홍삼꿀을 첨가한 흑염소 육골액 음료의 특성에 관한 연구 (Studies on the Characterization of Black Goat Meat and Bone Beverage Containing Honey with Red Ginseng)

  • 현대에는 식생활 양상의 변화와 가공식품의 이용증가, 그리고 외식산업의 발달로 비만인구가 증가되고 있는 실정이다. 이러한 현상은 성인병 발병률 증가시켰으며, 암과 같은 질병의 서구화를 가져오는 원인이 되고 있다. 흑염소고기는 지방과 콜레스테롤이 낮고 단백질이 풍부한 영양식품으로서 성인병이나 몸매관리에 적합한 식품이다. 현재 흑염소의 섭취는 주로 육골즙이나 흑염소 소주 등으로 특수한 상황에서만 이루어지는 것이 현실이다. 그러나 영양 성분 분석과 관능 검사 결과 기능성 음료로서의 가능성도 있는 식품으로 나타났다. 따라서 흑염소 음료의 섭취는 성인병의 예방 효과와 체중 조절에도 효과가 있다고 사료되며, 흑염소 농가에도 높은 이익을 창출할 수 있을 것으로 사료된다. 흑염소의 조단백질량은 쇠고기, 돼지고기보다도 높았지만 조지방 함량은 가장 낮게 나타났다. 또한 무기질 분석 결과 나트륨 함량이 쇠고기와 돼지고기보다도 낮게 나타난 반면 칼슘과 철분의 함량은 높았다. 성인병과 비만을 예방할 수 있고 중년 여성의 질병인 골다공증과 청소년들에게 흔히 나타나는 철분 결핍성 빈혈을 예방할 수 있을 것으로 사료된다. 또한 홍삼꿀을 첨가한 흑염소 육골액에 대한 관능검사 결과 홍삼꿀을 7.5mL와 8.0mL 첨가한 육골액이 아주 좋은 경향을 나타내었다.

가열 염소육의 판별을 위한 효소면역측정법 (An Enzyme-Linked Immunosorbent Assay for Detection of Cooked Goat Meat)

  • 가열 처리된 우육, 돈육, 계육, 양육과 염소육과의 종판별을 위한 효소면역측정법(ELISA)을 확립하기 위하여 염소육을 $98^{\circ}C$에서 15분간 열처리해서 추출액을 분리하였다. 열에 안정한 주요 단백질(TS)은 분자량이 36과 38kDa이었고 두 분자량대의 단백질의 pI값은 4.5로 확인되었으며 면역원으로 사용하기 위해 이온교환 (DEAE-Sephadex A-50)과 겔 여과(Sephadex G-75) 크로마토그래피로 정제하였다. 분리, 정제된 TS단백질을 토끼에 면역하여 염소육에 대해 특이성을 갖는 항체를 생산하고 항TS 항체를 이용하여 간접경합 ELISA를 확립하였다. 항TS 항체는 가열 처리된 계육, 우육, 돈육, 양육과는 반응성이 전혀 없었고 동일하게 처리된 염소육과 지표단백질인 TS에만 반응성을 보였다. 따라서, 본 연구에서 확립한 간접경합 효소면역측정법은 가열 처리된 육류 중 염소육 판별에 웅용 가능함을 시사하였다.

Comparison of Single and Double Combination of Temperature-time in Sous Vide Treated Semitendinosus Muscle from Cattle and Goat

