Mass Production Process for Flour Noodles Containing Perilla Leaves and Their Antioxidant Effects (깻잎 첨가 국수 대량 생산 공정 개발 및 이의 항산화 효과)

  • This study was evaluated mass production processes for flour noodles containing perilla leaf (FNPL) and to examine the antioxidant properties of FNPL. The processes for perilla leaf preparation before dough making were the main focus. The sensory evaluation was used as a tool to determine the optimal conditions for each step in the process. The appearance, taste, flavor, texture and overall acceptability were evaluated using a 9 point scale sensory evaluation. Eight minutes blanching of perilla leaf in boiling water (1:30, w/v) was found to be a suitable time to remove the unpleasant leaf flavor remaining in the final noodle product when fresh perilla leaf was used. The appearance, taste, texture and overall acceptability of FNPL were significantly different from FNPLs prepared with other blanching times. The appearance of FNPL containing 40% (w/v) perilla leaf homogenates was the best. In the dough making process, additional water was not required when 6 portions of 40% perilla leaf homogenate were added to 10 portions of flour, suggesting that the water adding step in the dough preparation process can be skipped. The antioxidant activity of FNPL was expressed as the radical scavenging activity. The DPPH ($IC_{50}$; 0.56 mg/mL), super oxide radical ($IC_{50}$; 9.53 mg/mL) and hydroxy radical scavenging activities ($IC_{50}$; 169.2 ${\mu}g$/mL) of FNPL were increased 19.6 (p<0.001), 1.4 (p<0.01) and 17.8 fold, respectively, compared to those for flour noodle (p<0.001). In conclusion, perilla leaf added to noodles at a final concentration of 19% (w/w) can increase the sensory and antioxidant properties of flour noodles.

Effect of Preparation Methods on Yulmoo Kimchi Fermentation (열무 물김치의 담금방법이 발효숙성에 미치는 영향)

  • Effect of preparation method on Yulmoo kimchi(watery kimchi prepared with Yulmoo, leaf radish) fermentation was investigated by measuring physicochemical, microbiological and sensory properties for 20 days. Yulmoo kimchi was fermented at 4$^{\circ}C$ after keeping at room temperature(27$\pm$0.5$^{\circ}C$) for 8 hours. Four types(A, B, C, D) of Yulmoo kimchi were prepared. Sample A was made without wheat flour paste and red pepper powder and sample B was made with wheat flour paste. Sample C was made with red pepper powder, and sample D was made with wheat flour paste and red pepper powder. pH was slowly lowered and stabled after 10 days in all samples. Total acid content increased in all samples. Reducing sugar content initially increased and decreased thereafter. Especially, reducing sugar content of sample B increased in the early stage of fermentation and maintained initial reducing sugar content after 20 days. Total vitamin C content reduced during fermentation in all samples. Especially initial total vitamin C content of sample D increased more than those of other samples relatiely. Lightness and yellowness showed no difference, but on the other hand redness increased gradually in all samples. The number of lactic acid bactgeria reached maximum value in 10~13 days with the total cell numbers and gradually decreased thereafter in all samples. The number of lactic acid bacteria and total cell number of sample D was much more than those of any other samples. As a result of the sensory evaluation, Yulmoo kimchi showed significant difference in all characteristics. Sample D showed the highest scores in all characteristics before 10 days of fermentation. However, after 10 days sample B showed the highest scores.

Physiological Effects of Lactic Acid Bacteria Treated Condiments on Dolsan Leaf Mustard Kimchi (돌산갓김치 제조를 위한 유산균 처리한 조미료의 생리적 효과)

  • This study evaluated the changes in the pH, acidity, lactobacillus and total bacterial counts, and sensory evaluation of Dolsan leaf mustard Kimchi (DLMK) after incubation for 50 days at 4℃ in the presence of one of three lactic acid bacteria (LAB); Weissella kimchii (W.k.), Leuconostoc gelidum (L.g.), and Leuconostoc mesenteroides (L.m.). The pH ranged from 5.12 to 5.62 and the acidity varied from 0.62% to 3.77% upon the addition of a 2% salt solution to the DLMK prepared using the three LAB. Overall, the LAB counts decreased rapidly from day 10 to day 20 of fermentation, whereas the total bacterial count decreased during the 50 days of fermentation. The pH and acidity in the DLMK ranged from 5.22 to 5.61 and from 0.91% to 4.41%, respectively, in the absence of the 2% salt solution. The LAB count decreased until 20 days and then increased thereafter, whereas the total bacterial count decreased until 20 days and then increased until 50 days. The condiments treated with or without the 2% salt solution showed a gradual decrease in appearance, flavor, salinity, hot taste, and overall acceptability as fermentation time increased. In addition, DPPH radical scavenging activity was high for 2% W. k. and 2% L. m., and ACE inhibitory activity was the highest, at 70.38% in the marinated condiments fermented at 10℃ for 8 days. Thus, this condiment production method may be useful for DLMK and other Kimchi types.

