대구.경북지역의 꽁치과메기의 이용실태 조사연구 (A Survey on Consumption Realities of Kwamaegi in Daegu\ulcornerKyungbuk Area)

  • The main purpose of this research was to investigate the uses of Kwamaegi not only in Kyungbuk area also in Daegu metropolitan city to predict f3r the consuming nationwide. This study was performed to analyze the preference, recognition, frequency of intake by survey research. The results were summarized as follows: Most of subjects(96.6%) knew what Kwamaegi was. The male subjects (97.9%) blew more about Kwamaegi than the females (95.0%) did(p<.05). The reasons why peoples did not eat kwamaegi were 'did not want'(40.6%),'had no chance'(33.7%),'did not know'(24.1%) in order. Males liked Kwamaegi more than females did(p<.01). The reasons why they liked Kwamaegi were because males(42.6%) liked its suitability fur side dish when drinking(33.9%) and female(30.4%) liked its plain taste(p<.001). Among respondents, 48.7% ate 3 to 10 of Kwamaegies at one time. Most subjects recognized Kwamaegi as a healthy food(M=3.22). Males(M=3.40) pointed out to be improved in the advertisement while females(M=3.15) to decrease in fishy smell of Kwamaegi.

  • Experiments were carried out to establish an effective artificial drying method of Pacific saury (Cololabis seira) to kwamaegi. Raw fish containing 67% moisture were dried up to containing less than 40% moisture by drying for 15 days. The fish lost moisture more rapidly during first 3 days of natural drying than artificial drying. Total lipid content increased from 16.1% to 30.3 and 29.8% by 15 days of natural and artificial drying, respectively. Neutral lipid occupying 91.63% of total lipid increased to 92~94% during 15 days of drying, while content of phospholipid and glycolipid decreased slightly. The values of peroxide and thiobarbituric acid increased up to 6 days of drying and then did not change. Peroxide levels were lower in artifically dried fish than in naturally dried ones.

  • This study was conducted to obtain basic data which can be applied to process of canned boiled Kwamaegi. Commercial Kwamaegi was cut into $2{\times}3$ cm lengths, filled 90 g into can (301-3) and added with 60 g water and then precooked for 10 min. at $100^{\circ}C$. And water layer was drained. The precooked Kwamaegi was packed into the can, and added with 60 g of mixed salt solution, which is mixed with salt 0.5% and bamboo salt 0.7%. The cans were seamed using a vacuum seamer, and then sterilized for various Fo values (Fo 8~12 min.) in a steam system retort at $121^{\circ}C$. pH, VBN, amino-N, total amino acid, free amino acid, color value (L, a, b), texture profile, TBA value, mineral, sensory evaluation and viable bacterial count of the canned boiled Kwamaegi produced with various sterilization condition(Fo 8~12 min.) were measured. There was no remarkable difference between sterilization conditions and sensual characteristics. The results showed that the product sterilized at Fo 8 min. was the most desirable because this condition is the most economical and tasty.

  • This study was investigated to obtain basic data which can be applied to processing of canned seasoned kwamaegi. Commercial Kwamaegi was cut into $2{\times}3cm$ lengths, filled 90 g into can (301-3) and added with 60 g water before precooking for 10 min. at $100^{\circ}C$. The precooked Kwamaegi was packed into the can, and added with 60 g seasoning sauces, which was prepared by mixing soy sauce 23%, monosodium glutamate (MSG) 2%, sorbitol 2%, sesame oil 1%, vinegar 2%, starch syrup 17%, sake 5%, water 48%. The cans were sealed using a vacuum seamer and then sterilized for various Fo values (Fo 8~12 min.) in a steam system retort at $121^{\circ}C$. The factors such as pH, VBN, amino-N, total amino acid, free amino acid, color value (L, a, b), texture profile, TBA value, mineral, sensory evaluation and viable bacterial count of the canned seasoned Kwamaegi produced with various sterilization condition(Fo 8~12 min.) were measured. There was no remarkable difference between sterilization conditions and sensual characteristics. The results showed that the product sterilized at Fo 8 min. was the most desirable because this condition is most economical.

