유자피를 이용한 단일 침출차의 항산화성 및 품질 특성 (Preparation of Citron Peel Tea Containing Yuza(Citrus junos Seib ex TANAKA) and Its Antioxidant Characteristics)

  • The objective of this study was to evaluate the antioxidant properties and sensory qualities of citron peel tea, and to determine the optimum ratio of citron peel powder for its preparation. Yuza peel powders were prepared with citron peel tea at weight 2 and 3 g, respectively. Then, color values(L-value, redness, and yellowness), total phenol content, total antioxidant activity, DPPH radical scavenging activity, and sensory characteristics were measured in the tea samples. The pH of the citron peel tea decreased with increasing preparation temperature. And as the amount of citron peel powder increased, total phenol content, antioxidant capacity, and radical scavenging activity increased. The level of total phenolics in the tea had a higher correlation with total antioxidant capacity($r^2$ = 0.731). Depending on the level of added yuza powder, significant differences(p < 0.05) were shown for aroma, color, and overall acceptability however, there were no significant differences in sourness and bitterness.

홍어 분말을 첨가하여 제조한 만두피의 품질특성 (Quality Characteristics of Mandupi with Skate (Raja kenojei) flour)

  • The purpose of this study was to investigate the effects of skate (Raja kenojei) flour on the functional and sensory characteristics of Mandupi. Mandupi samples were prepared with wheat flour along with the addition of different amounts of skate flour, followed by functional measurements and sensory evaluations. According to the amylograph data, the composite skate flour-wheat flour samples had increased gelatinization temperatures with increasing skate flour content; whereas initial viscosity at $95^{\circ}C$, viscosity at $95^{\circ}C$ after 15 minutes, and maximum viscosity were reduced. In terms of color values, L and b values decreased, but the a-value increased with increasing skate flour content. Furthermore, the addition of skate flour increased hardness, springiness, chewiness, and adhesiveness in the samples. Overall, based on sensory evaluations, the Mandupi containing 5% skate flour was preferred over the other samples.

  • 피부변화에 대한 연구뿐 아니라 바디냄새 또한 중요한 이슈가 되었다. 인간은 성별과 나이에 따라 각각의 특정한 냄새를 갖는다. 또한 냄새는 인간의 사회적 관계에 영향을 미치는 것으로 알려져 있다. 본 연구에서는 기존의 전문가를 통한 냄새평가 방법에 새로운 뇌파 측정 평가법을 접목하여 체취를 평가할 수 있는 평가항목으로서의 가능성을 확인 하고자 하였다. 본 시험은 50 세에서 61 세 피험자 15 명을 대상으로 하였다. 체취 포집을 위하여 72 h 동안 면 티셔츠를 착용하게 하고 샤워를 금하도록 하였다. 전문가에 의한 냄새평가와 냄새를 맡는 동안 뇌파 변화를 측정하여 두 평가 사이의 상관관계를 분석하였다. Pearson 상관관계 분석결과 EEG 측정 파라미터중 '흥분'과 음의 상관관계(r = - 0.649, p = 0.009)가 나타났고 '스트레스' 항목과는 양의 상관관계(r = 0.704, p = 0.003)가 나타났다. 결론적으로, EEG 측정을 통한 체취의 평가는 전문가에 의한 냄새평가를 보완하는 방법으로 사용이 가능할 것으로 생각된다.

