To assess diet quality by food group intake and to investigate the interrelationship of age, dietary diversity score(DDS), dietary variety score(DVS), dietary frequency score(DFS), food group intake and nutrient intake with food group intake, a dietary survey was conducted with 176 preschool children aged 1 to 6 in Busan using a 24-hr recall method. Food group intake was assessed by food number consumed and intake frequency by six food groups(grain, meat, vegetable, fruit, dairy, sweets group). The mean food numbers consumed and intake frequencies by six feed group were 3.1 and 4.0 in the grain group, 3.6 and 4.0 in the meat group, 3.5 and 4.1 in the vegetable group, 1.0 and 1.1 in the fruit group, 1.3 and 1.5 in the dairy group, 1.4 and 1.4 in the sweets group respectively. As age increased, the intake frequency of the grain group(p<0.05) increased but that of the dairy group(p<0.05) decreased significantly. The DVS and DFS didn't show significant correlations with intake frequency of the dairy group. The grain group intake had significant positive correlations with intakes of the meat, vegetable, and fruit groups. The vegetable group intake had signigicant positive correlations with intakes of the grain and meat groups. The dairy group intake had significant positive correlation with sweets group intake but negative correlations with intakes of the grain and vegetable groups. As the intake frequency of the meat group increased, the NAR(nutrient adequacy ratios) of all nutrients and NAR(mean adequacy ratio) increased significantly. NARs of provein iron, vitamin B$_1$, niacin had the highest correlation with the meat group intake and those of protein, calcium, phosphorous, and vitamin B$_2$ had the highest correlation with the dairy group intake. NARs of vitamin A and vitamin C had the highest correlation with intake of the vegetable and fruit groups respectively. The consumption of a wide variety of food groups is considered one of the key components of nutritional adequacy. The 2005 Dietary Guidelines for Koreans includes the consumption of a variety of foods from diverse food groups as a component of a normal diet. A survey was conducted to evaluate the relationship between the dietary diversity of food groups and nutrient intake in elderly patients (age 65 and above) at a rural area in Korea (Inje). 296 subjects (111 male and 185 female) were probed in a 3 day 24-recall dietary survey. Subjects were grouped according to food group intake frequency, based on six food groups (grain, meat/fish/legume/egg, vegetable, fat/oil, dairy, fruit). Nutritional quality was evaluated according to the numbers of nutrients under EAR (Estimated Average Requirements), and MAR (mean adequacy ratios). The frequency of elderly subjects consuming a meat/fish/legumes/egg food group less than once per day was 29.4%. The frequency of elderly subjects consuming fat/oil food group less than once per day was 65.8%. The percentage of subjects who did not eat dairy food was 88.8%, and that of subjects who did not eat fruit was 57.5%. A stepwise multiple regression analysis was used to develop models relating nutritional quality to possible food group intake frequency factors. Using the number of nutrients under EAR as a dependent variable, the meat/fish/legume/egg food group intake frequency explained 9.9% of variance, followed by the grain group, fat/oil group, dairy group, and vegetable and fruit group (Model $R^2$=0.260). For mean nutrient adequacy ratio as a dependent variable, the model $R^2$ was 0.326. The results of this study suggest that a highly varied diet in elderly might be associated with better nutritional quality, as assessed by nutrient intake. Accordingly, dietary guidelines should take into consideration nutritional characteristics in order to improve intake from all major food groups and to provide a variety of foods in the diet.

So nutritional education is needed in order to decrease sodium intake especially from food intake of vegetable group when preschool children have less food intake of diary group,.
The objective of school lunch program is make a student to understand the basic knowledge on the diet through improved food patterns. Diet is an important factor in the development of dental caries. Generally, snack foods contain much sugar and cause dental caries to children. The diet education in the school lunch program should involve the control of snack food intake. In this study, the anlysis of influence of school lunch program on the cariogenic snack food intake of school children was carried out. The questionarie was given to 1,441 sixth-grade children of 5 school lunch group and 1,443 sixth-grade children of 5 non-school lunch group in Pusan on the intake of snack foods and toothbrushing after meals. Its were as follows : 1. No differences were observed snack food intake per day between school lunch group and non-school lunch group. 2. The snack food intake frequency at home in school lunch group was more frequent than that of non-school lunch group. However, in school, the result was reverse. 3. No difference was observed the frequency between school lunch group on the intake of cariogenic, foods, detergent foods, protective foods, cariogenic foods alone and cariogenic and detergent foods between meals. 4. The frequency of toothbrushing per day and the ratio of toothbrushing after meals in school lunch group was a little higher than that of non-school lunch group. 5. No difference was observed on the ratio of toothbrushing after snack food intake between school lunch group and non-school lunch group. 6. The influence of school lunch program on the cariogenic food intake in school children was little significant for its goodness. 7. The improvement of education on snack food take and toothbrushing after meals to shool children was recommended.

