  • Three dietary treatments were compared over two years to determine the effects of dietary protein levels and feeding patterns on velvet production in red deer (Cervus elaphus). The LL group received a 13% protein diet whereas the HH group received a 19% protein diet. The LH group switched from the low to high protein diet at the time of antler casting. Significant relationships were found between velvet production and the girth and length of main beam (p<0.01), daily growth rate of velvet (p<0.01), body weight at cutting time (p<0.05 in 1998 and p<0.01 in 1999), date of casting (p<0.01), and body weight and velvet production of the previous year (p<0.05 in 1998 and p<0.01 in 1999). Different levels of protein in diets in this study did not show statistically significant different effects in general. The girth of velvet, summed for top, middle and bottom of the main beam, tended to be thickest in HH for two years and thinnest in LL for 1998 and in LH for 1999. The main beam tended to be longest in HH at 46.3cm in 1998 and 45.2cm in 1999 and shortest in LH at 39.9cm in 1998 and 41.5cm in 1999. Velvet fresh weight tended to be highest in HH at 2,600$\pm$1,000g in 1998 and 3,038$\pm$867g in 1999 and lowest in LH at 2,287$\pm$826g in 1998 and 2,739$\pm$1,079g in 1999. Daily growth rate of velvet antler tended to be greatest in HH (43$\pm$16g/day in 1998 and 51$\pm$14g/day in 1999) and least in LH (38$\pm$15g/day in 1998 and 45$\pm$18g/day in 1999).

  • Docosahexaenoic acid(DHA), a $\omega$3 series fatty acid and arachidonic acid(AA). a $\omega$6 series fatty acid were found in relatively high concentrations in the phospholipids(PLs) of cell membranes of nerve tissues, and they can be affected by various factors. The present study examined the effects of dietary $\omega$6 and $\omega$3 fatty acid composition on P/M/S and on $\omega$3/$\omega$6 fatty acid ratios in brain PLs of 2nd generation rats. The expeimental diets consisted of 10% fat(by wt), which were computer- searched mixed oil('M') with P/M/S ratio, 1 : 1.4 : 1 and $\omega$6/$\omega$3 ratio, 6 : 1 and safflower oil('S') poor in $\omega$3 fatty acids. The experimental diets were started 3-4 wks prior to conception. During the lactation period, the feeding mothers were switched 1 wk after birth and provided the pups for 2 wks with milk which had compositions different from that of their natural mother. The same diet as their mothers was provided from weaning to 9 wks of age. The 'M'and 'S' rats were again subdivided into MM, MS, SS, SM rats according to diet which their lactating mothers were fed from the begining of the experiment. The relative percentage of P/M/S fatty acids in brain PLs in all experimental groups converged to a very similar value at 9 wks of age, indicating the existence of a control mechanism for the degree of fatty acids, unsaturation. The $\omega$3/$\omega$6 fatty acid ratios of brain PLs converged to about 1.0 in MM & SM groups and to 0.7 in SS & MS groups, suggesting also the existence of some balance between $\omega$3 and $\omega$6 fatty acids in developing rat brain. The concentrations of $\omega$3 fatty acids, especially DHA, in the SM group were increased and became similar to those in MM group at 9 wks of age. The increase in DHA of brain PLs was counterbalanced b)r a decrease in 22 5$\omega$6. Therefore, the ratios of 22 : 6$\omega$6/22 : 5$\omega$6 were higher in both MM & SM groups than those of SS & MS groups at 9 wak of age. Although dietary $\omega$3 and $\omega$6 fatty acids affected 22 : 6$\omega$S and 22 : 5$\omega$6 contained in rat brain PLs reciprocally, the relative percentage of AA did not appear to be significantly influenced by the diet in all groups at 9 wks of age, suggesting that a mechanism for the maintenance of a certain level of AA in brain PLs exists. In conclusion, the $\omega$3/$\omega$6 fatty acid and 22 : 6$\omega$3/22 : 5$\omega$6 ratios, but not P/M/S ratio, of rat