Studies on the Effects of Amylase Addition to Rice Extrusion on the Rheological Properties of the Extrudate for Weaning Food Base (압출조리를 이용한 쌀 이유식 제조에서 아밀라제 첨가가 물성변화에 미치는 효과)

  • The effects of amylase addition during extrusion cooking of rice on the physico-chemical properties of the extrudates were investigated in order to develop rice-based Korean style weaning food products. A laboratory-built single screw extruder was used, the enzymes used were Termamyl 120LS(amylase from Bacillus licheniformis, NOVO Co.), BAN 240L(amylase from Bacillus amylolichuefaciens, NOVO Co.) and malt powder. By the addition of enzymes, the water soluble index of the extrudates increased by 3 times compared to that of the extrudates without enzyme and the concentration of reducing sugar in the extrudates increased drastically at 28 feed moisture. The gel permeation chromatographic pattern showed that the large molecular starch fractions diminished by the addition of enzyme during extrusion and the low molecular fraction increased. The residual enzyme activity in the extrudate were 27% for the most thermo-resistance enzyme by treating at $140^{\circ}C$ in the metering section of the extruder. The sediment volume of the extrudate dispersion increased as the metering section temperature increased to $140^{\circ}C$ . By the addition of enzymes the viscosity of extrudate dispersion was redused $1/4{\sim}1/200$ of that of the extrudates without enzyme. It allowed to use 1.8 times of solid material to the weaning food formulation to attain the same level of consistency as the commercial products. It proves that the addition of amylase during rice extrusion is effective to increase the energy density of weaning food by starch degradation, which results in the increases of water solubility, reducing sugar content, dispersibility and fluidability.

Effect of Saengshik on Blood Glucose Response in Healthy Subjects (생식조성이 정상성인의 혈당반응에 미치는 영향)

  • The purposes of this study were to investigate the effect of Saengshik on blood glucose level of normal subject and to explore the marketing possibility of four kinds of Saengshik (ES, HS, BS, SS) as alternative diabetic meals. Blood glucose levels of healthy volunteers was measured at 15, 30, 45, 60, 75, 90, 105 and 120 minutes after taking Saengshik and 50 g glucose. Blood glucose response areas, glycemic index (GI) and glycemic load (GL) were calculated from the glucose response. The Saengshik showed a significantly lower glucose level than the glucose. The glycemic index (GI) of ES showed $43.1{\pm}12.6$, which belonged to low GI foods (GI of 55 or less). Other samples (HS, BS, SS) could be classified as intermediate GI foods ranging $56{\sim}69$ of GI. Saengshik showed a gentle rising and falling pattern showing moderate left area ratio and right area ratio on blood glucose curve. The GL of ES showed 14.1 while HS, BS and SS did $19.2{\sim}19.5$. The results indicated that Saengshik may have a beneficial effect on a diabetic.

Spatial Fragmentation Analysis of Upland Fields Using Farm Manager Registration Information (농업경영체 등록정보를 활용한 밭 경작지의 공간적 파편화 특성 분석)

  • As food consumption pattern changes (reduced rice consumption and increased consumption of fresh vegetables), managing upland fields became a greater priority. However, the agricultural infrastructure projects have been focused on rice farming, and the infrastructure level to support dry fields cultivation is insufficient. The purpose of this study was to spatial distribution analysis of these dry fields with farm manager registration information. Using FRAGSTATS, we analyzed landscape indices (TA/CA, NP, PD, LSI, LPI, PLADJ, COHESION, CONNECT, AI) of farmlands in which farmers in 13 regions (Si or Gun) cultivated dry-field crops. As results of this analysis, the total area of the fields in Naju-si, Hampyeong-gun and Suncheon-si were found to be wider, but the average area of a patch in Youngam-gun, Hampyeong-gun and Jangseong-gun were wider than other regions. On average, each farmer had farmlands containing of 1.7~2.4 patches and cultivated crops in fields of 0.2~0.5 ha. Farmlands of Hampyeong-gun, Youngam-gun, Naju-si showed high values in adjacency indices, however the farmlands of Suncheon and Gwangyang showed fragmented distribution with low values in adjacency indices. These results of fragmentation analysis of farmlands could be used when we establish the plan of an agricultural infrastructure project or select places for a collaborative agricultural management business promotion project.