건설현장 작업복의 패턴디자인 개선에 따른 동작기능성 평가 (The Evaluation of Movement Functionality on Improved Pattern-Design Working Uniform of Construction Site Worker)

  • The purpose of this study is to examine the functionality with improved pattern-design working uniform(protocol, P) and current working uniform(control, C). Movement functionality evaluation of improved pattern-design working uniform was carried out through sensory evaluation of working uniform. Movements for the sensory evaluation consisted of four types of up and down and horizontal movements of the shoulders, four types of waist movements and five types of knee movements. The results have been shown as follows: The sensory value of back girth, wrist, side seam area of the "P" with the posture of raising an arm forward up to $90^{\circ}$ and the maximal arm's vertical movement significantly improved compared to the "C". Therefore, it can be concluded that movement functionality was increased with the improved pattern-design working uniform in the respect of arm's up and down movement. Furthermore, for P, Movement functionality improvements were shown in P with arm's horizontal movement, waist bending movement, and knee movement. Current working uniform(C) is jumper-type which wa designed without consideration for movement functionality of the arms and legs. But Pattern-design uniform(P) which was developed in this study. Therefore, the more patterns development, the better movement functionality in working uniform. The improved movement functionality improvements in working uniform will provide not only personal pleasantness but also efficiency of productivity at construction sites. In respect of human body's movement, further study for improved working uniform is required.

고추를 이용한 생선용 복합 분말 조미료 개발 및 평가 (Development of Mixed Seasoning Products for Fish Dishes using Korean Chili Peppers(Capsicum annuum L.))

  • 미국산 복합 분말 조미료에 기초하여 수출용 고부가가치 고추 가공 제품으로 생선용 복합 분말 조미료를 개발하였다. 한국산 고춧가루와 한국 고유의 재료인 유자, 버섯, 그리고 마늘을 첨가하여 짠맛과 단맛, 매운맛을 조화롭게 하여 맛의 차별화를 유도하였고, 생선의 비린내를 제거하였다. 수출용 생선 복합 분말 조미료 AI는 한국산 고춧가루(20%), 오레가노, 파슬리, 타임, 흑후추 등의 총 허브류(31.7%), 소금(11.5%), 유자(2.8%), 버섯(8.6%), 마늘(5.8%)의 식품 재료로 구성되었고, 그 외 파프리카, 설탕, 올리브 오일 등을 첨가하여 제조하였다. 미국인을 대상으로 한 기호도 평가에서 개발된 샘플(AI)은 미국산 복합 분말 조미료 제품보다 선호도가 높게 평가되었다.

Agar 첨가에 따른 백설기의 품질특성 연구 (A Study on Quality Characteristics of Backsulgi with Adding Agar Powder)

  • The purpose of this is to agar powder addition to retard retragradation for making Backsulgi. Backsulgi is manufactured promptly by adding ingredients having agar powder and then observation of sensory and texture characteristics. Then Backsulgi determinded in storing at the temperatures of 20 and Celsius degrees for 0, 24, 48 and 72 hours, respectively. The results from this study are as follow; 1. Moisture absorption of control show 34.4%, compared with, Backsulgi with agar powder added 3%, 6%, 9%, 12%, 15% show higher 37.03%, 39.28%, 41.72%, 43.5%, 44.70%, respectively. 2. In terms of chromaticity, lightness of control show $70.68{\pm}7.248{\sim}61.25{\pm}0.90$, the longer time is and much agar powder Backsulgi show lower and 15% agar powder added Backsulgi show $51.53{\pm}0.921{\sim}54.715$. Then redness(a) of control show $-0.70{\pm}0.14$, compared with 15% agar powder added Backsulgi show $-0.32{\pm}0.047$. 15% agar powder Backsulgi show $9.03{\pm}0.313$ higher in yellowness than control $5.47{\pm}0.40$. 3. Control and agar powder Backsulgi was shown pH 6.1~6.3, the longer time is, all Backsulgi was shown pH 5.5~5.9 and much agar powder Backsulgi was shown an weakly acidity. 4. Swelling and pore ratio of control was shown 85.36% and 118.32%, compared with, agar powder added Backsulgi was higher a rate of increase. 5. For a sensory evaluation, the longer time is, adding agar powder rice cake is more perfected at 20$^{\circ}C$ in times if smooth, inner moisture, chewiness, after selling, overall quality. 6. Determination of texture characteristics by a reometer shows that Backsulgi with agar powder added change more in hardness that controls, indicating that effect of retarding retrogadation is higher when storage time is longer. 7. The correlation of hardness, springness between sensory and instrumental evaluation showed significantly positive function.

