Perception of Elementary School Teachers about Nutrition Education (초등학교 교사의 영양교육에 대한 인식 조사 연구)

  • The purpose of this study was to investigate the status of teacher's perception about the nutrition education of elementary schooL The results of this study were as follows. Most of the teachers responded that nutrition education necessitate in curriculum of elementary school, the main reason for necessity of nutrition education was for proper growth, they thought starting period of nutrition education was to begin when children are in a kindergarten and a infant home. The perception for a suitable person to teach the nutrition education showed dietician, parents, class teacher and a related teacher in oder and the time of that is a related class, as a spare time at everyday, a special activity time, and service a meal in order. Importances of the contents of a nutrition education were proper eating habits, growth and nutrition, a food hygiene and a disease in order. Problems of elementary students' nutrition were a unbalanced eating, a ingestion a processing and instant food too much, lack of table manner, fatness and a weak child in order. The most of expected effects through the nutrition education were a good table habits and manners, the way of a efficient nutrition education were a need of link with parents, a need of link the dietician. a teacher's class and training in order. The average score of nutrition knowledge was 6.3$\sim$6.9 out of 10 and teachers of Gwangju scored more higher on nutrition knowledge than teachers of Jeonnam, as they arranged a dietician was so.

A Comparative Study of Obese Children and Normal Children on Dietary Intake and Environmental Factors at an Elementary School in Inchon (아동비만에 영향을 미치는 일반요인 및 식이섭취 실태에 대한 비만군과 대조군의 비교 연구 -인천시내 초등학교 중심으로-)

  • The purpose of this survey was to investigate the relationship among obese children, dietary intake and environmental factors. Therefore, this survey compared obese children with normal children on dietary intake and environmental factors. The survey were 110 obese children and 110 normal children whose age, height, and sex were same as the obese children of 21 elementary school in Inchon. The statistical analysis of data was completed using SAS program. The results were summarized as follows : 1) The student's obesity was related to parent's obesity and number of their siblings. There were significant differences between obese groups and normal group for these two factors. 2) Meal time of the obese group showed more irregularity than that of the normal group. Otherwise, the normal group were more "piclity" about special food than the obese group(p<0.05). Also obese children showed unconsious eating while reading or watching TV(p<0.01). The normal group attended physical education class more eagerily the obese group(p<0.001). There was no significant difference between obese children and normal children for learning habits. 3) Obese children shoed higher intake of nutrients compared to normal children. Among all the nutrients, minerals and vitamins showed significant differences. Therefore, further study on obese children and their intake of minerals and vitamin is needed. Also, in order to prevent factors which influence obesity, nutrition education at home as well as school was needed.as needed.

The Eating Behavior of Gifted and Nongifted Children (영재아동과 일반아동의 식생활습관에 대한 비교 연구(대전시 교육청에서 선발한 아동을 중심으로))

  • The present study was done to investigate the eating behavior of gifted and non-gifted children. Of the students who responded, 77.5% replied that they eat three meals a day and 22.5% replied otherwise. More of the gifted students(85%) had three meals a day than the non-gifted students (70%). The percentage of students who have breakfast is 79.4%, and the majority of them (72.2%) apparently have rice and soup as their menu. Most of the children took approximately 20 minuets to have a meal. The gifted students tended to have a better appetite and less dislike for a particular food. They also tended to have snacks out of hunger compared to the non-gifted children, who had snacks out of habit. The gifted group tended to have more snacks prepared at home compared to the non-gifted group who had more snacks bought at the store. The gifted group drank more milk and exercised more regularly than the non-gifted ones. Both groups slept around 8 hours a day. Even though 7.4% of the children are actually overweight, it is interesting to note that 27.2% thought they are overweight.

Dietary Behavior by Residence Types of Female College Students in Chungbuk Area (거주형태에 따른 충북지역 여대생의 식행동 비교)

  • This study was performed to compare dietary behaviors based on residence types of female college students. Self reports on dietary behavior and one-day dietary records were obtained from 227 female college students using anonymous questionnaires. The mean age of the subjects was $20.4{\pm}1.43$, and the height and weight were $162.5{\pm}4.8cm$ and $52.3{\pm}7.9kg$, respectively, The dietary behavior of female college students was inadequate, showing indifference to dietary balance, irregularity of meals, skipping breakfast, and high experience of drinking. One-day dietary records were obtained from 24k recall methods also showed a high number registering skipped meal status ($55.3\%$) and less diverse food intake (DVS, 12.5; DDS, 3.93). The students in self boarding residence were especially more likely not to eat properly and their dietary behaviors were found to be significantly poor. In the case of home residence, food intake frequency scores for milk and dairy products, fruits, and fishes were significantly higher, however the students in self boarding residences showed high food intake frequency scores in salted food, retort food, canned food, and especially instant ramyun. Therefore, more attention needs to be given to them to recognize the problems in their own dietary behaviors and more practical nutritional supports, like developing a menu for breakfast in college cafeterias, would be helpful to improve their dietary choices.

