'시판다류중 미량중금속에 관한 조사연구'(율무차, 칡차, 생강차를 중심으로) ('A Study on the contents of trace elements in commercial tea-products.' -on the contents of Youl Moo tea, Arrow root tea, and Gin Ger tea-)

  • In order to investigate harmful trace in commercial teaproducts. The contents of copper, lead, cadmium, zinc, chromium, manganese and iron were studied in this paper. The samples studied were Youlmoo tea(7) Arrow root tea(9) Ginger tea(4) collected from markets in Seoul area and analysis of seven metals by means of Automic absorption spectrometry. The results obtained were as follows : Lead contents is ranged from 0.06 to 0.72 ppm, cadmium from ND to 0.17 ppm, copper from 0.8 to 16.7 ppm, zinc from 10.4 to 40.4 ppm, manganess from 2.7 to 16.5 ppm, chromium from 0.04 to 4.7 ppm, iron from 7.9 to 55.7 ppm.

한국 전통음료에 대한 기호도와 섭취빈도 조사 연구 (A Study on the Preference and Intake Frequency of Korean Traditional Beverages)

  • This study was performed by questionnaire to investigate the preference and intake frequency of Korean traditional commercial beverages. The subjects were consisted of 320 participants in Daegu and Kyungpook area. 'Chain market' scored 49.4% as purchasing place of traditional beverages. 'Tea bag' scored 31.6% as the favorite package of traditional beverages. On the reasons of drinking traditional beverage 'good for health' scored the highest with 31.3% respondents, followed by 'good smell' with 14.4%. Coffee and traditional tea were the choice of beverage after having a rich meal and on occasion of entertaining guests. The favorite foods in ordinary days were 'tea', 'alcohol', 'ice cream', 'nuts' and 'cookie'. More than thirty percent of the respondents, both male and female, raised the need of improvement in taste of traditional beverage. In the intake frequency, Korea traditional beverages obtained 1.80 points as a whole. 'Green tea' scored highest(3.40points) while 'mulberry-leaf tea' received the lowest score of 1.31 points. The preferred Korean traditional drinks were 'greed tea', 'shick hae', 'citron tea', 'misitgaru', 'maesil tea', 'rice tea' in the order. On the other hand, the preference for 'mulberry-leaf tea', 'boxthom tea', 'ginger tea', 'chrysanthemum tea' and 'omija tea' was very low. The people who are on twenties preferred 'shick hae', 'honey tea', 'citron tea', 'black tea' and 'misitgaru' more than the other generation.

지역농산물 공동브랜드의 스토리텔링 개발 : 안동 '그대생강'의 사례를 중심으로 (A Study on the Development of Storytelling of Co-Brand for Regional Agricultural Products : Focusing on the case of 'Geudae Ginger' in Andong)

  • 안동은 전국 최대의 생강 주산지이다. 이 연구는 안동생강의 공동브랜드 '그대생강' 사례를 중심으로 지역농산물 공동브랜드의 스토리텔링 개발 과정을 알아보았다. 그대생강 브랜드의 스토리텔링 개발 과정은 4단계이다. 1단계 자료 조사를 통해 스토리텔링 소재를 수집하였다. 인류에게 오래 동안 약으로 사용되어온 생강은 무엇보다 역사 문화적 이야기 소재가 많다. 2단계로 스토리 자원을 추출하였다. 생강은 두루 이롭게 쓰이면서도 본연의 색과 향기를 잃지 않는 고귀함, 강직함, 정결의 이미지를 가지고 있어 한국 정신문화의 수도 안동의 이미지와 결부시킬 수 있다. 3단계로 스토리텔링을 개발하였다. 핵심 테마를 '격(格)이 다른 안동생강'으로 설정하였고, 핵심 스토리로 ≪안동 생강선생 이야기≫ 시리즈를 기획해 시나리오 1편 <안동 생강선생을 소개 하오>, 2편 <도산십삼차(陶山十三茶)의 탄생>, 3편 <사랑을 이어주는 그대생강>을 개발하였다. 4단계에서는 스토리텔링의 활용 방안을 제안하였다. 스토리텔링 확장을 위한 지역 연계 사업화 프로그램으로 '그대' 생강의 이미지를 활용한 소비자 참여형 스토리텔링의 확산방법 및 생강'선생'의 이미지를 부각한 선생님과 함께 하는 생강 여행 및 생강 축제 등을 제시하였다. 본고는 브랜드 스토리텔링을 통해 격이 다른 안동생강에 대한 정체성을 확립하는데 일조함으로써 그대생강 공동브랜드 활성화의 기틀을 마련하고자 했다. 브랜드 스토리텔링을 통해 안동생강의 효능과 정보, 역사적 사실 등이 널리 알려지고, 생강이 양념이라는 이미지를 벗어나 유용하고 매력적인 지역농산물로 자리매김하며 나아가 안동생강 브랜드 스토리텔링을 문화관광 사업에 활용하여 지역 경제 발전에 도움이 되기를 기대한다.

