  • An exceptional case of inhabitation of a Sphagnum sp. was firstly confirmed at abandoned paddy terrace (APT) wetland in Ansan. Water sampling for analyzing of physicochemical conditions including nutrients such as NP, $Ca^{2+}$ and $Mg^{2+}$ was performed and the vegetation map for distribution of Sphagnum sp., topographical map, and flora list for companion species were made at field in June 2011. From the results, the Sphagnum sp. in the study site was identified as S. palustre and it covered about 8% of the wetland cover of 3,200 $m^2$. Most distributions of S. palustre were observed at tussock structures as micro-topography by sedges and grasses within a wetland (74%) and the shaded slope area under Pinus densiflora's canopy in wetland boundary (26%). Despite that APT in Ansan is relatively lower wetland in altitude than high moors, the contents of calcium ($0.45{\pm}0.2$) and magnesium ($1.48{\pm}0.6$) ion which are critical limiting factors for Sphagnum spp. were very low levels as well as NP ($PO_4$-P, $0.02{\pm}0.0$; $NO_3$-N, $0.25{\pm}0.3$; $NH_4$-N, $0.06{\pm}0.1$) and it could enable the inhabitation of S. palustre in lower APT.

  • Vitamin C is an important physiological antioxidant which neutralizes reactive oxygen species (ROS) and reduces the oxidative stress in the body. Although it has been associated with various diseases, few studies have reported the dose-response relationship between vitamin C intake, storage and functions in the body, including its antioxidant function. The criteria to establish the Dietary Reference Intakes for Koreans (KDRIs) for vitamin C were based on the changes in plasma concentrations and saturation of leukocytes according to intake levels and the effects on antioxidant capacity and risk of metabolic diseases. When establishing the 2020 vitamin C KDRI, while there was no change in the criteria from those of 2015, the reference values were recalculated and revised to reflect changes such as the new standard weight by age. As the number of people consuming dietary supplements has increased over the last decade, only about 10% of adults consume less than the average total vitamin C, but the proportion of adolescents and elderly who consume less than the average is high. On the other hand, as the intake of vitamin C supplements increases, the proportion of people consuming excessive vitamin C is also increasing. There is a body of opinion that it is necessary to establish a vitamin C KDRI for smokers or people with chronic diseases such as the metabolic syndrome, but these standards have not been established due to the lack of supporting scientific evidence. As a result, studies to establish vitamin C KDRI for Korean smokers and patients with the metabolic syndrome, as well as studies on the excessive intake of vitamin C due to supplementation and interactions with other nutrients, are needed.

  • Thirty-one multiparous Bos indicus${\times}$Bos taurus cows were offered concentrate supplements based on (1) 2 kg wheat bran; (2) 4 kg wheat bran; and (3) concentrate (30 maize: 67 wheat bran) at 0.5 kg per 1.0 kg milk produced, in a one year study in India. All supplements also contained 2 parts of a mineral mixture and 1 part salt. Cows were allocated to treatments at calving on parity (2nd and 3rd calf) with 13, 8 and 10 cows respectively in treatments 1, 2 and 3. They were individually fed for whole lactation, the basal diet being ad libitum berseem clover plus 2 kg wheat straw in the cool season/winter (period 1) and chopped maize in summer (period 2). Diets with berseem offered TDN and CP contents of 67.6, 18.2; 65.5, 16.8; and 67.5, 16.8 percent; and with maize fodder 62.6, 12.0; 62.6, 12.5; and 63.3, 12.5 percent for treatments 1, 2 and 3, respectively. Total dry matter (DM) intakes (1) 9.9 kg, (2) 10.9 kg and (3) 11.1 kg DM/day and intake of nutrients (TDN, CP) increased with level of supplementation (p<0.01), but effects of treatment on animal performance were not significant. Cow milk yields averaged (1) 7.9 kg, (2) 8.1 kg and (3) 8.8 kg milk/day (p>0.05) for lactation lengths of 252, 270 and 220 days (p>0.05) and cows gained +7.3; +8.1; and +12.0 kg respectively over their lactation (p>0.05). Wheat bran was used effectively as the sole energy component in concentrates for lactating dairy cows. Its use could potentially reduce feed costs and demands for cereal grain. Reduced concentrate levels may be considered if green forages of high nutrient content are fed ad libitum. Associated economic advantages or disadvantages require further evaluation.

