  • Statistical experimental design methods were employed to select the cultivation factors influencing latic acid production during the fermentation of kitchen refuses. Working volume and pH swings were identified as the main factors affecting lactic acid production. Optimum pH swing was pH 7.8 and working volume was 125 mL in a 250 mL flask. Under optimum condition, lactic acid was produced at 21.8 g/L, which was 6.2 times higher than produced during uncontrolled fermentation.

  • This research is to suggest effective kitchen furniture design for 40, 50 pyeong-size apartment considering the quantity and volume, heights or length of stored items for cooking. The research candidates are purposive-sampled 30 households in Kangnam, Seoul. The observation shows that the volume of kitchen furniture is $3.1{\sim}5.9m^3$ and of utility furniture is $0.3{\sim}3.8m^3$. For each households hold average of 886 kitchenwares, $4.1m^3$. Such were normally stored in the upper and lower storage and tall storage closet for a kitchen. Through the field studies and depth interviews, it is shown that there are 287 (33.2%), $1.67m^3$ of the application for preparing food, certain knives, disposable products and food which is considered absolutely or comparatively hard to organize. Products that are very hard to organize are the small application for cooking, grouped kitchenware such as openers, the applications with long rod shape food, and detergent. There are 96 of such products, taking the volume of $0.32m^3$; thus, such products are considered to improve the kitchen furniture design. And the shelf of storage can the control 3cm hights according to result of this research.

The survey method was used to collect data from 321 housewives living in the apartment sized over 99$\textrm{m}^2$(30 pyung) in Ulsan. The data were analyzed by SPSS/$PC^+$ with frequency, percent, and chi-squared test. The results of this study were: (1) Kitchen was now used for eating snacks(45.6%), keeping household account(42.5%), and chatting(41.6%). (2) Homemakers wanted to do laundry such as ironing, drying clothes, and folding clothes in the kitchen. However, there were several activities(i.e., grooming, rest and taking a nap, exercise) they do not want to do in the kitchen. (3) The variables which related to the additional functions of the kitchen were size of the apartment, age, and level of education. The findings of this study imply that there must be design considerations for chatting and keeping household account such as providing tables and comfortable chairs. In addition, new counter layout types should be developed based on needs of additional functions and related variables.

The purpose of the present research was (1) to classify homemakers' representative like styles related to the kitchen, (2) to examine homemakers' present concerns on the kitchen space, and (3) to investigate homemakers' desire and preference on the kitchen space. Twenty two hundred homemakers of upper and middle class residing in Seoul, Busan, Daegu, Incheon, Gwangju and Daejeon were selected for the survey and 1,843 among them were used for data analysis. Data were selected for the survey and 1,843 among them were used for data analysis. Data were analyzed using the SAS program package. The statistics used were frequency, percentage, mean, factor analysis, F-test, Duncan's multiple range test, X2-test, cluster analysis. Findings from the research as follows: (1) Four factors were found as indicaters of the life style; values on the household work, desire on social function of the kitchen, degree on cooperation of family members on the household work, and convenient management. • In order to create a worker-friendly environment for institutional foodservice, facilities operating with a dry kitchen system have been recommended. This study was designed to compare the work safety and work environment of foodservice between wet and dry kitchen systems. Data were obtained using questionnaires with a target group of 303 staff at 57 foodservice operations. Dry kitchen facilities were constructed after 2006, which had a higher construction cost and more finishing floors with anti-slip tiles, and in which employees more wore non-slip footwear than wet kitchen (76.7%). The kitchen temperature and muscular pain were the most frequently reported employees' discomfort factors in the two systems, and, in the wet kitchen, "noise of kitchen" was also frequently reported as a discomfort. Dietitian and employees rated the less slippery and slip related incidents in dry kitchens than those of wet kitchen. Fryer area, ware-washing area, and plate waste table were the slippery areas and the causes were different between the functional areas. The risk for current leakage was rated significantly higher in wet kitchens by dietitians. In addition, the ware-washing area was found to be where employees felt the highest risk of electrical shock. Muscular pain (72.2%), arthritis (39.1%), hard-of-hearing (46.6%) and psychological stress (47.0%) were experienced by employees more than once a month, particularly in the wet kitchen. In conclusion, the dry kitchen system was found to be more efficient for food and work safety because of its superior design and well managed practices.

  • Urban houses of traditional Korean Style are a type of habitation that happened during a transitional period when the modernization of habitation had progressed in 1930s, and also a habitation folding societal trails that had adapted and developed into urbanization together with the native traits of traditional Korean Style houses. Because they keep our style of living and the process of change just as they were, it is important work to shed light on and keep a record of it. So, this thesis arranges the contents of research on the actual condition of living, and may try to reason by analogy the changing style of residents' living through the change of space composition and the way of space usage for the urban houses of traditional Korean style that were changed by extension and remodeling of residents. As the concrete matters, it is to grasp the physical and spatial change of urban houses of traditional Korean style in accordance with extension and remodeling, and to analyze in which part and how they had been changing for the spatial composition of urban houses of traditional Korean style according to the change of living style, and especially the change toward a stand-up type of k stand-and the following traits and factors of the change toward Dining-Kitchen. The kitchen changed toward Dining-Kitchen shows some typical discrepancies depending on the location of kitchen as like a case of changing toward Dining-Kitchen from the existing location, a case of extending into the rear side of kitchen, a case of switching of location between kitchen and the inner room, and a case of changing toward Dining-Kitchen from the location of a room across from the main living room. As kitchen changed toward Dining-Kitchen like these, it shows that the connecting trace into the inner room came out, each room came to show a bit clearer function but grow smaller relation with the threshing ground, and also the function of the threshing ground came reduced.