  • This study observed the effects of the double combination of temperatures-times (2 temperatures: 2 times combination, 2T2T) in sous vide cooking method on the physicochemical properties and collagen solubility (CS) of semitendinosus muscle from cattle and goat as a comparison to common sous vide treatment (1 temperature: 1 time combination, 1T1T). The new invention of sous vide cooking method (2T2T) cooked at the first temperature at $45^{\circ}C$ for 3 h, and the second temperature at $60^{\circ}C$, $65^{\circ}C$, and $70^{\circ}C$ for 3 h, and labeled as N45-60, N45-65, and N45-70, respectively. While, common sous vide treatment (1T1T) were cooked directly for 6 h at $60^{\circ}C$ (T60), $65^{\circ}C$ (T65), and $70^{\circ}C$ (T70). Results revealed that cooking with 2T2T treatment improved the water-holding capacity and reduced the cooking loss of both beef and goat meat. The $L^*$ values have no apparent changes between treatment in beef and goat meat, while $a^*$ values of N45-60 treated goat presented markedly higher values than other treatments but an only slight increase in beef at the same treatment (p>0.05). Again, 2T2T treatment tended to decrease mean shear force (SF) values for beef and goat meat with the lowest SF values recorded at N45-60, and the CS no or less influenced this value. Therefore, the application of innovative sous vides cooking method (2T2T) presented comparable values in the treated beef and goat meat as compared to common sous vide method (1T1T).

Qualitative attributes of meat from Teramana goat kids, an Italian native breed of the Abruzzo region

  • Objective: The aim of this work was the characterization of the qualitative aspects of meat obtained from Teramana goats, an Italian indigenous breed of the Abruzzo region. Specifically, the study included a comparison with meat samples deriving from Saanen goat kids reared in the same environment and applying the same feeding protocol. Methods: Upon reaching about 7 months of age the animals were slaughtered and samples of muscle tissue were collected to be analyzed. Specifically, meat samples were subjected to evaluations of the physical parameters, including color and the meat ability to retain water, in addition to chemical evaluations that were focused to the determination of the total lipids amount, fatty acids composition, lipid oxidation, and volatile profile. Results: The meat samples obtained from the indigenous breed showed a less intense reddish color and no significant variations for the muscle tissue tendency to retain water, both regarding fresh and cooked meat. Several differences were instead observed in the fatty acid profile. The Teramana samples were richer in saturated fatty acids (p<0.01) and interestingly showed higher concentrations of rumenic acid (p<0.05), a conjugate of linoleic acid that has been associated with important health benefits for the consumers. Another important finding for these meat samples was the marked resistance to oxidative events, as evidenced by the thiobarbituric acid reactive substances-test (p<0.05) and by the characterization of the volatile profile that highlighted a strong reduction in the relative percentage of hexanal (p<0.05), commonly associated to lipid oxidation and the development of unpleasant aromatic notes. Conclusion: The collected data, therefore appeared useful for the valorization of the food product derived from the Teramana goat, although no sensory information has been collected to define the degree of acceptability by the consumers.

Physicochemical and microbial characteristics of longissimus lumborum and biceps femoris muscles in Korean native black goat with wet-aging time

  • This study examined the effects of different wet-aging times on the physicochemical characteristics and microbial profile of longissimus lumborum (LL) and biceps femoris (BF) muscles from Korean native black goat (KNBG) meat. The water holding capacity (WHC), pH, cooking loss, shear force, meat color, free amino acid, total bacteria, and coliform count of KNGB meat were analyzed at 0, 5, 10, and 15 days of wet-aging at 4℃ under vacuum packaging. The results showed that different wet-aging times led to significant pH variations between the muscles throughout the aging period. The wet-aging time did not affect the WHC and cooking loss in meat from the LL muscle. In the BF muscle, however, meat wet-aged for five days had a significantly higher WHC and less cooking loss than meat aged for 0, 10, and 15 days. The meat from the LL muscle wet-aged for five days produced tenderer meat (low shear force value) than the unaged meat (p < 0.05). Moreover, the color was similar in the LL muscle regardless of the number of aging days. In the BF muscle, the redness (a*) was higher in the meat wet-aged for 15 days compared to that aged for 0, 5, and 10 days (p < 0.05). Regardless of the muscles, an increase in wet-aging time led to an increase in the total free amino acids contents in both muscles (p < 0.05). On the other hand, the tasty/bitter amino acid ratio was significantly higher for five days of wet-aged meat than 10 and 15 days of aging from the BF muscle. In addition, regardless of the muscles, the total bacteria and coliform counts were significantly lower for five days of wet-aged meat than 10 and 15 days of aging (p < 0.05). Therefore, chevon wet-aged for five days is an optimal aging period under vacuum packaging that fortifies meat quality with a minimal microbial negative defect.

