The purposes of this study were to investigate the customers' perception on nutrition information provided on a family restaurant menu, to examine customers' intention to use the nutrition information when eating out if nutrition information would be provided, and to identify what kinds of nutrient information the customers want. A total of 265 respondents were answered. Female was sixty-six percents, and eighty-four percent of the respondents was less than thirty-five years old. The patrons' perception about nutrition information on the menu showed the level of 2.5 points out of 5 points, which pointed out that family restaurant patrons were not satisfied with receiving nutritional information related to the menu. The customers perceived that restaurants had responsibilities for providing nutritional information about menu items. Sixty-six percent of respondents showed a positive intention to the question item about how much the customer would use nutritional information provided on the menu. The customers, who were female (p<0.05), who had a good health status, who showed higher interest on weight control (p<0.01), and who were health-oriented (p<0.01), showed the higher intention to use nutritional information. Nutrient information in which the customers were interested strongly was a fat content, followed by cholesterol content and calorie information. According to the trends of eating out, preferring family restaurants, and increasing interests in a healthful menu, nutrition information demand in restaurant operations would be increased rapidly in the near future. Providing nutrition information at the point of menu choice might result in the improvement of customers' nutritional and health status by encouraging proper dietary habits of patrons as well as providing nutritional education. Therefore, it is recommended that government and restaurant firms should recognize the importance of nutrition information and make strategic plans for the future.
The purpose of this study was to identify the relationships between perceived stress, ego-resilience, and premenstrual syndrome(PMS) and investigate the factors affecting PMS in female college students. The study participants were 215 female college students in Gyeunggi province. Data were collected from October 10 to November 10, 2017, using self-report questionnaires. Collected data were analyzed using descriptive statistics, Pearson correlation coefficients, and multiple regression analysis. PMS was positively correlated with the perceived stress and negatively correlated with ego-resilience. Eating habits, interference with daily life by menstruation, perceived stress accounted for 44.4% of variance in PMS. Based on these results, it is necessary to develop a management program that integrates psychological factors and lifestyle improvement including dietary habits, as well as efforts to manage menstrual symptoms in order to alleviate the premenstrual syndrome of female college students.

Purpose: We examined the effects of the 8-week moderate-intensity Pilates exercise program on body composition, balance ability, metabolic parameters, arterial condition, and eating habits among overweight and obese women. Methods: From the general sample of overweight or obese Korean women (body mass index ≥ 23 kg/m2 ), those who had not been diagnosed with any chronic degenerative diseases were enrolled in the study (n = 39). After 8 weeks of the Pilates exercise program, the participants were subdivided into adherence and non-adherence groups. Among the study participants, 24 women were matched for age and menopausal status to reduce the bias, and then finally included for the comparison (Pilates-adherence, n = 12; Pilates-non-adherence, n = 12). Results: The body balance measured by the Y-balance test, body mass index, and subcutaneous fat areas were significantly improved in both groups. However, the Pilate-sadherence group showed more positive changes in body balance and had significant improvement in body composition parameters such as waist size, visceral fat area, systolic blood pressure, arterial aging index, fasting blood glucose, and glycated hemoglobin than the Pilates-non-adherence group. In addition, the nutrition quotient for Korean adults (balance, moderation, and behavior except diversity) were significantly improved in both groups after dietary education. However, the participants did not show dramatic improvement in the metabolic parameters, because all the study subjects were in relatively good health and did not have any diagnosed diseases. Conclusion: This study demonstrated that higher adherence to the Pilates exercise program together with a modification of eating habits may effectively improve body balance, body composition, and obesity-related parameters among overweight and obese women.

This study was performed to determine health-related dietary and lifestyle of characteristic factors associated with sodium hyperingestion of korean adults by sexual difference. Study subjects were 30~69years (n=1,622) adults who participated in the 2010 Korean National Health and Nutrition Examination Survey (KNHANES V-1). Subjects were divided into the hyperingestion group (HG, n=1,494) and normal ingestion group (NG, n=128) by 'WHO growth standard sodium intakes(2,000mg/day)' and the relationships between Comparison of demographics and physical measurement, eating behaviors and health-related factors were analyzed. By logistic regression method, risk factors for sodium hyperingestion group revealed in this study were gender(female), number of family', 'breakfast', 'lunch', 'dinner', 'nutrition labeling use'. and In case of male, risk factors for sodium hyperingestion group were 'lunch', 'dinner', 'self-rated body image' of eating behaviors. In case of female, Which were number of family' of demographics, 'breakfast', 'lunch', 'dinner' of eating behaviors. In these results, according to different sexual aspect of sodium hyperingestion, we suggest that nutrition label use and proper nutrition intake criteria among sexual, recognition promotion campaign along with education program for repressed sodium hyperingestion related to hypertension prevention of korean adults should include eating habits improvement and demographics lifestyle modification.
The purpose of this study was to investigate the sustainable practices of nutrition science teachers and dietitians working in school food service operations, and identify the social and psychological factors which affect the overall efficacy of the system. The research model was constructed based on the Extended Theory of Planned Behavior (ETPB) in order to analyze how individual motivation affects the sustainable practices of nutrition science teachers and dietitians. The data were collected through e-mail and postal mail from nutrition science teachers and dietitians all across Korea, and self-administered surveys were conducted. SPSS and AMOS programs were used for statistical analysis. First, the sustainable practices of nutrition science teachers and dietitians were analyzed in 6 different categories. Second, the significant pathways were 6 out of 9 in the ETPB model. Sustainable food service practices in school can contribute to the formation of more a sustainable culture, such as through the encouragement of more healthy eating habits, and higher level of environmental awareness and community awareness. The factors influencing these practices can be applied to the design of improvement programs aimed at increasing sustainable practices.
