Taste education reduces food neophobia and increases willingness to try novel foods in school children

  • BACKGROUND/OBJECTIVES: This study measured the effects of a taste education program developed in Korea on food neophobia and willingness to try novel foods in school children. SUBJECTS/METHODS: One-hundred and twenty school children (aged 7-9 years) residing in Seoul participated in 12 sessions of a taste education program for 3 months. The Korean taste education program was adapted from "Les classes du gout" by J. Puisais and modified to suit a Korean education environment. The study subjected school children to pre- and post-programs on food neophobia and willingness to try novel foods (WTNF), in addition to children's food neophobia in their parents. A total of 101 survey data were analyzed using SPSS 18.0. RESULTS: Regarding the effects of taste education, scores of food neophobia significantly decreased (P < 0.01) in the posttest, mean (m) score ($4.10{\pm}1.19$) decreased compared to the pretest ($4.39{\pm}1.00$), and WTNF significantly increased (P < 0.001) in the pretest (m) score ($0.48{\pm}0.33$) compared to the pretest ($0.32{\pm}0.34$). This result indicates verification of the study hypothesis. CONCLUSIONS: Food neophobia scale (FNS), an index that measures personal food preference [1,2], showed a very weak correlation with behavioral willingness to taste novel foods (WTNF). Therefore, it is expected that the two scales measure different things. However, considering that the traits of food neophobia are not easily changed, the taste education program was administered in a remarkably effective manner.

우리나라 백부자의 적출 조개 심장운동에 대한 작용 (The Action of Extract of Aconitum koreanum R. Raymond on Isolated Clam Heart)

  • Korean aconitum (Aconitum koreanum R. Raymond) as one of the botanical crude drugs which pertain to helleboraceae has been extensively applied in Chinese medicine during the past decades. It has been particularly used in immortal tonic among the folk remedies in China, however, its general uses comprehend diuresis, cardiotonic, analgesia, neuralgia, gout and, furthermore, even neoplastic effect. The components of aconitum have been acknowledged as aconitine, mesaconitine, hypaconitine, aconine and so on. The main ingredient, aconitine has the advantage of causing the atrial fibrillation, but, its pharmacological research has not been fully elucidated. Although there are many reports with regard to the pharmacological effects on the motility of several animal hearts, their conclusions have not been regretfully coincided yet. The authors hereby paid attention to this point of view and made experiment to examine the relationship between the alcohol extract of Korean aconitum and the motility of the isolated clam heart, making the use of several drugs related to the heart such as serotonin, acetylcholine, pilocarpine, physostigmine, barium chloride, procaine and quinidine. The cardiac movement of the isolated clam (Meretrix lusoria) heart in the standard sea water solution was recorded with the electric kymograph according to the Magnus method. The results of the experiment are as follows. 1. The motility of the isolated clam heart represents the tendency of gradual inhibition in proportion to the concentration of AK-A $10^{-4}$, $5{\times}10^{-4}$, and $10^{-3}$. 2. The cardiac inhibitory effect of AK-A $10^{-3}$ antagonizes the motility of the isolated clam heart pretreated with serotonin $10^{-6}$. 3. The cardiac inhibitory effect of AK-A $10^{-3}$ antagonizes the systolic state appealed by barium chloride $10^{-3}$. 4. The systolic state caused by quinidine $10^{-4}$ is not inhibited by AK-A $10^{-3}$.

Inhibition of Inducible Nitric Oxide Synthase Attenuates Monosodium Urate-induced Inflammation in Mice

