유통구조의 변화가 식행동에 미치는 영향 (The Effect of Change of the Distribution Structure on the Food Purchasing Behavior)

  • Distribution structure is the link between a society's needs and its industrial responses. A change in distribution structure brings about a consumption structure which may results in considerable changes in lifestyle including food habits. The purpose of this study was to evaluate a effect of change of distribution structure on the food purchase. The survey was carried from May to June, 1997 by way of questionnaire of 407 housewives, aged 23-64 years, in Seoul and the capital area. The questionaire consists of sociodemographic characteristics of the subjects and distribution channel, information route of food selection, acknowledgement and coefficient of utilization of new distribution channel, mainly used distribution channel in food purchase, important factors in food selection, and food purchasing behavior. Their data were statistically analyzed based on frequency, mean, and $X^2-test$. The major findings of this study were as follows; 1) Most frequently used distribution channels in food purchase were supermarket(38.53%), department store(15.23%), discount store(14.05%), a conventional retail market(13.87%), membership wholesale club(8.07%), and a conventional wholesale market(6.53%). 2) The new distribution channels that subjects have ever used were discount store(75.4% of the subject), membership wholesale club(63%), mail order house(32%), outlet store(29.4%), home shopping(10.3%). 3) Compared to the subject living far from the new distribution channel, the subject living close to the new distribution channel was higher in frequency of new distribution channel utilization. These observations suggest that change of the distribution structure promotes the change of the food purchasing behavior.

고가격 식품에 대한 소비자의 안전성 인지와 지불용의 (Consumers' Perceptions & Willingness-to-Pay for High-Priced Food)

  • The purpose of this research is to analyze perceptions of consumers and willingness to play for high-priced food. The price dispersions of four food categories - soybean sprouts, tofu, milk, and egg - were analyzed through the market analysis, and the survey with the structured questionnaire was utilized to get information on the reason why consumers buy and don't buy the high-priced food. It tested whether a consumer would change the choice if the new product information on safety issues is offered and if the price of high-priced food is lowed. Results showed that generally consumers don't have the confidence on the level of safety and comparative advantages of quality of high-priced food, but they just purchase the high-priced food as long as they can afford it.

재가노인들을 위한 무료급식소의 식단 평가 (Evaluation of the Menus of Free Meal Service Centers for Home-bound Elderly)

  • The purpose of this study was to evaluate the diet quality of the menus delivered by 17 free meal service centers for the low-income home-bound elderly in Chung- cheong buk-Do. Statistical data analysis was compleleted using the SPSS package program for descriptive analysis, T-test, and ANOVA. The meals offered by free meal service centers were not met the 1/3 recommended dietary allowances in calcium and vitamin $B_2$. There were significant differences between dependent variables(nutrient content, nutrient density, nutrient deficiency, NAR, MAR, food group intake patterns) and independent variables (operation type, operation status, operation period, nutritionist, food cost).

패스트 푸드의 외식행동(外食行動)에 관한 2차(次) 실태조사(實態調査) -여의도(汝矣島) 지역(地域)을 중심(中心)으로- (A Secondary Survey of Fast Food Dining out Behaviours -Focused on Youido Apartment Compound in Seoul-)

