, triglyceride content was decreased to 30% by seatangle drink treatment, and 45% by seatangle extract product treatment.

Effect of Raw Soy Flour(yellow and black) on Serum Glucose and Lipid Concentration in Streptozotocin-induced Diabetic Rats (대두(생콩)급여가 당뇨쥐의 혈당 및 지질농도에 미치는 영향)

  • This study investigated the effect of raw soybean yellow(RSY) and raw soybean black(RSB) on body weights, pancreas weights, serum glucose and lipid concentrations of boty normal and diabetic male rats(Sprague-Dawley, body weight 338.8$\pm$19.2g). For each experimental, some rats were injected with streptozotocin intraperitoneal(i.P.) to induce diabets, and other rats were injected with buffer i.P. as a control group. Body weight gain(BWG) was lower in rats fed both RSY and RSB diet(3.4~5.0g BWG) than in those fed control diet(58.1g BWG). The diabetic rats showed significant decrease of bo요 weight (-50~-67g) compared with the control rats. RSY and RSB feeding resulted in greater pancreatic weight relative to body weight, and diabetic rats fed RSY and RSB had heavier pancreatic weights relative to body weight than control rats. The levels of fasting serum glucose in diabetic rats fed both RSY and RSB decreased by 42 and 31%, respectively, compared with the diabetic control rats, but they increased by 80 and 110% compared with the normal control rats. The concentrations of total lipid, triglyceride, phospholipid and total cholesterol in serum of diabetic rats fed RSB diet were lower than those in control rats, but serum HDL-cholesterol, HDL-cholesterol/total cholesterol ratio were not affected by raw soybeans feeding. Atherogenic index wa lower in diabetic rats fed RSY and RSB diet than those in control rats. The concentrations of total lipid, triglyceride and phospholipid in liver were lower in raw soybean groups than those in control group. The concentrations of cholesterol in liver of groups treated raw soybean were decreased compared with the control group.

  • The effects of mulberry-leaf powder Tofu(MPT) on anthropometric measurements, including bone mineral density(BMD) in the right carpus, biochemical bone turnover markers, serum levels of lipids and macrominerals, were investigated in 30 smoking male adults who lived in Choongnam were given MPT(100 g/day) for 4 weeks. The average ages, number of smoked cigarettes and packyear were 22.38 years, 15.12/day and 3.54 years, respectively. The nutrient contents per 100 g MPT were 86.10 kcal energy, 8.98 g protein, 0.53 mg fiber, 211.33 mg Ca and 1.59 g fat. Anthropometric measurements, including dietary intake using the 24-hours recall method, carpal BMD using DEXA, serum levels of protein, albumin and glucose, lipid profiles (cholesterol, triglyceride, HDL-cholesterol, LDL-cholesterol) with Al(atherosclerosis index), HTR, CRF, LHBt, some biomarkers of BMD(serum alkaline phosphatase activity, osteocalcin, urinary DPD), and serum macrominerals(Ca, Ca/P ratio, Mg) and Pb were analyzed before and after consumption of MPT. After MPT consumption, dietary intakes of plant protein, total Ca and plant Ca increased significantly, but there were no significant differences in anthropometric measurements, BMD with bone metabolism markers, serum levels of protein, albumin or glucose, lipid profiles with AI, HTR, LHR and CRF.

Effects of Dietary Xylooligosaccharides on Lipoprotein Lipase Activity in Epididymal Adipose Tissue and Lipid Composition in Serum of Rats Fed High Fat Diets (Xylooligo당이 고지방식이 흰쥐 부고환 지방조직의 Lipoprotein Lipase 활성과 혈중 지질조성에 미치는 영향)