"조선왕조실록"을 통해 본 한국의 차문화 (Korean Tea Therapy in "The Annals of the Joseon Dynasty")

  • According to "The Annals of the Joseon Dynasty", we know that korean ancestors confuse tea prescription with green tea. It makes cultural misunderstanding Tea doesn't mean green tea but tea prescription. It is caused that tea prescription has been called tea habitually in Korea. Korean don't drink green tea much. Instead, they have had a habit of drinking decoction of medicinal herbs and they called it tea. This habit has developed into Korean traditional tea culture. In the palace in the Joseon Dynasty period, Ginseng tea was used in the tea ceremony. When the king had poor health or had a disease or was even on the eve of death, a royal physician tried to cure him by tea. They used about 30 kinds of tea according to "The Annals of the Joseon Dynasty" Such as ginseng tea, astragalus tea, ginger tea. Tea in korea is not a drink but the way to cure a disease. Korean people usually get to drink decoction of other herbs instead of green tea. This became the basis of korean traditional tea culture. We need to change a definition of Korean tea like this way and study about it much more. With this research paper, korean tea culture should be studied on more various ways and established itself as original and unique tea culture. On the basis of this studies, Korean tea brand can be famous in the world like Chinese tea or Japanese tea.

여대생들의 전통음료 섭취 실태에 관한 연구 (Intake of Traditional Beverages in Female University Students)

  • This study was conducted to investigate the actual conditions of intake of Korean traditional beverages in 273 female university students in Seoul, Korea. The subjects of this study consisted of 128 food and nutrition majors and 145 non-majors. Questionnaires were administered to the subjects who had an average age of 20 years. Two-hundred and nineteen students (80.2%) lived with their parents. Regarding the type of beverages subjects often drink, coffee was the most preferred (51.3%) overall, and non-majors (4.1%) were shown to drink traditional beverages more often. Regarding preference for traditional beverages, most subjects (72.5%) responded that they liked their own traditional beverage. However, for frequency of intake of traditional beverages, 48.7% answered they do not drink any traditional beverages. The reasons why subjects like traditional beverages were taste (71.7%) and health (26.3%), and the type of traditional beverages they often drink were Yulmu tea (35.9%), Sik hae (30.8%), and Yuja tea (10.6%), in order. Regardless of major, ginseng tea, jujube tea, mulberry-leaf tea, Chinese matrimony vine tea, ssanghwa tea, ginger tea, and omija tea were found to be satisfactory traditional beverages. Therefore, due to the low intake frequency, preference, and satisfaction of traditional beverages, new traditional beverages that can meet the standards of female students should be immediately developed.

  • 1) The recipe for tea is to mix tea leaves or tea buds with odorous pharmaceuctial materials, which are boiled and drunk, addition of honey only to that odorous pharmaceutical meterials without adding tea buds to that can be used. 2) Viewed from the part of tea plant the fruit of it accoupies most. The cereal does as much. 3) what we have referred to from the records on this subject are "Guogapylyong" which is of the yuan dynasty and "Jeungbo-Salymkeongje" which is of the Yi dynasty, based on which no trace of pure tea can be found but odorous pharmaceutical kinds of tea only were widely spread. 4) The characteristics of tea are to help make stomach strong, mind cleared, the lungs copious, counteract, and quench thirstiness. The tea help build liver as well as bring about health. 5) As a result of sense test, those kinds of tea were much better than contemporary kinds of teas as far as flovor and sweetness are concerned. Those teas had complex tastes, while teas of to day have simple one. 6) Because the history not so clear before the periods of Unified Sila that the recordings of teas are rare, we can hardly know about tea. Our ancestors really began to drink teas from the period of Unified Sila on. This country turning to the Koryo dynasty, tea drinking manner began to prevail so much that drinking tea became a ceremony. Daring the Yi dynasty it was much camplicated to make and boil the leaf tea. As a result of the previous fact pure tea came to have disappeared and odorous pharmaceutical became prevailent. 7) For value of exploiting Kungjuk tea (ginger tea seasoned with phyllostachy and addition of honeyl) was the highest among many. The worth of developing all the teas among all the beverages was regarded as that high of 51%, while even the tea regarded as worthless obtained 4% of support, which is the lowest.