  • Organic compost has been widely applied to the cropland because it has been thought as Environmentally Sound Agriculture (ESA) in Korea. However, many field researches have been done to investigate water quality impacts of organic compost uses, compared to those from chemical fertilizer applications. It was found that pollutant loads from organic compost applied croplands were higher than those from chemical fertilizer applied areas. However, there might be other unknown factors affecting the results since the experiments were performed at the outside fields. In this study, indoor rainfall experiments using the Norton rainfall simulator systems were done to minimize and exclude errors from unknown sources by controlling soil characteristics, rainfall amount, rainfall intensity, and fertilizer treatments. The amounts of surface runoff and groundwater percolated from 10% and 20% slope plots were measured and water quality samples were collected and analyzed for BOD, COD, and T-P. Flow weighted mean concentration (FWMC) values were computed to assess effects of different fertilizer treatments. It was found that average concentration values of BOD were 5.57 mg/L from chemical fertilizer treated plot and 8.08 mg/L from organic compost treated plots. For 10% slope, FWMC BOD values from organic compost treated plots were higher by 29.9% than those from chemical fertilizer treated plots. For 20% slope, FWMC BOD values from organic plots were higher by 38.8% than those from chemical fertilizer plots. FWMC BOD values for 20% slope plots were higher than those from those for 10% slope plots. The similar trends were found for COD and T-P. In Korea, excessive use of organic compost has caused extremely high levels of organic matter contents at the cropland. Organic compost are usually applied to the cropland to improve soil quality, while chemical fertilizer is applied to help crop growth. Since organic compost is very slow in releasing its nutrients to the soil, farmers usually apply excessive organic compost for immediate effects and maximum crop yields, which has been causing soil and water quality degradations. Therefore, thorough investigations for better nutrient management plans are needed to develop the ESA strategy in Korea.

  • In this study, we investigated the effect of roasting temperature on nutrient content, digestive enzyme activities, and antioxidative properties of sesame seed juice. The sesame seeds were either roasted at 160, 200, and $240^{\circ}C$ or not roasted, and the juice was extracted using a low-speed juice extractor. Owing to the short duration of roasting, benzo[a]pyrene were not detected and trans fatty acids were negligible detected in all sesame seed juices. The sesame seed juice contained abundant nutrients such as minerals, vitamins, and fatty acids. The contents of minerals, vitamin B1 and B3, and sesamol increased with increase in roasting temperature; however, the levels of fatty acids, vitamin B2, sesamin, and sesamolin decreased. In addition, the antioxidant content and antioxidative activities of sesame seed juice increased with increase in roasting temperature. Therefore, these results suggest that roasted sesame seed juice possesses high antioxidative activities, which may be beneficial for preventing oxidative damage in the body.

  • Currently, Korea is facing dramatic nutrition transition among children, which may increase risk of degenerative diseases due to excessive intakes of fats, sugars and sodium. Promotion of eating healthier foods among children is difficult because the present nutrition label is not easily understood. Therefore, to promote healthier foods this study was aimed at developing guidance of standard amounts of high, medium and low levels of sugars, sodium, fats and other components contained in foods or drinks that are promoted to or formulated for consumption by children. Multipronged approach was used to collecting information, including key word searches in Medline and other databases, internet searches, reports from world organization, and contact of key individuals who work in organizations. We reviewed dietary reference intakes for Koreans, nutrient reference values, nutrient content claims of nutrition labeling, guideline daily amounts of United Kingdom, dietary guidelines and consumption data of nutrients, and selected components for labeling. And we decided goals of guideline daily amounts for children and nutrient criteria to underpin the high, medium and low content of each component. Then we collected data on processed foods sold at 12 middle schools and 11 high schools in Seoul, and classified processed foods into food category. Sales per one student per day were in the order of snacks, breads, and non-carbonated drinks. One hundred forty five mostly consumed products were selected and classified into criteria of high, medium and low total fat or sodium. Eighty five(58.6%) were classified into high fat food and only 11(7.6%) into high sodium food, in case that the base is chosen per 100 g or 100 mL. In conclusion, the nutrient criteria and choice of 100 g base, which we suggest in this study, need to be tested by simulation with more processed foods and refined in view of the practical issues suggested by stakeholders in future.

