해파리 출현빈도에 따른 여수 정치망어업의 경영실적 고찰 (A study on the management performance of a set net fishery according to the blooming frequency of jelly fish Nemopliema nomurai in Yeosu)

  • According to the catch condition of Scomberomorus niphonius in autumn season affected greatly, the catch price for the set net fishery. Catch production and the selling price were relatively even except 2009 showing a great big blooming jellyfish of Nemopliema nomurai in 2008~2011. The fishing cost of the set net fishery in Yeosu has increased gradually by the decrease of catch production and unexpected environmental change like as jelly fish blooming. The increase of fishing cost diminished net income and caused a negative impact in profitability. The lowest Fisheries ratio of gross profit to gross costs the set net fishery were appeared 60.2% in 2010, respectively. Bycatch was highest in 2008 and lowest in 2009. In general, the bycatch was occurred from May to July every year and when Scomber japonicus was most dominant in the catch price by bycatch had a advantage in the profit side. However, the catch increase of immature small fishes by the bycatch, which will bring about the decrease of fisheries resources. Finally, the present state in set net fisheries will act as a defect on the long-term management of fisheries resources.

고등어육 단백질 가열겔 물성에 대한 알카리 전해수세수 효과 (Effects of Electrolytic Alkali Water Washing on Mackerel (Scomber japonicus) Muscle Protein Heat Gel Rheology)

  • In this study, the alkiline water washing condition of mackerel(Scomber japonicus) dark meat was investigated to improve processing conditions of red muscle fish meat paste heating gel. Chemical alkaline water(CWM) and electrolytic alkiline water(EWM, pH 12) were used for washing the mackerel raw meat. Washed meats were minced with 2.5% salt and heated at $90^{\circ}C$/15 min to testing texture profile analysis. Moisture of CWM and EWM was increased with both washing times(p<0.05). Crude lipids and protiens were decreased with washing times. Lightness of chemical alkaline water washed mackerel heated paste gel(CWHPG) was higher than electrolytic alkaline water washed mackerel heated paste gel(EWHPG). Redness and yellowness were more decreased than control meats. Jelly strength of CWHPG and EWHPG was not increased more than 2 times wased meat and was increased with protein decrease. Texture profile analysis, max force1 of CWHPG and EWHPG was higher hardeness than the control meat except gel strains. From these results, it could be suggested that electric alkialine water washing is also effective in advance the red meat paste heating gel process of kamaboko industry.

오징어 내장유를 이용한 어육버거의 품질개선 (Quality Improvement in Fish Burger by Addition of Squid Viscera Oil)

  • 오징어 내장유를 식용자원으로 이용하기 위한 일련의 연구로서 젤라틴, 물 및 정제 오징어 내장유로 형성된 유화물의 첨가에 의한 어육버거의 품질개선을 시도하였다. 과산화물값, 갈변도, 헌터색조, 젤리강도 및 관능검사의 결과로 미루어 보아, 고등어버거의 기능성 개선을 위한 유화물의 적절한 첨가량은 마쇄한 고등어육에 대하여 6%로 판단되었다. 채육한 고등어육에 대하여 6%에 해당하는 유화물을 첨가하여 제조한 고등어버거는 휘발성 염기질소, 총균수 및 히스타민함량이 각각 19.0 mg/100g, $6.2{\times}10^4CFU/g$ 및 50.7 mg/100g으로 그 함량이 낮아 식품위생적으로 안전하다고 판단되었다. 유화물 첨가 고등어버거의 포화산에 대한 고도불포화지방산의 비율은 1.13이었다. 색조, 젤리강도, 지방산조성 및 관능검사를 측정한 결과 유화물 첨가에 의해 고등어버거의 색조, 조직감 및 지질의 기능성을 일부 개선할 수 있었다.

명태피 및 말쥐치피를 이용한 피교의 최적가공조건과 품질에 대하여 (CONDITIONS FOR ALASKA POLLACK AND FILE FISH SKIN GLUE PROCESSING AND THE QUALITY OF PRODUCT)