This study investigated the nutrition knowledge, dietary habits, and food intake frequency according to hospitalization after breast cancer surgery and experience of breast cancer among female adults residing in the Bucheon area. Subjects were 52 female breast cancer survivors 27 in the hospitalization group (HG) and 25 in the non-hospitalization group (non-HG)] and 52 controls. Data included the results of self-administered questionnaires, as well as anthropometric data and blood biochemical values of breast cancer survivors collected from electronic medical records. Statistical analysis was performed using SPSS 20.0 program. Nutrition knowledge and dietary habits revealed no significant differences between HG and non-HG, but intake frequency of root and tuber crops and kimchi was significantly higher in the HG group than the non-HG group (p<0.05). According to experience of breast cancer, total scores of nutrition knowledge among survivors (8.2) were significantly higher than those of the control group (6.3) (p<0.001). Fish and shellfish and fruit intake frequencies were significantly higher in the survivors group, whereas intake frequency of fast food, convenience food, and alcohol was significantly lower compared to the control group. Overall, these findings indicate it is necessary to develop and spread nutrition education guidelines to prevent the occurrence and recurrence of breast cancer.
This study was conducted to provide basic information on toothbrushing habits, snack intake frequency, and current dental caries in elementary school students. A total of 188 students (105 boys and 83 girls) in Changwon city participated in this study. Dental examination was conducted by two dental hygienists in July, 2010. The results were as follows. Exactly 86.2% of students were shown to have dental caries, which includes a sealant and removed teeth due to decay. The average number of teeth with dental caries per student was 3.8. Exactly 60.6% of students were shown to maintain correct toothbrushing habits to prevent dental caries, but only 12.8% brushed their teeth immediately after a meal or snack. Exactly 82.4% percent of participants received toothbrushing education, 47.1% of them received it from an expert, 43.9% received from their parents, and 28.2% used tooth paste with fluorine. Regarding snack intake frequency, ice cream was the most consumed cariogenic food and white milk was the most consumed protective food. The >=7 teeth with dental caries group consumed higher frequency of carbonated beverages intake than the 'no dental caries' group (P<0.05), and the '5~6 teeth with dental caries' group consumed higher frequency of chocolate intake than 'no dental caries' group (P<0.05).

Validation of a food frequency questionnaire (FFQ) utilising a short-term measurement method is challenging when the reference method does not accurately reflect the usual food intake. In addition, food group intake that is not consumed on daily basis is more critical when episodically consumed foods are related and compared. To overcome these challenges, several statistical approaches have been developed to determine usual food intake distributions. The Multiple Source Method (MSM) can calculate the usual food intake by combining the frequency questions of an FFQ with the short-term food intake amount data. In this study, we applied the MSM to estimate the usual food group intake and evaluate the validity of an FFQ with a group of 333 Korean children (aged 3-6 y) who completed two 24-hour recalls (24HR) and one FFQ in 2010. After adjusting the data using the MSM procedure, the true rate of non-consumption for all food groups was less than 1% except for the beans group. The median Spearman correlation coefficients against FFQ of the mean of 2-d 24HRs data and the MSM-adjusted data were 0.20 (range: 0.11 to 0.40) and 0.35 (range: 0.14 to 0.60), respectively. The weighted kappa values against FFQ ranged from 0.08 to 0.25 for the mean of 2-d 24HRs data and from 0.10 to 0.41 for the MSM-adjusted data. For most food groups, the MSM-adjusted data showed relatively stronger correlations against FFQ than raw 2-d 24HRs data, from 0.03 (beverages) to 0.34 (mushrooms). The results of this study indicated that the application of the MSM, which was a better estimate of the usual intake, could be worth considering in FFQ validation studies among Korean children.