  • This study was aimed to grow organic forage as a prime requirement for organic Hanwoo cattle production over a period of 3 years (2012~2015) in Gyeongbuk region, Korea through mixed cropping of winter fodder barley with legume and application of fermented cattle manure. The effect of barley-legume mixed cropping and application of different levels of fermented cattle manure was studied on forage productivity of whole-crop barley (WCB) and evaluation of feeding capacity of Korean native cattle (Hanwoo) per unit area. The collected data was analyzed using SAS 9.3 software. Barley-legume mixed cropping increased (P<0.05) yields of dry matter (DM), crude protein (CP) and total digestible nutrients (TDN) as compared to those of sole WCB as monoculture. Similarly, acid detergent fiber (ADF) contents and relative feed value (RFV) were also higher (P<0.05) in barley-legume mixed sowing forage compared with those of sole WCB as monoculture. In case of manure application, yields of DM, CP and TDN were also found (P<0.05) highest in 100~150 kg N/ha. However, varying cattle manure levels did not influence (P>0.05) CP and neutral detergent fiber (NDF) contents. In response to increasing nitrogen application level, ADF content increased (P<0.05) but TDN content and RFV decreased (P<0.05). The Barley-legume mixed sowing and increasing application levels of fermented cattle manure also significantly enhanced (P<0.05) feeding capacity of organic Hanwoo (head/ha) having 450 kg body weight with 400 g of daily gain. Findings of present study indicated that barley-legume biculture not only cut nitrogen application level of fermented cattle manure by over 50 kg per ha but also increased their feed value and productivity of forage as compared to WCB monoculture. This would be contribution to the diversity of forage resources as well as production of organic animal product by creating low cost and high quality organic forage.

Effects of Sowing Mixed Legume Forage and Applying Cattle Manure on the Productivity and Organic Hanwoo Feeding Capacity of Whole Crop Wheat (콩과 사료작물의 혼파와 우분의 시용이 총체 밀의 생산성과 유기한우 사육능력에 미치는 영향)

  • This study was to assess the effects of sowing mixed legume forage and applying fermented cattle manure on the productivity and feed value of whole crop wheat (WCW) as a representative of winter crops and also to estimate feeding capacity of Korean native cattle (Hanwoo) per unit area by defining optimal application levels of cattle manure for more fertile soil and manure recycling for the purpose of reduced environmental pollution and efficient production of organic forage contributable to production of organic animal products. Sowing mixed legume forage significantly (p<0.05) increased yields of dry matter (DM), crude protein (CP) and total digestible nutrients (TDN) for WCW compared to WCW alone sowing, but there were no differences between mixed sowing treatments. The yields of DM, CP and TDN were significantly (p<0.05) higher in 100~150 kg N/ha. The CP and acid detergent fiber (ADF) contents were highest in mixed sowing with hairy vetch, followed by sowing mixed forage pea and WCW alone (p<0.05). There were no differences in CP among cattle manure application levels. As nitrogen application level increased, ADF content increased (p<0.05), but TDN content decreased (p<0.05). Feeding capacity of organic Hanwoo (head/ha) weighing 450 kg of body weight with 400 g of daily gain significantly (p<0.05) increased due to mixed sowing with legume forage, and with increasing application levels of fermented cattle manure, feeding capacity significantly (p<0.05) increased. The results indicated that mixed-sowing of WCW and legume forage not only reduced nitrogen application level of fermented cattle manure by over 50 kg per ha but also increased their feed value and productivity, and feeding capacity. This would be contributable to diversity of forage resources as well as production of organic animal product by creating low cost and high quality of forage.

