Physicochemical Properties of Meat Batter Added with Edible Silkworm Pupae (Bombyx mori) and Transglutaminase

  • This study was conducted to investigate the physicochemical properties of meat batters prepared with fresh pork meat, back fat, water, and salt and formulated with three different amounts (5%, 10%, and 15%) of silkworm pupae (Bombyx mori) powder and transglutaminase (TG). Meat batters formulated with silkworm pupae powder showed significantly higher contents of protein and ash than control batter. Addition of silkworm pupae to batter also showed significantly lower cooking loss than the control. Moreover, meat batter containing 15% silkworm pupae showed no significant difference in redness value compared to the control. In addition, pH, viscosity, hardness, gumminess, and chewiness were improved after the addition of silkworm pupae. Furthermore, meat batter formulated with TG and silkworm pupae showed improved hardness, gumminess, chewiness and viscosity compared to control batter. Addition of 1% TG with 15% silkworm pupae to meat batter resulted in significantly higher pH, textures, and viscosity. Our data suggest that both silkworm pupae and TG can be added to meat batter to improve its physicochemical properties. Therefore, combination of silkworm pupae and TG could be a new nutritional and functional source for meat products.

  • 명태냉동고기풀을 사용하여 어묵을 가공할 때 각종 부원료의 최적첨가량을 예측할 수 있는 방안을 강구하기 위하여 옥수수전분, 분리대두단백질 및 중합인산염을 첨가하여 이들이 어묵의 탄력에 미치는 영향을 검토하였다. Instron texturometer를 사용하여 얻어진 6가지 파라미터 중에서 젤리강도와 가장 상관성이 높은 것은 hardness였으며, 관능검사결과 hardness의 값이 증가함에 따라 품질이 향상되었으나, hardness값이 16kg 이상에서는 오히려 품질이 저하하였다. 옥수수전분, 분리대두단백질 및 중합인산염의 첨가에 따른 hardness의 예측식은 각각 H=11.56+0.54Xcs, H=12.22-0.23Xsp, H=11.65-7.13Xpp였다. 옥수수전분과 분리대두단백질, 중합인산염과 옥수수전분 및 중합인산염과 분리대두단백질을 각각 혼합첨가 하였을 때 hardness의 예측식은 각각 H=11.57+0.53Xcs+0.44Xsp, H=11.97-1.83Xpp-0.17Xcs, H=11.58+0.08Xpp-0.23Xsp였다.

울금을 첨가한 오리 훈연육의 저장 중 품질변화 (Quality Changes of Smoked Duck Meat Amended with Curcuma longa L. during Storage)

  • This study was conducted to evaluate the effects of adding gradually increasing concentrations of turmeric extract (0, 0.1, 0.2, and 0.4%) to smoked duck meat on its chromaticity, antibiosis, and antiseptic degree against food poisoning bacteria, number of bacteria, lipid rancidity, sensory evaluation, and preference. The brightness, red color intensity and yellow color intensity changed significantly when 0.2% turmeric extract was added and the sodium nitrate concentration was reduced. Additionally, no antibiosis or antiseptic activities against food poisoning bacteria were observed in any turmeric treated samples, whereas the number of bacteria was increased in control samples compared to turmeric treated samples after 10 days of preservation. The TBARS value decreased during storage when turmeric extract concentration increased, resulting in positive sensory evaluation of its color, succulence, taste and hardness. In the preference test, the surface and meat color increased as the concentration of turmeric extracts increased. Hardness was highest at 0.2%, whereas taste was highest between 0.2 and 0.4%. The overall preference test was highest for the 0.2% extract samples. Overall, the results indicated that addition of 0.2% turmeric to smoked duck meat will lead to better nutrition, function, and overall preference.

  • 본 연구에서 시판 연제품류의 전분함량을 분석한 결과 현재 시판되고 있는 대부분의 연제품류의 전분함량은 튀김어묵, 맛살류 그리고 진어묵 순으로 적었으며 그 함량은 각각 $16.5\sim20.6\%,\;12.4\sim17.3\%,\;8.1\sim8.7\%$ 범위였다. 특히 일부 제조회사의 튀김어묵류에서는 전분함량이 고형물의 절반이상 ($51.8\%$$67.2\%$)을 차지하였다. 품질 기준이 되는 전분함량과 각 조직감 특성의 상관성을 분석한 결과 경도와 탄력성이 전분함량과 유의적 상관성 (p<0.01)을 나타내었다. 경도는 전분함량의 증가와 함께 양의 상관성 (p<0.01) 이 있었고 탄력성은 음의 상관성 (p<0.01)을 나타내었다. 따라서 식품공전상에서 연제품류의 분류는 어육함량만으로 하기보다는 전분함량을 규정에 첨가하거나 부수적으로 전분함량에 대한 상관성이 높은 조직감 특성의 규제사항으로 제시한다면 더 나은 제품의 품질관리에 기여할 것으로 생각되었다.