  • A secondary survey was conducted of 503 customers, to investigate eating out behaviours at five fast food restaurants of Youido apartment compound in Seoul, in April of 1988. The results are summarized as follows: The majority, 84% of customers, were aged 14 to 30, consisting of junior and senior high school children, college students and company employees. In contrast to the previous survey of 1986, in which no elderly customers were found, a small number of elderly customers were observed in this study. The reasons given by customers for patronizing fast food restaurants were the following, from most to least frequent: 'convenient', 'allows for companionship', 'the pleasant place to eat', 'dining equipment and tableware are hygienic', 'to be able to stay as long as I want', and 'foods rapidly served'. Only 24.2% of the customers purchased the fast foods for a full meal, 38.3% purchased the foods for snacking, and others purchased ice cream only or drink only. The majority of the customers ate the purchased foods at the fast food restaurants. However, a limited number of female customers preferred to take the packed fast foods to their homes. Taste preference was a major factor in food selection from available menu items, among the younger customers; whereas customers over 30 years old were concerned with nutritive balance. Fried chicken, pizza, rolled rice with laver, ice cream, and juice were high on the list of liked foods; in contrast, lower preference was for fish burger, doughnut, spaghetti, Chajang noodles and chili beans. The survey discovered that the preference for fried chicken, pizza, and salad had increased compared to the previous survey of 1986. Preference by food nationality was highest for Korean food, then Western food, Chinese food, and Japanese food, in that order. Customers offered suggestions for better fast food service, such as lowering the price; greater variety in the menu; developing fast foods from the traditional Korean foods; and increasing the proportion of vegetables and fruits on the fast food menu. The customers, in particular, emphasized a need for the development of Korean traditional beverage of malt drink and persimmon punch, as well as mungbean pan cakes and sweet- spicy rice noodles (docbokki), as fast foods.

조선일보에 게재된 음식만들기 기사분석 (Analysis of Home Cooking Articles in Cho-Sun Daily Newspaper)

  • This study was to investigate the trends of dietary life as based on the assumption that economic growth caused the change in dietary life. Newspaper articles on home cooking in Cho-Sun Daily Newspaper, published from 1961 to 1993, were analyzed, and the results are summerized as follows: (1) Total number of articles on home cooking was 817. Traditional Korean foods had been introduced more often than foreign foods, particularily after the third period($'79{\sim}'93$). In the first period($'61{\sim}'67$ serving size of 5 had been adapted mainly, whereas serving size of 4 had been adapted more frequently after third period. (2) Vegetable foods were the most frequently introduced item in home cooking articles as a whole. In the third and forth periods starch foods had been reduced, whereas vegetable and meat foods had been increased in home cooking articles. Use of foods of the season had been reduced thanks to spreading of greenhouse and to improvement of food storage technology. (3) Traditional Korean foods were largely composed of kimchi, boiled rice, Korean style soup and stew which are basic foods in Korea. Foreign foods introduced were mainly beverage, alcoholic drink and salad. Since 1980 meat, chicken and vegetable dishes had been frequently introduced. In conclusion, the daily newspaper articles on home cooking reflect the changes in Koreans' food consumption pattern and consciousness of dietary life.

한국과 일본여성의 식문화 의식과 전통식품 소비실태 비교 연구 (A Comparative Study on the Dietary Culture Consciousness and Their Consumption Attitude of Traditional Foods between Korean and Japanese Women)