The purpose of this study was to investigate the cooking behavior of housewives in Seoul to reduce the food wastes. The obtained datas from the questionnaires were analyzed by SPSS program. Among the respondents 60.8% were 40 to 49 years old, and 50.l% had high school education background. Sixtyfive % had 3∼4 family members and 83.9% lived with their husbands and children. The income of 25.0% of the respondents was 1.5 to 2 million wens monthly Their housing environment showed that 37.7% of housing were private houses and 92.0% of kitchen were a stand-up type. Most respondents shopped at a supermarket (64.5%), and they expressed greate, concerns on the date of food production (58.4%) than its wastes (6.0%). Sixtyfour point nine% of the respondents prepared a kuk and chigae every meal and 46.2% of them prepared two meals at a time. Twentytwo point two% of the respondents ate all the kuk or chigae. The residual foods were kuk or chigae (47.6%), side dishes (42.3%), and main dishes (4.9%). Fortyfive point six% of the respondents believed that the improvement of eating habits needed for the reduction of food wastes.
We tried to find out parents' satisfaction and needs for foodservice quality of the childcare centers with an intention of improving it. Self-completed questionnaires were randomly collected from the parents of children in 174 childcare centers around Asan and were analyzed. Most of respondents were mothers who were housewives with college degrees (69%) in their 30's (80%). They thought nutrition (50%) and food hygiene (43%) were the most important factors for decision. Eighty percent of parents recognized the strong relationship between foodservice quality and childrens' mental and physical development. Most centers (94%) were delivering menu notices home, so parents well recognized the center's foodservice situation and problems of their kids' eating habits. The parents' satisfaction scores were 3.26 out of 5-point scale. The biggest dissatisfaction was from no variation in menu, but remarkable appreciation was from the effect of foodservice on the correction for kids' unbalanced diet habit. They had demands for improvement of nutritious menu and professional nutrition teacher in charge of foodservice and nutrition education for children and also for parents.
This study was done to investigate the 12 college volleyball player's food behavior, nutrient intakes, and their serum lipid levels during the periods of training and detraining and to provide basic data for an effective program for the volleyball players during the period of detraining after the game season. The results were summarized as follows : The total daily energy intake of the players was $3,363{\pm}339kcal and 3,692{\pm}499kcal$ during the periods of the training and detraining, respectively. During the training period, daily intakes of protein, calcium and vitamin A, and $B_2$ were lower than the recommended dietary allowance for the players. During the detraining period, the players' daily intakes of calcium, iron, and vitamin A were even lower. However, the consumption of alcohol was dramatically increased during the period of detraining. The levels of serum triglyceride and very low density lipoprotein were significantly increased during the detraining period. Basal metabolic rates were significantly increased after the training period and diastolic pressure was decreased during the detraining period. In conclusion, out results suggest that the detraining of volleyball players for 10 days after intensive training, negatively affects their food behavior and serum lipid concentrations. Therefore, for the improvement of performance for the next game season, a planned program for the players' detraining period should be developed.
This research has been surveyed on street food and snack intake status of elementary school students in the Jeon Buk region and the recognition of mothers has been observed for the objective of providing base materials for appropriate eating habits and nutritional education. As for status on intake of street food, most students (97.3%) have shown to have eaten from the street vendors while mothers assume low frequency in their child's intake of street food. Favorite street food choices had an agreement between mother and student as ddukbokki and dakkochi. Students were more tolerant in sanitation and necessity of street food than the mothers. This research shows that there is a difference in the recognition of street food between the students and their mothers. There a need required for improvement in the system as to provide quality food and to prevent poor quality food being exposed to the students. Objectives : The aim of this study was to examine the level of oral health knowledge, oral health importance, oral health status and oral health interest of the social workers engaged in child care facilities to analyze the influential factors on oral health promotion activities and provide the basic data for oral health promotion activities. Methods : The subjects in this study were those social workers engaged in child care facilities from May 15th to May 25th in 2011. The self-report questionnaires were distributed and withdrawn and then a total of 205 papers from the subjects that participated in this study were analyzed for the final analysis. Results : 1. Oral health knowledge had $12.16{\pm}1.66$ in a full score of 15 and oral health importance, oral health status and oral health interest were $1.12{\pm}0.36$, $2.80{\pm}0.50$ and $2.14{\pm}0.8$ respectively in a full score of 5. 2. According to the general characteristics, the difference analysis of cognition-recognition factors showed that singles had significantly higher oral health knowledge married couples (p<0.05) and the social workers unusing auxiliary oral hygiene devices had significantly higher oral health interest than those using them(p<0.01). 3. The mean of oral health promotion was $3.28{\pm}0.51$, characteristics of detailed specific-area were as follows ; the toothbrushing was $3.77{\pm}0.57$, the use of fluoride was $2.67{\pm}0.98$, periodic dental screening and treatment were $2.98{\pm}1.09$ and eating habits was $4.14{\pm}0.57$. These results generally showed tooth-brushing and eating habits show a little higher figures. 4. Considering the factors oral health promotion behaviors of social workers engaged in child care facilities, the higher oral health interest was, the higher oral health promotion behavior was. Conclusions : It seems that social workers engaged in child care facilities are required to pay attention to the importance of oral health and learn oral health knowledge, which will lead to much better improvement of oral health for children brought up by them.
