  • Purpose: The purpose of this study was to identify the nutrition-related factors influencing the prevalence of pressure ulcers among patients admitted to an intensive care unit. Methods: Research participants were 112 patients who were admitted to the ICU of a university hospital. Data were collected through questionnaires which included general characteristics, diet-related characteristics, nutritional status, and pressure ulcer status. Multivariate logistic regression was used to identify independent factors association with prevalence of pressure ulcer Results: The prevalence of pressure ulcers was 58 patients (51.8%) at 10th day after ICU admission. In multivariate analysis, prevalence of pressure ulcers at 10th day in ICU was significantly higher in the nutritional risk group (OR=6.43), malnutrition group (OR=88.02), and deceased serum albumin group (OR=28.83). Conclusion: The results of this research indicate that scores on MNA (Mini Nutritional Assessment) and serum albumin were significant predictors of pressure ulcer prevalence in ICU patients. Therefore, regular MNA-SF and albumin checkups are needed to identify risk for pressure ulcer for ICU patients. In the case of decreased MNA-SF scores and serum albumin levels, more intensive pressure ulcer care is needed for ICU patients.

  • Nowadays, the nutritional deficits are rarely seen in Korea. However, an increased availability of the highly palatable energy dense, nutrient-poor foods increases the risks of obesity and deficits of vitamins and minerals in the general population. Also, optimum intake of vitamins and minerals, which varies with age and genetic back ground, might not suffice the poor, young, obese, and elderly people. Young girls and individuals participating in weight reductions and aesthetic components are prone to micronutrient deficiencies because they restrict food intake and specific micronutrient rich foods. An inadequate intake of vitamins or minerals is associated with reduced physical performance and exercise capacity, increased obesity, decreased cognitive function, increased DNA damages such as single- and double-stranded breaks or oxidative DNA lesions, and accelerated aging process and increased neuronal damages with mitochondrial oxidative decay. Most of these deleterious effects of the deficit could be prevented by a one tablet of multivitamins with a good balanced diet. High dose B vitamins are frequently administered to overcome the metabolic inadequacy to the people with the less functional enzymes with increased Km values for their coenzymes due to the single gene mutation or due to the single nucleotide polymorphisms. And some certain antioxidant vitamins are also used in large quantities to overcome the oxidative stress and to repair the damages. In this review, new nutritional concepts of some vitamins and minerals, which are widely used and useful for the children, will be discussed.

  • In this article, the concept of body fluid is explained in three aspects: the word meaning of body fluid, the origins of the definitions of the body fluid concept and the connotation and extension of body fluid. Investigating data about the time Hwangjenaegyeong(黃帝內經) was written, the author discovers that the meaning of "Aek(液)" is clear, but there are still questions about the meaning of "Jin(津)". The concept of body fluid derived from observation of life phenomenon and ancient philosophy on the "water". The concept of body fluid should be expressed as that body fluid is a general term for all normal liquids in the body. Within the meridians, as the composition of blood components; outside the meridians, constituting the intrinsic body fluids of various organs and tissues. This is the main part of body fluid, coming from diet, constituting the human body and maintaining human life activities, playing the roles of moistening and nourishing various of organs and tissues of the body. In addition, Interstitial fluid, all kinds of normal liquid secretion and metabolic products, such as sweat, tears, nasal discharge, saliva, slobber, gastric juice, intestinal fluid, urine, joint fluid, latex and so on, both belong to body fluid.

  • This study was performed to investigate the factors related to vitamin & mineral supplement use by the adolescents. Nine hundred and seventy-two adolescent boys and girls attending middle or high schools were chosen from various cities and rural communities in Korea. In this study, the factors affecting vitamin & mineral supplement use were analyzed from a self-administered questionnaire. It was found that vitamin & mineral supplements were taken by 31.3% of subjects. High school students(p<.01), female girl students(p<.001), and rural-dwellers(p<.001) took vitamin & mineral supplements more frequently than their complementing groups. The socioeconomic status of the family (p<.01), and supplement consumption by parents and siblings respectively affected the supplement use by the subjects(p<.001). Vitamin·mineral supplements were consumed more often in subjects who perceived their health as poor(p<.001), skipped breakfast(p<.05), and received nutritional information from books or magazines(p<.05). However, food habits and nutritional knowledge score of subjects did not affect vitamin & mineral supplement use. These findings suggest that adolescents take vitamin & mineral supplements commonly, and they tend to use supplements without prescription. Vitamin·mineral supplement consumption seems to be affected by general characteristics, health related variables, and meal management attitudes of subjects. Therefore, nutritional understanding and education are required in regard to the used of vitamin & mineral supplements, and the relationship between balanced diet and good health for the adolescents.