팽창제 종류에 따른 증편의 품질 특성 (Quality Characteristics of Jeung-Pyun According to the Leavening Agents)

  • This study was carried out to investigate the effects of four kinds of leavening agents on Jeung-Pyun fermantation. Milk-wine(M), fresh yeast(F), dry yeast(D), instant yeast(I) were used in Jeung-Pyun ingredients. The physicochemical properties, sensory evaluation were examined. The results of this study are summarized as follows: 1. Basic recipes for Jeung-Pyun by preliminary test were developed. 2. Specific volumes and expansion ratio of Jeung-Pyun was higher in the fresh yeast-added sample. 3. The pH of Jeung-Pyun was decreased significantly as the fermentation progressed 4. In the result comparing Jeung-Pyun extracting after 1st fermentation with Jeung-Pyun extracting 2nd fermentation by SEM, the former was widely distributed in stability of bubble and pore than the latter. 5. Standard recipe by Q.D.A. test added four kinds of leavening agents were as follows: (1)Jeung-Pyun added milk wine was 240min for 1st fermentation time, 60min for 2nd fermentation time, 35$^{\circ}C$ for fermentation temperature, 80% for fermentation humidity respectively. (2) Jeung-Pyun added fresh yeast was 90min for 1st fermentation time, 40min for 2nd fermentation time, 35$^{\circ}C$ for fermentation temperature, 80% for fermentation humidity respectively. (3)Jeung-Pyun added dry yeast was 90min for 1st fermentation time, 60min for 2nd fermentation time, 35$^{\circ}C$ for fermentation temperature, 60% for fermentation humidity respectively. (4)Jeung-Pyun added instant yeast was 90min for 1st fermentation time, 40min for 2nd fermentation time, 30$^{\circ}C$ for fermentation temperature, 60% for fermentation humidity respectively. 6.Based on sensory evaluation, Jeung-Pyun added fresh yeast was significantry higher than others in color, sweetness, moistness, softness, and overall quality. There was negative significance between milk wine flavor and astrigentness, and yeast flavor.

제주산 진피를 이용한 단일 침출차의 가공 특성 및 항산화성 (Antioxidant Activity and Physicochemical Characteristics of Tangerine Peel Tea Prepared with Citrus unshiu Cultivated in Cheju)

  • To investigate the physiological activities and development of tangerine peel tea, we examined the antioxidant effect of tangerine peel tea and determined the physicochernical characteristics including proximate composition, mineral contents, color values and sensory evaluation. The wet weight composition of tangerine peel tea was $61.6\pm0.3mg$ of crude carbohydrate, $15.0\pm20mg$ of crude lipid, $8.3\pm2.1mg$ of crude Protein and $7.6\pm0.1mg$ of crude ash. The pH of tnagerine peel tea decreased with increasing preparation temperature. The Hunter color values (L and a values) generally increased with increasing preparation temperature. Total phenolic contents of tangerine peel tea were $16.0 mg\%\;at\;60^{\circ}\;18.9mg\%\;at\;80^{\circ}C\;and\;20.9m\%\;at\;100^{\circ}C$. As the preparation temperature of tangerine peel tea increased, the radical scavenging activity (DPPH) also increased obviously. In the sensory evaluation, the tangerine peel tea prepared with 1 g at $80^{\circ}C$ obtained the best result with high scores in overall acceptability.