  • In Korea, the ever-increasing population has become a serious problem and the decreasing of cultivated lard area per person has become a major concern. Therefore, today we are implementing a green revolution using miracle varieties which require more fertilizer. The increased use of fertilizer along with development and adoption of high yielding varieties is the key to carrying out this green revolution. Fertilizer consumption in Korea is mainly influenced by agricultural techniques, fertilizer prices and government policies for increasing food production. If there are no special change, such as a cataclysm or an exhaustion of resources, it is quite clear that the fertilizer demand will increase to the near maximum ceiling point of optimum levels for crops in the year 2000. Fertilizer demand is not the amount of fertilizer that will be used by the farmer, but the actual optimum amount of plant nutrients required for maximum production. In this report, two alternative strategies are consideded in forecasting the future feitilizer demands. Alternative I is projected by reviewing consumption amounts over the last 10 years (1966~75) in Korea. The annual rate of increase in fertilizer consumption for the last 10 years was approximately 8.7% (table 1). Plant nutrient consumption rates in later years have been more balanced, and also fertilizer consumption per total acreage is considerably higher in Korea than in other countries (table 11), consequently the rate of increase in the future is expected to decline. Looking at the long term projections, the average annual rate of increase is expected to be 7% for 1976~80, 2.5% for 1981~90, 1.5% for 1991~2000. Thus, total projected fertilizer demands are estimated at 1,208,000M/T by 1980, 1,547,000M/T by 1990, 1,795,000M/T by 2000 (table 16). Alternative II is based on projected optimum fertilizer levels for crops and on increased crop acreage. The government recommended fertilizer rate has increased by a factor of 0.99 to 5.49 over the past twelve years depending on the specific crops (table 4). Levels of fertilizer demand recommended by government (table 7) in 1976 are still low compared with actual optimum fertilizer demands for crops (table 5). Therefore, future incaeases in fertilizer usage are anticipated. Thus, total projected fertilizer demands are estimated at 1,229,000M/T by 1980, 1,493,000M/T by 1990 and 1,898,000M/T by 2000(table 16).

  • This research was a preliminary case study to determine the levels of total mercury in the tissues of sentinel species (Zacco platypus) and ecological health in relation to habitat characteristics and chemical conditions. We collected fishes in Gap Stream during June$\sim$October 2007 and analyzed the total mercury from five types of tissues such as liver, kidney, gill, vertebrae and muscle of Zaceo platypus using Direct Mercury Analyzer (DMA-80, US EPA Method 7473). Mean concentrations of total [Hg], based on all tissues, was 67.2 and $20.7\;{\mu}g\;kg^{-1}$, in the upstream and downstream site, respectively, indicating 3 times greater level in the upstream. In other words, the levels were higher in the pristine upstream than the downstream influenced by the wastewater disposal plant. Chemical water quality, based on BOD, COD and nutrients (TN, TP) showed that severe degradation occurred in the downstreams than the upstreams. Index of Biological Integrity (IBI) using fish multi-metric model averaged 32, indicating a "good$\sim$fair" condition and varied from 42 (excellent$\sim$good) at S2 to 22 (fair$\sim$poor) at S5 depending on the sites sampled. Qualitative Habitat Evaluation Index (QHEI) in the all sites averaged 142, which was judged as "good" habitat health, but showed a high variation (181 in Site 2 vs. 67 in Site 5). Overall data suggest that health conditions, based on IBI and QHEI, was better in the upstream sites but the mercury bioaccumulation levels in the fish tissues were opposite. We believe that measurements of various parameters are required for a diagnosis of integrative ecosystem health.