  • 수산물 가공시의 부산물인 어피, 어두 등을 보다 효율적으로 이용할 수 있는 방법을 검토하기 위하여 우선 어피를 원료로 피교를 가공할 때의 최적조건 및 제품의 이화열적 특성을 실험하고 아울러 제품의 구성아미노산을 분석한 결과를 요약하면 다음과 같다. 전 어체중량에 대한 피의 수율은 명태피가 $4.6\%$, 말쥐치피가 $5.0\%$였다. 명태피교 최적가공조건은 알칼리 용액 3시간, 침지용액의 알칼리농도 $0.1\%$, 첨가수량은 명태피 중량의 3배, 추출온도 $70^{\circ}C$, 추출 시간 3시간, 추출용액의 pH 5.0이었고, 말주치피교 최적 가공조건은 알칼리용액 침지시간, 침지용액의 알칼리농도, 추출농도, 추출시간 및 추출용액의 pH는 명태피교의 가공조건과 같이 첨가수량은 말쥐치피 중량의 5배였다. 일반성분 분석 결과 명태 및 말쥐치피교제품의 단백질 함량은 각각, $98.0\%,\;96\%$이었으며, 다른 일반성분 의 조성도 시판 gelatin과 비슷하였다. 명태와 말쥐치피교 제품의 점도는 5.84 및 5.79였고, 융점은 $21.8^{\circ}C$$25.0^{\circ}C$, 응고점은 $7.1^{\circ}C$$7.4^{\circ}C$이었고, jelly강도는 10.0g 및 11.6g이었다. 색도와 탁도는 명태피교 제품이 말쥐치피교 제품보다 약간 좋았다. 그리고 구성아미노산 조성으로 보아 추룰잔사도 사육원료로서 손색이 없었다. 또한 피교제품의 총아미노산에 대한 개별아미노산이 차지하는 비율은 시약급 gelatin과 거의 같았다.

  • The review of side dishes, oereal dishes and seasonings of the banquet on the 24th year of King Kojong in Chosun Dynasty were summarized as follows: 1. Ten kinds of soups(=Tang), that is Yyolguja Tang$.$Guja Tang$.$Keumjung Tang$.$Whanja Tang$.$Jap Tang$.$Gol Tang$.$Seunggiwa Tang$.$Jeopo Tang$.$Haesam Tang$.$Yang Tang were served. The most frequently served soup among them was Yyolguja Tang. 2. Various kinds of dried meat/fish were piled up most highly among dishes. Sliced beef and minced beef among dried meats, white cud$.$yellow cud$.$flatfish$.$skate$.$shark$.$octopus$.$dried abalone$.$cuttle fish$.$dried scallop were piled up together. 3. Sliced of boiled beef/pork and gelatined knuckles were assorted. Boiled meat which was made of beef, pork, lamb, liver, stomach, brisket and plat flank of caw was chiefly used for boiled beef, hams for boiled pork, mediumsized lamb for boiled lamb. And the legs and stomach of caw, old chicken, mullet were used for gelatined knuckle. 4. Three kinds of pan-frying dishes that was stomach and liver of caw, and mullet were usually piled up, If one kind in one dish, sea cucumber and mullet were used respectively. 5. Boiled abalone was dried abalone with soaked, sliced and boiled down in soysauce. 6. Roasted dish was usually made of assorted food stuffs. Sometimes chicken an pheasant was used for roasted dish. 7. Steamed dish was like this : assorted beef, fresh abalone, sea cucumber, mullet, young pork, chicken, dried abalone. 8. Raw dish was made of intestine of caw, fresh abalone and mullet. 9. Poached egg was serving decorated with red pepper, pine-nut and green onion. 10. Seasoned green-been-jelly was served only one time. 11. Radish kimchi was served only one time. 12. Chief foods were nuddle and stuffed bun. 13. Served seasings were honey, mustard, soysauce with vinegar, salt. Review from banquet menu, 34 kinds of side dishes were served : 10 kinds of soup, dried fish/meat, boiled beef, boiled pork, gelatined knuckle, 5 kinds of panfrying, boiled-down-abalone in soysauce, 3 kinds of roast, 5 kinds of steamed, 3 kinds of raw dishes, pouched egg, green-bean-jelly, kimchi. 4 kinds of chief foods were served : nuddle, dry nuddle, 2 kinds of dumping.

어묵의 동결안정성에 변성전분이 미치는 영향 (Effect of Modified Starch on the Frozen Storage Stability of Fish Cake Eomuk)

  • We investigated the effect of the modified starch [physical treatment, acetate (SA-1, SA-2, and SA-3), hydroxypropyl (HS), and acetylated distarch adipate] content on the physicochemical properties of fish cakes, called Eomuk in Korea, during storage at -20℃. When wheat flour (native starch, NS) was used, the moisture content decreased during frozen storage, resulting in a lower water-holding capacity and higher expressible drip. Compared with NS, adding modified starch had a lower effect on the moisture content during frozen storage. The water-holding capacity and expressible drip differed with the type of modified starch added. The expressible drip was lowest with HS; the SA-3 and HS modified starch were whiter than NS. Therefore, HS and SA-1 are suitable additives to improve the quality of frozen fish cakes.

