헴프시드가루를 첨가한 쌀쿠키의 품질특성 및 항산화 활성 (Quality Characteristics and Antioxidant Activity of Rice Cookies Added with Hempseed Powder)

  • This study evaluated the quality characteristics of rice cookies prepared with different amounts (0%, 5%, 10%, and 15%) of hempseed powder. The values of density and pH in the cookies did not significantly differ among the groups. The moisture content ranged from 4.86% to 5.83% and was the highest in control groups. The spread factor increased with increasing hempseed powder concentration. The lightness value decreased with increasing amounts of hempseed powder, while the redness and yellowness values did not differ among groups. The incorporation of hempseed in cookies increased cookie hardness. A consumer acceptance test revealed that cookies with hempseed powder added were more preferable than those of the control groups in terms of overall acceptability. The total polyphenol content of the control groups was 7.15 mg GAE/100 g, while that of the hempseed added groups ranged from 12.36 to 17.17 mg GAE/100 g. The substitution of wheat flour for hempseed powder yielded rice cookies with a higher DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging activity. The above results indicate that the most desirable cookies were those prepared with the addition of 15% hempseed powder.

한국산 청삼 헴프단백질의 특성 분석 (Characterization of Hempseed Protein in Cheungsam from Korea)

  • 한국산 청삼종자를 식품산업 분야에서 응용하기 위해서 청삼종자의 영양화학적 분석을 실시하였다. 청삼종자는 약 30.52%의 지방과 30.02%의 단백질로 구성되어 있었다. 청삼종자 지방은 약 88%의 불포화지방산으로 구성되어 있었으며, 오메가-6와 오메가-3 지방산 함량의 비율이 약 3:1이었다. 또한 청삼종자는 높은 필수 아미노산 함량을 나타내었다. 뿐만 아니라 산-염기 침전법으로 추출한 청삼종자 단백질은 자유라디칼 소거활성을 나타내었다. 이러한 결과들은 청삼 헴프단백질이 우수한 단백질 공급원으로 사용될 수 있음을 보여준다.

Effect of Hempseed (Cannabis sativa sp.) Inclusion to the Diet on Performance, Carcass and Antioxidative Activity in Japanese Quail (Coturnix coturnix japonica)

  • This study was conducted to determine the effects of hempseed (H) on performance, carcass traits, and antioxidant activity in Japanese quail (Coturnix coturnix japonica). A total of 192 quail with seven-days old were divided into four experimental groups with four replicates. The treatments were; i) Control diet (C, no hempseed); ii) 5% hempseed in diet (H5); iii) 10% hempseed in diet (H10); and iv) 20% hempseed in diet (H20). The body weight (BW) and feed intake (FI) of quail was determined at 7, 21 and 42 d of age. At 42 d of age four quail were slaughtered and the carcass and internal organ traits were determined. Malondialdehyde (MDA), catalase (CAT), superoxide dismutase (SOD), glutathione peroxidase (GSH-Px), nitric oxide (NO) and total protein were determined in the blood serum end of the experiment. The BW of the groups were not significant at 7 and 21 d, however in the 20% hempseed group BW decreased at 42 d (p<0.05). The FI and feed conversion ratio were not significant among the treatment groups. The carcass, liver, intestine and heart weight and their percentage to carcass were significantly differ in treatment groups (p<0.05). The serum MDA and NO decreased in hempseed addition (p <0.001). The serum SOD, CAT and GSH-Px were increased by hempseed supplementation (p<0.001). In conclusion, hempseed supplementation to quail diets may not improve quail performance traits but increase antioxidant activity in blood.

UV-Vis spectrophotometry법을 이용한 다양한 유지류로부터 헴프씨드 오일의 진위 판별법 (Authentication of Hempseed Oil from Different Commercial Oils Using Simple UV-Vis Spectrophotomety)

  • 대마씨의 외종피를 탈각하여 Tetrahydrocanabinol이 제거된 헴프씨드는 건강식품으로 각광받고 있으며, 헴프씨드 오일은 α-linolenic acid 및 γ-linolenic acid 등의 다가 불포화 지방산 및 지용성 비타민 등이 풍부하여, 인지 기능 및 운동기능 개선, 콜레스테롤 감소, 혈관 염증 완화, 혈전 생성 억제, 신경세포 손상 방지 등의 효능이 알려지면서 수요가 급증하고 있다. 현재 헴프씨드 오일은 여타의 식물성 유지(콩기름, 옥수수유, 올리브유, 카놀라유, 아미씨유)보다 45~140배 이상 고가로 판매되고 있다. 본 연구에서는 FTIR, FTIR-Raman, ATR-FTIR-MIR spectroscopy와 같은 고가의 장비와 전문인력에 의한 분석 없이도 헴프씨드 오일의 진위여부를 판별할 수 있는 간편한 UV-Vis spectrophotometry법을 개발하고자 하였으며, 다양한 오일의 245, 305, 및 415 nm 흡광도를 측정하고, 245/415 nm 및 305/415 nm에서의 흡광도의 비를 계산하여 12.9 및 9.6이 나타나는 경우 헴프씨드 오일임을 확인하였다. 콩기름, 옥수수유, 카놀라유 및 아미씨유의 경우에는 각각 35.4~61.8 및 29.7~50.8을 나타내어 헴프씨드 오일과 쉽게 구분 가능하였다. 상기의 방법은 헴프씨드 오일에 여타의 식물성 유지류를 혼합하는 경우에도 혼합 여부 판별에 이용 가능하였다.