An Analysis of Spatial Characteristics of Environmental-Friendly Certified Farms - Focused on Jeollanam-do - (친환경 인증 농경지의 공간적 특성 분석 - 전라남도를 대상으로 -)

  • As the demand for environmental-friendly agricultural products continues to rise due to increased concerns regarding food safety and ecosystem conservation, it is becoming important to identify regions and spatial locations where environmental-friendly should be intensively established for production integration. This study aims to analyze the spatial distribution of environmental-friendly certified farms in Jeollanam-do, South Korea. Spatial statistical analysis based on Local Moran's I and Getis-Ord Gi* were used to identify spatial cluster characteristics and landscape indices were utilized to analyze spatial patterns of environmental-friendly certified farms. The results indicated that Haenam-gun, Gangjin-gun, Muan-gun, and Jindo-gun were identified as hotspots, while Muan-gun, Goheung-gun, and Jindo-gun exhibited high connectivity. This suggests that environmental-friendly certified farms in Muan-gun and Jindo-gun were clustered and closely connected to one another. Based on the results of the spatial distribution of environmental-friendly certified farms, areas belonging to the hotspot and with high connectivity should be managed as clustered districts to secure the foundation and system of environmental-friendly certified farms. Areas that belong to cold spots and have low connectivity should be preceded by measures to promote conversion to environmental-friendly agriculture. In addition, it is necessary to make it possible to create a large-scale cluster district through a long-term spatial planning strategy to expand the environmental-friendly certified farms. The findings of this study can provide quantitative data on policies and discussions for developing a model for rural spatial planning.

Relationship between Emulsion Stability Index and HLB Value of Emulsifier in the Analysis of W/O Emulsion Stability (W/O형 유화계의 유화안정성 분석에 있어서의 유화안정지수와 HLB값과의 관계 규명)

  • The stability of W/O emulsions (milk fat : water=4 : 1, w/w) containing various emulsifiers was compared to determine the effect of different chemical types of emulsifiers in relation to the change of HLB value caused by emulsifier type and the influence of single vs. binary emulsifier systems. These variables were compared at emulsifier HLB values of 0.5~16.7 and at emulsifier concentrations of 1.0~3.0%(w/w). Eleven emulsifiers used as 11 different single mixtures and 16 different binary mixtures were evaluated in W/O type emulsion systems containing 20.0%(w/w) of water in milk fat. This W/O emulsion was stable (more than 90.0 of ESI value) in the range of low value of emulsifier HLB (less than 4.7 of HLB value). All the ESI values of binary emulsifier systems were higher than those of single emulsifier systems. But, the influence pattern of emulsifier HLB on this emulsion stability in single emulsifier systems was very similar to the trend in binary emulsifier systems.

The Effect of Korean Soysauce and Soypaste Making on Soybean Protein Quality Part II. Chemical Changes During Meju-brine Ripening (재래식 간장 및 된장 제조가 대두 단백질의 영양가에 미치는 영향 제2보 메주장의 숙성중에 일어나는 성분 변화)