Conjoint Measurement of Tourists' Preferences for Dolsan Leaf Mustard Kimchi(Brassica juncea) across Gender (남녀 관광객의 돌산 갓김치에 대한 선호도에 미치는 영향 요인의 컨조인트 평가)

  • The purpose of this study was to identify tourist product factor combinations which confer the highest utility to tourists and to establish the relative importance of factors in terms of their contribution to total utility across gender. Among 250 questionnaires, 230 questionnaires were utilized for the analysis. $X^2$ analysis, Conjoint model, Max. Utility model, BTL model, Logit model, K-means cluster analysis, and one-way anova analysis were used for this study. The findings from this study were as follows. First, the Pearson's R and Kendall's tau statistics showed that the model fitted the data well across gender. Second, it was found that total respondents and three clusters regarded taste price as the very important factor across gender. Third, it was found that the male and female tourists most preferred product with light red color, shaped package, and highly pungent taste sold at a cheap price in factory. Fourth, it was found that the male tourists most preferred simulation product with light red color, shaped package, and highly pungent taste sold at a cheap price in factory. The female tourists most preferred simulation product with light red color, shaped package, and mild taste sold at a cheap price in factory. Finally, the results of the study provide some insights into the types of effective product designs that can be successfully developed by marketers.

Effect of Lignin Biochar Application on Kimchi Cabbage Cultivation (리그닌 바이오차가 배추 재배에 미치는 효과)

  • This study evaluated the effect of lignin biochar on Kimchi cabbage cultivation in an upland field. Each of the inorganic fertilizers (IF, applied at 32-7.8-19.8 kg/10a=N-P-K), lignin biochar (LBC, applied at 1,000 kg/10a), improved LBC (LBC+N, applied at 1,000 kg/10a), and LBC+IF treatments areas were separated by a control (Cn) treatment area. The fresh weight of Kimchi cabbage increased in the order LBC+N > IF > LBC+IF > Cn > LBC treatments, and the length and width of the leaf were ranged from 20.8-25.7 and 13.7-15.8 cm/plant in all treatments. After Kimchi cabbage harvesting in the LBC+N treatment, soil quality improved bulk density, pH, OM, TN, and Av-P2O5 than those other treatments. In addition, the total N2O flux in LBC+N LBC+N was lower than in IF treatments. Therefore, improved lignin biochar application effectively improves Kimchi cabbage cultivation and can benefit the agricultural environment.

Melanin Bleaching and Melanogenesis Inhibition Effects of Pediococcus acidilactici PMC48 Isolated from Korean Perilla Leaf Kimchi

  • Overproduction and accumulation of melanin in the skin will darken the skin and cause skin disorders. So far, components that can inhibit tyrosinase, a melanin synthase of melanocytes, have been developed and used as ingredients of cosmetics or pharmaceutical products. However, most of existing substances can only inhibit the biosynthesis of melanin while melanin that is already synthesized and deposited is not directly decomposed. Thus, their effects in decreasing melanin concentration in the skin are weak. To overcome the limitation of existing therapeutic agents, we started to develop a substance that could directly biodegrade melanin. We screened traditional fermented food microorganisms for their abilities to direct biodegrade melanin. As a result, we found that a kimchi-derived Pediococcus acidilactici PMC48 had a direct melanin-degrading effect. This PMC48 strain is a new strain, different from P. acidilactici strains reported so far. It not only directly degrades melanin, but also has tyrosinase-inhibiting effect. It has a direct melanin-decomposition effect. It exceeds existing melanin synthesis-inhibiting technology. It is expected to be of high value as a raw material for melanin degradation drugs and cosmetics.