Grapefruit seed extract와 7종의 Essential oil 및 혼합 Essential oil의 항균 활성 (Antibacterial activity of grapefruit seed extract and seven kinds of essential and blended essential oils)

  • 본 배경 : 질염은 항생제를 복용하는 방식으로 치료를 하고 있으며, 이러한 항생제의 지속적인 치료는 내성을 유발할 수 있다. 연구 방법 : Lactic acid bacteria 2종에 에센셜 오일을 이용한 항균 활성을 보고자 한다. SE(Grapefruit Seed Extract), eucalyptus, tea tree, clove bud oil, cinnamon oil, lemongrass oil, thyme oil, ginger oil을 일정 비율로 넣어 배양 후, 병원성 미생물- E. coli, C. albicans와 Lactic acid bacteria은 균주에 맞는 배지를 사용하여 균 수를 측정하였다. 결과 : Essential oil 7종과 GSE가 병원성 미생물에 억제 효과가 있으며, 병원성균(E. coli, C. albicans)에 대한 Grapefruit seed extract(GSE)의 억제농도를 확인하였다, 병원성균은 억제하고 Lactic acid bacteria는 억제하지 않는 배합비도 확인하였다(GSE 농도가 200ppm에서 Eucalyptus globulus(EG) oil 50㎕와 Melaleuca alternifolia oil(Tea tree oil, TTO) 50㎕(pH 5.0, 5.5, 6.0)). 결론 : 본 실험에서 Essential oil은 다양한 항균 활성 가지고 있어 항생제 대안으로도 생각할 수 있으며, 장기 항생제 치료환자에 대한 보조 항균제로서도 유용할 것으로 생각된다.

한방차 관련 특허 동향 분석 (Analysis on Patent Trends in Traditional Korean Tea)

  • Objectives : The aim of this study is to analyze the patent trend in Traditional Korean Tea. In this paper, we investigate the diversity of Korean Tea registered as patents focusing on the kinds of medicinal herbs used, processing methods, and types of tea. Methods : We collected patents data using KIPRIS, and WIPS database. We conducted Quantitative Analysis by year and main patentee, and Qualitative Analysis by patent's contents. Results : 313 patents are selected from 2001 to May 2017. The number of patents have been on the rise and reached 44 in 2014. Individuals have registered the most patents, followed by companies, Industry-University Cooperation Foundation, and local autonomous entities. Ginger, Omija and Cactus were used at high frequency among 109 tea containing one medicinal herb. Licorice and Jujube were frequently used among 204 tea containing more than two kinds of medicinal herbs. In classification of patent by efficacy, 'health promotion and function recovery' and 'treatment and prevention of diseases' are most frequently specified. 128 patents are presenting processing methods for medicinal herbs in the order of roasting, fermentation, and fumigation. Among 164 patents presenting tea types, liquid type accounts for more than half and there are 67 leached tea, and 32 powder tea. Conclusion : The analyses results showed that lots of new recipes, efficacy, processing methods and tea types are being studied and registered as patents. In order to help Traditional Korean Tea industry to develop, active patent registration and further study about up-to-date patent trend would be required.

초.중.고등학생과 교사의 음료 소비문화 (The Beverage Consumption Patterns among Elementary.Middle.High School Students and Teachers)

  • This survey was carried out to investigate the beverage consumption pattern. The Questionnaire, which consists of preference, quantity of daily consumption, selection, consumption of traditional beverages and so on, was distributed to elementary, middle and high school students and Home Economics teachers. Compared with teachers, students prefer soft drinks to coffee and tea. The factor considered as important appeared taste when they choose beverages. The reasons why they drink beverage were its being tasty and their heavy thirst. Among traditional beverages, sikhae was consumed most frequently at home. More than 50% of respondents answered that they had experiences of drinking whachae, soochungkwa, citron tea and ginger tea.

항균성 식품을 이용한 식중독균 Bacillus cereus의 억제효과 분석 (Inhibitory Effect of Antimicrobial Food against Bacillus cereus)

  • 본 실험은 2012년부터 2013까지 4,318건의 다양한 식품으로부터 155건의 B. cereus를 분리하고 그 중 140건에 대하여 $25^{\circ}C$$70^{\circ}C$의 추출온도에 따라 마늘, 계피, 생강, 녹차 추출물의 항균력 시험을 실시하였다. 식품유형별 균분리율은 고춧가루(48.65%), 농산물(31.08%), 김치류(25.61%)가 높았으며 식중독원인으로 의심되었던 식품접객업소 조리식품에서는 1.17%가 분리되었다. 항균성 시험에서는 $25^{\circ}C$ 마늘 추출물과 $25^{\circ}C$$70^{\circ}C$ 녹차 추출물에서만 140개의 모든 분리주에서 억제환이 나타났다. 억제환의 크기는 $25^{\circ}C$에서 마늘 > 녹차 > 계피의 순으로 $70^{\circ}C$에서는 녹차 > 마늘 > 계피의 순으로 나타나 온도에 따른 항균성의 차이가 있음을 알 수 있었다. 각 추출물들의 상관관계 분석에서 $25^{\circ}C$에서는 마늘과 녹차, 계피와 녹차가 유의적인 차이를 나타내었고 $70^{\circ}C$에서는 마늘과 녹차만이 유의적인 차이를 나타내었다.