  • The laboratory Mejus as well as home-made Meju and improved Meju received from Korea were ripened in the brine for up to 8 months and the changes is the chemical composition during the process were determined and the differences between the types of Meju were compared. On the basis of the amino acid pattern, the changes in the protein quality of soybean during the process was evaluated. No significant changes in the general chemical composition of Meju were noticed during the ripening for 8 months. However, the nitrogen solubility of Meju increased for $13{\sim}29%$ to $66{\sim}78%$ during 8 month ripening of the Meju-brine mixture. The concentration of free amino-N to the total-N increased from $4{\sim}7%$ in Meju to $29{\sim}35%$ in the 8month ripened mixture. The concentration of amino-N to the total-N increased from $1{\sim}4%$ in Meju to $5{\sim}14%$ in the 8month ripened mixture and the changes varied with the type of Meju used. Remarkable changes in the amino acid pattern of soybean were occured during the ripening process. The concentration of methionine decreased to the half of original Meju during the first month of ripening. Arginine and histidine were destroyed rapidly by the ripening longer than 1 month. A considerable amount of ornithine was synthesized during the ripening. The amino acid pattern of Meju did change drastically during the ripening longer than 3 months and the changes varied with the type of Meju. The retention of the nutrients in soybean during 8 month ripening of the laboratory 3 month Meju in the brine was 49% for carbohydrates, 107% for crude fat, 93% for crude protein and 74% for the total amino acid. Histidine, arginine and methionine and 74% for the total amino acid. Histidine, arginine and methionine were the most damaged during the process, retaining only 25%, 27% and 49% of the contents in raw soybean, respectively, whereas lysine retained 79%. By the separation of the 8 month ripened mixture, approximately 60% of crude protein, all of crude fat and 80% of carbohydrates in the mixture were retained in soypaste. Soypaste contained higher concentrations of amino acids per 16gN compared to soysauce, except for lysine. The most limiting amino acid of the protein was the S-containing amino acids in all cases studied, whereas the second limiting amino acid varied from valine in soybean to threonine in most of Mejus and the brine mixtures, lysine in most of soypastes and tryptophan in some of soysauces. According to the protein quality evaluation made by the reference of the FAO provisional pattern of amino acid, the chemical score of raw soybean was 82, which was reduced to 77 by cooking and further reduced to $71{\sim}74$ by Meju fermentation. At the eighth month of ripening the chemical score of the Meju-brine mixtures were reduced to $51{\sim}66. After the separation, the chemical score of soypaste ranged from 60 to 71, whereas that of soysauce varied from 45 to 57. Generally, the products made from improved Meju recorded the highest score, whereas those made from homemade Meju showed the poorest protein quality. The essential amino acid index(EAAI) of the samples was similar to the chemical score, but it appeared to fit the overall changes in the amino acid pattern during the process better than the chemical score.

Export Strategies Against Decreasing Demand of Fukushima's Agricultural Porducts (후쿠시마산(産) 농산물 수요감소에 대비한 농산물 수출전략)

  • In 1995, the WTO started to ease the trade barriers. Globalization has accelerated. The opening of the agricultural products market is rapidly gaining momentum with the conclusion of an FTA. The acceleration of this FTA is expected to be a threat to Korea's agriculture, and a new strategy is needed. At the beginning of the nuclear accident, mainly radioactive materials are found in the surface layer of the soil. Over time, the concentration of the plant gradually increases. After 5 years, it becomes noticeable. In March 2016, it will be five years after the nuclear accident. Radioactive contamination is very likely to occur in agricultural products produced in the Fukushima area at this time. In this period, agricultural products produced in the Fukushima region are expected to generate supply disruptions in Japan, and imports to replace them will increase. Therefore, it is necessary to establish a mid- and long-term strategy for exporting to Japan by analyzing the competitiveness of Korean agricultural products. In this study, standardization index was derived by using agricultural price ratio, TSI, export CAC. Based on this, we analyzed the competitiveness of each item in the Japanese market. The analysis shows that garlic is the most competitive product in the Japanese market. Also, strawberry, tomato, and cucumber were found to be competitive. On the other hand, Kiwi, pineapple, soybean, onion, potato, etc. As a result of the analysis, the following strategies were proposed for the export of agricultural products with high competitiveness. First, it is necessary to develop technology to suppress deterioration of export transportation quality. Second, continuous supply of local consumption pattern information is required. Third, it is necessary to expand exports by processing fresh food. Fourth, it suggested the establishment of export base and strengthening of support system.

