Dietary Supplementation of Sea Tangle (Laminaria japonica) Improves Blood Glucose and Lipid Metabolism in the Streptozotocin-induced Diabetic Rats

  • The purpose of this study was to investigate the effect of dietary supplementation of sea tangle (Laminaria japonica) on the blood glucose and lipid metabolism in streptozotocin (STZ)-induced diabetic rats. Male Sprague-Dawley rats were divided into 3 groups fed control, sea tangle powder (15%, w/w), or sea tangle water extract (4%, w/w) diet. Diabetes was induced by a single injection of STZ (60 mg/kg, i.p.) in citrate buffer. The animals were fed each of the experimental diet for 13 weeks. Serum insulin was increased by dietary supplementation of sea tangle in diabetic rats. Dietary sea tangle reduced blood glucose level of diabetic rats compared to the diabetic rats fed control diet. Dietary sea tangle also reduced the serum total cholesterol, low density lipoprotein (LDL)-cholesterol, and triglyceride in the diabetic rats. While hepatic lipids were reduced, fecal excretion of lipids was increased by supplementation with dietary sea tangle in the diabetic rats. These results indicate that dietary sea tangle decreased blood glucose and improved lipid metabolism in STZ-induced diabetic rats and this effect might be exerted by increases in serum insulin and fecal excretion of lipids.

Changes in Nutrition of Adult's Favorite Foods of High calorie, Low-nutritive Foods

  • This study analyzed in nutrient contents changes of adult's favorite foods between March 2019 and July 2020 after policy implementation nutrient-poor foods based on special act on safety control of adult's dietary life in Korea. Among adult's favorite foods manufactured or sold in 2020 as well as 2019, calories and key nutrients in breads, ice creams and pizzas were improved in comparison to those in the other food groups. However, most of the changes in calories or key nutrient contents exist. The newly introduced candies, breads showed slightly greater improvements in calories and key nutrient contents than in 2019. On the other hand, some negative changes were found in newly introduced chocolates in comparison to previous ones. Overall, policy implementation on foods seemed to induce changes in nutrient contents of adult's favorite foods. In particular, nutrition education is reported to have a positive impact on adult's frequency and preference for processed foods, and more systematic and continuous nutrition education measures should be devised to help adult as consumers selectively purchase healthy foods. This research is meaningful in that it is the first study to analyze the quality changes of adult's favorite foods since the high-calorie and low-nutrient food management policy.

Enzymatic Solubilization of Thermally Treated Jujube Tissues (효소에 의한 열처리 생대추 조직의 수용화)

  • Jujube paste was prepared by autoclaving the fresh jujube at 1.2 atm and $120^{\circ}C$ for 30 min and removing the skin and cores. In order to increase the juice yield, the paste was treated with pectinase, cellulase and their combinations. The soluble fractions of enzymatically treated jujube paste were characterized in terms of yield, pH, titratable acidity, color, Bx, transmittance and sugar compositions. The original paste exhibited the water soluble fraction of 57.3%. Of various quality factors, the clarity was the most significantly distinguished between pectinase and cellulase treatments. The cellulase treatment produced the cloudy juice with the yield of 83.60%. On the other hand, the clear juice was produced by the pectinase and combined treatments due to degradation of pectins, whose yields were 79.47% and 85.39%, respectively. The results clearly demonstrated that the pectinase treatments improved the solubilization efficiency and clarity.

Brewing Rutin-Enriched Lager Beer with Buckwheat Malt as Adjuncts

  • Brewing with buckwheat as an ingredient has been proven to be successful in several previous studies. However, few studies have focused on the effects of buckwheat on the rutin content and antioxidant activity of beer. In order to develop a lager beer with high rutin content and desirable sensory characteristics, tartary buckwheat malt was used as a brewing adjunct. The results showed that the rutin-degrading enzyme was the key factor affecting the rutin content in the wort and beer. Compared to beer made using the common mashing method, the rutin content in the buckwheat beers produced using an improved mashing method was approximately 60 times higher. The total flavonoid contents in buckwheat beers also depended strongly on the mashing methods, ranging from 530.75 to 1,704.68 mg QE/l. The rutin-rich beers also showed better oxidative stability during forced-aging. Meanwhile, the buckwheat beers were found to be acceptable in terms of the main quality attributes, flavor, and taste.

  • Many consumers are concerned about the high levels of salt intake owing to the accompanied risk of chronic diseases. Due to this dietary concern, the food industry has recommended the reduction of salt content in many products. However, the addition of salt to meat products improves their quality and sensory properties, including saltiness, color, juiciness, and texture. Because quality deteriorations could induce decreased sensory scores owing to salt reductions, the challenges involved in improving the quality of reduced-salt meat products have been addressed. During the development of low-salt meat products, it is important to reduce sodium content and address the problems that arise with this reduction. Modified salt, organic acids, amino acids, nucleotides, hydrocolloids, high-pressure, ultrasound, electric pulsed field, and irradiation have been suggested as strategies to replace or reduce sodium content, and sensory scores could be improved by these strategies. Therefore, when developing a low-salt meat product, several perspectives must be considered and the latest technologies that could resolve this problem should be adopted.

