문헌에 나타난 열무김치 및 열무물김치 제조 방법의 표준화 (Standardization of Manufacturing Method of Young Radish Kimchi (Yulmoo Kimchi) and Young Radish Watery Kimchi (Yulmoo Mool-Kimchi) in Literatures)

  • 조리서 및 문헌을 통해 열무김치 및 열무물김치의 재료배합비 및 제조방법을 표준화하였다. 열무김치의 표준화과정에서 열무 이외에 사용빈도수가 50%이상인 부재료는 파와 홍고추였으며, 양념류로는 고춧가루, 마늘, 생강, 젓갈이 이에 속했다. 또한 재료 및 양념의 배합비는 절인 열무 100g에 대해 파 8.0$\pm$3.8, 마늘 2.5$\pm$1.3, 생강 1.6$\pm$0.7, 홍고추 7.0$\pm$1.7, 고춧가루 4.2$\pm$1.2, 젓갈 3.7$\pm$0.5로 나타났다. 열무물김치의 표준화과정의 경우, 사용빈도수가 50%이상인 부재료로는 풋고추, 홍고추, 파가, 양념류로는 마늘, 생강, 전분이 이에 속했으며, 열무물김치의 재료배합비의 표준화는 첨가된 물의 양을 기준으로 하였다. 즉, 물 100 mL에 대해 절인 열무 50.6$\pm$10.8, 파 3.3$\pm$1.3, 풋고추 3.3$\pm$1.9, 홍고추 2.4$\pm$1.3, 마늘 3.0$\pm$0.7, 생강 $1.5\pm$0, 전분 $1.5\pm$0.6의 비율로 나타났다.

  • The review was conducted to organize the desirable salting process from the literatures. In this study the principle of salting and effects of physicochemical changes in salting and salting factors such as cultivars of baechu(Chinese cabbage), concentration of salt, salting temperature, pH condition for salting and quality of kimchi were studied. The method of salting standard, treatment techniques in salting, and selection and mixture ratio of sub-ingredients were also reviewed. In future studies greater attention should be paid to salting and fermentation of kimchi.

Effects of Fat Sources and Energy to Protein Ratio on Growth Performance and Carcass Composition of Chicks

  • Three hundred and twenty-four 1 day old chicks were used to determine the effects of fat source and energy to protein ratio on growth performance , carcass composition and the efficiency on nutrient utilization. Chicks were assigned. in a completely randomized design, to 3*3 factorial arrangement of treatments. Chicks received one of three fat sources (n0 fat, tallow, corn oil) and one of three energy to protein ratios(16, 14 and 12kcal ME/g CP). All diets were formulated to be isocaloric(3.2Mcal ME/kg diets) using published ME values for the diet ingredients. Addition of tat to the diet increased ADG, average daily feed intake, and gain to feed, Chicks fed diets containing fat had increased percentage body DM and ether extract(EE), but percentage CP was not different, Chicks fed diets containing fat had increased efficiency of protein and energy deposition. Addition of fat ad either fallow or corn oil yielded similar results. Reducing the energy to protein ratio of the diet did not affect ADG or gain to feed, but tended to decrease average daily feed intake(p=0.80), as well as resulting in linear(p<0.05) reductions in body percentage DM., EE and also total EE. Increasing the energy to protein ratio did not affect percentage or total body Cp. Adding fat to poultry diets improved growth performance and the efficiency of growth chicks. Decreasing the energy to protein ratio did not affect growth performance, but reduced EE in the body of Chicks.

Chewing Activities of Selected Roughages and Concentrates by Dairy Steers

  • To evaluate the chewing activity of ruminant feeds, four Holstein steers (average body weight $742{\pm}15kg$) were employed. Experimental feeds were four roughages ($NH_3$-treated rice straw, alfalfa hay, corn silage, orchard grass hay) and four concentrate ingredients (cotton seed hull, beet pulp pellet, barley grain, oat grain). Regarding palatability for each experimental feeds which was overviewed during the adjustment period, animals were fed roughages alone, but with 50% $NH_3$-treated rice straw ($NH_3$-RS) for concentrate ingredients. Therefore, all the data for concentrate ingredients was derived by extracting the result per unit obtained from steers fed $NH_3$-RS alone. The experiment was conducted using a 4${\times}$4 Latin square designs for roughages and concentrate ingredients. Experimental feeds were fed during a 10 d adaptation and 2 d chewing data collection during each experimental period. Animals were gradually adjusted to the experimental diet. Dry matter intake (DMI) was restricted at a 1.4% of mean body weight (10.4 kg DM/d). Time spent eating and eating chews per kilogram of DMI were greatest for beet pulp pellet, and lowest for barley grain (p<0.05). Time spent rumination per kilogram of DMI was greatest for $NH_3$-RS, cotton seed hull and orchard grass, but rumination chews were greatest for cotton seed hull and orchard grass except $NH_3$-RS (p<0.05). Roughage index value (chewing time, minute/kg DMI) was 58.0 for cotton seed hull, 56.1 for beet pulp pellet, 55.5 for $NH_3$-RS, 53.1 for orchard grass hay, 45.9 for corn silage, 43.0 for alfalfa hay, 30.0 for oat grain, and 10.9 for barley grain. The ratio of rumination time to total chewing time (eating plus ruminating) was about 72% for the roughages except corn silage (66.9%), and followed by cotton seed hull (69.5%), and ranged from 49.5% to 52.9% for other feeds. Higher percentages of rumination in total chewing time may be evidently indicate the characteristics of roughage. Therefore, this indicate that the chewing activity of concentrate ingredients can be more fully reflects by the ruminating time than total chewing time (RVI), although it is reasonable to define the RVI for roughages.

