울금(Curcuma longa L.)이 고지방·고콜레스테롤 식이 흰쥐에서의 담즙산 및 UDP-glucuronyl transferase 활성에 미치는 영향 (Effect of Tumeric (Curcuma longa) on Bile Acid and UDP-glucuronyl Transferase Activity in Rats Fed a High-fat and -cholesterol Diet)

  • 본 연구는 울금 분말을 고지방 고콜레스테롤 쥐에 농도별로 2.5% (TPA group), 5% (TPB gorup)의 수준으로 공급하였을 시 담즙산 및 UDP-glucuronyl transferase (UDP-GT) 활성에 미치는 영향을 관찰하였다. 체중증가량은 정상군에 비해 고지방 고콜레스테롤 군에서 유의적으로 증가하였으나, 울금 분말을 공급한 군에서는 체중의 감소가 나타났다. 식이섭취량 및 식히효율에서는 정상군에 비해 고지방 고콜레스테롤 군에서 증가하였다. 총콜레스테롤 함량과 중성지질 함량은 정상군에 비해 고지방 고콜레스테롤 군에서 유의적으로 증가하였다. 혈중의 HDL 콜레스테롤은 정상군에 비해 고지방 고콜레스테롤 군에서 유의적으로 감소하였고, 울금 분말 공급군에서는 고지방 고콜레스테롤 군에 비해 유의적으로 증가하는 경향을 보였다. 반면, LDL 콜레스테롤 및 동맥경화지수(AI)에서는 고지방 고콜레스테롤에서 정상군에 비해 유의적으로 증가하였다. 간조직의 총 지질함량을 관찰한 결과 중성지질의 함량 및 총 콜레스테롤 함량은 정상군에 비해 고지방 고콜레스테롤 군에서 유의적으로 증가하였으며, 고지방 고콜레스테롤 군에 비해 울금 분말 공급군은 유의적으로 감소하는 경향을 나타내었다. 분변의 총 콜레스테롤 함량 및 중성지방 함량은 울금 분말을 공급한 군에 비해 고지방 고콜레스테롤군에 비해 다소 증가되었다. 혈청 중의 담즙산 농도는 고지방 고콜레스테롤 군에 비해 울금 분말을 공급한 TPA, TPB 군에서 유의적으로 증가 하였으며, UDP-GT활성을 관찰한 결과는 울금 분말 5%를 공급한 TPB 군은 고지방 고콜레스테롤 군에 비해 유의적으로 증가되었을 뿐만 아니라 가장 높은 활성을 나타내었다. 따라서 본 연구의 결과로 미루어 울금은 담즙산 및 UDP-GT의 활성을 높여줌으로써 지질대사의 개선작용을 지니고 있음을 확인할 수 있었다.

명아주의 일반성분, 항산화활성 분석 및 흰쥐의 혈중 생화학적 분석에 관한 연구 (Studies on the general analysis and antioxidant component analysis of Chenopodium album var. centrorubrum and biochemical analysis of blood of mice administered C. album)

  • The purpose of this study was to develop new food materials by analyzing nutritional components and antioxidant activities of Chenopodium album var. centrorubrum. The highest amount of mineral obtained in C. album was found to be $1.01{\pm}0.07mg$ per 100 g of iron. The total phenolic content in C. album was found to be 3.77~9.57 GAE (gallic acid equivalent) mg/g. The reducing activities of leaves and roots of C. album determined using FRAP (ferric-reducing antioxidant power) were higher in ethanol extracts than water extracts. The ABTS radical scavenging activities of leaves and roots of C. album were $204.29{\pm}4.98{\mu}mol/g$ and $106.96{\pm}2.81{\mu}mol/g$, respectively. The DPPH radical scavenging activity was high upon extraction using ethanol (roots $20.71{\pm}0.04{\mu}mol/g$, leaves $71.08{\pm}0.33{\mu}mol/g$). HDL-cholesterol was significantly higher in the high fat diet groups supplemented with C. album than the control groups (p<0.05). These results suggest that C. album can be used as a natural antioxidant and a functional dietary supplement.

