Quality Characteristics of Miljeonbyeong Added with Carrot and Spinach Juice (채소 즙을 첨가한 밀전병의 품질 특성)

  • Quality characteristics of griddled miljeonbyeong containing vegetable juice were assessed by conducting sensory tests and measuring texture and color. When varying amounts of carrot/or spinach juice was added to miljeonbyeong, the sensory preferences of appearance and texture were higher in miljeonbyeong containing a small amount of carrot and spinach vegetable juice, and the preferences of smell and taste were higher in miljeonbyeong containing a large amount of carrot and spinach juice. Overall, preference was highest in miljeonbyeong supplemented with 30 g carrot juice and 10 g spinach juice. Overall preference correlated significantly with appearance (r=0.44) and texture (r=0.47). In miljeonbyeong containing vegetable juice, tensile strength decreased significantly with increasing amounts of carrot juice (34.98~30.82) or spinach juice (40.84~37.07). In all miljeonbyeong samples, tensile strength increased slightly in 1 hour but rapidly increased after 2 hours. Lightness progressively decreased. A-value increased (3.46~9.63) and b-value increased with increasing amounts of vegetable juice added. No difference in the b-value increase was evident between carrot juice (15.19~26.43) and spinach juice(18.19~24.40). Tensile strength was markedly lower in miljeonbyeong amended with carrot juice (34.98~30.82g) or spinach juice (39.05~32.67 g), which contained fat-soluble pigment, as compared with vegetable-free miljeonbyeong (44.81 g), but the addition of beet juice (45.30~44.78 g) containing water-soluble pigment did not lower the tensile strength of miljeonbyeong compared to vegetable juice. In order to improve the texture of miljeonbyeong containing vegetable juice, tensile strength was measured in miljeonbyeong prepared with 30 g carrot juice or 10 g of spinach juice, which produced the highest sensory test scores, and additionally amended with potato starch, corn starch, glutinous rice flour, strong flour or yam powder with a consequent reduction in the content of wheat flour. Improvement was noted in carrot juice-containing samples prepared with 6 g corn starch, 15 g potato starch and 15 g hard wheat flour, and in spinach juice-containing samples prepared with 6 g corn starch, 6 g potato starch, 6 g hard wheat flour and 15 g dried yam powder.

  • We investigated physico-chemical properties of hard wheat flours for frozen yeast-raised breadmaking and freezing stability of frozen dough prepared by the straight no-time method. The general Composition of wheat flours were : moisture ; 14.0%, ash ; 0.48%. protein ; 13.15%, and dry gluten ; 13.43%. In farinograph data, development time and water absorption were 5.5 mimutes and 62 %, respectively. Amylograph maximum viscosity was 500 BU. Resistance to extention increased with the time and their extensibility decreased in the extensigraph data. From these results obtained from these physico-chemical properties, it was confirmed that the used wheat flours were most suitable for bread-baking. Considering effect of gassing power on cold storage period and fermentation time, it was effective that dough temperature should be adjusted to $20^{\circ}C$ in order to decrease freezing injury and maintain freezing stability.

Physicochemical Properties and Sugar-Snap Cookie Making Potentialities of Soft Wheat Cultivars and Lines (Triticum aestivum L. em Thell.) (연질밀(Triticum aestivum L. em Thell.)의 이화학적 특성과 sugar-snap cookie의 제조적성)

  • Several soft white spring and winter wheat cultivars were evaluated by analyzing physicochemical properties such as Single Kernel Characterization System (SKCS), milling properties, Rapid Visco-Analyzer (RVA), mixograph pattern, and sugar-snap cookie-making potentialities. Results of SKCS revealed kernel hardness had a positive correlation coefficient with test weight $(r=0.497^{*})$ and near-infrared reflectance (NIR) hardness $(r=0.495^{*})$. SKCS kernel weight had a significantly high correlation of $r=0.942^{**}$ with SKCS kernel size. The test weight had significantly high correlations with straight-grade flour yield $(r=0.720^{**})$, break flour yield $(r=0.490^{*})$, flour ash content $(r=-0.781^{**})$, and milling score $(r=0.838^{**})$. The average RVA peak viscosity of the soft white winter wheat was higher (195.1 unit) than the soft white winter wheat varieties (135.7 unit). A correlation was found between RVA peak viscosity and swelling volume. Significant correlation coefficients were obtained among cookie properties, milling properties, protein content, and mixograph absorption. The cookie top grain score had a correlation coefficient of $r=0.447^{*}$ with swelling volume.