능이버섯 및 Protease효소의 첨가가 연육에 미치는 영향 (Effect of Neungi (Sarcodon aspratus) Mushroom and Its Protease Addition on the Meat Tenderizing)

  • 본 연구는 능이버섯 분말 및 능이버섯 protease의 첨가가 고기연육 및 식품첨가시 색깔변화에 미치는 영향을 구명하고자 실시하였다. 능이버섯 분말과 protease를 첨가로 처리고기의 높은 보수력을 결과하였는 바, 능이버섯의 protease는 무처리에 비해 26.8%, 설탕에 비해 13.8% 의 보수력을 증가시켰다. 이러한 보수력 증가는 고기 단백질의 가수분해로 인한 수용성 성분의 증가로 인한 고기조직의 연육효과를 결과하는 것으로 판단된다. 능이버섯 분말과 protease 의 처리로 소고기의 경도가 현저한 감소를 보였으며, 시판 연육제인 papain과 거의 동일한 연육효과를 가져왔다. 능이버섯 첨가로 인한 경도감소효과는 능이버섯분말이 51.6%, 능이버섯 protease는 58.5%, papain은 56.3%의 높은 경도감소를 나타냈다. 그 이유로서는 능이버섯의 protease가 actin, myosin, connectin을 비롯한 근원섬유 단백질을 효과적으로 분해를 시키기 때문으로 사료된다. 능이버섯의 첨가가 식품의 색깔변화에 미치는 영향을 조사한 결과, 능이버섯 분말첨가는 명도를 감소시켰으나, protease 첨가로 명도가 47.2로 높아졌으며, 설탕 및 papain도 protease와 유사한 명도를 나타냈다. 적색도와 황색도의 경우에는 대조구에 비하여 모든 처리에서 낮은 값을 보여주었다. ΔE값에 있어서 능이버섯 분말을 첨가하면 4.55로서 현저한 색차를 보여주었으며, protease, 설탕 및 papain은 2.07~2.74로서 감지할 수 있을 정도의 색차로 나타났다 능이버섯 분말이 진한 색차를 초래한 것은 능이버섯이 가지는 색소에 기인하는 것으로서 생각된다.

Prediction of tenderness in bovine longissimus thoracis et lumborum muscles using Raman spectroscopy

  • Objective: This study was conducted to evaluate Raman spectroscopy technique as a noninvasive tool to predict meat quality traits on Braford longissimus thoracis et lumborum muscle. Methods: Thirty samples of muscle from Braford steers were analyzed by classical meat quality techniques and by Raman spectroscopy with 785 nm laser excitation. Water holding capacity (WHC), intramuscular fat content (IMF), cooking loss (CL), and texture profile analysis recording hardness, cohesiveness, and chewiness were determined, along with fiber diameter and sarcomere length by scanning electron microscopy. Warner-Bratzler shear force (WBSF) analysis was used to differentiate tender and tough meat groups. Results: Higher values of cohesiveness and CL, together with lower values of WHC, IMF, and shorter sarcomere were obtained for tender meat samples than for the tougher ones. Raman spectra analysis allows tender and tough sample differentiation. The correlation between the quality attributes predicted by Raman and the physical measurements resulted in values of R2 = 0.69 for hardness and 0,58 for WBSF. Pearson's correlation coefficient of hardness (r = 0.84) and WBSF (r = 0.79) parameters with the phenylalanine Raman signal at 1,003 cm-1, suggests that the content of this amino acid could explain the differences between samples. Conclusion: Raman spectroscopy with 785 nm laser excitation is a suitable and accurate technique to identify beef with different quality attributes.