  • The present study elucidated the effect of the selective inducible nitric oxide synthase (iNOS) inhibitor $N^6$-(1-iminoethyl)-L-lysine (L-NIL) on monosodium urate (MSU) crystal-induced inflammation and edema in mice feet. L-NIL (5 or 10 mg/kg/day) was administered intraperitoneally 4 h before injection of MSU (4 mg) into the soles of mice hindlimb feet. Twenty-four hours after MSU injection, foot thickness was increased by 160% and L-NIL pretreatment reduced food pad swelling in a dose dependent manner. Pretreatment of 10 mg/kg/day L-NIL significantly suppressed the foot pad swelling by MSU. Plasma level of nitric oxide (NO) metabolites and gene expression and protein level of iNOS in feet were increased by MSU, which was suppressed by L-NIL pretreatment. Similar pattern of change was observed in nitrotyrosine level. MSU increased the gene expression of tumor necrosis factor (TNF)-${\alpha}$ and interleukin (IL)-$1{\beta}$ and L-NIL pretreatment suppressed MSU-induced cytokines expression. The mRNA levels of superoxide dismutase and glutathione peroxidase1 were increased by MSU and L-NIL pretreatment normalized the gene expression. Phosphorylation of extracellular signal-regulated kinase 1/2 and p38 was increased by MSU, which was suppressed by L-NIL pretreatment. The mRNA levels of iNOS, TNF-${\alpha}$, and IL-$1{\beta}$ were increased by MSU in human dermal fibroblasts, C2C12 myoblasts, and human fetal osteoblasts in vitro, which was attenuated by L-NIL in a dose dependent manner. This study shows that L-NIL inhibits MSU-induced inflammation and edema in mice feet suggesting that iNOS might be involved in MSU-induced inflammation.

한의학 전공 대학생과 식품영양학 전공 대학생의 임상 영양지식과 영양 실천도 비교 (A Comparison of Clinical Nutrition Knowledge and Nutritional Behavior of College Students Majoring in Korean Oriental Medicine vs. College Students Majoring in Food and Nutrition)

  • This study examined two groups of students Korean Oriental Medicine majors and Food and Nutrition majors and compared their knowledge of clinical nutrition as well as their tendency to follow healthy lifestyles. In all, 204 college juniors and seniors majoring in Food & Nutrition, and 324 sophomores majoring in General Korean Oriental Medicine were given a questionnaire. Overall, knowledge of clinical nutrition(out of twenty questions) was significantly higher among the students majoring in food and nutrition (p<0.01). Specifically, these students obtained a higher score in the questions pertaining to the following topics: nutritional support(p<0.05), the relationship between menopause and blood cholesterol(p<0.01), the relationship between weight control and carbohydrates(p<0.01), the relationship between gout and protein(p<0.10), the relationship between hyperlipidemia and carbohydrates(p<0.01), the relationship between trans fatty acids and atherosclerosis(p<0.01), the relationship between blood potassium levels and kidney disease(p<0.01), and the relationship between weight control and diet and water(p<0.05). Conversely, students studying General Korean Oriental Medicine had a better knowledge of the relationship between malnutrition and the mortality rate and health complications(p<0.01). The questions relating to a healthy diet and lifestyle indicated that students majoring in Food and Nutrition had higher incidences of diet irregularity and a higher missing rate (p<0.01); they were more interested in calorie content and nutrients in their diet(p<0.05); and they were more likely to study about nutritional knowledge during their leisure time (p<0.01). The results also indicated, however, Korean Oriental Medicine students consumed proportionally more vegetables(p<0.05); and they were more likely to take the stairs than the elevator(p<0.01).

우롱차로부터 Xanthine Oxidase 저해물질 분리 및 구조 (Structure and Isolation of Xanthine Oxidase Inhibitor from Oolong Tea)

  • Xanthine oxidase는 퓨린 대사에 관여하여 xanthine 혹은 hypoxanthine을 산화하여 요산을 생성하게 하는 효소이다. 이상 퓨린 대사로 인해 형성된 요산은 관절에 축적되어 통풍을 동반하는 통증을 유발한다. 본 연구는 천연물로부터 통풍치료제의 개발을 목적으로 우롱차로 부터 6종의 flavan-3-ol 화합물을 분리하였고 기기분석에 의해 화학구조를 밝혔다. 각 화합물은 (-)-epicatechin, (-)-epicatechin-3-O-gallate, procyanidan B-1, B-3, procyanidin B-3-3'-O-rhamnose procyanidin B-1-3-O-gallate 였다. Xanthine oxidase 저해 영향을 관찰한 결과 gallte가 결함된 flavan-3-ol 화합물이 저해활성이 강하였고 procyanidin B-1-3-O-gallate는 $50\;{\mu}M$에 완전한 저해효과를 나타내었고 xanthine oxidase에 경쟁적으로 저해한다는 것이 밝혀졌다.