brain PLs were affected by the postnatal dietary changes. Futher studies are required to clarify the mechanism(S) of ensuring a certain level of DHA and of maintaining a similar level of AA in rat brain PLs after. weaning(9 wk) regardless of prenatal and postnatal dietary changes. • The purpose of this study was to develop a web-based internet program for nutritional counseling and diet management of patient with diabetes mellitus. The program consisted of four parts according to their functions and contents. The first part explained the metabolism of glucose and mechanism of insulin and insulin receptor expressed by flash 6.0, and defined the diabetes mellitus. The second part is to assess the general health status such as body weight, obesity index, basal metabolic rate and total energy requirement by the input of age, sex, height, weight and degree of activity. This part also provides tlne patient with menu lists and one day menu suitable to his weight and activity, and offers the information for food selection, snacks, convenience foods, dine-out, behavioral modification, cooking methods, food exchange lists, dietary education using buffet, and information on energy and nutrients of foods and drinks, and top 20 foods classified by nutrients. The third part is designed to investigate dietary history of patient, that is, to find out his inappropriate dietary habit and give him some suggestions for appropriate dietary behavior. This part also offers on-line counseling, follow-up management and frequently asked questions. The fourth part is evaluating their energy and nutrients intake by comparing with recommended dietary allowance for Koreans or standardized data for patient with diabetes mellitus. In this part, it is also analyzing energy and nutrients of food consumed by food group and meals, and evaluating the status of nutrient intake. These results are finally displayed as tabular forms and graphical forms on the computer screen. Therefore it is expected that the web-based internet program developed in this study will play a role in their health promotion as widely using by diabetic patients.

  • This study was conducted to compare and estimate the daily PAHs dietary intake from both home-cooking and dining-out, through approach of model diet used in exposure assessment of food contaminants. Food commodities reflecting in model diet were selected from the KHIDI report and were analysed in cooked or uncooked edible forms using HPLC-Fluorscence Detector. The PAHs dietary intake comparison between home-cooking and dining-out was based on one meal intake suggested in model diet and PAHs dietary intake was estimated by using food consumption rate and body weight of the Korean adult group. The daily PAHs dietary intake was calculated by permutation and combination method with assumption that a person consumed 2 meals from home-cooking menu and 1 meal from dining-out menu. The total PAHs levels in 36 food commodities with 200 samples were ranged from 2.00 ug/kg to 141.28 ug/kg and a food showing the highest PAHs level was the stir-fried anchovy. The $TEQ_{BaP}$ levels of PAHs were calculated using benzo(a)pyrene equivalents individual congener level and corresponding TEF value and the $TEQ_{BaP}$ level were ranged from $0.03\;ugTEQ{BaP}$ to $1.31\;ugTEQ_{BaP}$ and a food showing the highest $TEQ_{BaP}$ level was the hamburger. The PAHs dietary intakes per one meal from home-cooking and dining-out were $2.4\times10^{-3}\;ugTEQ_{BaP}/kg/meal\;and\;4.0\times10^{-3}\;ugTEQ_{BaP}/kg/meal$, respectively. This data showed the PAHs dietary intake from dining-out was about 1.7 times higher than from the home-cooking. The daily PAHs dietary intakes of general Korean adult having two meals from home-cooking and one meal from dining-out per a day were ranged between $8.0\times10^{-3}\~9.7\times10^{-3}\;ugTEQ_{BaP}/gg/day$ and mean value as $8.9\times10^{-3}\~9.7\times10^{-3}\;ugTEQ_{BaP}/gg/day$.

