Improving School Children's Health through Nutritional Food Intervention Distributions: A Scoping Review

  • Purpose: Nutrition has a direct and substantial effect on the agenda of the Sustainable Development Goals (SDGs). Recognizing the importance of adequate diet in strengthening school children's health, the relevant parties should take the initiative to introduce effective nutrition intervention programs. Malnutrition, in all conditions, hinders children's potential to survive and thrive. It has been challenging to demonstrate that enhancing nutrition and sustainability instruction in schools leads to healthier and more sustainable eating patterns. This scoping review is to discover the important drivers and emerging themes in nutritional health intervention distributions at schools toward the attainment of SDGs for school children's health. Data and methodology: A scoping review of the literature was conducted between 2007 and 2022 using the Web of Science (WoS) and Scopus databases. A total of 25 journal articles were identified for a full review. Results: Five themes were found from the literature relevant to the scenario surrounding pupils and food intake in schools. The data implied that nutrition intervention distributions, including food literacy, food consumption, good governance, and food entrepreneurship, might have a prominent impact on the behavioral and health outcomes of school children. Conclusions: Findings have emerged on the usefulness of nutrition intervention distributions at school in encouraging healthy diet intake among school children and consequently meeting the Sustainable Development Goals.

Dietary acculturation and changes of Central Asian immigrant workers in South Korea by health perception

  • Purpose: This study analyzed the dietary patterns of Central Asian immigrant workers (Mongolia, Kazakhstan, Uzbekistan, and Kyrgyzstan) living in South Korea to determine the food acculturation and how their dietary practices have changed after immigration. Methods: Self-administered questionnaires were completed by 186 Central Asian immigrant workers living in South Korea. A food frequency questionnaire (FFQ) was used to obtain information on the consumption frequency of 22 food items before and after their immigration to Korea. Results: Central Asians switched to Korean meat consumption patterns, which consume mainly pork, chicken, and beef, showing a decrease in the intake of beef and lamb and an increase in that of pork. Their consumption of Namul (cooked vegetable), Kimchi, rice, and marine products increased while that of potatoes decreased during acculturation to Korean food culture. Positive changes were observed in Mongolians' eating habits. Their meat-based diet turned into a healthy one in which nutritional balance was achieved by consuming the various food groups. Negative dietary changes were also observed; intake of instant foods and coffee increased while black and green tea consumption decreased. Intake of Namul (p < 0.01), Kimchi (p < 0.01), rice (p < 0.001), ramen (p < 0.001), pork, chicken (p < 0.01), fish (p < 0.01), seafood (p < 0.001), and coffee (p < 0.001) increased significantly in the group that responded and their health improved after moving to Korea. This result suggests that health improved among those who were well settled in Korea and ate the various food groups. Conclusion: These findings can help understand the acculturation process to Korean food culture and provide a basis for developing policies to help them adjust to Korean food culture.

  • 최근 고령화 시대가 되면서 사람들의 건강한 삶에 관한 관심이 높아지고 있다. 사람들은 잘못된 생활, 식습관, 신체활동 저하 등으로 인하여 성인병을 유발하거나 비만 인구수가 증가하고 있다. 이에 정보통신 분야에서 의료분야 정보를 활용하여 피부 미용 연구가 진행되고 있다. 기존의 시스템들은 다양한 관련 측정 항목들에 대해 결합하여 표현되지 않아서 원활한 정보를 제공받지 못하였다. 본 논문에서 제안하는 시스템은 3D 스캐너와 피부미용기기를 사용하여 사용자의 체형을 스캔하고, 3D 이미지 데이터를 사용하여 BMI(Body Mass Index) 지수를 계산하고 수집된 데이터를 한눈에 볼 수 있는 웹 서비스 시스템을 제공한다. 이는 지속적인 신체 변화 데이터를 비교하여 제공하므로 관리되는 내용을 사용자에게 제공하게 될 것이다. 이는 다양한 U-헬스 및 미용분야에서 널리 활용될 것으로 사료된다.

심뇌혈관질환 예방을 위한 생활습관 개선 프로그램에 관한 문헌분석 연구 (The Literature Review on Life style Intervention Program for the Prevention of Cardiovascular Disease)

  • 본 연구는 심뇌혈관질환 예방을 위한 생활습관 중재 프로그램의 특성을 파악하기 위하여 프로그램 중재 연구논문을 분석한 문헌분석 연구이다. 연구대상 논문은 Pubmed 등 전자 데이터베이스를 통해 "심뇌혈관질환", "중재" 등의 검색어를 적용하여 최종 18편의 논문이 선정되었다. 대상 문헌에서의 프로그램 참여 대상자 선정기준은 주로 신체생리학적 기준이 이용되었고, 신체활동과 식습관 생활습관 영역을 중재한 프로그램이 많았다. 중재유형은 교육이 가장 많이 이용되었고, 여러 중재를 병합하여 적용하는 연구가 많은 것으로 나타났다. 중재기간은 평균 22주 이상의 장기개입이 많았고, 중재효과를 측정하는 효과지표는 신체생리학적 지표가 가장 많이 활용되었다. 본 연구를 통해 여러 생활습관의 상호관련성을 고려한 중재 프로그램의 개발과 건강한 생활습관을 유지하기 위한 환경 및 사회적 지원이 필요함을 제언한다.