Effects of Diet Supplemented with Squid Intestine on Growth and Body Composition of the Catfish (Parasilurus asotus) (오징어내장 첨가사료가 메기 (Parasilurus asotus)의 성장 및 육조성에 미치는 영향)

  • In order to find out the effect of supplemented diets with squid intestine on the catfish, growth and body compositions of catfish (Parasilurus asotus) were investigated for 112 days with the four experimental diets of different lipid levels. The higher lipid level of diets with squid intestine supplement was fed, the higher body weight was gained (p<0.05). HSI (Hepatosomatic Index) was the lowest in the diets with $10\%$ squid intestine. There were no significant differences in muscle md skin compositions, however the increasing lipid levels in the diets well reflected in the fatty acid pattern of skin and muscle. The percentage of n-3 polyunsaturated fatty acids such as C20 : 5 and C22 : 6 in tissues was increased according to increase of supplemented squid intestine. Saturated and n-6 fatty acid contents did not show the significant difference.

Effect of Hydrothermal and Enzymatic Treatments on the Physicochemical Properties of Waxy Maize Flour (열수 및 효소 처리에 의한 찰옥수수가루의 물리화학적 특성)

  • Physicochemical properties of waxy maize flours prepared by hydrothermal and enzymatic treatments were evaluated. Waxy maize flours were hydrothermally treated using heat-moisture treatment (HMT) and annealing (ANN) and enzymatically treated using commercial enzymes (cellulase, proteinase, and pectinase). The HMT-modified waxy maize flours had low water absorption index (WAI), melting enthalpy, viscosity, and crystallinity. However, ANN-modified and enzymatically modified waxy maize flours had high WAI, melting enthalpy, and viscosity. X-ray diffraction analysis of ANN-modified and enzymatically modified waxy maize flours revealed a typical A-type pattern and displayed sharper crystalline peaks than those observed for the control groups (native waxy maize flours). In contrast, the crystallinity of HMT-modified waxy maize flours were decreased by hydrothermal treatment.

Quality Characteristics of Small Package Kimchi according to Packing Material and Storage Temperature (포장재와 저장온도에 따른 소포장 김치의 품질특성)

  • Cabbage (Baechu) Kimchi in its truncated form was placed in four different packing materials, Ny/PE/LLDP, OPP/AL/PE, PP and PET, and quality changes were observed during storage. Changes in pH and total acidity showed an x-shaped cross-curve as pH decreased and total acidity increased during storage. PP tray showed the slowest change at $5^{\circ}C$ with time. The pH was initially 6.25, but decreased to 4.12~4.16 at 20 days, and total acidity showed a 4 to 4.8-fold increase after 20 days of storage compared to the initial value. During storage at $5^{\circ}C$, total bacterial count and lactic acid bacterial count rapidly increased after 4 days. The total bacterial quantity decreased after a period of time and there were differences according to packaging material; OPP/AL/PE packaging showed the most dramatic decrease. Change in microbial count mostly followed a similar pattern to that of total acidity for all packaging materials. Changes in the color of Kimchi liquid, when examined by color index in $L{\cdot}b$/a form, rapidly decreased over time, similar to pH. Small Ny/PE/PP and OPP/AL/PE packages of Kimchi were examined for changes in free volume inside the packaging. After 13 days of storage at $5^{\circ}C$, the volume was 243 mL, but storage at $20^{\circ}C$ resulted in a volume of 372 mL, a more than 1.5-fold increase in free volume. There were changes in the quality characteristics of small package Kimchi according to storage temperature and packaging material, and large changes in pH, total acidity, and microbial count were evident upon storage at $5^{\circ}C$ for 8 days, which was the optimum palatability period. Mostly, PP treatment showed the slowest quality changes upon storage at $5^{\circ}C$. However, due to small package Kimchi's fast consumption system, the appropriate choice of packaging material must consider the product's turnover ratio. Further, the varieties of small package Kimchi should be diversified according to different consumer preferences by offering Kimchi with different maturity levels. Further, since the leading consumer base ranges in age from the teens to thirties, the development of various products targeting such consumers is necessary.