  • The present study is designed to provide basic data for the future health promotion projects to be aimed at improving quality of life for the elderly people in the increasingly aging society of Korea by investigating factors related to the yangseng of old people in rural areas. The results of this study are intended to serve as fundamental for efficient approach toward health promotion projects for the elderly in rural communities. For this purpose, a survey by questionnaires was conducted to rural inhabitants from May to June 2004. The replies were analyzed from the perspective of Oriental medicine for yangseng. 1. The average points of health care appeared to be 3.24. In details by sub-areas, morality was 3.79, followed by 3.74 for activities and rest, 3.73 for sleeping, 3.29 for diet, 3.25 for mind, 2.88 for season, 2.12 for exercise and 1.95 for sexual life in sequence, showing that the yangseng of morality was scored highest while the area of sexual life were rated lowest. 2. As for the extent of health care depending on the characters of the subjects, spoused ones, married couples living alone, while the higher educated and the more leisure is utilized, the more the care is paid for yangseng. 3. Concerning the extent of yangseng depending on the general characters of the subjects, men showed more yangseng in activities and rest. The group aged 70 to 74 acquired the highest points in mind yangseng. The group with spouse featured higher concern for yangseng in the categories of morality, diet, activities and rest, sleeping and sexual life. Married couples who are living with no other family members recorded the highest points in the areas of morality, diet, sleeping and sexual life(P<0.05). 4. In terms of socioeconomic characters, the more one is educated, the more he/she is tended to take yangseng in the exercise, sleeping and sexual life. The group with occupation is inclined to take more yangseng in the activities and rest and sleeping. When people have to work for their keep, they usually showed to have highest yangseng for sleeping. People who enjoy leisure showed higher yangseng in all areas except for morality. In case man has religion, he showed more yangseng in the activities and rest, exercise and sleeping(P<0.05). 5. Those who reply they are confident with health showed higher yangseng. No significant difference was found in all areas except for sexual life in which high care is taken for yangseng, as far as one has no disease. Those who are confident with health had highest yangseng in all areas except for season yangseng(P<0.05). As seen above, extents of yangseng by the old people in the rural area are found to have difference depending on the individual and socioeconomic characters, factors which should be seriously considered in the local health promotion projects and projects for the health of the elderly. Particularly important is to launch health promotion programs and to analyze their effects to promote health care particularly in the areas of sexual life, exercise and season yangseng that turned out to be lowest by taking into account of yangseng in each sub-area.

  • We carried out a validation-calibration study of the food frequency questionnaire (FFQ) that we had previously developed for a community-based cohort of the Korean Genome and Health Study of the Korea National Genome Research Institute. We have collected a total of 254 3-day diet records (DRs) from 400 subjects, 200 each randomly selected from the two study cohorts of Ansung and Ansan. FFQ was administered at the time of cohort recruitment in 2001, and DRs were collected during a two month period from January through February of 2002. The mean age was 52.2 years. Farming for men and housewife for women were the most common occupations. The majority of the subjects had undergone 6∼12 years of education. The general characteristics including demographic and other data were not different from the total cohort subjects. Absolute levels of consumed nutrients including total energy (energy), protein, fat, carbohydrate, calcium, phosphorus, sodium, potassium, iron, retinol, carotene, vitamin A, thiamin, riboflavin, niacin and vitamin C were compared. The average of energy intake was not significantly different between the data collected by the 2 methods. However, consumptions of protein and fat were higher in data of DRs, whereas that of carbohydrate was higher in FFQ data. Significant correlation of each nutrient consumption between the data sets was observed (p < 0.05) except in the case of iron, while the average correlation coefficient between them was 0.22 ranging from 0.33 for energy to 0.11 for iron. The results of cross classification by quantile for exact classification ranged from 25.2% (carotene) to 35.0% (phosphorus), and from 64.6% (vitamin A) to 76.4% (retinol) for adjacent classification. The proportion of completely opposite classification was 8.1% in average. Calibration slope was estimated by regression and calibration parameters ranged from 0.025 for carotene to 0.423 for niacin. We conclude that the FFQ we have developed is an appropriate tool for assessing the nutrient intakes as ranking exposures in epidemiology studies in view that amounts of consumed nutrients obtained by FFQ were similar to those collected by DRs, that correlations between consumed nutrients collected by these methods were significant, and that classification results were relatively fair. The correlation coefficients, however, were lower than expected, which may be mainly due to the survey season. In fact, any short-term dietary survey cannot accurately reflect the overall dietary intakes that change heavily depending on seasons. Further studies including the analysis of chemical indices would be helpful for the studies of causal relationship between the diet and disease.