대마(Carnnabis sativa L.)씨의 지방산 조성에 관한 연구 (A Study on the Composition of Fatty Acids of Hempseed)

  • This investigation on the composition of fatty acids of hempseed through gas -chromatography analysis found the follwing results. Myristic acid and other ten materials were detected. And there was mainly composed of myristic acid 29.4%, Palmitoleic acid 16.2%, linoleic acid 14.9%, oleic acid 12.4%. It also showed that heptadecanoic acid 10.8%, erucic acid 0.5%, docosahexaenoic acid 0.3% and essential fatty acid were contained 11.9% between them. As stearic acid, docosahexaenoic acid, linoleic acid and arachidonic acid made lower cholesterol level in body, they will help prevention of senile disease with the oil d hemp seed.

Isolation and Characterization of Edestin from Cheungsam Hempseed

  • Edestin, a major hempseed storage protein from Cheungsam, was isolated to apparent homogeneity by acid precipitation and gel filtration chromatography. The native molecular weight of purified edestin was approximately 300 kDa by Sephacryl S-300 gel filtration. Upon adding 2-mercaptoethanol, the isolated edestin of 56.7 kDa on the non-reduced sodium dodecyl sulfate polyacrylamide gel was converted into subunits, suggesting that the protein might be composed of subunits linked by disulfide bond. Cheungsam edestin was rich in essential amino acids and it has 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical scavenging activity. The results suggest that Cheungsam edestin might be utilized as a superior antioxidative nutrient.

Effects of Temperature during Moist Heat Treatment on Ruminal Degradability and Intestinal Digestibility of Protein and Amino Acids in Hempseed Cake

  • The objective of this study was to evaluate ruminal degradability and intestinal digestibility of crude protein (CP) and amino acids (AA) in hempseed cake (HC) that were moist heat treated at different temperatures. Samples of cold-pressed HC were autoclaved for 30 min at 110, 120 or $130^{\circ}C$, and a sample of untreated HC was used as the control. Ruminal degradability of CP was estimated, using the in situ Dacron bag technique; intestinal CP digestibility was estimated for the 16 h in situ residue using a three-step in vitro procedure. AA content was determined for the HC samples (heat treated and untreated) of the intact feed, the 16 h in situ residue and the residue after the three-step procedure. There was a linear increase in RUP (p = 0.001) and intestinal digestibility of RUP (p = 0.003) with increasing temperature during heat treatment. The $130^{\circ}C$ treatment increased RUP from 259 to 629 g/kg CP, while intestinal digestibility increased from 176 to 730 g/kg RUP, compared to the control. Hence, the intestinal available dietary CP increased more than eight times. Increasing temperatures during heat treatment resulted in linear decreases in ruminal degradability of total AA (p = 0.006) and individual AA (p<0.05) and an increase in intestinal digestibility that could be explained both by a linear and a quadratic model for total AA and most individual AA (p<0.05). The $130^{\circ}C$ treatment decreased ruminal degradability of total AA from 837 to 471 g/kg, while intestinal digestibility increased from 267 to 813 g/kg of rumen undegradable AA, compared with the control. There were differences between ruminal AA degradability and between intestinal AA digestibility within all individual HC treatments (p<0.001). It is concluded that moist heat treatment at $130^{\circ}C$ did not overprotect the CP of HC and could be used to shift the site of CP and AA digestion from the rumen to the small intestine. This may increase the value of HC as a protein supplement for ruminants.

압착식, 압출식 착유 대마 종실유의 색깔과 주요성분 비교 (Comparison of color and major components of hempseed oils extracted with pressuring and extruding methods)

  • 대마[Cannabis sativa L.]는 오랫동안 섬유작물로 재배되었지만 종실의 기름 함량이 많고 불포화지방산 비율이 높아 식용유 원료작물로 유망하다. 오랫동안 대마 종실유를 이용해온 유럽의 여러 나라에서는 압출식으로 착유하는데, 이용 역사가 짧은 우리나라에서는 대마 종실유에 대한 정보 부족으로 소비자 기호도가 낮은 편이다. 본 연구는 압착식과 압출식으로 착유한 대마 종실유의 성분을 분석하여 소비자들에게 올바른 정보를 제공하기 위해 수행하였다. 압출식 착유기로 착유하면 착유량이 압착식에 비해 많았다. 착유 부산물인 유박은 압출식에서는 으깨어져 얇고 납작하게 배출되지만, 압착식은 종실이 다소 납작해졌으나 종실의 형상을 유지하였다. 압출식 착유 종실유는 압착식에 비해 Chlorophyll A, B 및 Carotenoid 함량이 높아 명도(L)는 낮고 녹색과 황색은 진하였다. 지방산 조성에서 Palmitic acid, Stearic acid, Oleic aicid, ${\gamma}$-Linolenic acid 비율은 압출식 착유 종실유가 압착식에 비해 다소 높았으나, Linoleic acid와 ${\alpha}$-Linolenic acid는 낮았다. 대마 종실유는 총 토코페롤 함량이 많고 그 중 ${\gamma}$-Tocopherol 함량이 많은 것이 특징이었는데 압출식 착유 종실유가 압착식에 비해 다소 적었다.