  • Pacific saury, Cololabis saira kwamaegi, is a traditional local food of the Eastern sea area centering around Pohang. It is well-recognized as being both tasty and nutritious. Nevertheless, bacterial contamination, excessive dryness, and compositional changes have made it edible only during the winter months. Therefore, to improve its storage, this study examined the effects of storage material, type, temperature, and duration on compositional changes in kwamaegi. The studied samples were kwamaegis that had been dried naturally for 15 days. The storage materials included an A-film, a self-developed multi-film made of polyethylene, polyamide, EVOH, and polyethylene; as well as a B-film made of polyethylene, nylon, polyethylene, nylon and polyethylene. The B films were used after pressing and laminating. The storage types included one whole fish(1G), or 2 divided fish(2G), to increase eating convenience. The 2G type was the muscle portion divided vertically after discarding the jowl, skin, and internal organs. The storage temperatures were $0^{\circ}C$, $-15^{\circ}C$, and $-30^{\circ}C$, and the storage durations were 2, 4, and 6 months. Pathogenic bacteria and rheology were measured to observe general compositional changes. The whole kwamaegi showed a total cell number of $1,565{\pm}112$ CFU/100 g flesh, while the divided Kwamaegi showed significantly greater bacterial numbers at $2,031{\pm}145$ CFU/100 g flesh. Psychrophils and halophils increased significantly while coliform were not found; the number of mesophils also increased, but not significantly. There were no significant cell number variations between the A-film and B-film. At $0^{\circ}C$, both the A-and B-films resulted in cell numbers of $115{\sim}212$ CFU/100 g flesh, revealing just $7.3{\sim}10.4%$ of the initial storage levels. Overall, there were no significant differences between the storage materials. Generally, as the storage temperature and duration increased, the moisture content of the kwamaegi decreased. Also, as storage duration and temperature increased, crude protein and crude lipid contents increased; in addition, they increased proportionally as the moisture content of the fish decreased. There were no significant differences in crude ash content with respect to the storage materials, storage temperatures, or storage durations. Finally, there were no significant differences between the kwamaegi samples naturally dried for 15 days and those stored in the B-film vacuum storage for 6 months for strength, hardness, cohesiveness, springiness, gumminess, and water activity.

  • Kwamaegi is a traditional Korean seafood made from the flesh of Pacific saury Cololabis saira. It is recognized as a valuable, healthy food containing the ${\omega}$-3 fatty acids EPA (eicosapentaenoic acid) and DHA (docosahexaenoic acid). This study was conducted in order to obtain basic data for application to the canning process of Kwamaegi using red pepper paste with vinegar. Commercial Kwamaegi was cut into $2{\times}3cm$ lengths and 90 g was put into cans (301-3). Then, 60 g of water was added and precooked for 10 minutes at $100^{\circ}C$. The water was drained after precooking. The precooked Kwamaegi was packed into cans, and 60 g of red pepper paste with vinegar was added. The cans were seamed using a vacuum seamer, then sterilized for differing times (8-12 minutes) in a steam system retort at $121^{\circ}C$. Parameters such as: pH, TVB-N, amino-N, total amino acid content, free amino acid content, color value (L, a, b), texture profile, TBA value, mineral content, sensory evaluation and viable bacterial count of the product produced under varying sterilization times (8-12 minutes) were measured. There were no remarkable differences between sterilization conditions and textural characteristics. The results showed that product sterilized for 8 minutes proved to be the most desirable.

꽁치과메기에 대한 선호도 및 섭취빈도에 관한 연구 (The Study of the Taste and the Intake-Frequency for Kwamaegi - Centering around Kyungbuk Regions-)