초음파 처리가 튀김 닭고기의 품질에 미치는 영향 (Effect of Ultrasonic Treatment on the Quality of Frying Chicken Meat)

  • This study was carried out to investigate effect of ultrasonic treatment on the quality of frying chicken meat. Moisture content of ultrasonic treated leg meat was lowest to 59.7%, moisture content of breast meat was higher than leg meat and protein content of control was higher than ultrasonic treatment. Fat content of ultrasonic treatment was higher than control and leg meat was higher than breast meat. Hunter's L (lightness) and a (redness)-value was not different between frying methods, but L-value of breast meat and a-value of leg meat was higher than leg and breast meat, respectively. Hunter's b (yellowness)-value was not different among frying chicken meats. Frying loss of ultrasonic treatment was significantly lower than control, water holding capacity was higher than control. VBN content of ultrasonic treatment was comparatively higher than control, TBA number of ultrasonic treatment was highest to 0.78mg malonaldehyde/kg. Hardness, springiness and cohesiveness of frying chicken meat was not different between frying methods, but difference of chicken muscle parts were significantly showed. Chewiness was not different among frying chicken meats and shear force value of control breast meat was lowest to 1.9kg. In case of sensory score, aroma and taste of frying chicken meat were out different between frying methods, but texture, juiciness and palatability of ultrasonic treatment were higher than control and that of breast meat were higher than leg meat.

Application of Near Infrared Spectroscopy (NIR) for Monitoring the Quality of Milk, Cheese, Meat and Fish - Review -

  • The traditional methods for determining the quality of milk, cheese and meat are tedious and expensive, with a significant wastage of chemicals which pollute the environment. To overcome these disadvantages, the potential of near infrared spectrophotometry (NIR) for monitoring the quality of milk and meat has been evaluated by a number of researchers. While most studies indicate that NIR can be used to predict chemical composition of milk and meat, and to monitor the cutting-point during cheese manufacturing, one study demonstrated the potential of NIR to predict sensory characteristics (e.g. hardness and tenderness) of beef. These calibrations were developed on a small number of samples, limiting their value for adoption by the industries. Now that the sophisticated computer software is available, more robust calibrations need to be developed to monitor both chemical and physical characteristics of meat and meat products simultaneously.

Moisture content of ultrasonic treated breast meat was higher than that of control, fat content of control of breast and leg meat were higher than that of ultrasonic treatment, and protein of control of breast meat was higher than that of ultrasonic treatment. Hunters L(lightness)-and a(redness)-value were not different between cooking methods, L-value of breast meat and a-value of leg meat were higher without regard to cooking method. Hunterb (yellowness)-value was not different among cooking chicken meats. Cooking yield was not different between cooking methods, pH of ultrasonic treated chicken meats were higher than that of control. Water holding capacity and salt soluble protein extractability of ultrasonic treated breast meat were greater than that of control. Water soluble protein extractability of ultrasonic treated leg meat was higher than that of control, and shear force value was not different between cooking methods. Hardness, cohesiveness and gumminess were not different between cooking methods and parts of muscle. Springiness of ultrasonic treated leg meat was greater than that of control and chewiness of breast meat was higher than that of leg meat. Aroma, texture, juiciness and overall acceptability were not different between cooking methods, taste of ultrasonic treated leg meat was higher than that of control. In addition, the sensory scores of parts of muscle were affected greater than that of cooking methods.

Replacement of Pork Meat with Pork Head Meat for Frankfurters

  • The effect of reducing pork meat concentrations from 50% to 30% and replacing it with up to 20% pork head meat on chemical composition, cooking characteristics, physicochemical and textural properties, apparent viscosity, and sensory characteristics of frankfurters was determined. The highest moisture content in frankfurters was found in the control and T1 (frankfurter with 45% pork meat + 5% pork head). Protein and fat contents in frankfurters with pork head meat added were significantly (p<0.05) higher than those in the control. When the concentration of pork head meat was increased from 0% to 20%, cooking loss, total expressible fluid separation, fat separation, and pH of frankfurters were increased, while the lightness, redness, yellowness, and apparent viscosity of frankfurters were decreased. Ash contents, cohesiveness, color, and tenderness of sensory characteristics of frankfurters added with different amounts of pork meat or pork head meat were not significantly (p>0.05) different from those of the control or there treatments. Frankfurters in T4 (frankfurter with 30% pork meat + 20% pork head) had the lowest (p<0.05) hardness and gumminess. The hardness and gumminess of frankfurters in other treatments were not significantly different (p>0.05) from that in the control. Frankfurters with higher pork head meat concentrations had lower flavor, juiciness, and overall acceptability scores. Therefore, replacing pork meat with pork head meat in the formulation could successfully produce results similar to those of control frankfurters. The best results were obtained when 10% pork head meat was used to replace pork meat.
