BACKGROUND/OBJECTIVES: This study aims to develop a mobile nutritional management program for integration into the already developed web-based program, Diabetes Mellitus Dietary Management Guide (DMDMG) for diabetic patients. Further, we aim to evaluate the amended DMDMG program. SUBJECTS/METHODS: The mobile application based on an Android operating system includes three parts: 1) record of diet intake, which allows users to take pictures of the meal and save to later add diet records into DMDMG; 2) an alarm system that rings at each meal time, which reminds users to input the data; 3) displays the diet record and the results of nutrient intake, which can be also viewed through the web program. All three parts are linked to the web-based program. A survey was conducted to evaluate the program in terms of nutrition knowledge, dietary attitude, eating behavior and diet intake by non-equivalent control group design among diabetic patients with 14 DMDMG users and 12 non-user controls after a one-month trial of DMDMG. RESULTS: Non-users did not use the program, but participated in the weekly off-line nutrition classes for one month. The program users showed increased healthful dietary behavior (P < 0.01) and dietary attitude scores (P < 0.05). More DMDMG users had higher nutrition knowledge scores after one-month trial than non-users. However, dietary intake significantly increased in non-user group for calcium and sodium (P < 0.05) while the user group did not show significant changes. CONCLUSIONS: The program has created positive changes in patients' dietary life. All the users were satisfied with the program, although some expressed minor difficulties with an unfamiliar mobile app.

Soybean, rice and nuts are the staple foods in South East Asia. In order to clarify the function of these foods in relation to coronary heart diseases, we have done a series of experiments using animals and humans. Soybean protein preparations (SPI) in comparison with an animal protein, casein (CAS), resulted in reducing atherosclerotic lesion development in apolipoprotein (apo) E deficient mice that develop an advanced lesion similar to that in humans. This action was attributed to the protein, since the ethanol-extracted SPI (EE-SPI), from which isoflavones and saponins removed, lowered the lesion development in apo E-deficient mice. However, The EE-SPI, compared to the SPI, resulted in a decrease of mRNA for key proteins of cholesterol metabolism (low density lipoprotein receptor and cholesterol 7$\alpha$-hydroxylase) in hypercholesterolemic rats, followed by an elevation of the serum cholesterol level, indicating a contribution of isoflavones to the serum cholesterol level. Rice protein (RPI) was also effective to lower the lesion development in apo E deficient mice. Both the SPI and RPI led to an increased level of the serum NOiN03, metabolites of NO. This effect appeared to be attributed to their high content of arginine. Besides, C57BL/6J mice fed a diet containing whole grain rice had an elevation of the serum high-density lipoprotein cholesterol. Furthermore, rice bran oil and the unsaponifiable fraction that is rich in plant sterols were effective to lower serum cholesterol levels in hypercholeserolemic rats. Finally, we tested if walnuts consumption would be hypocholesterolemic for Japanese. A diet containing walnuts effectively lowered the serum total and low density lipoprotein cholesterol in Japanese men and women. These animal and human experiments would be relevant to advocate publics to keep consuming diets including soybean, rice and nuts for their healthful life.
BACKGROUND/OBJECTIVES: In the United States, one in every 5 children is obese with greater likelihood in low-income households. The coronavirus disease 2019 (COVID-19) pandemic may have accelerated disparities in child obesity risk factors, such as poor dietary intake and increased sedentary behaviors, among low-income families because of financial difficulties, social isolation and other struggles. This study reveals insights into nutrition and health challenges among low-income families of young children in West Texas to better understand needs and develop interventions. SUBJECTS/METHODS: In-depth individual interviews were performed via Zoom among 11 families of children under the age of 3. A semi-structured interview guide was developed to explore 3 areas: changes in (1) dietary intake and (2) sedentary behaviors and (3) families' preferences regarding a parent nutrition education program. Each interview was audiorecorded, transcribed, and coded using MaxQDA software. RESULTS: Eating together as a family become challenging because of irregular work schedules during the COVID-19 pandemic. Most parents stated that their children's dietary habits shifted with an increased consumption of processed foods. Many parents are unable to afford healthful foods and have utilized food and nutrition assistance programs to help feed their families. All families reported that their children's screen time substantially increased compared to the pre-pandemic times. Moreover, the majority of parents did not associate child screen time with an obesity risk, so this area could be of particular interest for future interventions. Meal preparation ideas, remote modality, and early timing were identified as key intervention strategies. CONCLUSIONS: Online nutrition interventions that emphasize the guidelines for child screen time and regular meal routines will be effective and promising tools to reach low-income parents for early childhood health promotion and obesity prevention.