  • This study was conducted to examine the effects of dietary xylooligosaccharides on lipoprotein lipase (LPL) activitiy in epididymal adipose tissue and lipid composition in serum of rats fed normal or high fat diet. Male Sprague-Dawley male rats weighing 100 $\pm$ 10 g were randomly divided into four groups, two normal diets and two high fat diets containing 1% cholesterol and 10% lard. Two normal diets were classified into a basal diet (normal group) and that with 10% xylooligosaccharide diet (NX group). The high fat diet groups were classified into a HF group without xylooligosaccharides diet and HFX group supplemented with 10% xylooligosacchride diet. Experimental diets were fed ad libitum to the rats for 4 weeks and then they were sacrificed. Body weight, epididymal weight and abdominal weight in HF group were hevier than the those of normal group, but HFX group was significantly reduced compared to HF group. Relative body weight to epididymal weight and relative body weight to abdominal weight in HF group were increased to 50%, 51%, respectively, compared to normal group, but HFX group was reduced 22%, 16%, respectively, compared to HF group. The levels of serum triglyceride, total cholesterol, LDL-cholesterol and atherogenic index in HFX groups were significantly lower than those of HF group, whereas HDL-cholesterol levels were significant increased. Triglyceride contents of epididymal adipose tissue in HF group was increased to 39%, compared to normal group, but HFX group was reduced to 15.8%, compared to HF group. Cholesterol contents of epididymal adipose tissue in HF group was increased 121%, compared to normal group, but HFX group was reduced to 26%, compared to HF group. The activity of LPL in epididymal adipose tissue was increased to 259% in HF group, compared to normal group and HFX group was reduced to 66%, compared to HF group. These result of this study suggested that improved lipid metabolism observed in rats fed xylooligosaccharides may be caused by an alteration of LPL activity in epididymal adipose tissue and lipid composition in serum.

The Association Between Serum Lipid profiles and periodontitis on Convergence (혈청지질분포와 치주질환간의 연관성에 관한 융합연구)

  • The aim of this study was to evaluate the association between Lipid profiles and periodontal diseases in Korea adults. The date from the 2013, 2014 Korean National Health and Nutrition Survey were used, and 8,854 subjects over 30 years were included in the analysis. periodontal disease was assessed using the Community periodontal Index. Study participants with HDL between ${\leq}40mg/dL$(high) were 1.39 times(95% CI=1.16 to 1.66) as likely to have periodontal disease as those with normal levels and those with Triglyceride ${\geq}200mg/dL$(high) were 1.14 times(95% CI=1.02 to 1.27) as likely to have periodontal disease as those with normal levels. positive significant association was observed between serum lipid profiles and periodontal disease; however, further studies need to be conducted to understand the actual relationship between STC levels and periodontitis and to establish causality and directional association.

Effects of a Hypocaloric Diet with or without Strength Training on Intermuscular Adipose Tissue Mass and Serum Lipid Concentrations in Obese Elderly Women (비만 노인 여성에서 저열량식과 근력운동의 병행이 근내지방과 혈중지질에 미치는 영향)

  • The effects of a hypocaloric diet with or without strength training on body fat distribution and serum lipid concentrations in obese elderly women were investigated. Twenty-six healthy women (age 66±4.6 yr; body mass index 32.3±2.9 kg/m2) were randomly assigned to 3 groups: control (C; n=8), hypocaloric diet (DO; n=9) or hypocaloric diet with strength training (DST; n=9). Subcutaneous adipose tissue (SAT), visceral adipose tissue (VAT), and inter and intra muscular adipose tissue (IMAT) were measured using magnetic resonance imaging. Serum lipid concentrations including total cholesterol (TC), high density lipoprotein cholesterol (HDLC), low density lipoprotein cholesterol (LDLC), and triglycerides (TG) were measured. No significant changes occurred in body weight and percent body fat in the C group over the 16-week period. The DO and DST groups lost similar amounts of weight and fat after 16 weeks. SAT and VAT decreased after weight loss in the DO and DST groups but not in the C group. IMAT was significantly reduced in the DO and DST groups, whereas in the C group IMAT increased. The loss in IMAT mass was similar in the DO and DST groups. TC and LDLC decreased in the DO and DST groups but not in the C group. There were no differences between the DO and DST groups in decrease in TC and LDLC. HDLC decreased in the DO group but not in the C and DST groups. TG tended to decrease in the DST group. In conclusion, body fat distribution including SAT, VAT, and IMAT and serum lipid concentratons were modulated by weight loss resulting from the hypocaloric diet with or without strength training in obese elderly women. Strength training did not enhance the improvement in body fat distribution and serum TC and LDLC concentrations by the hypocaloric diet.

