The Korean Americans’ Knowledge on Korean Traditional Foods(II) -Preference and Frequency- (미국 거주 한인들의 전통음식에 관한 인식조사(II)-기호도 및 섭취빈도를 중심으로-)

  • This study was conducted to find out the desirable measures for maintenance and development traditional foods when abroad, by investigating the knowledge and actual state of utilization of Americans residing in the Los Angeles on Korean traditional foods. The 308 respondents of questionnaires were taken. 96% of the respondents demonstrated interest in traditional foods. Among kinds of traditional food, the most preferable food was boiled rice(71.4%) and Kimchi(70.9%) , The that traditional foods are used were good taste(45.4%) and familiar taste(41.6%). The reason for avoiding them was, mainly, troublesome cooking methods (46.3% ). Conclusively, the Korean Americans residing in the Los Angeles have made good use of boiled rice and Kimchi a staple common food, but special foods. ceremonial foods and festival foods were hardly used. To maintain Korean traditional foods when abroad, it is necessary that older generations sometimes offer opportunity to meet with them to the coming Korean generations, and Korean food companies develop and export standardized and simplified traditional foods.

Effect of Diet Contents on Serum Composition and Urinary Excretion in Female Students According to Sasang Constitution (사상 체질별로 분류한 여대생의 식사내용이 혈청과 뇨중 성분치에 미치는 영향에 대 한 연구)

  • This study was conducted to compare the serum composition and urinary excretion in four institutional groups and the effects of intakes of good foods and harmful foods according to the Sasang constitiution for a short time on serum and ruine compositon. The contitutions of 33 female stucdents were classified by O-ring test and muscular strength test according to the Sasang constitution, The number of each institutional group was So-yang-in 11, So-em-in 10 and Tae-em-in 12. No subject belonged to Tae-yang-in There were no significant differences among contitutional groups in the values of most serum composition and urinary excretion Serum levels of total cholesterol, glucose, calcium and phosphorus in Tae-em-in was the highest among groups and the level of albumin and total protein in So-em-in was highest. The values of serum compositions changed after the 33 subjects took good foods and then harmful foods according to The Sasang constitution for a short time(5 days). Dietary behavior of the subjects had some effects among the constitutional groups in the values of most serum composition and urinary excretion. But the effects of dietary behavior on the serum composition and urinary excretion showed various trends in the four institutional groups.

An Analysis of Environment-friendly Foods Purchase Behavior and Possibility on Entering Chinese Market on the consumers of Shanghai, China (친환경식품의 구매행태 및 중국진출 가능성 분석 - 중국 상하이의 소비자를 중심으로 -)

  • This study was designed to analyze the possibility to enter the Chinese market aggressively by giving light on the factors which have effects on the continuous intention of Shanghai consumers to purchase environment-friendly foods, and the purchase of Korean environment-friendly foods. The objects of analysis were the 209 consumers living in Shanghai, China. As for the analysis method, the frequency, percentage, crossing analysis, $X^2$-test and logistic regression analysis were carried out, making use of SPSS PC+ 13.0. The study results are as follows. Firstly, it was identified that the decisive factors, such as good taste, health of family, freshness, food shop in a department store, international quality authentication, diversity of items and number of family members, had effects on the possibility that the consumers in Shanghai, China would purchase environment friendly foods continuously, showing the meaningful variables. Secondly, as for the decisive factors having effects on the possibility to buy Korean environment friendly foods continuously, it was identified that good taste, health of family, freshness and price cutting were the meaningful variables. Therefore, it is necessary that to set up a export promotion strategy to make the Shanghai consumers get interested in Korean environment-friendly foods and choose to buy the foods.