1. As the low standard of living of the people who live in both the model and compared villages, is almose similar to each other, the state of their food intaking has nearly the same degree. 2. The villagers of the two kinds of village mentioned above do not cast off their traditional eating habits getting an energy from rice and vegetarian diet. They, however, have been so much interested in the problem of birth control that they have a few children in less than four-year-old. We have to go on the problems of driving a reasonable family plan, and replacing the traditional food life by taking a fatty food. 3. Their pool life forces them to have an over work for supporting their family. Even though they take much Fe from grains and vegetables day after day, Fe does not give a great influence on making Hb (Erythrocyte) in a body. Accordingly most of them have developed symptoms of anemia. This research, comparing with the research results of Ewha University and Seoul Medical College shows much lack of Hb. So it is need for them to take a large quantity of animal protain and make a healthful habit by reforming their food life.

Epidemiologic research has suggested that frequent eating out may be associated with poor dietary habits, including high-calorie and inadequate nutrient intakes. Limited studies, however, have evaluated dietary behaviors with patterns of eating out in South Korea. The aims of this study were to examine the associations between nutrient intakes, adherence to dietary guidelines, and frequencies of eating out among Korean adults. Data were analyzed from adult (30 to 64 years old) participants of the 2007~2009 Korean National Health and Nutrition Examination Survey (n=10,223). Nutrient intake levels were assessed by the 24-hour recall method. The dietary score (DS-ADGK) was calculated based on the adherence to dietary guidelines for Koreans. Subjects who frequently consumed meals outside the home tended to be younger, male, urban-dwelling, highly educated, and receiving a higher income. The frequency of eating out was positively associated with the higher intake of most nutrients, except carbohydrates and crude fiber. Regular breakfast habits seem to be associated with the frequency of meals outside the home for women; younger women who frequently eat out tended to have irregular breakfast eating habits, but this association is attenuated with increasing age. The mean DS-ADGK differed by sex, age, and the frequency of eating out; older participants scored higher than the younger ones, women had higher scores than men, and those who frequently eat out had lower scores than their counterparts. In addition, the adherence score for each component of the dietary guidelines was also significantly different by age and sex. The consideration of demographic characteristics related to frequent eating out and other barriers to healthful eating, as well as essential and practical interventions, are needed to promote positive dietary behavioral changes in Korea.
The experience of natural dyeing is expected to be effective in promoting health through good exercise, in giving emotional stability based on the functional aromatic components of the dyeing material, and in improving self-esteem and increasing positive experiences through the behavior of creation. A natural dyeing material easily found around us, artemisia has long been used in food and Oriental medicine and was recently found to contain antioxidative, anticancer, deodorizing, antibacterial, anti-obesity, and anti-diabetes substances through chemical analysis. It has also been reported that group reminiscence therapy using the fragrance of artemisia is effective in relieving pain and depression and in promoting ego integrity in the elderly population. This study aimed to make a comparative analysis of dyeability, washing fastness, and deodorization between Artemisia princeps, Artemisia iwayomogi, and Artemisia annua, all of which are considered to be healthful and functional dyeing materials, among about thirty domestic plants in the genus of Artemisia and to provide basic data concerning natural dyeing in mind-peace education for the silver generation. The fabric dyed and post-mordanted at $80^{\circ}C$ for 40 minutes showed the greatest surface color variation; in this condition, artemisia princes (32.29) gave the greatest color difference, followed by artemisia iwayomogi (31.07) and artemisia annua (26.17). While all the types of artemisia were excellent in washing fastness, dry-cleaning fastness, and rubbing fastness at the fourth- or fifth-grade, light fastness was at the third grade for artemisia princes, at the second to third grade for artemisia annua, and at the second grade for artemisia iwayomogi; therefore, artemisia princes was found to give better fastness than the other two types of artemisia. In determining functionality of the fabric dyed with artemisia, deodorization test also found that the fabric dyed with artemisia princes had 20% higher deodorization.