Comparison of Saponin Content and Antioxidant Effect depending on the Processing Method of Codonopsis lanceolata

  • Codonopsis lanceolata, called deodeok in Korean, has been verified for various effects, including anti-aging and anti-inflammatory effects and insomnia improvement, and is one of the healthy foods that Koreans enjoy eating. In this study, the saponin content, lansemaside A content, and total saponin content of deodeok were analyzed using high-pressure sterilization and solid fermentation by mixed lactic acid bacteria. The antioxidant effect was compared to determine improved processing methods of deodeok. The lansemaside A content of deodeok samples depending on the preprocessing methods was analyzed: 2,594.10 mg/kg for dried deodeok, 2,100.93 mg/kg for steamed deodeok, and 1,151.31mg/kg for fermented deodeok. The total saponin content was found to be 7,209 mg/kg for dried deodeok and 8,605 mg/kg for steamed deodeok, showing a high saponin content. The total polyphenol content was highest for dried deodeok, steamed deodeok, and fermented deodeok. As for the antioxidant effect, it was analyzed that the effect of dried deodeok was the highest, followed by steamed deodeok and fermented deodeok; Dried deodeok had the highest value in total polyphenol content, not in total saponin content, which is considered to have a positive influence on its antioxidant effect. The content of lansemaside A was the highest for dried deodeok. When fermented deodeok is consumed, more beneficial effects on health can be expected by ingesting it with lactic acid bacteria cultured using saponins and polyphenols. Therefore, this study suggests the possibility of manufacturing products suitable for the needs of consumers, such as the flavor of deodeok, according to the processing methods.

Workplace foodservice meals are associated with higher nutritional quality among adult Korean workers: a nationwide cross-sectional study

  • BACKGROUND/OBJECTIVES: Adequate nutritional intake is essential for good health and well-being. We aimed to compare the nutrient intake from homemade meals, meals sourced externally ("eating out"), and meals from workplace foodservices, as well as the potential association between foodservices used and nutritional quality among adult Korean workers. SUBJECTS/METHODS: We used data from the Korea National Health and Nutrition Examination Survey, a nationwide cross-sectional survey on the health and nutritional status of the Korean population. Data from 6,845 workers aged 20-64 years were included. A survey on dietary behavior and nutrition was conducted using the 24-h dietary recall method. Nutritional quality was examined using the index of nutritional quality (INQ) score. Higher INQ scores reflected poorer nutritional quality, with insufficient intake of a higher number of nutrients. Multivariate linear regression was used to identify the association between the foodservices used and INQ scores after adjusting for other covariates. RESULTS: We found that foodservice users exhibited a higher 1-day intake of total energy and macronutrients (all P < 0.05) and lower INQ scores (P < 0.01) than non-users. The INQ scores for total daily meals decreased with the frequency of foodservice use (P < 0.01). A significant association was observed between the non-use of foodservices and INQ scores (β = 0.29, P < 0.01) after adjusting for other covariates. CONCLUSIONS: The use of workplace foodservices contributed to higher dietary nutritional quality among workers. This study highlights the importance of expanding the scope of workplace foodservices to promote higher nutritional quality and healthy dietary habits among workers.

1인 가구 중고령자의 건강행태 및 앉아서 보내는 시간이 비만에 미치는 영향: 교육 수준에 따른 비교분석 (Health Behavior and Sitting Time Effects of Single-person Households on Obesity: A Comparative Analysis of Educational Levels)

  • 본 연구는 1인 가구 중고령자의 비만 영향요인을 교육 수준에 따라 비교분석함으로써, 노인 비만 예방, 그리고 교육 수준에 따른 차별화된 개입방안을 모색하는 데 목적을 두었다. 국민건강영양조사 20년도 자료를 활용하여 총 400명의 응답자의 자료를 통해 교차분석, 로지스틱 회귀분석 등을 실시하였고, 분석 결과 교육 수준이 낮을 경우 비만에 영향을 줄 수 있는 신체활동에서 취약성이 나타났으며, 교육 수준이 높은 집단에서는 외식과 나트륨 섭취 등의 위험요인 점수가 높음을 확인하였다. 교육 수준 구분을 통해 영향요인을 비교분석한 결과, 교육 수준이 낮은 집단에서는 앉아서 보내는 시간이 위험요인이었고, 교육 수준이 높은 집단에서는 나트륨 섭취가 비만 위험요인인 것으로 나타났다. 이를 통해 1인 가구 중고령자들을 대상으로 한 건강한 영양 섭취 및 신체활동 교육을 실시하고, 교육수준에 따라 차별화된 개입 등이 필요함을 논의하였다.

