토하젓 첨가 갓김치의 숙성 중 관능적 특성 평가 - 전남지역 일부 한국인과 일본인을 대상으로 - (Sensory Evaluations of Characteristics in Toha-Jeot Added Mustard Leaf Kimchi during the Fermentation - By Koreans and Japanese in Jeonnam Province -)

  • The purpose of this study is to investigate the sensory characteristics of Toha-jeot added mustard leaf kimchi by Koreans and Japanese in Jeonnam Province. The sensory evaluation was conducted for the following 9 items such as color, savory taste, carbonated taste, sour taste, hot taste, salty taste, off flavor, texture and overall preference. The test was done by the group of kimchi was tested by Koreans or Japanese with the age from 30 to 50 years, and each group contained 20~25 evaluators. Kimchi at different stages of fermentation day 0, 10 and 18th during fermentation at $4^{\circ}C$ for 4weeks was evaluated. During the fermentation period saltiness of kimchi was 2.25~1.77% and pH of kimchis was decreased from pH 5.6~5.8 to 4.2~4.6. The score for the sour taste, texture and overall preference of Toha-jeot added mustard leaf kimch increased as the fermentation proceeded in Japanese group. The overall preference of Korean and Japanese groups for Toha-jeot added mustard leaf kimchi was higher than that of control mustard leaf kimchi tested at 10th and 18th days fermentation.

김치 모재료 채소의 질산염 함량 분포와 배추 염장처리 및 김치 조리방법에 따른 질산염 함량 변화 (Distribution of Nitrate Content in Vegetables for Kimchi Raw Material and Changes of Nitrate Content by Salting of Chinese Cabbage and by Cooking Process of Kimchi)

  • This study aims to find out the devices to minimize the amount of nitrate ingested from kimchi, the main way of vegetable intake for Koreans, and the basic data to deliver to calculate the total daily intake for Korean, investigating the year-round changes of nitrate content in vegetables for Kimche raw material, and changes of nitrate content by salting of chinese cabbage, and stewed kimchi through the use of different cooking methods. The results obtained were summarized as follow: over between 205-6655mg/kg f.w. in chinese cabbage, 480-3970mg/kg f.w. in chinese radish, 157-5820mg/kg f.w. in lettuce and 29-520mg/kg f.w. in cucumber respectively. Therefore it was strongly adviced to introduce the nitrate limit value of vegetables in Korea if the nitrate content in Kimchi should be reduced to meet the nitrate ADI(Acceptable Daily Intake, 219mg60kg b.w) of FAO.WHO, because the nitrate content in Kimchi reflects the nitrate content in vegetables. In order to keep the low nitrate content in Kimchi. it was adviced to remove the outer leaf which contains 2-3 times higher nitrate content compare to the inner leaf at the time of preparation, i.e. chinese cabbage, before the soaking treatment in salt solution for Kimchi making process. The dehydration by soaking treatment in salt solution occurred at 0.9%~4.7% in leaf midrib and more than 13%~24% in leaf blade. The nitrate content after soaking in salt solution was increased 107%~123% compared with before soaking, increasing rates of nitrate content in the outer and inner leaf midrib were higher than those in leaf blade. The increase of nitrate content in salt solution after soaking due to the dehydration of chinese cabbage by soaking treatment. The Kimchi stew(Kimchi JJige) was processed with and without animal oil, but the amount of nitrate in kimchi stew did not decrease both treatments, but it increased after the processing since the water in Kimchi stew has got low by boiling.

콩잎 밑 콩잎 요리의 이소플라본 함량 및 항산화 관련 성분들의 비교 (Contents of Isoflavones and Antioxidative Related Compounds in Soybean Leaf, Soybean Leaf Jangachi, and Soybean Leaf Kimchi)

  • Soybean is an important plant as it is the source of protein and oil as well as various phytochemicals that are related with biological activity. Over the past decades, scientists have conducted considerable research on the physiological properties of soybeans, especially isoflavones, which are the characteristic components in soybeans. However, there is no research on the properties or the bio-functionality of soybean leaf. Jangachi and kimchi are two of the traditional special dishes of Gyungsang Province in Korea which we made from soybean leaves. Depending on the recipe, green or yellow soybean leaves are used for the preparation of these two side dishes. We compared the antioxidative activity and measured the contents of isoflavones, total phenol, chlorophylls, carotenoids, and vitamin C in the ingredients (green and yellow soybean leaf) and the final side dishes (jangachi and kimchi). We Int report that isoflavones were contained in soybean leaf and that jangachi had the highest isoflavone contents among the samples. Yellow soybean leaf contained higher isoflavones than green soybean lear and kimchi. From the TEAC assay results, the sequence or antioxidative activities was yellow soybean leaf > soybean leaf jangachi > green soybean leaf > soybean leaf kimchi. The sequence was the same with total phenol contents, indicating that antioxidative activity is highly related with total phenol level. Chlorophylls, carotenoids and vitamin C existed abundantly in green soybean leaf. In conclusion, soybean leaf could be a good material for health due to the presence of isoflavones and the other useful antioxidants mentioned above.