  • 경북지역에 거주하는 주민들을 대상으로 식생활 행동과 꽁치과메기의 기호도 및 섭취 빈도를 조사한 결과는 다음과 같다. 1. 조사대상자의 65.2%가 맛 그 다음이 영양가 14.6%, 청결성 14.3%, 가격 4.3%, 칼로리 0.7% 순으로 음식 선택시 고려하는 것으로 나타났다. 성별에 있어 남자는 맛을 가장 선호하고 청결성, 영양가, 가격의 순으로 관심을 가지고 있으나 여자는 맛 다음으로 영양가(25.4%)에 관심을 가지고 있으며, 청결성, 가격 순으로 나타났다. 나이가 많을수록 영양가에 관심을 두며, 칼로리는 학생층에서 91.7%나 높은 관심을 보였다. 농촌주민은 맛에. 어촌주민은 청결성에, 도시주민은 영양가에 다른 거주지역 주민보다 음식선택시 큰 관심을 특히 어촌은 식중독 등의 위험에 대한 정보를 상시 접하기 때문인 것으로 보인다. 2. 외식시 선호 음식은 남(81.5%). 여(78.2%) 모두 한식을 가장 선호하는 것으로 나타났으며, 연령이 높을수록 한식을 선호하고 연령이 낮을수록 양식을 선호하는 것으로 나타났다. 그러나 젊은 층에서의 양식선호는 피할 수 없는 현실이다. 학력별로는 고졸 이하가 한식 (95.0%)을 더 선호하는 것으로 나타났다. 핵가족은 한식과 분식을 선호하며, 어른을 모시고 사는 확대가족이 외식시 양식, 일식, 중국식 등 다양한 음식을 선호하는 것으로 나타났다. 그러나 통계적으로 유의하지 않았다. 주거형태별로는 연립주택 주민의 93.0%가 한식을 가장 선호하며. 아파트 주민은 한식 다음으로 분식을 선호하였다. 거주지역별로는 도시 주민이 한식(81.9%)을 가장 선호하며 어촌주민은 특히 외식시 양식을 선호하는 것으로 나타났다. 3. 꽁치과메기에 대하여 91.4%가 긍정적인 응답을 하여 경북지역 주민은 과메기에 대해 높은 선호도를 가지고 있는 것으로 나타났다. 과메기를 먹는 때는 71.1%가 술안주로 먹는 것으로 나타났다. 특히 도시 주민 20.3%가 과메기를 간식으로 먹는 것으로 나타났다. 이러한 결과를 놓고 볼 때 술안주로서 과메기가 아니라 꽁치과메기가 향토 식품으로 자리잡기 위해서 조리방법의 개발 등을 통하여 반찬으로나 간식으로 먹을 수 있도록 연구되어야 할 것이다. 4. 과메기 1회 먹는 양은 남자가 여자보다 월등히 많았다. 대부분 3∼10마리를 1회에 먹으며 30세 이하에서는 67.4%정도가, 남자의 61.1%가 3∼10마리 정도를 먹는 것으로 나타났다. 여자의 53.7%가1∼2마리 정도를 1회 먹는 것으로 나타났다. 1회에 20마리 이상(1두릅) 많이 먹는 연령층은 30세 이하의 젊은 층으로 나타났다. 주거형 태별로는 개인주택 주민이 1회 먹는 양이 가장 많았다.

Chitosan-ascorbate 처리 감압건조 과메기의 품질특성과 고지방식이 흰쥐의 혈청지질에 미치는 영향 (Quality Characteristics of Chitosan-ascorbate Treated Kwamaegi Prepared by Vacuum Drying, and Lowering Effect of Serum Lipids in Rats Fed High Fat Diets)

  • Chitosan-ascorbate (CA)를 표면처리한 후 $40{\sim}60^{\circ}C$에서 감압건조한 과메기(VD-과메기)의 품질특성과 고지방식이 흰쥐의 혈청지질과 항산화계 효소활성에 미치는 영향을 조사하였다. VD-과메기의 제조기간은 $4.5{\sim}8.3시간, 자연건조과메기(ND-과메기)의 제조기간 $360{\sim}480$시간이었다. 총 균수는 VD-과메기에서는 $0.2{\sim}0.5$ log CFU/g, ND-과메기에서는 8.2 log CFU/g였다. 아미노태질소 함량은 $128.3{\sim}135.0$mg%로 ND-과메기와 VD-과메기의 뚜렷한 차이가 없었다. VD-과메기는 ND-과메기에 비하여 산가와 과산화물가가 현저하게 낮으며 비린내가 적고 조직감, 색상 및 종합적기 호도가 높았으며 종합적으로는 $40^{\circ}C$에서 제조한 VD-40-과메기가 가장 우수하였다. 고지방식이 흰쥐에 감압건조한 VD-40-과메기를 10% 혼합하여 4주간 급여한 군 (HVK)은 ND-과메기에 비하여 증체량이 낮고, 혈청 HDL-cholesterol 함량은 높은 반면 total cholesterol과 LDL-cholesterol함량이 낮았으며, glutathione 함량은 뚜렷한 차이가 없으나 lipid peroxide 함량은 현저하게 낮았다. 또한 고지방식이로 증가된 간의 xanthine oxidase total 및 O type 활성도 및 O/T(%)를 유의적으로 감소시켰다. 이상의 결과, 과메기 제조시 CA를 처리한 후 $40^{\circ}C$서 감압건조하는 방법은 제조기간을 크게 단축시킬 뿐만 아니라 과메기의 위생성과 영양성을 높일 수 있는 방법으로 산업적 활용이 기대된다.

