Adsorptions Isotherm of Water Vapor for Infant Formula Milk Powders and Calculation of Isosteric Heat (저장온도에 따른 복합조제분유의 등온흡습곡선 및 흡습엔탈피 산출)

  • Adsorption isotherms of water vapour for infant formula milk powders manufactured by P. M. and N company in Korea were measured at temperatures between 20, 30 and 40$^{\circ}C$ using COST-90 modified method. Results showed that the isotherms were sigmoidal in shape. The adsorption isotherms of milk powder were depending on the temperature and products. The BET-model were applied and analyzed to compare the experimental value. It was found that the BET-model is fitted with measuring data. Sample P showed the lowest monolayer value and sample N showed the highest. Isosteric heat obtained upon application of BET-model was calculated in this field of temperature using the Clausius-Clapeyron equation. It is suggested that the usage of the BET-model to estimate the heat of water sorption in infant formula milk powder should be in agreement with the results from COST-90 project.

A Survey on Nutrient Intakes by Infant Formula and Supplemental Foods of Formula-Fed Infants (인공영양아의 조제유 및 이유식 섭취에 따른 영양소섭취 실태조사)

  • This study was to investigate the nutrient intakes from infant formula and supplemental foods of 129 infants(boys 69, girls 60) fed formula, aged from 5 to 12 months. Subjects were divided into $5{\sim}6\;months,\;7{\sim}8\;months,\;9{\sim}10\;months,\;and\;11{\sim}12\;months$ by ages. Dietary assessment was carried out by using 24-hour-recall method. The average intakes and feeding frequency of infant formula were $702m{\ell}$, 4.4 times in boys and $815m{\ell}$, 4.8 times in girls, respectively. Supplemental foods were introduced at the age of $4{\sim}6\;months$ in 86% of the infants. Foods introduced first as the supplemental food were rice gruel soup, commercial weaning foods, fruit juice. Energy intakes were similar to RDA. Daily intakes of calcium at all age groups were higher than the RDA, therefore, calciun overnutrition were elucidated. Average intakes of protein, phosphorus, iron, zinc, vitamin A, vitamin $B_1,\;vitamin\;B_2$, niacin, vitamin $B_6$, vitamin C were above RDA, folate did not meet RDA of infants at all ages. In conclusion, the average status of nutrient intakes of infants was fairly good, however, nutrient intakes from supplemental foods were lower in girls than in boys of $10{\sim}12$months, and folate status seemed to be poor. Therefore, mothers feeding infant formula to their infants should be educated for the importance of supplemental foods and its practice to support good nutrition.

A Study of the Influence of Environmental Factors and Factors Associated with Feeding on Infants' Growth (영아의 성장발육에 영향을 미치는 환경요인 및 섭식관련 요인에 관한 연구)

  • This study was aimed to evaluate any influence of environmental factors associated with feeding on infants' growth. One hundred infants(62 males and 38 females) aged 4-9 months were measured for length and were weighed. Their mothers were interviewed using questionnaires including general and environmental characteristics and maternal feeding attitude, ideal body habitus, infant's food behavior, and infant's food behavior, and infant's temperament. A further study was conducted on 29 infants at the time their ages reached 12 months. Their dietary intakes were assessed, and blood hemoglobin and serum ferritin concentrations were measured. Z-scores of weight-for-age(WAZ) and Z-scores of height-for-age(HAZ) of 4-9 month- old infants were not correlated with age, education level, income, weight, and height of their parents. Formula-fed infants had significantly lower WAZ and body mass index (BMI) than those of breast fed infants. WAZ was significantly correlated with maternal feeding attitude, but not with ideal body habitus, infant's food behavior or infant's temperament. WAZ of 12-months after birth because of supplementary foods introduced from 6 months of age. WAZ and BMI were positively correlated with blood hemoglobin concentration. Therefore, to ensure proper growth of infants, efforts should be given to postental factors such as breast-feeding, maternal feeding attitude, adequate iron status as well as prenatal factors. Preparation of Semi-solid Infant Foods Using Sweet-pumpkin (단호박을 이용한 반고형 이유식의 제조)