버섯 및 다시마 추출물과 갓의 첨가가 김치의 항산화 특성에 미치는 영향 (Effect of Addition of Mushroom and Sea Tangle Extracts and Mustard Leaf on Anti-oxidant Properties of Kimchi)

  • The antioxidant properties of mushroom and sea tangle extracts and mustard leaf added to Kimchi were investigated by total phenolic content, DPPH radical scavenging, ABTS anion scavenging, FRAP reducing power, and ORAC value. Total phenolic content of functional Kimchi (FK) was significantly higher than that of control Kimchi (CK). DPPH radical and ABTS anion scavenging activities of functional Kimchi were significantly higher than those of control Kimchi by 2.7 and 1.7 fold, respectively (p<0.05). Also, the FRAP reducing power and ORAC value of functional Kimchi increased compared to those of the control Kimchi by 1.6 and 1.1 fold, respectively (p<0.05). Our results suggest that functional Kimchi made by mushroom and sea tangle extracts and mustard leaf may be a potent antioxidant source and could be developed as a antioxidant functional food that may be for the effective treatment of oxidant conditions. Through continuous research and development of functional Kimchi by the use of mushroom and sea tangle extracts, it will be necessary to try to identify other functions that could be useful for preventing various diseases.

김치 종류를 달리한 식이가 Hairless Mice의 간과 피부에서 산화억제 및 광산화에 미치는 영향 (Effect of Different Kimchi Diets on Oxidation and Photooxidation in Liver and Skin of Hairless Mice)

  • 김치에는 여러 가지 항산화 물질들이 많이 함유되어 있으므로 김치의 섭취는 생체조직의 노화억제 효과가 있을 것으로 기대된다. 본 연구에서 배추김치, 갓김치, 부추김치를 동결건조하여 항산화물질의 함량을 측정한 결과 갓김치와 부추김치의 클로로필 함량이 가장 높았고 $\beta$-카로텐과 ascorbic acid 함량은 갓김치에서 가장 높았다. Hairless mouse에게 10% 동결건조 김치식이를 공급하여 20주간 사육한 후 간에서 활성산소종의 생성량을 측정한 결과 superoxide anion과hydroxyl radical 함량은 유의적인 차이가 없었고 hydrogen peroxide 함량은 갓김치군과 부추김치군에서 유의적으로 낮게 나타나 이들 김치가 활성산소를 소거하는데 효과가 있는 것으로 나타났다. 간 균질액에서 지질과산화물을 측정한 결과 대조군에 비해 김치섭취군에서 지질과산화가 낮게 나타났으며, 특히 갓김치 와 부추김 치군의 효과가 우수하였다. 피부에서 지질과산화물 함량은 김치섭취군들이 대조군보다 낮게 나타났으며, 부추김치가 유의적으로 지질과산화를 억제하였다. 김치섭취가 광산화에 미치는 영향을 규명하기 위해 간 및 피부조직에 자외선을 조사한 후 조직산화 정도를 측정한 결과 간과 피부의 지질과산화물 함량은 갓김치군과 배추김치군에서 대조군보다 낮아졌으나 부추김치군에서는 높게 나타났다. 즉, 자외선 조사 후 갓김치군과 배추김치군은 대조군보다 광산화가 억제되었으나 부추김치군에서는 산화가 촉진되었다.

청갓과 청갓김치의 용매별 추출물의 항산화성 (Antioxidant Activity of Various Fractions Extracted from Mustard Leaf (Brassica juncea) and Their Kimchi)

  • 동결건조한 청갓과 담금당일 청갓김치, 15$^{\circ}C$에서 5일간 발효시킨 청갓 김치로부터 극성이 다른 용매들을 사용하여 각각의 용매별 추출물을 얻고 methanol(MeOH), hexane(C$_{6}$ $H_{14}$), dichlorometane(C $H_2$Cl$_2$), ethyl acetate(EtOAc), butanol(BuOH), water($H_2O$)의 각각의 용매분획별(DPPH) 1,1-diphenyl-2-picrylhydrazyl assay에 의한 항산화성을 측정하였고 항산화효과를 상호 비교하였다. 청갓과 담금당일 청갓 김치에서 EtOAc와 n-BuOH에서 얻은 분획층이 다른 분획층보다 항상화효과가 높게 나타났으며 15$^{\circ}C$ 5일간 발효시킨 청갓 김치에서는 C $H_2$Cl$_2$와 EtOAc분획층이 다른 분획층에 비하여 radical scavenger효과가 있음을 확인할 수 있었다. 결과의 차이는 다양한 재료에 의한 발효공정에 기인된다고 판단된다.