인천 일부 지역 중학생의 영양표시 활용도 및 나트륨 관련 영양지식 수준이 라면섭취에 미치는 영향 (Effects from the Use of Nutrition Labels and the Levels of Sodium-related Nutrition Knowledge on the Consumption of Instant Noodles (Ramyeon) by Middle School Students in the Incheon Area)

  • Objectives: This study examines the effect on the frequency of ramyeon consumption based on who checks nutrition labels and on the levels of sodium-related nutrition knowledge among middle school students in the Incheon area. Methods: Self-administered questionnaires were completed by 359 students (143 males and 216 females) from May to October 2021. General information as well as ramyeon-eating behaviors were surveyed. The frequency of ramyeon consumption was compared depending on who checks nutrition labels and on the amount of sodium-related nutrition knowledge students have. Both 𝛘2 tests and t-tests were conducted for categorical and mean comparisons. Results: Regarding the consumption of ramyeon, 46% of the students replied that they eat it alone at home. The criteria for choosing the kind of ramyeon to eat were taste (79.4%), price (9.2%), brand and new products (4.5%), nutrition (2.2%), weight control (2.2%), and other factors (2.5%). When purchasing ramyeon, more students replied that they did not read nutrition labels (66.0%) compared to those who did read labels (34.0%). Answers to questions on sodium-related nutrition earned an average of 6.84 out of nine points (males, 6.72 points, females, 6.91 points, ns). The average frequency of ramyeon consumption was 1.67 times per week (males, 1.66, females, 1.68, ns). The frequency of ramyeon consumption by students who checked nutrition labels was lower than for students who did not check labels (1.44 times per week vs. 1.79 times per week, P < 0.05). Conclusions: Students who checked nutrition labels reported a lower frequency of ramyeon consumption than students who did not check them. Education on checking nutrition labels may reduce the consumption of processed foods such as ramyeon and may lead to making healthy choices when purchasing food.

창원시 여성노인의 사회적 노쇠 단계에 따른 식생활 실태 연구 (A Study on the Dietary Status According to Social Frailty Stage of the Female Elderly in Changwon City)

  • This study conducted with 268 female elderly who visited welfare center and senior citizen center in Changwon city to identify the dietary status according to social frailty stage using nutrition quotient for elderly (NQ-E). As a result of the survey, 75.0% of the elderly had no nutrition education. The elderly in social frailty stage was 43.7%, pre-frail was 35.1%, and robust was 21.2%. The scores of NQ-E (61.65), balance (47.78), moderation (86.18), and dietary behavior (55.23) were within the medium-high grade, while diversity (48.37) was within the medium-low grade. Among the balance factor item, there was a significant difference only in the frequency of fruit intake according to social frailty stage (p<0.05). Among the diversity factor item, there were significant differences in vegetable intake (p<0.05) and the rate of eating alone (p<0.001) according to social frailty stage. Among the dietary behavior factor item, there were significant differences in whether to strive for a healthy diet (p<0.05), exercise time and depression (p<0.001), and subjective recognition rate of health (p<0.01) according to social frailty stage. Based on these results, education focusing on various food intake is needed, and continuous support from the government and local governments is needed to connect the social support network of the elderly and support programs to prevent them from going to social frailty stage.

비정규직 및 20대 청년 1인가구의 식생활 비교 (Comparison of Dietary Behaviors of Young and Temporary Workers with Older and Permanent Workers in Single-person Households)

  • 경제활동을 하는 1인가구 중 비정규직 및 20대 청년층의 경우 다른 고용형태 및 다른 연령층과 식생활 행태에 차이가 있는지를 비교하고자 1인가구를 고용형태(비정규직, 정규직, 사업자) 및 연령별(20-59세)로 층화 추출하여 월평균수입 및 외식비용, 식생활 등을 조사하여 분석하였다(총 566명). 20대 1인가구는 타 연령에 비하여 월평균수입(p<0.001) 및 외식비용이 낮고, 식생활에 신경쓰지 않는 비율이 높았다(p<0.01). 집에서 요리는 거의 하지 않고(p<0.05), 식품은 주로 편의점에서 구입하는 비율이 더 높게 나타났으며(p<0.001), 이러한 양상은 비정규직에서도 비슷하게 나타났다(p<0.001). 본 연구는 비정규직 및 20대 청년층의 비율이 높은 1인가구의 특성에 맞는 건강 식생활 환경을 위한 기초자료로 활용 가능할 것이다.