양파껍질을 이용한 우육포의 항산화 활성 및 품질 특성 (Antioxidant Activities and Quality Characteristics of Beef Jerky Supplement with Onion Peel Extract)

  • The objective of this study was to reduce the waste rate of onion peel, which has excellent functionalities, and to promote its industrial utilization. The methodology involved preparing beef jerkies using liquid seasonings with 0% (OPE0), 50% (OPE50) and 100% (OPE100) onion peel extract (OPE) of domestically produced onion, respectively; and assessing their antioxidant activities and quality characteristics. As the amount of added OPE increased, the contents of crude protein and crude ash increased, while those of crude fat decreased. As for color values, increase in the amount of added OPE led to increase in L value and b value, but decrease in a value. The measurement of mechanical texture showed that hardness and cohesiveness decreased as the amount of added OPE increased. TBARS (thiobarbituric acid reactive substance) content decreased as the amount of added OPE increased. And the amount of added OPE increased, all the antioxidant activity of beef jerky increased. Acceptability test showed the highest preference for OPE50 with regard to flavor, taste texture and overall acceptability. Quantitative descriptive analysis (QDA) showed that increase in the amount of added OPE led to increase in meat color, salty taste, sweet taste, meat flavor and chewiness and decrease in off-flavor. According to principal component analysis (PCA), OPE50 and OPE100 had high levels of the sensory attributes that increase preference-such as meat color, salty taste, sweet taste, meat flavor and chewiness. Based on such results, it was established that 50% is the optimal mixing ratio of OPE for preparing a beef jerky of high preference that also has excellent quality characteristics and antioxidant activity.

Herbal extract THI improves metabolic abnormality in mice fed a high-fat diet

  • Target herbal ingredient (THI) is an extract made from two herbs, Scutellariae Radix and Platycodi Radix. It has been developed as a treatment for metabolic diseases such as hyperlipidemia, atherosclerosis, and hypertension. One component of these two herbs has been reported to have anti-inflammatory, anti-hyperlipidemic, and anti-obesity activities. However, there have been no reports about the effects of the mixed extract of these two herbs on metabolic diseases. In this study, we investigated the metabolic effects of THI using a diet-induced obesity (DIO) mouse model. High-fat diet (HFD) mice were orally administered daily with 250 mg/kg of THI. After 10 weeks of treatment, the THI-administered HFD mice showed reduction of body weights and epididymal white adipose tissue weights as well as improved glucose tolerance. In addition, the level of total cholesterol in the serum was markedly reduced. To elucidate the molecular mechanism of the metabolic effects of THI in vitro, 3T3-L1 cells were treated with THI, after which the mRNA levels of adipogenic transcription factors, including C/$EBP{\alpha}$ and $PPAR{\gamma}$, were measured. The results show that the expression of these two transcription factors was down regulated by THI in a dose-dependent manner. We also examined the combinatorial effects of THI and swimming exercise on metabolic status. THI administration simultaneously accompanied by swimming exercise had a synergistic effect on serum cholesterol levels. These findings suggest that THI could be developed as a supplement for improving metabolic status.

맥주효모 슬러리의 급여가 육계의 성장과 혈액 성상에 미치는 영향 (Effects of Brewer's Yeast Slurry on the Growth and Blood Composition of Broiler Chicks)