경남지역 주민의 김치 섭취 실태조사(I) - 김치에 대한 선호도 및 섭취량조사 - (A survey on the actual state in kimchi in Kyung-nam(I) - The study of the preference of kimchi and actual amounts of kimchi intake -)

  • A survey on the preference of kimchi and actual amounts of kimchi intake conducted from july to october 1999 to get basic information needed for the augmentation of kimchi intake. Total 1,241 of women and men aged $10{\sim}60$ in kyung-nam area participated in this survey. Except people aged $20{\sim}30$, all of subjects, especially in people aged 60 and over, liked fresh prepared kimchi best, and then fermented kimchi. But all of subjects disliked over fermented kimchi.(p<0.001) And women$(4.3{\pm}0.9)$ liked better fresh prepared kimchi than men$(4.2{\pm}1.0)$, men$(4.0{\pm}0.9)$ liked better fermented kimchi than women$(3.9{\pm}1.1)$.(p<0.05) In subjects aged above 40, as age grow up, the preference of fermented kimchi and over fermented kimchi grew lower. All of subjects best liked chinease cabbage kimchi, and then chonggak kimchi, kakdugi, yeulmu kimchi, dongchimi in order. And women liked better nabag kimchi, yeulmu kimchi, sesame leaf kimchi, bek kimchi, cucumber kimchi, godulppegi kimchi than men and men liked better chinease cabbage kimchi, kakdugi, dongchimi than women.(p<0.05) People aged $10{\sim}20$ and above 60 disliked chonggag kimchi. The preference of kakdugi were high in people aged $10{\sim}20$, but as age grow up, the preference of kakdugi became lower.(p<0.001) The preference of nabak kimchi and dongchimi with juice were significantly high in people aged 60 and over but people aged $10{\sim}20$ disliked. Also subjects aged $10{\sim}20$ disliked significantly yeulmu kimchi, sesame leaf kimchi, green onion kimchi, bek kimchi, cucumber kimchi, mustard leaf kimchi and godulppegi kimchi and subjects aged $20{\sim}30$ disliked significantly yeulmu kimchi, mustard leaf kimchi, godulppegi kimchi(p<0.001). But subject aged 30 and older liked all kinds of kimchi. The amounts of kimchi intake in Kyung-nam area were same level of average amount(100g) of korean intake but the amounts of kimchi intake of men$(106.4{\pm}74.0)$ were more than women$(96.9{\pm}69.5)$(p<0.05)

돌산갓김치의 저온 저장중 품질특성 변화 (Quality Changes of Mustard Leaf (Dolsangat) Kimchi During Low Temperature Storage)

  • 돌산깃김치를 $5^{\circ}C$에서 60일간 저장하면서 발효특성을 살펴본 결과는 다음과 같다. 김치의 pH는 저장 50일과 60일에 제조당일 시료보다 감소하는 경향을 나타내었으나 유의적인 차이를 보이지 않았다. 저장기간별 산도는 저장기간이 길어질수록 높은 산도를 나타내었으며 저장 20-40일에 0.69-0.88% 수준을 나타내어 적숙기로 판단되었다. 환원당 함량은 저장 기간이 길어질수록 유의적으로 낮아지면서 저장 60일째 1.34%를 나타내었다. 색도 측정 결과 명도, 적색도, 황색도 모두 저장 기간이 길어질수록 증가하였다. 담금 직후의 비타민 C 함량은 다른 저장 기간의 시료군 보다 유의적으로 높은 특성을 나타내었고, 저장기간이 경과되면서 점차 감소하다가 저장 40일째 다시 증가하는 양상을 보였다. 식이섬유 함량은 제조당일 시료가 수용성과 불용성 식이섬유 모두 그 함량이 높은 것으로 평가되었다. 항산화력 측정 결과도 마찬 가지로 제조당일 시료가 가장 높은 수준을 나타냈다. GC/MS를 이용하여 돌산갓의 휘발성 화합물을 측정한 결과 주요 풍미성분은 allyl isothiocyanate, 3-butenyl isothiocyanate, phenylethyl isothiocyanate로 확인 되었다. 돌산갓김치의 allyl isothiocyanate와 phenylethyl isothiocyanate 함량은 각각 $43.72\;{\mu}g/g$, $36.17\;{\mu}g/g$ 이었다. 이상의 결과 돌산갓김치의 저온저장 중 적숙기는 산도와 비타민 C를 기준으로 했을 때 20-40일 정도이며, 돌산갓 유래 기능성 관련 성분을 활용할 경우 제조 직후의 김치가 비타민 C, 식이섬유, 항산화활성 등이 가장 높아서 적절함을 알 수 있었다. 또한 돌삿갓의 함유황화합물은 복잡한 김치 제조공정에서 함량이 감소하는 것을 알 수 있었다.