Effect of Additional Nitrogen Fertilizer Application on Decreasing of Preharvest Sprouting in Winter Wheat (질소 추비시용이 밀 수발아 억제에 미치는 영향)

  • Preharvest sprouting seriously reduces milling and baking quality of hard winter wheat (Triticum aestivum L.) grain. To determine the effect of nitrogen fertilizer application on decreasing of preharvest sprouting, several levels of N-fertilization were conducted in two winter wheat cv. Keumkang and Jokyung, grown in Iksan. Nitrogen fertilization is used to increase grain yield and protein content. Grain yield increased at 108kg/ha (50% increased nitrogen to the standard) application and decreased as more nitrogen was applied. There was a linear increase in grain protein contents with increasing level of nitrogen application. Germination rate, germination index and ABA sensitivity were gradually reduced by increasing of nitrogen application level. Preharvest sprouting showed a significantly correlation to germination rate but could not be correlated to protein content and falling number. A significant positive correlation was detected between preharvest sprouting and different additional nitrogen fertilizer levels.

Selection Efficiency for Protein Content and Sedimentation Value in Progenies of Hybridized Wheat (밀 잡종 후기 세대에서 단백질 함량 및 경, 연질의 선발 효과)

  • To investigate selection efficiency for protein content and hardness in a wheat breeding program, two crosses were made between soft wheat (SW) ‘Chokwang’ and hard wheat (HW) ‘Lancota’, and between HW ‘Suwon 210’ and SW ‘Atlas 66’. F2 progeny lines from the crosses were separated into 4 groups as HW + high protein (HP), HW + low protein (LP), SW + HP and SW + LP by measuring protein content and sedimentation value in F4 generation. The subsequent populations were tested for protein content, sedimentation value, mixogram pattern and bread quality. HP group selected from F4 again had a higher protein content in F5 generation than LP group, but there was no significant difference between two groups in F6 generation. In sedimentation value, the significant difference was recognizable only between the groups of HW + HP and. SW + LP. Plant based investigation in F6 revealed that the distribution pattern for protein content and sedimentation value shifted from the low to high by the four groups with the order of SW + LP, HW + LP, SW + HP, HW + HP. Such a trend was most noticeable in the progenies of the cross between ‘Suwon 210’ and ‘Atlas 66’. Mixogram pattern that shows flour characteristics differed greatly among the groups, indicating a high selection efficiency for the traits. Bread volume in F6 of HW + HP was found to be higher than that of SW + LP, only from the cross between ‘Suwon 210’ and ‘Atlas 66’.

  • In order to improve the nutritional and cooking quality of noodle, and to develop the utility of mungbean, the mungbean-wheat composite flour which contained 20, 40 and 60% mungbean flour were prepared. The characteristics and the noodle-making properties of the composite flours were examined. The water absorption of the composite flour decreased with the increase of the mungbeen content. Amylograph data showed that the more mungbean the composite flour contained the higher the initial pasting temperature of the flour was. The composite flour containing 40% mungbean flour showed the maximum viscosity. Analysis of the textural characteristics of the noodles indicated that the more mungbean flour the noodle contained the more hard, cohesive and gummy the noodles were. Analysis of the turbidity of the fluid obtained after cooking the noodles showed that the turbidities of noodles containing 20 and 40% mungbean were lower than that of wheat flour alone. The quality and sensory tests showed that the noodles of the composite flour containing 20 and 40% mungbean flour were superior to those of wheat flour alone.

Dough Properties and Bread Qualities of Wheat Flour Supplemented with Rice Bran (미강 첨가에 따른 밀가루 반죽물성 및 제빵적성)

  • We examined the dough properties, baking qualities, and sensory aspects of commercial hard wheat flour (Q1) that was supplemented with up to 30% rice bran flour. The loaf volumes of bread with 20% and 30% rice bran were 83% and 65% respectively, of the control (wheat flour only). However, a 5% and 10% supplement of rice bran increased loaf volume by 5.2% and 0.7% respectively, over the control. After storage of loaves for three days, bread crumbs from loaves with 5% rice bran were significantly softer than those with 10% 20% and 30% rice bran. The hardness of dough increased with the proportion of rice bran, but springiness and cohesiveness were inversely related to hardness. Addition of rice bran increased loaf pH. Rice bran decreased lightness, but significantly increased redness and yellowness in a concentration dependent manner. Sensory investigation indicated that bread with 5% rice bran was not significantly different from the control. However, more panel members preferred the appearance and flavor of bread with 5% rice bran.