  • We conducted a survey on Japanese women's consciousness of food culture and their traditional food consumption by self filling-out questionnaire during January, 2000 for the period of a month, For the survey we selected 250 women residing in Kyoto, Japan. For the statistic work we used SAS package system, and t-test, $\cal{X}^2-test$ and Duncan's multiple range test were also used to verify the results significance. The purpose of this survey lies in gathering a basic data on the comparative direction of Korean and Japanese women's food culture in the future 1. Comparing the preferred food purchase place, In case of Korean women, traditional market was comparatively more preferred while Japanese women relatively preferred convenience store (p<0.001). 2. In case of Japanese women, they answered there is no difference from ordinary days on New Year's Day (71%) and Christmas (40%) while 38% answered they prepare food at home. 40% said they prepare food on parents-in-law's birthday, and 41% said no difference from ordinary days. 52% said they prepare food at home on husband's birthday. For their own birthday, 32% said yes to preparing food at home while 45% said no difference and 22.3% said eating out. For children's birthday 65% said preparing at home, 16.3% said no difference and 14.9% said eating out. 3. Comparing the conception on traditional food, Korean women answered 'complicated' (77%) most while 'simple' (5%) least, which indicates their demands for simplified recipes. In case of Japanese women, 'complicated' (44%) was most while 'scientific' (6%) was least which indicates their demands for scientific way of recipes. There were differences shown by age (p<0.001) and the older the more said 'simple' or 'logical' (p<0.01). 4. As the reason for the complicity of traditional food recipes, Koreans said 'too many hand skill' (60%) most while 'too many spices' (8%) least. For Japanese, 'various kind of the recipe' (55%) was most while 'too many hand skill' (7%) was least. There were significant differences shown by academic background (p<0.01) and income(p<0.01), and the lower the academic background, the more said 'too many spices' as the reason for the complicity in making traditional food. Generally, the lesser the income, the more tendency to say 'various kinds of the recipe'. 5. In case of Koreans, 'the recipe is difficult' (56%) was high while 'uninterested' (9%) was low in answer which showed differences by academic background (p<0.05), and in case of Japanese, 'no time to cook' (44%) was high while 'uninterested' (7%) was low. 6. The following is the reasons for choosing traditional food as a snack for children. In case of Koreans, they answered as 'traditional food' (34%), 'made from nutrious and quality materials' (27%), 'for education' (22%) and 'suites their taste' (17%) revealing 'traditional food' is highest. In case of Japanese, it was revealed in the order of 'made from nutrious and quality materials' (36.3%), 'traditional food' (25.2%), 'suites their taste' (22.6%), 'for education' (12.8%) and 7. Comparing the most important thing for the popularization of traditional food in the world, Koreans answered 'taste and nutrition' (45%) most while 'shape and color' (6%) least. In case of Japanese, 'taste and nutrition' (75%) was answered most while 'hygienic packaging' (4%) was least. Both considered 'taste and nutrition' as most important thing for the popularization of traditional food in the world. 8. In case of Koreans, they answered they learn how to make traditional food 'from mother' (47%), 'media' (18%), 'school' (15%), 'from mother-in-law' (14%), 'private cooking school' (4%) and 'close acquaintances' (2%). In case of Japanese, they said mostly learn 'from mother', but it was also shown that the lower the academic background the lesser the tendency of learning 'from mother' but 'from school' (p<0.001). 9. About the consumption of traditional fermented food, Koreans said they make kimchi (90%), pickled vegetables (39%), soy sauce (33%), bean paste (38%), salted fishery (12%) and traditional liquors (14%) at home while 67% for salted fishery and 48% for traditional liquors answered they buy rather than making at home. On the other hand, Japanese answered they mostly buy kimchi (60%), soy sauce (96%), bean paste(91%), natto(92%), salt fermented fish foods (77%) and traditional alcoholic beverage (88%) to eat. This difference was shown very distinct between Korean and Japanese women (p<0.001). 10. About the most important thing in food, Koreans answered in the order of 'liking and satisfaction' (33%), 'for health' (32%), 'for relieve hunger' (18%) and 'convenience' (17%). In case of Japanese, it was revealed in the order of 'for health' (61%), 'liking and satisfaction' (20%), 'to relieve hunger' (16%) and 'convenience' (3%). This shows that Japanese women take comparably more importance to health than Korean women. The conception of food was shown different between Korean and Japanese women (p<0.001), and Koreans showed level 4-5 of food culture while Japanese showed level 5.

사찰음식을 활용한 단체 급식 식단 개발 (The Development of Institutional Food-Service Menu with Temple Food)