The Study of Applicability to Fixed-field Sensor for Normalized Difference Vegetation Index (NDVI) Monitoring in Cultivation Area

  • The NDVI (Normalized difference vegetation index) is used as indicators of crop growth situation in remote sensing. To measure or validate the NDVI, reliable NDVI sensors have been needed. We tested new fixed-field NDVI sensor, "SRS (Spectral Reflectance Sensor)" developed by Decagon Devices, during Kimchi cabbage growing season at the cultivation area located in Gochang, Gangneung and Taebaek in Korea from 2014 to 2015. The diurnal variation of NDVI measured by SRS (SRS NDVI) showed a slight ${\cap}$-profile shape and was affected by water on the sensor surface. This means that SRS NDVI around noontime is resonable, except rainy day. Comparisons were made between the SRS NDVI and NDVI of used widely mobile sensor (Cropcircle NDVI). The comparisons indicate that SRS NDVI are close to Cropcircle NDVI (R=0.99). SRS NDVI time series displayed change of the plant height and leaf width of Kimchi cabbage. An obvious exponential relationship is found between SRS NDVI and the plant height ($R^2{\geq}0.92$) and leaf width ($R^2{\geq}0.92$) of Kimchi cabbage. Thus, SRS NDVI will be used as indicator of crop growth situation and a very powerful tool for evaluation of remote sensing NDVI estimates and associated corrections.

Isolation of Chlorophyll Derivatives and $\beta$-Carotene from Mustard Leaf and Their Antioxidative Activities on the Lipid Autoxidation (갓에서 Chlorophyll 유도체 및 $\beta$-Carotene의 분리와 이들의 항산화 작용)

  • Chlorophyll a and b, pheophytin a and b and $\beta$-carotene, crude chlorophylls and carotenoids (CCC) extracts of mustard leaf kimchi were isolated by DEAE-sepharose CL-6B and Sepharose CL-6B colume and TLC. The effects of chlorophyll a and b, pheophytin a and b and $\beta$-carotene on linoleic acid autoxidation were examined by the determination of peroxide value and conjugated dienoic acid content. Among them, chlorophyll a showed greater antioxidative activity than others, followed by chlorophyll b, pheophytin a, pheophytin b and $\beta$-carotene. Degradation of pheophytin b was observed to be slower than others and $\beta$-carotene showed highest degradation level during the autoxidation reaction of linoleic acid.

Evaluation of Factors Related to Productivity and Yield Estimation Based on Growth Characteristics and Growing Degree Days in Highland Kimchi Cabbage (고랭지배추 생산성 관련요인 평가 및 생육량과 생육도일에 의한 수량예측)

  • This study was carried out to evaluate growth characteristics of Kimchi cabbage cultivated in various highland areas, and to create a predicting model for the production of highland Kimchi cabbage based on the growth parameters and climatic elements. Regression model for the estimation of head weight was designed with non-destructive measured growth variables (NDGV) such as leaf length (LL), leaf width (LW), head height (HH), head width (HW), and growing degree days (GDD), which was $y=6897.5-3.57{\times}GDD-136{\times}LW+116{\times}PH+155{\times}HH-423{\times}HW+0.28{\times}HH{\times}HW{\times}HW$, ($r^2=0.989$), and was improved by using compensation terms such as the ratio (LW estimated with GDD/measured LW ), leaf growth rate by soil moisture, and relative growth rate of leaf during drought period. In addition, we proposed Excel spreadsheet model for simulation of yield prediction of highland Kimchi cabbage. This Excel spreadsheet was composed four different sheets; growth data sheet measured at famer's field, daily average temperature data sheet for calculating GDD, soil moisture content data sheet for evaluating the soil water effect on leaf growth, and equation sheet for simulating the estimation of production. This Excel spreadsheet model can be practically used for predicting the production of highland Kimchi cabbage, which was calculated by (acreage of cultivation) ${\times}$ (number of plants) ${\times}$ (head weight estimated with growth variables and GDD) ${\times}$ (compensation terms derived relationship of GDD and growth by soil moisture) ${\times}$ (marketable head rate).

  • An Altari radish pre-processing system, which feasible to process automatically such operations as leaf and root tail cutting and root peeling, for kimchi production was accomplished based on the foregone serial studies. In this study, the performances of the developed prototype machine, considered as a commercializing level, were analyzed and evaluated. The prototype machine attached Tiny PLC automatic control system was performed the sequent function as the rate of successful peeling was more than 98% for the Altari radish less than 70 mm diameter of a radish. The operating efficiency of this was 9 see/each, 128 kg/h, and it means as much as $5{\sim}6$ times that of a woman labor's. The sanitation and taste of the mechanized-processed Altari radish kimchi was almost same as that of the handmade. And they were suitable for manufactory of kimchi as the both short term ripening and storing kimchi. Developed machinery with one peeling device and two peeling devices that compared with hand processing, it was analyzed that the break-even yearly working days were 28 days and 19 days, and the break-even yearly processing amount were 28,700 kg, 32,400 kg, respectively.