가자미근에 발생한 사구종 1례 (Glomus Tumor in Soleus Muscle: A Case Report)

  • Purpose: Glomus tumors are uncommon benign neoplasms arising from the neuromyoarterial apparatus, usually seen in the nail bed of fingers. Most of this mass presents typical symptoms such as severe pain, point tenderness and hypersensitivity to cold like neuroma, gout or causalgia. Concerning about the origin, there were few written reports about extra-digit glomus tumor, especially that occurred in the skeletal muscule. Methods: A 48-year-old female complained of painful tender mass in her right calf aggravated several months ago. Her MRI and femoral angiogram showed a well defined hypervascular tumor such as hemagioma or hemagioendothelioma in the right calf. Surgical treatment was performed, and it proved glomus tumor in soleus muscle histologically. Results: After the operation, patient didn't complain of her symptoms any more and there was no evidence of recurrence during 1 year follow-up period. Conclusion: Authors have found only eight cases of intramuscular glomus tumor reported in the literature and present here the ninth case of an intramuscular glomus tumor and first case of soleus muscle.

『온병조변(溫病條辨)』 대표 처방의 병리학적 분석과 질환 범위 고찰 (Pathologic Study on Representative Prescriptions in 『Wenbingtiaobian』 and their Coverage of Diseases)

  • This article is for understanding characteristics of febrile disease through analysing usage of representative prescriptions in "Wenbingtiaobian", composition of their related prescriptions and their coverage of modern diseases. Analysis of prescriptions was based on "Translation of Wenbingtiaobian", "Modern Shanhanlun" and "Herbal Formula Science" and clinical papers were searched in China Academic Journals(CAJ) of China National Knowledge Infrastructure(CNKI). Conclusions are as follows. First, principles of modifying or formulating prescriptions for febrile diseases are clearing heat, nourishing yin or dispelling dampness. Second, Zengyechengqitang, Xinjiahuanglongtang and Huweichengqitang are applied to pattern of bowel excess such as constipation or ileus. Third, Jiajianfumaitang is applied to heart diseases, Sanjiafumaitang to liver and heart, Dadingfengzhu to liver diseases. Fourth, Jiajianzhengqisan related prescriptions are applied to spleen diseases like conspitation, diarrhea or gastritis. Fifth, Baihujiarenshentang is applied to diabetes or fever and Baihujiaguizhitang to gout or arthritis. Sixth, Xuanbaichengqitang is applied to lung diseases and Taorenchengqitang to gynecology diseases. Seventh, Sanrentang is applied lung diseases like cough or pneumonia, spleen diseases like diarrhea or enteritis and kidney diseases like edema, arthritis or leucorrhea. Eighth, Yinqiaosan and Sangjuyin tend to be applied to exogenous diseases and diseases of five organs of sense, Jiajianfumaitang and Sanjiafumaitang to heart diseases, Angongniuhuangwan to encephalopathy, Qingyingtang and Huabantang to skin diseases, Zengyetang to gastrointestinal disorders, Shashenmaidongtang to lung or spleen diseases.