Effect of High Phytase Inclusion Rates on Performance of Broilers Fed Diets Not Severely Limited in Available Phosphorus

  • Phytate is not only an unavailable source of phosphorus (P) for broilers but it also acts as an anti-nutrient, reducing protein and mineral absorption, increasing endogenous losses and reducing broiler performance. The objective of this study was to investigate the anti-nutritional effects of phytate by including high levels of phytase in diets not severely limited in available P. A total of 768 male Arbor Acres broilers were distributed in six treatments of eight replicate pens of 16 birds each consisting of a positive control diet (PC), positive control with 500 FTU/kg phytase, negative control (NC) diet with lower available P and calcium (Ca) levels and the same NC diet with 500, 1,000 or 1,500 FTU/kg phytase. Body weight gain (BWG), feed intake (FI), feed conversion ratio (FCR) and mortality were determined at 21 and 35 d of age while foot ash was determined in four birds per pen at 21 d of age. FI, FCR and foot ash where not affected by the lower mineral diets at 21 d of age nor by the enzyme inclusion but broilers fed lower Ca and available P diets had lower BWG. At 35 d of age no difference was observed between broilers fed the positive or NC diets but broilers fed 500, 1,000 and 1,500 FTU/kg on top of the NC diet had better FCR than broilers fed the positive control diet. When compared to birds fed a diet adequate in P, birds fed the same diet included with 500, 1,000 and 1,500 FTU/kg of phytase in marginally deficient available P and Ca diets had an improvement of performance. These results support the concept that hydrolysing phytate and reducing the anti-nutritional effects of phytate improves bird performance on marginally deficient diets that were not covering the P requirement of birds.

Calcium Digestibility and Metabolism in Pigs

  • Calcium (Ca) and phosphorus (P) are minerals that have important physiological functions in the body. For formulation of diets for pigs, it is necessary to consider an appropriate Ca:P ratio for an adequate absorption and utilization of both minerals. Although both minerals are important, much more research has been conducted on P digestibility than on Ca digestibility. Therefore, this review focuses on aspects that are important for the digestibility of Ca. Only values for apparent total tract digestibility (ATTD) of Ca have been reported in pigs, whereas values for both ATTD and standardized total tract digestibility (STTD) of P in feed ingredients have been reported. To be able to determine STTD values for Ca it is necessary to determine basal endogenous losses of Ca. Although most Ca is absorbed in the small intestine, there are indications that Ca may also be absorbed in the colon under some circumstances, but more research to verify the extent of Ca absorption in different parts of the intestinal tract is needed. Most P in plant ingredients is usually bound to phytate. Therefore, plant ingredients have low digestibility of P due to a lack of phytase secretion by pigs. During the last 2 decades, inclusion of microbial phytase in swine diets has improved P digestibility. However, it has been reported that a high inclusion of Ca reduces the efficacy of microbial phytase. It is possible that formation of insoluble calcium-phytate complexes, or Ca-P complexes, not only may affect the efficacy of phytase, but also the digestibility of P and Ca. Therefore, Ca, P, phytate, and phytase interactions are aspects that need to be considered in Ca digestibility studies.

고강도 콘크리트의 탄성계수에 미치는 배합재료의 영향평가 (Effect of Mix Ingredients on Modulus of Elasticity of High-Strength Concrete)

  • 콘크리트 구조물의 설계 덴 해석에 있어서나 구조물 처짐 제어에 있어서 가장 중요한 재료적 변수는 탄성계수이다. 일반적으로 탄성계수는 실용적 측면에서 측정이 용이한 단위중량과 압축강도만의 함수로써 간략하게 정의되고 있다. 그러나 이러한 회귀식들은 대부분 실험자료에 대한 평균적인 의미이므로 매우 많은 불확실성이 포함되어 있어 지금까지 제시된 많은 규준식 및 실험식들이 다소의 차이가 있다. Fig. 1에서와 같이 이러한 식들은 압축강도와 탄성계수사이의 큰 상관성이 있음을 잘 나타내고 있으나, 동일한 압축강도에서 탄성계수는 크게 분산된 값으로 측정됨을 알 수 있다. 본 연구에서는 고강도 콘크리트 영역에서 탄성계수에 미치는 배합변수들의 영향을 통계적 기법을 이용하여 분석하고 이를 통하여 동일한 압축강도에서 최대의 탄성계수를 얼기 위한 방안을 구명하였다.