  • Objectives: This study developed two weeks menu using temple foods, assessed preference for the menu among ordinary people, and determined the possibility of using temple foods to make out institutional food service menu. Methods: To make out the menu, 153 typical types of temple food were selected, under several conditions, thus including balanced food groups, natural foods in season, preparation time, preparation methods, and foods appropriated for institutional foodservice. Results: Developed menu contained 1905.8 kcal, had low fat content, high dietary fiber, vitamin, and mineral content, and good protein content in the nutritional respect, and fit protein requirements with low calorie content and high nutritional value. In the assessment of the food preference for 73 temple food items, most of the foods scored high (4 out of 5 points) for preference in general; therefore, the menu tended to be satisfied to the adults' preference. In particular, boiled rice (rice with chwi, rice with cirsium, rice with mushroom, rice with mushroom & vegetable and gimbap with tofu) and fried foods (fried shiitake with sweet & sour sauce and fried kelp) were highly preferred. Conclusions: The menu using temple foods can be a healthy choice for adults if it is well planned and managed. This study may be expected to provide basic data that would help developing menu to popularize temple foods. The above results could be applied at home as well as at foodservice institutes and furthermore could offer information for developing temple food products.

식품 알레르기와 식생활 태도 인식 - 전남지역 일부 초등학생을 대상으로 - (Recognition of food allergies and dietary attitudes in Jeonnam elementary school students)

  • 본 연구는 전남 나주지역 초등학생 5, 6학년을 대상으로 식품 알레르기 특성을 알아보고, 식품 알레르기 경험에 따라 식품 알레르기와 식생활 태도 인식을 비교하여 학교급식에서 알레르기 학생의 효율적인 관리를 위한 기초 자료로 제시하고자 하였다. 본 연구의 결과는 다음과 같다. 첫째, 초등학생의 식품 알레르기 증상으로는 '피부'가 가장 많았고, 알레르기 원인 음식으로는 '원인 식품을 모른다'가 33.5%이었으며, 의사의 진단을 받은 경우는 51.0%이었고, 치료를 받은 적이 있는 경우는 63.9%이었으며, 이로 인해 식품을 제한하고 있는 경우는 53.5%, 식품을 제한하게 된 동기는 병원진단을 통해서가 40.5%로 가장 많았다. 식품 알레르기 가족력은 '없다'가 가장 많았고, 식품알레르기 증상이 심하게 나타나는 계절은 '계절과 상관없다'가 가장 많았다. 알레르기에 영향을 주는 가장 큰 요인으로는 특정 식품이나 음식이 64.1%로 가장 많았고, 알레르기에 대처하는 방법은 '별다른 대처를 하지 않는다'가 가장 높게 나타났으며, 식품 알레르기 예방 치료 방법으로 '원인 식품을 제한한다'가 45.1%로 가장 많았다. 둘째, 식품 알레르기 경험에 따른 식품 알레르기 인식에서는 '식품 알레르기에 대하여 알고 있거나 들어본 적이 있는지 유무', '식품 알레르기 상담 및 교육 참여 여부', '알레르기 원인 식품을 제한해서 나타나는 성장기 아동의 문제점', '식품 알레르기에 관한 학교급식 알림판 정보 제공 관심 여부', '알레르기 주의 식품에 대한 교육 필요 여부', '식품 알레르기와 관련하여 학교에 바라는 점' 항목에서 식품 알레르기 경험에 따라 유의한 차이가 나타났다. 셋째, 식품 알레르기 경험에 따른 식생활 특성은 편식하는 이유에서 유의한 차이를 보였고 하루 식사, 특정 식품 편식, 주된 간식에서는 식품 알레르기 경험에 따라 유의한 차이가 나타나지 않았다.

충남지역 일부 시설노인과 재가노인의 식생활 및 영양섭취상태 비교 (Comparative Study on Dietary Life and Nutrient Intakes of Elderly Persons at Nursing Home or Their Home in Chungnam)