  • This study was carried out to investigate the replacing fish meal or soybean meal effect of with feather meal or Bacillus sp. inoculated feather meal in broiler diets on the performances and nutrient utilization. One hundred and eighty broilers were randomly allotted to six dietary treatments(1) control, basal diet; (2) BFMl00, Fish meal replacing at 100% level with bacillus sp. inoculated feather meal; (3) BSM20, Soybean meal replacing at 20% level with bacillus sp. inoculated feather meal; (4) BFMl00+BSM20, Fish meal and soybean meal replacing at 100% level and 20% level with bacillus sp. inoculated feather meal, respectively; (5) GFMl00, Fish meal replacing at 100% level with general feather meal; and (6) GSM20, Soybean meal replacing at 20% level with general feather meal) in a 5 week feeding trial. In overall period, body weight gain of control was the highest(1,623g) and those of BFM 100, BFM 100+ BSM 20 and GFM 100 were 1,572g, 1,564g, and 1,078g, respectively. And that of GFM 100(1,078.3g) was the lowest(p<0.05) among treatments. Digestibility of dry matter for BFM 100+BSM 20(81.46%) was higher(p<0.05) than that for other treatments, and that of crude protein was the lowest (p<0.05). Digestibilities of organic matter were significantly(p<0.05) improved when Bacillus sp. inoculated feather meal was replaced at 100% level with fish meal in the basal diet. Methane and hydrogen sulfide gases from the feces were significantly(p<0.05) decreased in chicks fed the control, BFM 100 and GFM 100 diets, when observed after 3 weeks of feeding trials. Feed costs of the control and BFM 100 were 417 and 384 won, respectively but that of BSM 20 was 558 won. Therefore, replacement of fish meal with Bacillus sp. inoculated feather meal in the diets for chicks could be useful for economic production.

  • A series of experiment was carried out to study the effect of commonly used dietary fat or oils on the growth, feed efficiency, nutrient utilizability, nitrogen retention and serum cholesterol of rats and chicks fed various fat or oils at the level of 10% during 12 weeks of experimentation. Fat and oils used in this experiment were also analyzed for the composition of some fatty acids. The main observations made are as follows: 1. All groups received fat or oils gained more body weight than unsupplemented control group except chicks fed fish oil and rapeseed oil although no statistical significance was found between treatments. It was found that body weight gain achieved by the rats fed soybean oil, rapeseed oil, animal fat or corn oil was much greater than other group and that achieved by the chicks fed corn oil and animal fat was greater than other vegetable oil groups, although no statistical significance was found among treatments. 2. Feed intake data indicated that corn oil group of both rats and chicks consumed considerably more feed than other groups. Whereas feed intake of fish oil groups was the lowest among the experimental animals indicating that fish oil might contain unfavorable compound that depresses the palatability. In feed efficiency, soybean oil group of rats and corn oil group of chicks were significantly better than other experimental groups. In general, addition of fat or oils in the diet improved feed effeciency of diet. 3. Nutrient utiIizabiIity and nitrogen retention data showed that fat in the experimental diet containing 10% fat or oils was absorbed better than crude fat in control diet. It was also found that there was no significant difference in nitrogen retention among treatment. 4. Liver fat content of rapeseed oil group was much higher than that of control group and other group. It was also noticed that feeding more polyunsaturated fatty acids resulted in higher content of Iiver fat. 5. Present data indicated that serum cholesterol content of rapeseed oil and sesame oil group of rat was the higher than that of control group. Serum cholesterol content of animal fat group of chicks was higher than other group. It was interesting to note that serum cholesterol content of chicken was higher than that of rats?regardless of the kind of oils received. 6. Analytical data revealed that fatty acid composition of vegetable oil was composed mainly of oleic acid and linoleic acid, whereas animal fat and fish oil were composed of saturated fatty acid such as, myristic and palmitic acid. It should be mentionted that the perilla oil contained a very large amount of linolenic acid (58.4%) comparing with that in order vegetable oils. Little arachidonic acid was detected in vegetable oil, whereas none in animal fat and. fish oil.