A Study on Recognition and Consumption about Instant Food of Homemakers in Inchon (주부의 가공식품에 대한 인식 및 소비 연구 -인천 지역을 중심으로-)

  • This study was surveyed concept and consumption for Instant foods by homemakers in Inchon city. The result of study were as follows. 1. In the view of integral numberized high, middle, low, high group reached 19.2%, middle was 50.2% and low showed 30.1%. As higher their ages up, the point was high. 2. Their concept of instant food is close to 'convenience' and 'time saving' but far from 'good for health', 'high nutrition' and 'safe sanitation'. 3. Divied into two groups with positive and negative, which proved their concept of Instant foods as 57.5% positively. Negative group which has negative concept for instant food has a good dietary pattern, Positive group which consists of low ages and high income showed positive attitute for instant fodds. 4. Consumption of bred, noodles and soybean sourecs is little bit higher than other items. Consumption by the group which has low ages, highly educated, having small number of children proved high percentage. Also, the group which has good dietary pattern showed low consumption of instant foods comparing to other group. 5. According to the relation between concept and consumption of the instant foods the group that conceives instant foods positive consumes higher than the group which has negative concept.

Cooking Characteristics of Emulsifier-containing Oil -Degree of Oil Absorption and Spattering During Cooking, and Standard Recipe for Fried Foods- (일반 식용유와 기능성 식용유의 조리 특성 비교 -흡유율, 조리시 튀는 정도, 표준 조리법 작성을 중심으로-)

  • The cooking characteristics of Hicook with lecithin and GMS as emulsifier were examined for effect on the reduction of oil levels in fried foods. Hicook and soybean oil were used in stir-frying and pan-frying, and in case of Hicook the weight of oil absorbed and spattered during cooking were significantly lower than in case of soybean oil. Next this study attempt to standardize the recipe for preparation of selected Korean foods, especially in regards of the amount of oil used during cooking. The foods studied were all used frequently in Korea, they inculded stir-fried vegetables, stir-fried rice, and pan-fried fish and soybean curd. The results showed that Hicook, even in a half amount, made it possible cooking food with good properties, and calorie content of cooked foods could be lowered considerably. The trained panelists evaluated sensory characteristics of foods, flavor, appearance, and overall acceptability. Sensory qualities of food prepared with Hicook were highly acceptable, and rated better than controls in flavor and overall acceptability. But because stir-fried food was accepted greasy and oily in customarily, the appearance was rated lower than comtrol. In summary, application of hicook offers means of lowering fat levels while keeping sensory quality good. The emulsifier in Hicook is responsible for reduction of oil content and improvement of quality of fried foods.

  • Modern medicine can not solve all the problems caused by many intractable, chronic and aging related diseases hence more people have come to recognize the role of foods for the promotion of good health as well as prevention from illness. Further more, controlled diet are proven to be used as effective cures for certain diseases. In this paper, the definition, functional factors and mechanisms of designer(funtional) foods are reviewed. Especially, the biofuntional activities of herbal medicines which also can be treated as designer foods are intensively noted in this paper.

Consumers Perception of Korean Foods Compatible with Traditional Korean Liquors (전통주에 어울리는 한국음식에 대한 인식)

  • The purpose of this research was to investigate consumers' perceptions of foods that are most compatible with traditional Korean liquors. The study participants were a total of 402 customers who visited traditional Korean bars. Thirty-eight percent of the participants drank alcohol once or twice a week, and overall, 79% drank with friends or co-workers. Forty-three percent spent 30,000-40,000 won on alcoholic drinks, and half of them frequently drank distilled Soju whereas 27% drank beer. Those who drank traditional Korean liquor chose to do so because they viewed it as good for their health and the beverage was tasty. Participants selected Yakju/Baekseju (47.5%), Bokbunjaju (21.1%), and Takju/Makgeoli (8.2%) as the most compatible Korean traditional liquors with Korean traditional foods. The most compatible foods with Yakju were identified as Haemulpajeon (11.8%), Dubukimchi (9.8%), and Bossam/Suyuk/Pyeonyuk (7.5%). Bokbunjaju was viewed as a good match with Jangeogui (8.1%), Hunjeori (6.5%), and Saengseonhoe (6.4%). The respondents perceived Deodeokgui (6.7%), Saengseonhoe (5.9%), and Dubukimchi (5.6%) as the most compatible foods with Yakju with mushrooms. Chengju was viewed as a good pairing with Eomuktang (9.2%), Altang/Maeuntang (7.2%), and Saengseonhoe (6.8%). The respondents thought Takju went well with Haemulpajeon (17.7%), Dubukimchi (14.2%), and Kimchijeon (11.7%). And finally, Altang/Maeuntang (11.8%), Samgyeopsalgui (8.7%), and Honghaptang/Jogaetang (8.1%) were mentioned as the most compatible foods with distilled Soju.