The body mass index, blood pressures and blood profiles of adults, who worked at three colleges in the Daejeon area, were evaluated for use in developing well-balanced menus at their workplace cafeterias and/or in creating nutrition education programs tailored to their health statuses. The data analyzed were from physical examinations performed in 2002 and in 2004 by the National Health Insurance Corporation. Overall, levels of systolic and diastolic blood pressure and serum cholesterol were lower in the 2004 samples than in those of 2002, but most samples in 2004 showed higher levels of SGOT. In 2002, statistical differences occured in the levels of blood pressure and serum cholesterol among age groups, but not in 2004. And in 2004, the older the age group, the higher the BMI. Among subjects in their twenties, three variables (systolic and diastolic blood pressure, and serum cholesterol) showed statistical differences; this increased to four variables (systolic and diastolic blood pressure, blood glucose and serum cholesterol) among subjects in their thirties and to six variables (Hb, SGOT, systolic and diastolic blood pressure, blood glucose and serum cholesterol) among those in their forties, followed by a decline to four variables (systolic and diastolic blood pressure, Hb and serum cholesterol) among subjects in their fifties. In general, the results of physical examinations showed improvements in blood pressure and blood profiles in 2004 in comparison with results in 2002. The level of SGOT was the exception. Despite these improvements, of those employees who had physical examinations in 2004, $5.2\%$ had high blood glucose and $18.1\%$ hypertension, $27.9\%$ hypercholesterolemia, $8.3\%$ registered abnormal liver functions, and $31.3\%$ were classified as overweight and obese. Moreover, because some vulnerable blood profiles were found in the older age groups, various programs, including nutrition education, and/or development of healthful diets as well as excercise activities, may be needed within their workplaces.
This study was designed to investigate body image, objective and subjective measurements of body size and shape, eating behavior, and weight control practices in 650 Korean adolescent girls; 500 of the subjects were 14 years old and enrolled in middle schools, while the remaining 150 were 17 years old and enrolled in high schools. Subjects responded anonymously to a self-administered questionnaire. The results showed that average height and weight of the subjects were 157cm and 49.5kg, respectively, while subjects ideal heights and weights averaged 164cm and 48kg, respectively. The ideal adult body heights and weights proposed by the subjects averaged 172cm and 55kg respectively. Over 50% of the subjects were dissatisfied with their body image; the degree of dissatisfaction with body image was higher in those who believed themselves to be fat. Most of the subjects wanted to lose weight and had tried to lose weight. Self-reported weight control practice methods included reducing food intake (31.9%), skipping meals (29.6%), exercise (25.8%), using slimming machines (6.9%), and using diet pills (5.1%). The heavier the subjects weight was, the greater the difference between the subjective and objective evaluations of body size. The body image scores of subjects who perceived themselves as fat were significantly lower than those of subjects who perceived themselves as normal or underweight. The difference between subjective and objective evaluations of body size, and the degree of obesity, were significantly higher in those subjects who had experience of weight control than those who had no experience of weight control. These results suggest that nutrition and health education programs for adolescent girls should be researched and implemented in order to establish a more realistic body image, positive habits in weight control, and healthful eating habits.
The purposes of this study were to investigate the effects of the popularity of menu items in nutrient consumption of school-aged children participating in a School Breakfast Program. The weighed plate waste method was used to determine the nutrient intake of students. The nutrient intake was evaluated based on the popularity of the menu item, gender, and grades. The average intakes of all nutrients except energy, fiber, and sodium were well within the goals. Actual nutrient intake varied based upon the popularity of $entr{\acute{e}}es$ and the popularity of menu items was a main effect in nutrient content of meals. When the most popular $entr{\acute{e}}es$ were served, school-aged children's energy intake and School Breakfast Program participation rate increased. Saturated fat and sodium intakes also were higher than the goal when the most popular $entr{\acute{e}}es$ were served. The significant main effect was grades for total fat (p < 0.05) and calcium (p < 0.05), which was qualified by the two-way interaction between gender and grades for saturated fat (p < 0.05), protein (p<0.1), iron (p<0.01), vitamin C (p<0.01) and carbohydrates (p<0.001). Gender itself was not a significant main effect. Based on the findings, the suggestions for educating school-aged children on more healthful breakfast food choices and reformulating recipes for the popular $entr{\acute{e}}es$ are made. The use of aluminum-based coagulants in water pretreatment is being carefully considered because aluminum exposure is a risk factor for the onset of Alzheimer's disease. Lightly burned-dolomite kiln dust (LB-DKD) was evaluated as an alternative coagulant because it contains high levels of the healthful minerals calcium and magnesium. An organic pore forming agent (OPFA) was incorporated to prepare porous granules after OPFA removal through a thermal decomposition process. A spray drying method was used to produce uniform and reproducible spherical granules with low density, since fine dolomite particles have irregular agglomeration behavior in the hydration reaction. The use of fine dolomite powder and different porosity granules led to a visible color change in raw algae (RA) containing water, from dark green to transparent colorlessness. Also, dolomite powders and granules exhibited a mean removal efficiency of 48.3% in total nitrogen (T-N), a gradual increase in the removal efficiency of total phosphorus (T-P) as granule porosity increased. We demonstrate that porous dolomite granules can improve the settling time and water quality in summer seasons for the emergent treatment of excessive algal blooms in eutrophic water.