제조과정에 따른 자소엽의 화학적 성분 및 자소숙수의 기호적 특성 (The Chemical Components of Perilla Leaf(frutescens Britton var. acuta Kudo) by the Making Process and Sensory Evaluation of Jasosuksu)

  • The purpose of this study was to analyze the chemical components of Perilla leaf(frutescens Britton var. scuta Kudo) according to the making process, and to examine Hunter's color value and sensory evaluation of Jasosuksu by extraction time. Perilla leaves were prepared in three types; fresh leaf, dried leaf in the shade and roasted leaf after being dried in the shade in order to make Jasosuksu. The results of the research were as follows: Free sugars(sucrose, glucose, fructose) and organic acids(citric acid, tartaric acid, malic acid, succinic acid) were present in the fresh leaf, dried leaf and roasted leaf. $15{\sim}16$ kinds of amino acid including aspartic acid were determined in the fresh leaf, dried leaf and roasted leaf, and the major free amino acids were serine, aspartic acid, and glutamic acid. The major total amino acids of tile fresh leaf, dried leaf and roasted leaf were glutamic acid, histinine, and glycine. The major fatty acids of Perilla leaves were palmitic acid, linolenic acid, and linolenic acid. The content ratio of linolenic acid in fresh leaves was the highest, but that of palmitic acid was lower than that of dried leaves and roasted leaves. L value, a value, and b value of Perilla leaf were the highest in the roasted leaves followed by the order of dried leaves and fresh leaves. L value and b value of Jasosuksu extracted from roasted leaves were higher than Jasosuksu extracted from dried leaves. The preference of color, flavor, sweetness of Jasosuksu extracted from dried leaves was the highest when extraction time was 10 min. at $70^{\circ}C$, but that of Jasosuksu extracted from roasted leaves was the highest when extraction time was 15 min. at $70^{\circ}C$. The preference of color, flavor, taste of Jasosuksu extracted from roasted leaves was higher than that of Jasosuksu extracted from dried leaves.

복분자를 첨가한 초콜릿의 최적 배합비 (Quality Characteristics and the Optimization Recipes of Chocolate Added with Bokbunja (Rubus coreanus Miquel))

  • 복분자 진액, 분말, 향(농축액)의 첨가량을 달리하여 최적의 복분자초콜릿을 개발하고자 하였다. 복분자초콜릿의 당도는 복분자 진액 함량이 감소할수록 증가하는 경향을 보였을 뿐 시료간의 유의적인 차이는 없었다. 경도는 복분자 진액 30 g, 분말 10 g, 향 0.3 g을 첨가한 시료 C가 가장 높았고 복분자 진액 60 g, 향 0.3 g 첨가한 시료 A가 가장 낮은 경도를 보여 복분자 진액 첨가함량이 낮을수록, 복분자 분말 첨가함량이 높을수록 증가하는 경향을 나타냈다. 색도는 복분자 진액 첨가량이 증가하고 복분자 분말 양이 감소할수록 명도가 증가하는 반면, 복분자 분말 함량이 증가할수록 적색도와 황색도가 증가하는 경향을 보이면서 진한 보랏빛으로 변하였다. 관능평가 결과 복분자 진액 30 g, 복분자 분말 5 g, 복분자 향 0.3 g을 첨가하여 제조한 시료 D가 종합적 기호도에서 가장 높은 점수를 나타냈고$(3.87{\pm}0.99)$, 향 관능평가에서는 복분자 농축액(향) 함유비율이 높은 시료 D가 유의적으로 높은 점수를 보였다. 또한 색도의 경우 시료 D가 복분자 고유의 색이 잘 나타나 가장 높은 점수를 나타냈고 적색도가 낮고 명도가 높은 연보라색의 시료 A(복분자 진액 60 g, 분말 무첨가)가 유의적으로 낮은 선호도를 보였다. 경도에서는 수분함량이 높고, 낮은 경도를 보이는 시료 A의 선호도가 높았다. 이상과 같이 분석결과를 종합하여 보면 다크초콜릿 530 g, 화이트초콜릿 300 g, 휘핑크림 130 g, 카카오버터 40 g, 복분자 진액 30 g, 복분자 분말 5 g, 복분자 향 0.3 g을 첨가한 시료 D가 복분자 고유의 향미와 색, 부드러운 질감을 느낄 수 있어 복분자초콜릿의 최적 레시피로써 적합하다고 사료된다.