Antioxidant, Anti-Melanogenic and Anti-Wrinkle Effects of Phellinus vaninii

  • In this study, the antioxidant, anti-xanthine oxidase, anti-melanogenic and anti-wrinkle effects of methanol (ME) and hot water (HE) extracts from the fruiting bodies of Phellinus vaninii were investigated. The 1,1-diphenyl-2-picryl-hydrazyl free radical scavenging activity of 2.0 mg/mL HE (95.38%) was comparable to that of butylated hydroxytoluene (96.97%), the reference standard. The hydroxyl radical scavenging activities of ME (98.19%) and HE (97.55%) were higher than that of butylated hydroxytoluene (92.66%) at 2.0 mg/mL. Neither ME nor HE was cytotoxic to murine melanoma B16-F10 cells at 25-750 ㎍/mL. Although the xanthine oxidase (XO) inhibitory effects of ME and HE were significantly lower than that of allopurinol, the values were higher than 84 percent. The in vitro tyrosinase inhibitory activities of ME and HE were comparable to kojic acid at 2.0 mg/mL. The cellular tyrosinase and melanin synthetic activities of ME and HE on B16-F10 melanoma cells at 500 ㎍/mL were higher than arbutin, indicating that the inhibitory effects of arbutin on the tyrosinase and melanin synthesis were higher than those of ME and HE. The collagenase inhibitory activity of HE was comparable to EGCG at 2.0 mg/mL, however, the elastase inhibitory activity of ME and HE was lower than EGCG at the concentration tested. The study results demonstrated that the fruiting bodies of Ph. vaninii possessed good antioxidant, anti-xanthine oxidase, cell-free anti-tyrosinase, cellular anti-tyrosinase, anti-collagenase, and moderate anti-elastase activities, which might be used for the development of novel anti-gout, skin-whitening, and skin anti-wrinkle agents.

전라북도 고군산열도의 선유도 일대 야생화들로부터 효모의 분리 및 생리기능성 (Isolation and Physiological Functionality of Yeasts from Wild Flowers in Seonyudo of Gogunsanyeoldo, Jeollabuk-do, Korea)

  • 전라북도 고군산열도 선유도 일대에서 2014년 4월에 개화한 야생화들로부터 효모들을 분리한 후 이들의 26S rDNA의 D1/D2 부위의 염기서열을 결정한 다음 NCBI의 BLAST database에 등록되어 있는 효모들과의 상동성을 비교 분석하여 동정하였다. 야생화 51점에서 21종의 효모들을 61 균주 분리하였고, 이들 중 Cryptococcus aureus SY1-4 등의 Cryptococcus 속 균들이 가장 많았고, Metschnikowia reukaufii SY20-1등 Metschnikowia 속 균과 Rhodotorula ingeniosa SY1-1등 Rhodotorula 속 균들도 비교적 많이 분리되었다. 이들 61 균주들의 배양상등액과 무세포추출물을 제조한 후 생리기능성을 측정한 결과 M. reukaufii SY44-6의 배양상등액이 각각 49.6%의 XOD 저해활성과 38.4%의 미백성 Tyrosinase 저해활성을 보여 우수하였다.

신부전 요인에 의해 유발된 닭 신장변화의 병리학적 관찰 I. 병리조직학적 및 전자현미경적 관찰 (Pathological evaluation of renal changes induced by multiple nephropathogenic factors in SPF chickens I. Histopathological and electron microscopical observation)

  • Renal failure is one of the main causes of economic impacts in the poultry industry and complex syndrome with different severity of clinical signs caused by multiple nephropathogenic factors such as infectious bronchitis viral infection and excess salt and calcium in diet. To evaluate the correlation between severity of renal failure and the causative nephropathogenic factors, one-day-old specific pathogen free chicks were treated with either single causative factor or multiple causative factors described as above. Each group was designed as control for non-treated control, IB for infectious bronchitis virus (IB virus) infection, IBHNa for IB virus infection with high diet salt, IBHCa for IB virus infection with high diet calcium, IBHNC for IB virus infection with high diet salt and calcium, HNa for high diet salt, HCa for high diet calcium and HNC for high diet salt and calcium. Chickens were inoculated with IB virus at 1-day-old and remained on their respective diets until 21 day of age. The high dietary salt feeding groups such as IBHNa, IBHNC, HNa, HNC increased water intake, watery diarrhea, general subcutaneous edema and the high dietary calcium feeding groups such as IBHCa and IBHNC showed severe visceral gout. Two more than treated groups caused high mortality in comparison with the single treated groups. IB virus exposure significantly increased urate deposition and lymphocytic interstitial nephritis. Especially urate deposition dramatically increased when excess diet calcium was combined together. In excess diet salt treated groups enlarged edematous kidneys were observed and hypertrophy of glomeruli were showed. These results suggest that IB virus enhanced the incidence and severity on chicken renal failure clearly related to the quantity of salt and calcium.