  • 본 연구에서는 거주상태가 다른 시설과 재가 노인들의 식생활 및 영양섭취상태를 비교, 분석하여 질적으로 우수한 양질의 급식을 제공하고 합리적인 식생활 관리가 이루어질 수 있는 기초자료를 제공하고자 충남지역 일부 시설노인 150명과 재가노인 150명을 대상으로 설문조사를 실시하였으며, 그 결과를 요약하면 다음과 같다. 1. 시설노인과 재가노인의 낮잠 빈도는 유의한 차이가 없었으며, 외출 빈도는 재가노인이 시설노인보다 유의하게 높았다. 일상생활 신체활동 정도에서 시설노인이 재가노인보다 매우 가벼운 활동을 한다는 비율이 높았으나, 운동 빈도에서는 시설노인이 재가노인에 비해 규칙적인 운동 비율이 높았다. 2. 시설과 재가 노인 대부분이 질병을 가지고 있었으며, 남자 시설노인은 치매(50.0%)와 소화기질환(30.0%), 재가노인은 혈관질환(40.0%)과 당뇨병(26.0%)순으로 질병을 가지고 있었다. 여자의 경우 시설노인은 소화기질환(43.0%)과 혈관질환(27.0%), 재가노인은 혈관질환(46.0%)과 심장질환(27.0%) 순으로 나타났다. 영양제 복용의 경우 남자 시설노인은 안한다는 응답이 52.0%로 높았으며, 재가노인의 60.0%가 가끔 먹는다고 응답하여 유의적인 차이를 보였다. 흡연, 음주, 구강상태와 같은 건강관련 평가는 시설노인이 재가노인보다 바람직하지 못한 것으로 나타났다. 3. 식사 빈도의 경우, 여자 노인은 아침, 점심, 저녁식사를 매일 한다는 비율이 재가노인보다 시설노인에서 유의하게 높았으며, 남자 노인은 저녁식사를 매일 한다는 비율이 시설노인보다 재가노인에서 유의하게 높았다. 식사의 양에서는 시설노인은 적당량 식사를 한다고 답한 비율이 가장 높았으며, 재가노인은 배부를 때까지 식사한다는 비율이 가장 높았다. 식사시간은 시설노인들의 식사시간이 재가노인보다 상대적으로 짧은 것으로 나타났다. 일일 간식빈도에서 시설노인은 1회가, 재가노인은 2회가 가장 높은 비율을 보였다. 4. 영양소 섭취량의 경우 시설노인의 에너지 섭취량은 남녀 각각 2,229.9 kcal와 2,302.1 kcal로 재가노인의 1,894.0 kcal와 1,885.9 kcal보다 유의하게 높았다. 그밖에 단백질, 비타민 A, 비타민 $B_1$, 비타민 $B_2$, 니아신, 엽산, 비타민 C, 칼슘, 인, 철, 아연 등의 영양소 섭취량이 재가노인보다 시설노인에서 유의하게 높았다. 이상의 연구결과를 통해 시설노인의 건강상태가 재가노인보다 불량함에도 불구하고, 식사빈도, 식사 섭취량, 영양 섭취량 등이 재가노인보다 높게 나타났다. 향후 시설노인과 재가노인에 대한 영양평가 및 관리가 지속적이고 전문적으로 이루어질 수 있는 방안이 마련되어야할 것이다.

지역.연령.성별에 따른 식품선호도에 관한 연구 -서울.전남 일부 지역을 중심으로- (The Analysis of Food Preference According to Region, Age, Sex)

  • This study was surveyed the preference for the regional food and food choices according to Region, Age, Sex. The subjects were 943 residing in Seoul and Cheon Nam region. The summarized result are as follows; The survey about the preference for the regional food showed that subjects in Cheon Nam has higher preference for the Cheon Nam food and subjects in Seoul for the Seoul food respectively. The most subjects marked very high preference scores about familiar food. The preference for the regional food and food choices were effected by main growth region. Subjects brought up in Cheon Nam like Cheon Nam food especially fresh raw fishes(WHOI) and fermented fishes(CHOT GAL) more than those brought up in Seoul, although both of them reside in Seoul now. But they were brought up in Cheon Nam, subjects residing in Cheon Nam or Seoul now showed no difference in preference for Cheon Nam food. Subjects in Cheon Nam showed higher preperence for fresh raw fishes(WHOI), fermented fishes(CHOT GAL), especially in older men.