  • This study was conducted to develop semi-solid infant foods using pumpkins. Purees were made from pumpkin and sweet-pumpkin, and were manufactured with blending, steaming or blanching. The moisture content of sweet-pumpkin puree was lower than pumpkin puree, but viscosity, Hunter\`s L, a, b values, $\beta$-carotene and riboflavin contents were higher. Steaming puree from sweet-pumpkin had the highest score in overall-preference and was selected as the ingredient far infant foods. In amylogram, gelatinization temperature was decreased and amylograph viscosity was increased, as the content of modified starch became high. Semi-solid infant floods were prepared with steaming puree from sweet-pumpkin, modified corn starch, rice powder and dairy products such as milk, whole milk powder and skim milk powder. After sterilization of infant foods, Hunter\`s color values were little changed. And the viscosity of infant foods were increased generally, but kept in 3% modified starch group. Sensory evaluation results showed that sweet-pumpkin puree 40%, rice flour 7%, skim milk powder 3% and water 50% was optimum ratio of infant foods.

Potential Pathogen Monitoring of Powdered Infant Formula Milk and Related Products in Korea (국내산 조제유류에서의 위해 미생물 모니터링)

  • Three-hundred samples of powdered infant formula milk and related products from four different manufacturers in 2010 were collected and surveyed their contaminations for aerobic bacteria, coliform, Enterobacter(Cronobacter) sakazakii, and food-borne pathogens. Fifteen samples of sterilized infant formula milk were all negative on these microorganisms. In all collected products of un sterilized infant formulas and follow-on infant formulas, aerobic bacteria were detected at 239 (83.9%) among 285 samples, and they all were found below $10^3$ cfu/g. Coliform bacteria were also detected at four among 285 samples. Salmonella spp. and Ent. sakazakii, weren't detected at the all samples. Bacillus cereus was detected at 24 (8.4%) among 285 samples. The level of B. cereus was below 100 cfu/g but it was suitable for the range of specification of B. cereus in infant formulas. Clostridium perjringens, Escherichia coli O157:H7, Staphylococcus aureus and Listeria monocytogenes weren't also detected. In consequence, it was suitable for total viable count, coliform and potential pathogen to the specification of infant formulas and related products.

Selenium Status and Glutathione Peroxidase Activity in Korean Infants (우리나라 일부 영아의 혈액 셀레늄과 Glutathione Peroxidase 효소 활성에 관한 연구)

  • We investigated the selenium (Se) nutrition status in Korean infants. The mean serum Se concentration in infants was 66.9 ${\mu}g/L$, and it increased with increasing in infant age: 57.6 ${\mu}g/L$ at 0-5 months, 71.8 ${\mu}g/L$ at 6-11 months, and 75.5 ${\mu}g/L$ at 12-24 months. Serum glutathione peroxidase (GPx) activity also increased with infant age. Serum Se concentration in infants was positively correlated with serum GPx activity (r = 0.565, p < 0.01). At 0-5 months, human milk-fed infants tended to have higher Se concentrations and GPx activity than those of formula-fed infants, but the result was not significant. With the introduction of supplemental feeding at 6-24 months of age, serum Se concentration was not different between the groups. Therefore, human milk feeding seemed to be more appropriate for infant Se nutrition than infant formula feeding during the first 6 months of life, but supplemental feeding became more important later to maintain good Se nutrition status.

Physicochemical Properties of Modified Rice Powder for Rice-Based Infant Foods - Thermal-enzymatic Treatment on Rice Powder (반고형 이유식의 개발을 위한 변형 쌀가루 제조 및 이화학적 특성 I - 열-효소 처리한 쌀가루)

  • The establishment of optimal producing condition for rice-based infant foods using modified rice powder was attempted. The modification of rice powder was prepared by microwave heating as well as partial enzymatic hydrolysis. Not only thermal treatment but also enzymatic hydrolysis on rice powder increased D.E. value from 1.25 to 3.81. The water binding capacity, swelling power, solubility, digestibility by ${\alpha}-amylase$, light transparency, and paste clarity of the modified rice powder compared to unmodified rice powder were increased from 107% to 249%, from 7.80 to 42.52, from 0.04% to 0.89ft, from 9.19% to 23.01, from 33% to 42%, and from 2.2% to 3.9%, respectively. On the other hand, gelatinization temperature, apparent viscosity, and degree of retrogradation of modified rice powder showed negative correlation with D.E. value. The 「results suggested that the thermal and enzymatic treatment on rice powder improved the physicochemical properties of rice based infant food by enhancing carbohydrate absorptionability and lowering the viscosity and opacity.