The Effect of Heat Treatment on Fried Noodle Making (밀의 열처리가 라면 제조과정 및 물성에 미치는 영향)

  • $95^{\circ}C$에서 열처리한 밀가루(Kansas hard white winter wheat flour)로 제조된 라면은 그 제조시 약 38%의 물 흡수율을 보여주었는데 이는 열처리를 안 한 control 밀가루에 비하여 약 4~5% 증가함을 보여주었다. $95^{\circ}C$에서 열처리한 밀가루는 글루텐이 열에 의해 응고되어 대부분 손상되었으며 $\alpha$-amylase의 양이 거의 없는 것으로 나타났다. 한편 라면의 가열 전후를 볼 때, 육안으로 본 라면의 색은 상당히 좋아졌는데, 이는 polyphenol oxidase의 불활성화로 인한 것이며, 조리시간도 많이 단축되었다. 조리 후의 라면의 증가된 무게는 control에 비하여 감소하였고, 조리에 의한 손실은 증가하였는데 이는 열에 의해 글루텐 단백질이 응고되거나 손상을 입어 라면 조직의 텍스쳐가 약해졌기 때문이다. 그러므로 열처리를 한 밀가루로부터 라면을 제조시는, 손상되지 않은 천연의 글루텐(vital gluten)을 첨가하면 국수의 글루텐 단백질과 전분의 결합력을 증가시켜 라면조직을 향상시킬 것으로 보여진다.

Changes in Carbohydrate Components of Hard and Soft Wheat during Kernel Maturation (경(硬), 연질(軟質) 소맥(小麥)의 성숙(成熟)에 따른 탄수화물(炭水化物) 특성의 변화(變化))

  • These studies were conducted to investigate the changes in carbohydrate properties of the endosperm during the stages of maturity. Original moisture continued to decrease while 1,000-kernel weight and test weight increased steadily in all varieties with maturation. Starch content of the endosperm increased continuously by 35 to 40 days after heading. The B-type starch granules synthesis of the the early mature variety, Chokwang, was depressed at the later stages of development. Amylose and amylopectin components of starch both increased as the kernel matured, and amylose-amylopectin ratio also increased during the same period. Amount of pentosan per kernel basis increased throughout the maturation period. Amylograph break-down had a highly negative coefficient correlation with starch and pentosan content of endosperm. Results indicated that wheat maturation was characterized by an increase in the starch and pentosan content of the kernel.

  • As people know how to brew a wine from fruits and cereals, they continued to develope various wines good to their taste. Korean wines are also ones made from cereals and they have long been eager to improve the delicate taste. They used to drink Takju, raw rice wine, made from nonglutinous rice and Nuruk, a kind of yeast starter. During Koryo Dynasty, Soju a liquor was imported from Won(the Chinese dynasty). Nowadays this traditional folk wine, which had been developed variously and drunk all over the country, is decreasing year after year. The purpose of this study was to review on the wines ; its kinds, raw materials, brewing method, manufacturing utensils, measuring units and devices and the terms for wine making based on 20 documents published in 1600, in the middle of Yi dynesty. The results of review were as follows. 1. There were 121 kinds of wines at that time in Korea. 2. Among the raw materials for wines, major materials were glutinous rice, nonglutinous rice, wheat flour, wheat, mung bean, and black soybean. And minor materials were pepper corn, Lycium chinenisis, cinnamon, pine needles, pine nuts, jujube, mugwort leaves, lotus leaves, pine corn, pine bud, chrysanthemum, pine flowers, honey, Acanthopanox seoultenses, bamboo-root, marrowbone of blak cow, sweet flag, Ciprus noblis, Saurea lappa, honey suckle, Tricho santhes, azalea, the leaves of the paper mulberry, and bark of chungum tree. 3. There were several kinds of wines such as a wine without using Nuruk, a wine made from glutinous rice, nonglutinous rice, or glutinous and nonglutinous rice with flour. 4. There were several brewing methods for wines such as a wine boiled with ring rice cake, a wine brewed with loaves of rice cake, a wine brewed with hard boiled rice, a wine brewed with rice gruel, and a wine brewed with powdered rice gruel. 5. There were 23 kinds of utensils including measuring devices for weight and volume.