Health-related Dietary Attitudes and Behaviours among Mealmanagers in Seoul Area (서울 지역 주부들의 건강과 관련된 식생활 의식구조)

  • In this survey, we investigated the way of thinking about meal management of housewives including the sincerity to meal preparation, the eating practices and cronic degenerative diseases related dietary behaviors, and studied the effects of above factors on the real food intakes. We also investigated the trends of health-foods and nutrient supplements usage. The results obtained from 506 housewives in Seoul were summarized as follows. Although our subjects prepared their meals habitually without special concern, they did not prefer the use of convenient foods. The food prefrence of housewivess who had more child and refered higher life status was similar with other family members. The dietary attitudes were good in large family, the higher income and the more child group. The highly educated group skipped breakfast more frequently. The mealmanagers with better education career and good living status considered for the restriction of salty foods, sweet foods, animal fats and pungent foods, and for the nutritionally balanced diet. The high income group showed great concerns about weight gain at meal times. The nutritional qualities expressed by the frequency of food group intakes were high in the better educated and living status groups, and their eating frequencies of animal protein foods and calcium sources were significantly high. Mealmanagers who had no job intaked vegetable oils through frying foods frequently. The use of health-foods and nutrient supplements was influenced by age, educational and economic level and self-estimated living status, but the trends in prevalence of both were not consistent. Health-foods were prefered by the groups of high educational career, affluent income and advanced living status, and low educational career, low income and low living status groups favored the nutrient supplements. The restrictive intake of animal fat and the use of health-food were positively correlated, which seemed that the subjects used health-foods as supplements in compensation for nutritional unbalance caused by the avoidance of animal protein foods.

A Study on Korean Traditional Foods and Its Commercialization for the Tourists (한국 전통민속음식 발굴과 관광상품화 방안)

  • The purpose of this study is to explore the possibility of commercialization of Korean traditional foods for the tourists. In order to develop suitable foods for the tourists, it is needed to identify the various traditional foods, its cooking process, and component parts. The author surveyed various traditional foods in Gyeonggi provinces through field visits and considered the followings: Significance of the foods in local areas and background of taking the foods, production of the foods for the tourists and foreigners, standard cooking process and mass production systems, best quality of foods and management for good qualities, period of circulation of foods, balanced nutritional elements, foods for the well-being concepts, scientific and reasonable inheritance mechanism for the foods, and concept of originality of the foods. For further development of traditional foods for the tourists, the followings should be considered: High quality of foodstuffs, advanced processing technology, marketing network, enforcement of publicity, supporting research institute on traditional foods, and automatic operation of processing facilities. As the result of this study, the following traditional foods in Gyeonggi provinces are recommended for the tourists: kongrungchang-gookbap, Moorutsook-goum, Gamja-boongsaengei, Sookboojaengei-sirudduk, Maemil-chongdduk, Gamja-ongshimi, Oksusu-ongshimi, Maemil-makguksoo, and Kotdung-chigi.

A Rearch of Traditional & Native Local Foods in Busan (부산의 전통.향토음식의 현황 고찰)

  • Busan is an underdeveloped region in food culture, though it has geographically convenient conditions of location to make good use of marine products from the sea and the river, a variety of grain and vegetables, and forest products. Thus, in this research, I studied the traditional and local native foods of Busan, focusing on there origins and the backgrounds of their development. There are many traditional and local native foods in Busan, Pajun, Macguli, Jaechupguk, Gupoguksoo and etc. For the development of food culture of Busan, We will keep researching its traditional and local native foods and try to form a new pattern of food culture, making the adventage of an international trading city.