  • 맥주공장에서 얻어지는 맥주효모 슬러리를 육계사료의 첨가제로서 이용하기 위하여 8$0^{\circ}C$에서 건조하였으며, 육계사료에 0%, 2%, 4% 첨가ㆍ급여하여 육계의 성장과 장기발달 및 혈액 성상에 미치는 영향을 조사하였다. 4% 맥주효모 슬러리의 첨가시 육계의 성장률이 9% 향상되었고(P<0.05) 사료 효율은 8% 개선되었다(P<0.05). 사료섭취량은 전처리구간에 차이가 없었다. 또한 전 처리구간에서 육계의 간장, 심장 및 복강지방의 무게에는 차이가 없었으나, 체중 대비 간장 무게의 비율에 있어서는 4% 첨가구에서 감소되었다. 맥주효모 슬러리의 첨가가 혈중 glucose 농도에는 영향을 미치지 못하였으나, 혈중 triglyceride 농도에 있어서는 4% 첨가구에서 31% 유의적으로 감소하였다.(P<0.05). 특히 맥주효모 슬러리의 첨가가 육계의 혈청 중 total-cholesterol 농도에는 영향을 미치지 않았으나, HDL 농도에 있어서는 2%와 4% 첨가구에서 대조구에 비하여 각각 33%와 26% 증가하여(P<0.05), HDL/TC의 비율을 향상시켰다(P<0.05). 본 연구의 결과는 맥주효모 슬러리의 첨가가 육계의 성장 및 사료효율을 개선시켜 육계의 사료 첨가제로서 이용가능성을 확인시켜 주었으며, 특히 혈중에서는 triglyceride 농도를 감소시키고, HDL 농도 및 HDL/TC의 비율을 증가시켜 체내 지방대사에 영향을 미친다는 것을 보여준다.

약선차 강지음(降脂飮)이 기체혈어형(氣滯血瘀型) 과체중 성인의 혈청지질 및 활성산소 농도에 미치는 영향 (Effects of Kangjieum on Serum Lipids and Active Oxygen Content in Overweight Women Consequential Qi-stagnation and Blood Stasis Patterns)

  • This research was planned and executed to evaluate how the composition of Yack-sun (oriental diet therapy) tea can effect the health conditions of people who are suffering from diet-related diseases such as being overweight, obese and hyperlipidemic, by taking Yack-sun tea in a form of nutritional supplement with daily meals. We produced Kangjieum with Lycense Mill., Polygonum multflorum Thunb, Cassia tora L., Crataegus pinnatifida Bge and Salvia miltiorrhiza Bge. We evaluated the effects of this tea on serum lipids, on homocysteine concentration, and on active oxygen contents, oxidative stress by clinical practices. We have determined that this tea has a significant effect on decreasing body fat content, decreasing total cholesterol, decreasing LDL-cholesterol, and decreses triglyceride and homocysteine concentrations. In addition, blood active oxygen content and oxidative stress were significantly decreased. We think that scientific and objective evaluation was performed on the components of Kangjieum prescription. We concluded that we could apply the components, not only in a form of tea, but also in other forms of various foods. The information we received from this conclusion will be basic information on how we can apply oriental medicinal resources into other food and will be a steppingstone for medicinal herbs to place a foot in the field of functional food research, which already draws sizable attention world-wide.

발효흑마늘 추출물이 흰쥐의 지질대사 및 간기능 개선에 미치는 영향 (Effects of the Fermented Black Garlic Extract on Lipid Metabolism and Hepatoprotection in Mice)

  • This study was conducted to evaluate the functionality of fermented black garlic extracts under various conditions. Black garlic powder was prepared by aging for 0~72 hours at 80℃ depending on relative humidity (RH). It showed the highest antioxidant effects among the samples; the total antioxidant activity of black garlic powders at RH 75%, 84%, and 90% for 72 hours was increased 31.9 times, 28.2 times, and 22.6 times compared with that of the fresh garlic powder, respectively. Also, the alliin content was gradually decreased. S-ally-L-cysteine and S-ethyl-cysteine levels were increased; the highest values were 495.9 ㎍/g and 1,769.7 ㎍/g after aging for 72 hours at RH 75%. Aspartate transaminase (AST) and alanine transaminase (ALT) levels were increased following high fat diet feeding, but the rise was obviously reduced by administration of black garlic extract. The total cholesterol, LDL/VLDL-cholesterol, and triglyceride contents in serum were significantly lower in methionine and choline deficient (MCD) diet treatment groups than in the positive control group. The concentration was increased following the intake of black garlic and fermented black garlic extracts. Therefore, black garlic extracts could be an ideal material as a dietary supplement in healthy functional foods to improve the effects on fatty liver.