녹차 및 늙은호박분말 첨가에 따른 갓김치의 항산화 효과 (Antioxidative Activity of Mustard Leaf Kimchi Added Green Tea and Pumpkin Powder)

  • 갓김치에 항산화 성분의 함량이 높은 부재료를 첨가하여 기능성이 증진된 갓김치를 개발하기 위하여 본 연구를 행하였다. 부재료로 선정된 녹차 및 늙은호박을 분말로하여 이들의 첨가비를 달리 한 갓김치를 제조한 후 chlorophyll, carotenoids, 총 페놀 및 비타민 C 함량을 담금 직후와 적숙기에 측정하여 부재료 첨가에 따른 갓김치의 항산화 성분 함량을 비교 연구하였으며 , 그 결과 늙은호박분말 0.3%와 녹차분말 0.2%을 첨가한 갓김치구가 높은 함량을 나타내었다. 이에 늙은호박분말 0.3%와 녹차분말 0.2%을 첨가한 갓김치구를 대조구과 함께 비교하면서 항산화성에 대한 실험을 행하였다 항산화성 실험은 갓김치를 담은 첫날과 적숙기에 행하였으며, 그 결과 거의 모든 실험에서 대조구보다 녹차 및 늙은호박을 첨가한 갓김치구가 항산화성을 나타내는 산화에 대한 저해율이 높게 나타났다. 담금 첫날 갓김치 구보다 적숙기의 갓김치구가 힝산화성이 높았는데, linoleic acid 자동산화에 대한 억제효과는 담금 첫날 대조구의 저해율 42.81%보다 늙은호박분말 0.3%와 녹차분말 0.2% 첨가 처리구가 46.95%로 더 높았으며, 적숙기에는 대조구는 58.63%, 처리구는 65.91% 으로 적숙기의 처리구가 다른 군에 비해 가장 높았다. Conjugated diene생성 억제효과는 적숙기의 처리구는 55.50%로 가장 높았고, LDL 산화 저해효과, TBA가 측정 결과도 적숙기의 녹차 및 늙은호박분말 첨가구가 가장 높은 저해율을 나타내었다. 그리고 DPPH 소거효과에서 담금 첫 날 대조구의 51.23%에 비해 적숙기의 처리구는 76.81%로 저해율이 아주 높게 측정되었는데 이는 부재료 첨가 갓김치구는 DPPH에 대한 강한 소거작용을 하는 것으로 보인다. 따라서 이상과 같은 실험 결과를 종합할 때 갓김치에 녹차 및 늙은호박분말을 첨가함으로써 첨가하지 않은 갓김치 대조구에 비해 항산화 관련 성분의 함량도 증가하였고, 또한 항산화성 실험 에서도 산화에 대한 저해율이 높게 나타났으며 그 중에서도 갓김치에 늙은호박분말 0.3%와 녹차분말 0.2% 첨가 갓김치구가 가장 우수하였고 특히 적숙기에 가장 높은 항산화성을 보이는 것으로 나타났다.

여대생의 김치에 대한 의식과 섭취실태 조사 (A Survey on the Notion and Intake of Kimchi among College Women)

  • A survey of the notion and intake on Kimchi among college women in Pusan was conducted to get some basic information on kimchi. Two hundred sixty seven students in Pusan participated in this survey. Seventy five percent of students answered that they like kimchi. They preferred well-fermented kimchi with anchovy extracts, refreshing taste and crispy texture the saltly and sweet. Chinese cabbage kimchi (87.6%) was found to be the most favored kimchi and Kakdugi(seasoned pickles of cubed radish), Nabak kimchi and Chonggak kimchi (ponytail kimchi) were followed in the order. The most favorite food made from kimchi was stir fried kimchi with rice. They disliked traditional special kimchi, such as Puchu kimchi (leek kimchi), Pa kimchi (green onion kimchi), Kkennip kimchi (perilla leaf kimchi), Godulbaegi kimch (Korea wild lettuce kimchi) and Gat kimchi (Leaf mustard kimchi). About 93 grams of kimchi was consumed daily and this amount was a little. Seventy percent of students did not have any experiences preparing kimchi. Experiences of kimchi preparation were given by mother through kimchii-making event for the winter(71.7%), cooking practice in middle or high school (14.1%) and college(10.9%) and general cooking education (33%). They preferred to buy kimchi at the Agricultural Cooperative Association (48.5%) or a large kimch factory (32.75). College students believe that kimchi is a healthy food and are willing to learn how to make kimchi.