Effects of Intensive Alfalfa Feeding on Meat Quality and Fatty Acid Profile of Korean Native Black Goats

  • The aim of this study was to determine meat quality characteristics and fatty acid composition of Korean native black goats (KNBG) finished on intensive feeding of alfalfa (ALF) and conventional feeding of commercial concentrate pellets (CCP) with low-energy common grasses. Ten KNBG (12 months old) were divided into two groups and subjected to either ALF or CCP treatments. The goats were slaughtered after 6 months of feeding with experimental diets to investigate meat quality characteristics and fatty acid compositions of longissimus lumborum muscle. There were no significant differences in proximate chemical composition, collagen, or myoglobin content between ALF and CCP groups of goats. Meat color, water-holding capacity, or tenderness was not significantly different between the two groups either. However, proportions of monounsaturated fatty acids and polyunsaturated fatty acids were significantly (p<0.05) different between the two groups. The proportion of oleic acid was significantly (p<0.05) higher in ALF goat whereas proportion of linoleic and arachidonic acids were significantly (p<0.05) higher in CCP goat. Results suggest that KNBG finished with intensive feeding of alfalfa could produce goat meat with desirable fatty acids for human diets.

The Quality of Modified Atmosphere Packaged Meat from Lambs Slaughtered at 50 and 100 Days of Age

  • The aim of this study was to determine the quality of modified atmosphere (MA) packaged meat from Pomeranian rams slaughtered at 50 and 100 days of age. Determined: chemical composition, physicochemical and sensory properties of meat, and the fatty acid profile of intramuscular fat. Meat from 100-d-old lambs was characterized by a significantly higher content of dry matter, total protein and crude fat, a darker color and higher physiological maturity ($p\leq0.01$). Meat from younger lambs was marked by a better water-holding capacity ($p\leq0.05$), a lower energy value and higher concentrations of monounsaturated fatty acids (MUFA) and polyunsaturated fatty acids (PUFA). An increase in the content of dry matter, total protein and ash, and energy value was noted in MA-stored meat. Meat pH decreased over MA storage and the sensory properties deteriorated. The studied meat remained safe from microbial contamination during storage.

Feeding regimens affecting carcass and quality attributes of sheep and goat meat - A comprehensive review

  • Sheep and goats can efficiently convert low quality forage into high-quality meat which contains specific nutrients and quality traits. Carcass traits and quality attributes of sheep and goat meat depend upon several factors and one of most effective strategies amongst these is feeding regimens. In this review, the major aspects of feeding regimens affecting growth rate, carcass traits and quality attributes of sheep and goat meat are thoroughly discussed, with a particular focus on physical-chemical composition, flavor profile, and fatty acid (FA) profile. Grazing lambs and kids receiving concentrate or under stall-feeding systems had greater average daily gain and carcass yield compared with animals reared on pasture only. However, growth rate was higher in lambs/kids grazing on pastures of improved quality. Moreover, the meat of grazing lambs receiving concentrate had more intense flavor, intramuscular fat (IMF) content, and unhealthy FA composition, but comparable color, tenderness, juiciness, and protein content compared to that of lambs grazed on grass only. In contrast, meat of concentrate-fed lambs had more intense color, greater tenderness and juiciness, IMF and protein contents, and lower flavor linked to meat. Additionally, the meat of kids grazed on concentrate supplementation had higher color coordinates, tenderness, IMF content and unhealthy FA composition, whereas juiciness and flavor protein content were similar. In contrast, kids with concentrate supplementation had superior color coordinates, juiciness, IMF content and unhealthy FA composition, but lower tenderness and flavor intensity compared to pasture-grazed kids. Thus, indoor-finished or supplemented grazing sheep/goats had higher growth rate and carcass quality, higher IMF content and unhealthy FA composition compared to animals grazed on grass only. Finally, supplementation with concentrate increased flavor intensity in lamb meat, and improved color and tenderness in kid meat, whereas indoor-fed sheep/goats had improved color and juiciness as well as reduced flavor compared to pasture-grazed animals.