Momordica charantia extract supplementation tend to affect improvements in body composition and metabolic parameters on tennis players: A pilot study

  • Dietary supplements derived from natural sources are an essential factor in optimizing athletic performance. It has been proposed that the extract of Momordica charantia (M. charantia) that is known as a bitter melon can be potentially used as a novel supplement for health promotion. This pilot study aimed to examine the effects of the M. charantia extract when administered in the form of a sports drink, and we evaluated changes in body composition and metabolic factors in tennis players after 4-week consumption of the extract. Eight male college tennis players were instructed to consume an M. charantia extract 6 times per day (3 in the morning and 3 in the afternoon, and the total daily intake was 600 ml). Collected data were analyzed using paired t-tests to examine the changes over time after consumption of the M. charantia extract. The results revealed a significant increase in the trunk muscle mass, basal metabolic rate, and daily calorie intake (p < 0.05). Levels of protein, minerals, and total body water showed an increased tendency (not statistically significant), whereas intracellular water and extracellular water showed a decreased trend. Furthermore, fat-free mass, skeletal muscle mass, and muscle mass showed an increased tendency. In conclusion, consumption of the M. charantia extract caused an increase in parameters related to protein, muscle mass, and metabolism. It seems that follow-up studies related to fatigue, inflammation, and stress hormones related to the M. charantia extract consumption would be needed.

We produced Kangjieum with Lycium chinense Mill., Polygonum multflorum Thunb, Cassia tora L., Crataegus pinnatifida Bge and Salvia miltiorrhiza Bge. Thus, we approach of oriental diet therapy area research of Kangjieum and analysis proximate composition, water soluble antioxidant content. The content(%, dry basis) of total carbohydrate was 60.23%, crude protein was 18.18%, crude ash was 11.36% and crude fat was 10.23% in Kangjieum. Total water soluble antioxidant content was 1.027 ${\mu}g/m{\ell}$ of Kangjieum. We think that scientific and objective evaluation was done on the components of the Kangjieum prescription. This basic data could help guide the application of oriental medicinal resources into other foods and serve as a stepping-stone for use of Kangjieum in the burgeoning field of nutraceutical foods. Last, the scientific effects of oriental medicinal foods developed according to oriental medicinal theory. This theory is believed to be essential for government policy development concerning validation of medicinal effects and assessment, with the aim of fostering systematic development and providing guidance to food development in the interest of national health.

옥수수와 사료용 콩 혼작에 의한 조사료 수량 및 품질 (Yield and Quality of Forage Produced by Mixed Planting of Soybean and Corn)

  • The soybean [Glycine max (L.) Merr.], an edible legume, has a high protein content in both its hay and grain, so it is often used as a supplement for other forages that have a deficient protein concentration. Therefore, this study investigated the forage quality and yield in the case of mixed planting of soybean and corn. The forage yield and quality were assessed for three cropping patterns: soybean mono planting, corn mono planting, and mixed planting of soybean and corn. For planting, this study used a forage corn cultivar, Kwangpyeongok, and three recombinant inbreed lines, W2, W4, and W11, selected from Glycine soja (PI483463)${\times}$G. max (Hutcheson). The mixed planting of soybean and corn produced a higher forage yield than the corn mono cropping. The crude protein and crude fat content were also increased with the mixed planting of soybean and corn when compared with the corn mono cropping. Some decrease of ADF and NDF, and increase for RFV in mixed planting of soybean and corn than corn mono cropping. Therefore, the results show that mixed planting of soybean and corn is an effective cropping system to improve the forage quality.