The purpose of this study was to investigate the effects of alcohol intake on nutritional intake status among the college students. The subjects were divided three groups; no-alcohol group(n=78), alcohol group(n=113), and high-alcohol group(n=82) according to intake and frequency of alcohol. And they were observed characteristics of alcohol drinking, dietary behavior and attitude, and nutrient intakes using questionnaires. The frequency of skipping meals in breakfast in high-alcohol group were higher than in other two groups(p<0.01). There were no significant differences in frequency of skipping meals of lunch and supper, reason why skipped meals, and total score of dietary attitude among three groups. However, the score of dietary attitude about no heavy drinking and smoking in high-alcohol group was higher than in other two groups(p<0.01). There were significant difference in vitamin B2 intake, alcohol intake, and energy intakes from carbohydrate, lipid, and alcohol among three groups(p<0.05, p<0.05, p<0.01, p<0.05, p<0.05). Compared energy intake of high-alcohol group with other two groups, intake from carbohydrate was low and intakes from lipid and alcohol were high. In the nutrient density, plant protein and carbohydrate in no-alcohol group, lipid and vitamin B2 in alcohol group, and animal lipid in high-alcohol group were highest among three groups. NAR and MAR were not significant difference among three groups except that NAR of P in alcohol group is highest among three groups(p<0.05). In conclusion, students high consuming alcohol have unhealty dietary behaviors in the light of high frequency of skipping breakfast, undesirable dietary attitude of alcohol drinking and smoking, and low energy inake from diet. Therefore, this results should be considered in meal management and nutritional education for student of high alcohol consumption.
The purpose of this study was to identify dietary factors related to the incidence of diabetes mellitus in Korea. The study consisted of 165 diabetic patients, male and female, aged 30 to 70 years and 198 healthy persons as controls. Diabetic patients who had been diagnosed with diabetes mellitus for less than five years before the study period were recruited from eight different hospitals located in Seoul, Korea. Socioeconomic status, state of illness, physical activity, food habits and food intake were assessed. Food intake was assessed by food frequency questionnaire method using a 105-food frequency questionnaire developed for diabetic patients. The stress and activity indices of diabetic patients were not significantly different from control, but alcohol consumption and smoking levels were higher in diabetics than controls. Other diseases of male diabetic patients included liver diseases, digestive system diseases, and hypertension, while those of female diabetics were hypertension, neuralgia, arthritis and digestive system diseases. These disease patterns are different from Western countries whose most common complications are hypertension and hyperlipidemia. More irregular and less varied meals were found in the diabetic group compared to the control group, suggesting that diabetic patients have generally undesirable food habits. Otherwise, food and nutrient intake of diabetics did not differ greatly from the control group. It was found that diabetic patients consumed more cereals and less fruit than the control group, and also that male diabetics consumed more alcohol. The carbohydrate : protein : fat energy distribution ratio was 61.7 : 15.8 : 22.5 in male patients and 65.1 : 14.9 : 19.7 in female patients. Discriminant analysis showed that diabetes risk factors differed with sex. In male patients, the important factors were body mass index(BMI), vitamin C intake, family diabetic history and vegetable intake, while in female patients they were BMI, cereals intake, carbohydrate intake, vitamin C intake, stress, food habits and Ca intake. These results show that excessive intake of energy and fat are not the major causal factors in Korean NIDDM. Therefore, the diabetes risk factors of Western countries may not directly apply to Koreans. Mors study is needed to clarify the risk factors of Korean NIDDM.
Objectives: Korean elderly people are known to consume diets high in carbohydrates low in vegetables compared to other age groups. This study evaluated the chronic disease risks and nutritional status in this group based on the percentage of energy from carbohydrates and the frequency of vegetable intake. Methods: Using the 2007~2009 Korean National Health Nutrition Examination Survey data, except those who were undergoing treatment for chronic disease, final 1,487 subjects aged 65 and older were divided into 4 groups: moderate carbohydrate energy ratio of 55~70% and low frequency of vegetable intake defined as less than 5 times per day (MCLV), moderate carbohydrate ratio and high frequency of vegetable intake more than 5 times (MCHV), high carbohydrate energy ratio above 70% and low frequency of vegetable intake less than 5 times (HCLV), and high carbohydrate ratio and high frequency of vegetable intake more than 5 times (HCHV). All data were analyzed after the application of weighted value, using a general linear model or logistic regression. Results: More than half of Korean elderly consumed diets with HCLV, and this group showed poor nutritional status and lower frequency of intake of most food items, but with no risk of chronic disease such as diabetes, obesity, hypertension, cardiovascular disease or anemia probably due to low intake of energy. On the contrary, MCHV group with a high percentage of energy from fat and protein showed the highest intake of energy and most nutrients, the highest frequency of intake of most of food items and a tendency of high risk of abdominal obesity, being followed by the MCLV group. Meanwhile, HCHV group showed a tendency of high risk of hypertension, followed by HCLV group with low frequency of intake of vegetables compared with the two moderate carbohydrate groups. Conclusions: The results suggested that the percentage of energy from carbohydrate and the frequency of vegetable intake affected the nutritional status, but not significantly affected the risk of chronic disease in Korean elderly. Further studies using more detailed category of % energy from carbohydrates and of type and amount of vegetables with consideration of individual energy intake level, excessive or deficient, are needed to confirm the results.