  • To analyze food material and table wares in daily reception dishes of Choson Dynasty, studied historic book 'Young jeob Dogam Zabmulsek Euigwae' (1609, 1643 year) described the daily reception dishes for Chinese envoy in Choson Dynasty. The results obtained from this study are as follows. 1. Food material for reception Chinese envoy were vegetable, pickled vegetable, soup (?水), brown seaweed, kelp, green seaweed, garlic, pine mushroom, mushroom, driedfish, fish egg, shrimp, pork, pheasant, fowl, salted fish shrimp and etc, various fruits preserved in honey, green peajelly, buck wheat jelly and bean curd. 2. The table wares were rice bowl(鉢里), small bowl of porcelain(甫兒), water bowl(大貼), plate(貼是), small dish(鍾子), small earthen ware jar(東海), jar(缸), pottery(甕), table(盤), chopsticks(?), washbowl(洗面盆), earthen ware steamer(甑), kettle(釜), brazier(爐), measuring cup(升), unit of measure(合), meter(稱子), spoon(匙), chest (函), lid(蓋), large rice bowl(所羅) and bowl(椀).

어피젤라틴의 최적 추출조건 및 그 물성 (Optimum Extraction Conditions of Gelatin from Fish Skins and Its Physical Properties)

  • 수산물 가공공장에서 대량으로 폐기되고 있는 어피를 유용하게 산업적으로 이용하기 위하여 어피로부터 젤라틴 제조를 위한 추출조건에 대하여 검토하였다. 아울러 최적 조건하에서 제조한 여피젤라틴의 물리적 특성, 분자량 및 아미노산 조성 등을 시판 젤라틴의 그것들과 비교 검토하였다. 어피젤라틴의 추출조건은 침지용액인 수산화칼슘농도 1.0~1.5%(w/v), 첨가수량 6~7배, 온도 $40{\sim}50^{\circ}C$ 및 추출시간 5시간이었으며, 이 조건하에서 명태피로부터 추출된 젤라틴의 수율이 대구피 및 각시가자미피로부터 추출한 젤라틴의 수율보다 높았다. 어피젤라틴의 중금속 함량은 시판 젤라틴의 중금속 함량보다 적었으며, 어피젤라틴의 물성면에서 젤리강도, 전기전도도는 시판 젤라틴보다 낮았지만, 점도 및 등전점은 시판 젤라틴보다 높았다. 어피젤라틴의 아미노산 조성 중 glutamic acid, serine, threonine, methione 및 cysteine의 함량은 돈피 및 우피의 아미노산 함량에 비해 높았지만, proline 및 hydroxyproline의 함량은 낮았고, 그외의 아미노산 함량은 거의 비슷하였다.

The culture conditions for the mycelial growth of Auricularia auricula-judae

  • Auricularia auricula-judae is an edible mushroom, which is known as wood ear, free ear, black ear mushroom, and free jelly fish. This study was carried out to obtain the basic information for mycelial culture conditions of Auricularia auriculajudae. According to colony diameter and mycelial density, the media for suitable mycelial growth were PDA and MCM. The optimum temperature for mycelial growth was $25{\sim}30^{\circ}C$. Carbon and nitrogen sources were mannose and malt extract, respectively. The optimum C/N ratio was in the range of 10 to 1 with 2% glucose. Other minor components for the optimal growth were thiamine-HCl and biotin as vitamins, succinic acid and lactic acid as organic acids, and $MgSO_4{\cdot}7H_2O$ and $KH_2PO_4$ as mineral salts.

조선시대(朝鮮時代) 궁중음식중(宮中飮食中) 찬물류(饌物類)의 분석적(分析的) 연구(硏究) (An analytical Studies on Side Dishes in the Royal Parties of Yi Dynasty)

  • This study was designed to establish Korean food culture by analizing 17 sets of Jinyounuigue(진연의궤) Jinchanuigue(진찬의궤), and Jinjarkuigue(진작의궤) which were the records of royal party procedures in Yi dynasty. Side dishes were classified into 20 groups in this study ; Tang (場) 19, Jungol (전골) 3, J'im 18, Jun (전) 20, Jock 14, Pyunuk (片肉) 14, Cho 12, Hyae 17, Po 8, Chae 3, Bung 1, Nanri 1, Sooran 1, Sookran 1, Jaban 1, Kimchi 2, etc. all of 140 different kinds of side dishes. There was no tendency in omission or addition of food materials. Food materials were beef, pork, lamb, chicken, duck, peasant meat, dock's egg, fish, shellfishes, mollusca, curstacea, seaweeds, vegetables, fruits, beancurds, muk (a starch jelly), d'ock, muchrooms, etc. Seasonings were soysauce, pepper, sesame oil, ginger, green-onion, garlic, bean paste, ginger powder, red pepper powder, red pepper paste, salts, vinegar, honey, sesame power, etc.