Influence of Age and Education on Food Consumption and Nutrient Intakes of Older Women Living Alone (연령과 교육수준이 독거 여자 노인의 식품섭취와 영양소 섭취에 미치는 영향)

  • The purpose of this study was to examine the effect of age, education and residence on food consumption and nutrient Intakes of older women living alone. In-home interviews were conducted using the health habits and food frequency questionnaire for one hundred twenty free living, healthy women who were between the ages of 60 and 87 years. Analysis of variance was used to assess the effect of three independent variables on food consumption and nutrient intakes. Food groups eaten at every meal were examined on 5-point scale, and consumption scores were compared with groups according to age and education. The meat consumption of younger and more highly educated respondents were significantly( p<0.05) higher. The oldest Participants had higher consumption frequencies for cereals and grain food categories. but lower consumption frequencies for vegetables and fruits ( p<0.05) The dietary assessment data showed that the energy and Protein intakes of subjects were 84.8% and 85.1% of RDAs, respectively. Vitamin A and calcium intakes showed a significant (p<0.05) difference among the three age groups More highly educated respondents had higher intakes of calcium and phosphorus than those respondents with less education.

Consumption Pattern of Ramyon by Elementary School Pupils -Kangwon do Area- (국민학생의 라면 소비실태 조사( I ) -강원도 지역을 중심으로-)

  • Consumption pattern of Ramyon (fried instant noodle) by elementary school pupils at age of 10∼13 years in Kangwon-do area was surveyed by questionaire. About 64% among 675 pupils consumed Ramyon more than once or twice per week. On the whole, common Ramyon was frequently consumed as a kind of substitutes for normal meal at home because of its convenience. The advertisement had strong effect on the selection of Ramyon. Especially, gummy texture of noodle and hot taste of soup are playing as a vital role in choosing Ramyon. At present, no significant differences in consumption pattern between sex were observed in most cases.

Dietary Behaviors, Food Preferences and Its Relationships with Personality Traits in Sixth Grader′s of Elementary School (초등학교 6학년 아동의 식사행동 및 식품기호와 성격특성)

  • Although many studies have focused on dietary habits and behaviors among children, few have looked at individual dietary behaviors and food preferences and their relationships with personality traits. This study examined the relationships between children's dietary behaviors, food preferences and personality traits using a random sample of 236 sixth graders in Chuncheon. Results showed a high prevalence of undesirable dietary behaviors among children: 42.8% of the children had skipped breakfast at least twice a week, 53% had overeaten, 45.8% had eaten irregularly, and 66.5% had eaten an unbalanced meal. These undesirable dietary behaviors were negatively associated with such personality traits as sociability, responsibility, emotional stability, activity, and superiority. When asked about food preference, fruits were most popular while vegetables were least desirable. Total food preference scores were positively correlated with emotional stability (r=.204), activeness (r=.247), sociability (r=.156), responsibility (r=.249), and superiority (r=.133). Preference for meats had negative correlations with responsibility (r=-.133), sociability (r=-.146), and superiority (r=-.132), while preference for vegetables was positively correlated with these personality traits (r=.292, .244, and .230, respectively). In conclusion, the more desirable dietary behaviors and the higher total food preference scores, the more positive the child's personality traits. In addition, preference for vegetables was associated with positive personality traits. The findings suggest the need for continuous attention and guidance on desirable dietary habits for school children both at home and at school.

  • The purpose of this study was to investigate the operation status of home meal substitute according to the dietary lifestyle for 230 people living in Gwangju. After the survey, the research hypothesis was verified that the suitability of the confirmatory factor analysis measurement tool was high and the average variance extraction was more than 0.5. Although there has been some research on the relationship between the subjects, only a few subjects have been studied. In the future, if the study of the expansion of the number of people and the region will be used as data to support the national diet.

Changes in Content of Functional Components and Antioxidant Activity in Cooked Rice and Porridge of Selected Grains (밥과 죽 조리에 따른 일부 곡류의 기능성 성분 및 항산화 활성 변화)

  • The purpose of this study was to investigate the changes in the content of functional components and the antioxidant activity of cooked rice and porridge composed of selected grains. The results of the study showed that brown rice and oat contained considerable amounts of γ-oryzanol (78.099~238.566 mg/100 g). However, cooked rice showed a decreased content of the same. The highest content of γ-aminobutyric acid (GABA) was observed in brown rice from Samgwang. The contents of biotin in all samples also decreased in cooked rice compared to raw cereal grains. The highest content of total polyphenols and flavonoids were observed in Heukjinmi rice, and the highest radical scavenging activity was also found in this variety. The cooking process led to a decrease in the content of functional components including γ-oryzanol, GABA, biotin, polyphenols, and flavonoids versus the corresponding raw cereal grains. These results may be useful in the development and application of home meal replacements using cereal grains.

Consumer Perceptions Related to "Delivery food" Using Big Data: Comparison before and after the outbreak of COVID-19 (빅데이터를 이용한 "배달음식" 관련 소비자인식 변화 연구: 코로나19 발생 전·후 차이비교)

  • Since delivery food has become a new dietary culture, this study examines consumer awareness through big data analysis. We present the direction of delivery food for healthy eating culture and identify the current state of consumer awareness. Resources for big data analysis were mainly articles written by consumers on various websites; the collection period was divided into before and after COVID-19. Results of the big data analysis revealed that before COVID-19, delivery food was recognized as a limited product as a meal concept, but after COVID-19, it was recognized as a new shopping list and a new product for home parties. This study concludes by suggesting a new direction for healthy eating culture.