Nutritional and antioxidative properties of black goat meat cuts

  • Objective: In this study, we evaluated the nutritional value and antioxidant activity of black goat loin (BGL) and black goat rump (BGR) meat. Methods: We evaluated the proximate compositions, collagen and mineral contents, and fatty acid compositions of BGL and BGR with respect to their nutritional value. The levels of bioactive compounds such as L-carnitine, creatine, creatinine, carnosine, and anserine were also measured. The ferric reducing antioxidant power (FRAP), 2,2-azinobis (3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging, and oxygen radical absorption capacity (ORAC) were assessed to evaluate the antioxidant activity of BGL and BGR. Results: BGR showed higher collagen, Fe, Ca, P, and Na contents than did BGL (p<0.05). Notably, the Ca/P ratio was high in both BGR and BGL (1.82 and 1.54, respectively), thus satisfying the recommendation that the Ca/P ratio is between 1 and 2. BGL showed a significantly higher content of desirable fatty acids (stearic acid and total unsaturated fatty acids) than did BGR. In addition, the levels of creatine, carnosine, and anserine in BGL were higher than those in BGR (p<0.05). There was no significant difference in the antioxidant activity between BGL and BGR, as assessed by FRAP (both $15.92{\mu}mol$ Trolox equivalent [TE]/g of dry matter [DM]), ABTS (12.51 and $12.90{\mu}mol\;TE/g\;DM$, respectively), and ORAC (101.25 and $99.06{\mu}mol\;TE/g\;DM$, respectively) assays. Conclusion: This was a primary study conducted to evaluate the differences in nutritional value and antioxidant activity between loin and rump cuts of black goat meat. Our results provide fundamental knowledge that can help understand the properties of black goat meat.

Amplified Fragment Length Polymorphism (AFLP) DNA Marker를 이용한 한국 재래흑염소육 감별 (Identification of Korean Native Goat Meat using Amplified Fragment Length Polymorphism (AFLP) DNA Markers)

  • 본 연구는 AFLP-PCR 유전자 지문분석 기법을 이용하여 우리나라 고유의 동물유전자원으로서 재래흑염소의 품종 및 흑염소육 감별을 위한 품종 특이적 DNA marker를 개발하고자 수행하였다. 흑염소로부터 추출한 genomic DNA를 EcoR I/Hind III 및 Taq I/Hind III 2종류의 제한효소 조합으로 이중 절단한 후 10종류의 two selective primer조합형을 이용하여 분석한 결과 각 printer 조합형당 검출된 AFLP band의 수는 36~74개의 범위로 평균 55.5개였다. 그리고 검출된 총 555개의 band 가운데 polymorphic band의 수는 149 개로 다형성 수준은 약 26.8%로 추정되었다. 재래흑염소 품종 특이적인 AFLP marker를 탐색하고자 육용종 수입흑염소 및 4품종의 유용종 염소와 AFLP 지문양상을 비교 검토한 결과 M13/H13 primer 조합형에서 2.01과 1.26 kb의 2개 band 그리고 E35/H14 primer 조합형에서 1.65 kb의 1개 band가 재래흑염소의 품종 특이적 AFLP marker로 검출되었다. 그리고 E35/H14 primer 조합형에서 수입흑염소의 2.19, 2.03, 0.96 및 0.87 kb band, Saanen종의 2.13 kb band, Nubian종의 2.08 kb band는 각 해당 품종에만 특이적으로 출현하는 품종 특이적 band로 확인되었다. 또한, E35/H13 primer 조합형에서 재래흑염소를 특히, Saanen종과 식별이 가능한 4개의 DNA band가 확인되었다. 따라서, 본 연구에서 AFLP-PCR 기법을 이용하여 검출한 품종 특이적 DNA band들은 우리나라 재래흑염소, 수입흑염소 및 유용종 염소품종들간에 명확히 구별되어 재래종 흑염소 육과 육제품의 품종판별에 매우 유용한 DNA marker로 이용 가능할 것으로 기대된다.