Induction of Heat Shock Protein 70 Inhibits Tumor Necrosis $Factor{\alpha}-induced$ Lipid Peroxidation in Rat Mesangial Cells (Heat Shock Protein 70이 흰쥐 배양 혈관간 세포에서 관찰되는 $TNF{\alpha}$에 의한 지질과산화에 미치는 보호 효과)

  • Monocyte/macrophage infiltration is the well known initial features associated with the development of glomerular disease including non-immune mediated nephropathy. Tumor necrosis factor ${\alpha}(TNF{\alpha})$, a cytokine produced primarily by monocyte/macrophage, exhibits similar effects as observed at the initial stages and during the progression of glomerular injury. Because the mesangial cells are target cells for glomerular injury, the present study examined the effect of $TNF{\alpha}$ on glomerular mesangial cell membrane lipid peroxidation as an index of cytotoxicity attributing to $TNF{\alpha}$. Primary culture of rat mesangial cell was established by incubation of glomeruli isolated from male Sprague-Dawley rat kidneys utilizing a standard sieving method. The levels of lipid peroxides in the mesangial cells were quantitated by malondialdehyde- thiobarbituric acid adduct formation. During an 8 hour incubation at $37^{\circ}C$, $TNF{\alpha}$ at 10 to 10,000 units/ml increased the levels of lipid peroxides dose dependently. Western blot analysis demonstrated that a short thermal stress induced heat shock response and the synthesis of heat shock protein 70(hsp70) in this mesangial cells. Further, this induction of hsp 70 prevented increase of lipid peroxides in the mesangial cells exposed to $TNF{\alpha}$. These data suggest that $TNF{\alpha}-induced$ lipid peroxidation in the mesangial cells may have pathophysiological relevance to glomerular injury and prior induction of heat shock response may play a role in the cellular resistance against $TNF{\alpha}-induced$ glomerular injury.

Effects of Isoflavone-Rich Bean Sprout on the Lipid Metabolism of the Ethanol-Treated Rats (고 Isoflavone 콩나물이 만성 에탄올 투여 흰쥐의 지질대사에 미치는 영향)

  • The present study evaluated the effects of isoflavone-rich bean sprout on the lipid metabolism in ethanol-treated rats. Fifty male Sprague-Dawley rats were randomly divided into five groups: normal control, alcohol control, low soybean sprout+ethanol (low SS), high soybean sprout+ethanol (high SS) and isoflavone extract+ethanol (IE). They were fed experimental diets based on Lieber-DeCarli liquid diet for 40 days. Body weight, food intake and feed efficiency ratio (FER) of ethanol-treated groups were significantly suppressed compared with that of the normal control group. Among the ethanol-treated groups, high SS group showed in significant increase in the body weight, food intake and FER. Supplementation of isoflavone-rich soybean sprout powder or isoflavone extract significantly decreased plasma triglyceride (TG), total cholesterol (TC), atherogenic index (AI) and increased the ratio of HDL-cholesterol to TC. Supplements also significantly decreased total lipid, TG and TC in liver tissue compared with that of alcohol control. There was a significant decrease in hepatic lipid peroxidation products in IE group compared with other ethanol-treated groups. This results suggest that supplementation of isoflavone-rich bean sprout powder may exert beneficial effects on lipid metabolism in chronically alcohol-treated animals by improving lipid profiles in plasma and liver tissues.
