  • Activate charcoal (AC) can be utilized as a soil conditioner in agricultural crop areas. This study was conducted to investigate the effect of AC on growth and yield of Zingiber mioga ROSC as affected by different amounts of AC. The results obtained are summarized as follows. Growth characteristics including plant height and leaf length were the highest when activated charcoal added with 10-30%, suggesting that optimum amount of activated charcoal was ranged from 10 to 30%. Growth and enlargement of the root were improved by 10% AC with higher rhizome length and weight.

  • This study estimates gender wage gap by the Korean industries. The empirical findings are as follows: 1. The sex segregation by industries has not improved. 2. The average wage in $\ulcorner$electricity, transportation, warehousing, financial institutions$\lrcorner$ is relatively higher than others. On the contrary, the average wage in $\ulcorner$mining and manufacturing$\lrcorner$ and $\ulcorner$wholesale and retail, food, loading$\lrcorner$ is relatively lower than others. 3. The gender wage gap in $\ulcorner$electricity, transportation, warehousing, financial institutions$\lrcorner$ is relatively lower than others. On the contrary, the gender wage gap in $\ulcorner$mining and manufacturing$\lrcorner$ is relatively higher than others. The gender wage gap has declined annually. The gender wage gap in industries with lower wage level is higher. The decline of gender wage gap cannot be interpreted as a relaxation of sexual discrimination.

  • The blended oil was prepared from cottonseed oil and palm olien. The oxidative stability of blended oil after the addition of natural tocopherol and soybean lecithin during heating was investigated and the effects of lecithin were evaluated. The result obtained were as follows: 1. When the concentration of palm olein in blended oil during heating was increased, the oxidative stability was improved. 2. By both addition of natural tocopherol and soybean lecithin during heating in blended oil, induction period was considerably increased and residual ratio of tocopherol was high. 3. The oxidative stability of potato chips prepared from blended oil was higher in the prsence of lecithin than in the absence of it.

  • This study investigated the quality of noodles containing different amounts of Chinese artichoke powder. Noodles were prepared at ratios of 0%, 0.5%, 1%, 1.5%, and 2% Chinese artichoke power based on flour weight. The weight, volume, and water absorption of cooked noodles significantly decreased with increasing amounts of Chinese artichoke powder. Turbidity of noodles increased according to addition of Chinese artichoke powder. The noodles showed decreased L and b values, and increased a values with increasing Chinese artichoke powder content in the flour composite. Hardness of cooked noodles increased significantly with increase ing Chinese artichoke powder content. Springiness, cohesiveness, and chewiness decreased with increasing amounts of added Chinese artichoke powder. The antioxidant activities (DPPH radical scavenging activity, ABTS radical scavenging activity) and nitrite scavenging activity were improved significantly with addition of Chinese artichoke powder. Finally-, sensory evaluation results indicated that noodles containing 1% Chinese artichoke powder had higher quality as compared to other samples.

  • The purpose of this study was to develop a nutrition education program for preschoolers, and to measure it's effects. This program consisted of text. pictures (cartoons), games and topics of discussion. This study was an experimental study undertaken by one pretest-posttest design group. The subjects were 17 preschoolers who were aged 5 and attending an educare center in Seoul. These were the effects of this program: The hypothesis of this study was that 'the preschooler's score will be improved after education' was supported (t=5.177, p=.000). Several correlates were examined. There weren't significant differences between pretest and posttest in the importance of balanced nutrition; in the result of under-nutrition; that the black food-group precipitated dental carries and obesity; or the reaction of foods after meals. It is recommended that the nutrition education program not only contain content about the prevent of obesity, but also about the knowledge of various foods and their effects on the human body.

  • In modem society, the development of science and industrialization has brought economic growth, and better living environment, improved food life, advanced medicine, and increased span of life have leaded us into the aging society. In the current situation to move toward the aging society, it's needed to prepare housing planning for retirement community in consideration of the physical and psychological and behavioral features of the elderly to raise their quality of life. The purpose of this study was to map out proper housing planning for retirement community in consideration of the physical, psychological and behavioral characteristics of senior citizens, instead of just focusing on comfortable and convenient one.

  • This research was performed to investigate the potential use of Capsella bursa-pastoris (L.) as an ingredient to improve the biological function and flavor of kimchi. The quality characteristics were studied for kimchi with or without Capsella bursa-pastoris (L.) Medicus (CBM kimchi) during fermentation for 25 days at $10^{\circ}C$. The pH changes of CBM kimchi were slower than those of control but did not show any significant difference after addition of Capsella bursa-pastoris (L.) Medicus during fermentation. The titratable acidity of CBM kimchi was higher than that of control. The log number of total bacteria was lower about 1.5 $log_{10}$ cycle in CBM kimchi than in control during fermentation. However, lactic acid bacteria did not show significant difference between CMB kimchi and control. Sensory qualities of kimchi such as color, taste, flavor and overall acceptability were significantly improved by addition of 3% Capsella bursa-pastoris (L.) Medicus(p<0.05).

  • Rhizobium radiobacter T6102 was morphologically purified by the aniline blue agar plates to give two distinct colonies; white smooth mucoid colony (T6102W) and blue rough colony (T6102B). The coenzyme $Q_{10}$ ($CoQ_{10}$) was produced just by T6102W, showing 2.0 mg/g of $CoQ_{10}$ content, whereas the T6102B did not produce the $CoQ_{10}$. All of the used $CoQ_{10}$ biosynthetic precursors enhanced the $CoQ_{10}$ production by T6102W. Specifically, the supplementation of 0.75 mM isopentenyl alcohol improved the $CoQ_{10}$ concentration (19.9 mg/l) and content (2.4 mg/g) by 42% and 40%, respectively.

  • This paper reports an improved headspace gas chromatographic method for the determination of carboxyl group content in wood fibers. Pretreatment of wood fibers was applied using dilute HCl to convert carboxyl groups to carboxylic acid groups and then using deionized water to wash fiber samples thoroughly. The samples were finally air dried. Sodium bicarbonate solution was used to react with carboxylic acid groups of the pretreated fibers in a closed testing vial to release carbon dioxide. The content of carboxyl groups in fibers was accurately quantified by determining the amount of carbon dioxide released by a headspace gas chromatograph equipped with a thermal conductivity detector. The modified process for fiber sample pretreatment increased the reliability and accuracy in measuring carboxylic acid groups. The present method is simple, accurate.

  • Congratulations to the Korean Society of Breeding Science on the occasion of the $40^{th}$ anniversary. Such scientific societies serve an important role in disseminating scientific information, encouraging world class research, and integrating related disciplines. Plant breeding is a solution-driven science to meet ever-increasing needs with the ultimate application in mind throughout the process. Plant breeding will continue to involve both the lab and field even as more molecular technologies are applied to the improvement of plants and animals. Today and into the future, genetics and genomics will play major roles. This keynote talk first presents plant breeding in the context of the need to meet future food supplies, then reviews some of the emerging and important technologies, documents some of the traits improved through the new technologies, and finally adds some philosophical points with special emphasis on the younger scientist.