전기적인 촉진시험에 의한 콘크리트의 염화물이온 확산특성 (The Diffusion Property of Chloride Ion into Concrete by Electrically Accelerated Method)

  • 최근 들어 대형 해양콘크리트 구조물의 건설이 빈번해짐에 따라 콘크리트의 염화물이온확산계수를 정확히 평가할 필요성이 대두되고 있으나, 콘크리트의 염화물이온 확산계수 평가는 장시간이 소요되는 단점 때문에 전기화학적인 전위차 촉진에 의해 단시간에 염화물이온의 확산계수를 추정하기 위한 여러 촉진 시험방법들이 제안되고 있으나 이에 대한 체계적인 연구가 아직은 미비한 실정이다. 따라서 본 연구에서는 시멘트의 성분이 다른 3종류의 시멘트를 대상으로 대표적인 3가지 전기적인 촉진시험에 의해 콘크리트중의 염화물이온의 침투 및 확산특성을 평가하고 이 방법간의 상관성을 분석하였다. 평가결과 시멘트의 성분에 따라 염화물이온의 확산특성은 크게 달라졌으며, 그 중 고로 슬래그 미분말과 플라이애시를 일정비율로 혼합한 3성분계 시멘트의 확산특성이 가장 우수하였으며, 염화물이온 확산 특성은 결과로부터 시험방법간의 상관성은 양호한 것으로 나타났다.

주재료에 따른 조선시대 떡류의 문헌적 고찰 (A Literature Review on the Types of Joseon Dynasty Tteok (Korean Rice Cake) according to its Main Ingredient)

  • This article examines the types of tteok (Korean rice cake) recorded in 21 old literatures of the Joseon dynasty (1392-1909) according to its main ingredients. Tteok varieties of the Joseon dynasty were categorized into jjin-tteok, chin-tteok, jijin-tteok, salmeun-tteok and guun-tteok and their changes in cooking method were discussed from the early to late eras of the Joseon dynasty. These can be summarized as follows. In the early, middle and late eras of the Joseon dynasty, there were 1, 15 and 84 kinds of tteok using non-glutinous rice as the main ingredient, and 6, 24 and 120 kinds using glutinous rice, respectively. Tteok using wheat flour was not found in the early Joseon dynasty, whereas 6 and 32 kinds were found in the middle and late eras, respectively. There were 1, 4 and 5 kinds of tteoks using buckwheat, and 5, 11 and 19 kinds using other ingredients such as yam, barley, elephant's ear, oat, and arrowroot flour, in the early, middle and late eras, respectively. The frequency of the main ingredient increased in the order of glutinous rice>non-glutinous rice>wheat flour>other ingredient>buckwheat flour during the Joseon dynasty and the ratio of tteoks using non-glutinous and glutinous rice flours was 1:1.5. The number and types of tteok were noted to increase abruptly throughout the Joseon dynasty. This may be associated with the commercial industrial development that prevailed in the late Joseon dynasty. Further study will be conducted on their recipes and ingredients recorded in these old literatures to develop a standardized recipe for the globalization of tteok.

OPB, a water extract from Rehmannia glutinosa Libosch and Eleutherococcus senticosus Max, inhibits osteoclast differentiation and function

  • We performed the present study to investigate whether Rehmannia glutinosa Libosch (RG) extracts (RGX) and Eleutherococcus senticosus Max (ES) extracts (ESX) play any roles in bone metabolism. We examined cellular activities of bone cells by measurement of osteoblastic cell viability, osteoprotegerin (OPG) secretion from osteoblasts, osteoclastogenesis, and osteoclastic activity. There is no cytotoxicity from osteoblasts after treatment with RGX and ESX. The secretion of OPG from the osteoblasts showed marked increases after treatment with RGX and ESX. In addition, RGX and ESX treatment decreased the number of tartrate-resistant acid phosphatase-positive multinucleated cells and the resorption areas. RGX and ESX, when mixed at optimal ratios, induced synergic effects, in vitro. OPB, which showed synergic effects, is the extract of natural ingredients RG and ES mixed at a raw material weight ratio of 4 : 1. It can be suspected that extracts of RG and ES mixtures contains active ingredients involved in bone tissue metabolism and may be effective in improving osteoporosis.