Simultaneous Determination of Vitamin A and E in Infant Formula by HPLC with Photodiode Array Detection

  • The objective of this study was to develop a method to simultaneously quantify vitamins A and E in infant formula. To determine the vitamin A and E content, vitamin A and four different vitamin E isomers (${\alpha}$-, ${\beta}$-, ${\gamma}$-, and ${\delta}$-tocopherol) were separated by high performance liquid chromatography with a photodiode array detector using a Develosil RPAQUEOUS RP-$C_{30}$ column ($4.6{\times}250$ mm, 5 ${\mu}M$). The vitamin A and E contents in the certified reference material determined using this method were within the certified range of standard values. The limits of detection (LODs) and limits of quantitation (LOQs) for vitamin A were 0.02 and 0.06 ${\mu}g/L$, respectively. LODs and LOQs for the vitamin E isomers ranged from 0.20 to 0.55 and from 0.67 to 1.81 ${\mu}g/L$, respectively. Linear analyses indicated that the square of the correlation coefficient for the vitamin A and E isomers was 0.9997-0.9999. The recovery of vitamins ranged from 96.69 to 97.79%. The results demonstrate that this novel method could be used to reliably analyze vitamin A and E content in infant formula.

Dietary Habits and Nutrient Intakes according to Feeding Method during Infant Period in Elementary School Students (충남 일부지역 초등학생의 영아기 영양법에 따른 식습관과 영양섭취상태)

  • The purpose of this study was to examine dietary habits and nutrient intakes according to feeding method during infant period in elementary school students. Subjects were 1,251 elementary school students. Subjects were divided into three groups, breast-fed group (N=508), formula-fed group (N=397), and mixed group (N=346), according to feeding method during infant period. The questionnaire was composed of general characteristics, dietary conditions during infant period, dietary behaviors, and dietary intakes and was completed by children and children's parents. Average age, height, weight, and body mass index were 11.6 years, 139.0 cm, 34.6 kg, and $17.8kg/m^2$, respectively. The formula-fed group showed a smaller proportion of subjects with colostrum feeding (P<0.001) compared to the breast-fed and mixed groups. Frequency of eating snacks was significantly higher in the mixed group than in other groups (P<0.05). There was no significant difference in dietary habit total score and nutrient intakes according to feeding method during infant period. Feeding method in during infant period was associated with dietary habits (milk and vegetable intake habits) up to growth period of elementary school. A longitudinal and systematic study is needed to clarify this relationship.

Determination of Niacin in Infant Formula by Solid-phase Clean-up and HPLC with Photodiode Array Detector (고체상 정제 및 HPLC/PDA에 의한 영유아식 중 나이아신의 분석)

  • This study was performed to establish a rapid and simple analytical method for niacin (nicotinic acid and nicotinamide) using HPLC. A pretreatment method for the extraction and clean-up of niacin in infant formula sample and an instrumental condition for HPLC were optimized. Niacin was extracted by 5 mM hexanesulfonate with ultrasonication for 30 min. For the clean-up of the sample, the extract was applied to a HLB cartridge, and then niacin was eluted from the cartridge using 5 mL of 80% methanol after washing with 5 mL of n-hexane. The total recoveries were $83{\sim}104%$ and relative standard deviation were in the range of $1.5{\sim}3.5%$ during the extraction and clean-up process. Niacin was determined by gradient elution with sodium hexanesulfonate/methanol buffer as a mobile phase and a photodiode array detector (260 nm). It showed a high linearity between the content of niacin and the peak area ($r^2$=1.000) in the range of $0.02{\sim}10.0$ mg/L of nicotinic acid and nicotinamide. The detection limit was 0.02 mg/L (0.2 mg/kg in the sample). The method was successfully applied for the determination of niacin in infant formula. Total niacin contents were in the range of $53.5{\sim}140.3$ mg/kg.