  • 상온에서 저장이 용이하고 기호도가 우수한 토마토페이스트소스첨가 과메기통조림을 제조하기 위하여 절단한 시판과메기($3cm{\times}2.5cm$ 크기) 90 g을 301-3호관에 넣고 $100^{\circ}C$의 레토르트내에서 10분간 예비 탈기하였다. 상층부의 물을 부어서 버리고 토마토페이스트 소스(토마토페이스트 42%, 식염 2%, 구아검 1%, 물 52%, 물엿 2%, 맛술 1%) 60 g을 넣은 후 이중밀봉기로 탈기, 밀봉하여 $121^{\circ}C$에서 Fo 값이 8-12분이 되도록 살균하여 토마토페이스트소스첨가 과메기통조림을 제조하였으며, 각 살균 조건별로 제조한 시료에 대하여 내용물의 이화학적 성질의 변화 및 관능적 변화에 대하여 살펴보았다. Fo 값이 8-12분이 되도록 살균한 토마토페이스트소스첨가 과메기통조림의 경우 모든 살균조건에서 생균수가 검출되지 않았으며, Fo 값이 증가함에 따라 일반성분 중 수분함량은 감소하였고 조단백질 및 조지방함량은 증가하였다. 살균조건의 차이에 따른 pH의 변화는 거의 없었으며, VBN, 아미노질소량 및 조직감은 Fo 값이 증가할수록 그 값이 증가하였으나 TBA 값은 오히려 감소하였다. 색조의 경우 명도는 감소하였고 적색도 및 황색도는 거의 차이가 없었으며 색차(${\Delta}E$)는 증가하였다. 주요 무기질 성분은 Na, P, K, Ca 및 Mg이었으며 Fo 값의 차이에 따른 함량 변화는 거의 없었다. 총아미노산 및 유리아미노산은 Fo 값이 증가할수록 약간씩 증가하였으며, 총아미노산의 주요 아미노산은 glutamic acid, proline, aspartic acid 및 lysine이었으며, 주요 유리아미노산은 histidine 및 glutamic acid이었다. 관능검사 결과 색조, 냄새, 맛 및 조직감은 Fo 값에 따른 차이가 거의 나지 않았고, 관능검사원들이 관능적 차이를 구별하기 힘들다는 의견이 지배적이었다. 따라서 살균원가가 가장 저렴하고 상업적 살균 조건에도 만족되는 Fo 값 8분인 제품을 생산하는 것이 바람직하다고 판단되었다.

Thus, to improve its storage capabilities, this study assessed the effects of storage material, type, temperature, and duration on compositional changes in Kwamaegi. The assessed samples were Kwamaegi which had been naturally dried for 15 days. The storage materials included an A-film, a self- developed multi-film made of polyethylene, polyamide, EVOH, and polyethylene, and a B-film made of polyethylene, nylon, polyethylene, nylon, and polyethylene. The B films were utilized after pressing and lamination. The storage types included one whole fish(1G), or 2 divided fish(2G), to increase eating convenience. The 2G type was the muscle portion divided vertically after discarding the jowl, skin, and internal organs. The storage temperatures were 0, -15 and $-30^{\circ}C$, and the storage durations were 2, 4, and 6 months. Among the lipid rancidities, acid value and peroxide value showed the highest level of initial rancidity at a storage temperature of $0^{\circ}C$ for 2 months. We noted no significant differences between storage materials. The lower the storage temperatures, the less acid and peroxide were generated. Between the storage types, 1G evidenced lower less acid values than 2G. The TBA values revealed a dramatic increase at a storage temperature of $0^{\circ}C$ for 2 months, whereas this rapid progress was not observed at storage temperatures of -15 and $-30^{\circ}C$. Along with the acid value and peroxide value, the samples stored at 0, -15 and $-30^{\circ}C$ evidenced significantly lower TBA values. The B-film evidenced a slightly lower TBA value than was observed in the A-film, but no significant differences were observed.