Physicochemical Analysis of Yogurt Produced by Leuconostoc mesenteroides H40 and Its Effects on Oxidative Stress in Neuronal Cells

  • Leuconostoc mesenteroides H40 (H40) was isolated from kimchi, and its probiotic properties and neuroprotective effect was evaluated in oxidatively stressed SH-SY5Y cells. H40 was stable in artificial gastric conditions and can be attached in HT-29 cells. In addition, H40 did not produce β-glucuronidase and showed resistant to several antibiotics. The conditioned medium (CM) was made using HT-29 cells refined with heat-killed probiotics (Probiotics-CM) and heated yogurts (Y-CM) to investigate the neuroprotective effect. Treatment with H40-CM not only increased cell viability but also significantly improved brain derived neurotropic factor (BDNF) expression and reduced the Bax/Bcl-2 ratio in oxidatively stress-induced SH-SY5Y cells. Besides, probiotic Y-CM significantly increased BDNF mRNA expression and decreased Bax/Bcl-2 ratio. The physicochemical properties of probiotic yogurt with H40 was not significantly different from the control yogurt. The viable cell counts of lactic acid bacteria in control and probiotic yogurt with H40 was 8.66 Log CFU/mL and 8.96 Log CFU/mL, respectively. Therefore, these results indicate that H40 can be used as prophylactic functional dairy food having neuroprotective effects.

Continuous Behavior of Using Food Delivery Mobile Applications in Vietnam after Covid-19 Pandemic

  • Purpose: During and after Covid-19 pandemic, technology has emerged as a key factor in supporting the recovery of the economy and the rise of living standards. This study examines seven factors affecting the intention of food delivery apps usage, which include Performance Expectancy, Effort Expectancy, Social Influence, Hedonic Motivation, Price Value, and Habit, and how much influence they have on the customers' behavioral continuance of food delivery apps after Covid-19 Pandemic. Research methodology: This research is a quantitative descriptive research with 473 qualified respondents from 550 respondents collected. Besides using the UTAUT2 model (Venkatesh et al., 2012), Information Quality was added to give a better explanation for the consumers' intention towards continuance behavior using food delivery apps. The collected data is then processed using SPSS 22.0. Results: Habit factors and Information Quality factors have significant positive effects on promoting food delivery apps usage intention, which in turn influences continuance behavior. In addition, Habit factors and Information Quality factors together have an effect of 48.57% on Behavioral Intention. Conclusion: The result proves that positive habits and food information quality can increase the usage intention towards the behavioral continuance of consumers. Higher usage frequency can be improved by increasing these two factors.

Antioxidant Activities of Riceyeotgangjung with Added Spirulina Powder (스피루리나 첨가 쌀엿강정의 항산화 특성)

  • The objective of this study was to develop high quality Riceyeotgangjung (RYG) with high antioxidant activity and a longer shelf-life. Spirulina (1, 2, and 3%) with added RYG was prepared, and antioxidant activities were examined under storage at $60^{\circ}C$ for 15 days. The total phenol content remaining in the spirulina with added RYG at 15 days of storage was much higher than that of fresh RYG without spirulina. The IC50 values for DPPH and hydroxyl radical scavenging activities decreased with increasing amounts of spirulina, whereas these values increased with storage time. TBA and peroxide values decreased with increasing amounts of spirulina. From these results, adding spirulina to RYG delayed lipid rancidity and prolonged shelf-life. Adding spirulina powder to RYG, which is a healthy functional food material, improved antioxidant activity and delayed deterioration during storage.

Development of rice-based gluten-free muffins enriched with tigernut dietary fiber

  • The effects of tigernut dietary fiber (TDF: 5, 10, and 20% w/w) inclusion in rice muffin formulations on the functional and pasting properties of composite powders, as well as the nutritional and sensory properties of muffins were investigated. The results showed a significant (p<0.05) proportional increase in the water and oil holding capacity as TDF increased in the powder blends. Moreover, pasting viscosity was found to decrease with the inclusion of TDF. TDF muffins showed improved nutritional quality, with increased protein (~14%), insoluble fiber (~128%) and total fiber (~34%) contents compared to 100% rice muffins. Also, TDF-muffins had lower baking losses (~22%) and better texture, including firmness and chewiness. Sensory scores of TDF-muffins (up to 10% w/w) showed similar consumer acceptability for all parameters considered. Overall, this study suggests tigernut fiber as a functional additive that balances the growing consumers' demands for healthy and quality gluten-free rice muffins.

Changes in Dietary Behavior of Korean Adults due to COVID-19 (코로나-19에 의한 한국 성인의 식품소비행태 변화)

  • In this study, we examined changes in the food consumption patterns of Korean adults due to COVID-19 using the results of the 2019 and 2021 adult household member food consumption behavior surveys. In the weight and BMI analysis results, both men and women showed a significant increase in 2021 compared to 2019 (male; p<0.01 female; p<0.001). The frequency of breakfast skipping was found to increase with none and over 5 times. As for interest in domestic agricultural products, the proportion of 'not interested' and 'average' responses decreased, while the proportion of those who responded 'interested' increased (p<0.01). The rate of eating out was found to have significantly decreased in 2021 compared to 2019. As a result of the eating lifestyle analysis, the taste seeking type, quality safety seeking type, and health seeking type also showed an increase in 2021 compared to 2019, and a significant level was confirmed. In the purchasing competency index, the use of labeling for agricultural products, use of agricultural food information, and agricultural food purchasing environment items all showed significantly improved results in 2021 compared to 2019, and the eating competency index showed a significant increase in healthy eating and traditional eating habits. Through this study, we aim to suggest directions for establishing food marketing strategies and dietary education for adults in the event of a future pandemic.