  • The objective of this experiment was to compare the effect of pH-regulated alkaline hydrogen peroxide (AHP) treatment of rice straw with those of sodium hydroxide (NaOH) and anhydrous ammonia ($NH_3$) treatments on in sacco digestivility. Three non-lactating ruminally cannulated Holstein cows were fed a diet containing 90% forage and 10% concentrate on a dry matter (DM) basis. The AHP treatment significantly (p<0.05) reduced acid detergent lignin content of the straw, resulting in significant (p<0.05) increase of neutral detergent fiber (NDF), acid detergent fiber (ADF) and cellulose concentrations. Disappearance rates of DM and NDF of the straw significantly (p<0.05) increased at the incubation time of 24 h. On the other hand, those of ADF and cellulose were significantly (p<0.05) higher at the incubation time of 12 h than those of the others. The effective degradability of DM(EDDM), NDF(EDNDF), ADF(EDADF) and cellulose (EDCE) were determined using in sacco nylon bag technique on the basis of 0.05/h solid outflow rate. The greater differences (p<0.05) of EDDM, EDNDF, EDADF and EDCE were found between AHP treated straw and the others. In general, AHP treatment of the straw recorded higher digestion coefficients than untreated straw as well as NaOH and $NH_3$ treated straws. The results of this study demonstrate that AHP treatment can be used as a effective method for improving the nutritive value of rice straw for ruminants.

  • The use of vitamin and mineral supplements among 330 preschool children was examined for relationships with general characteristics and food habits. Mean intake of vitamin and minerals obtained from supplement use was calrulated. The percrntage of preshool children receiving vitamin-mineral supplements was 34.2% and a higher percentage of use was shown in boys(p<0.05). Among preschool children, supplement use by mother and children showed some association(p<0.05). Socio-economi factors had little influence on vitamin-mineral supplement usage. There D·ere no significant differences in. weight and height between the users and non-users. The parent's main reasons f3r providing their preschoolers with vitamin-mineral supplements were that they were unsure that the preschoolers were receving sufficient nutrients from their diet, and that they were not healthy. The reasons for not feeding their children vitamin-mineral supplements were that considered the preschoolers were eating well and were healthy, therefore vitamin-mineral supplements were not necessary. The mean vitamin intake obtained from the supplements was about 2-7 times the RDA, but the level of minerals(Ca, Fe, Zn) furnished by supplement use was 1/2 of the RDA. • Expeller pressed and solvent extracted palm kernel cake (PKC) were force-fed to male and female Muscovy ducks at 7 weeks of age. The nutrient digestibility, apparent metabolizable energy (AME), true metabolizable energy (TME) and true available amino acid (TAAA) digestibilities were determined. There was no significant (p>0.05) effect of the type of PKC used on crude protein (CP), ether extract (EE), metabolizable energy (ME) and amino acid (AA) digestibilities. However, digestibilities of dry matter (DM) and neutral detergent fibre (NDF) was found to be higher in solvent extracted compared to expeller pressed PKC. The average digestibility of DM, CP, NDF and EE were 43, 58, 39 and 89%, espectively. It was found that the ducks utilized about 47% of the gross energy of PKC. The respective average AMEn and TMEn values of PKC for Muscovy ducks was 1,743 and 1,874 kcal/kg. The overall TAAA of PKC for Muscovy ducks was 65%. The data on the TMEn and digestible AA for PKC obtained from this study provide new information with regard to diet formulation for Muscovy ducks.

  • Dietary guidelines are a distillation of dietary advice from health professionals to the general public. They are based upon current scientific knowledge about the relationships between diet and disease, nutrients available in the food supply of a country, and the profile of morbidity and mortality in that country. With two different sets of dietary guidelines used for more than an decade in Korea. the necessity of revising dietary guidelines has been raised continuously from academia and research. Funded by a grant from the Health Technology Planing and Evaluation Board. Dietary guidelines for each age group were drafted as a research project and the one for the Korean elderly is as follows: Dietary Guidelines for the korean elderly(draft) - Have a variety of easily digestible foods on time; at least 3 meals a day and some snakes. - Be physically active to maintain appetite and/or ideal body weight. ; maintain a balance between activity and what you eat. -Increase consumption of bean-and dairy-and dairy-products. - Consume enough amounts of fresh dark-green and yellow vegetables and fresh fruits. - Consume adequate amounts of assorted kind of animal foods including fish, meat and poultry. - If you drink alcoholic beverages, limit your intake and, drink enough water and other averages; alcohol may interact with your medication and affect your appetite. Aforementioned draft and related contents are expected to be utilized as a neat base in formulating(or revising) dietary guidelines for Korean by the Government in near future.

  • A survey of ecological aspects of food, focused on breakfast of 1,526 adults with various professional occupations such as professors, teachers, employees of government, bank and company, and 1,928 students of various levels in the urban areas, was conducted from March, 1984 to February, 1985. The results were shown as follows: Significancy was found between appetite at breakfast, and bed time, status of sleep, eating outside the home on the previous evening, meal or snack of the previous late evening, and exercise before breakfast. The study showed that only 15.2% of the subjects had a good appetite at breakfast; 28.1% had a poor appetite; others had indifferences. About 45% of the subjects had their evening meal between 7pm. and 8pm.; bank employees had breakfast further later than 9pm.. Surprisingly, 31.3% of the subjects had snacks later than 10pm..Nearly one-fourth of subjects, in general, and 34.4% of the subjects in Seoul, had breakfast by themselves due to different schedules of family members. Breakfast patterns of the subjects during a period of 7 days were distributed as follows: 5.5 times for rice-oriented Korean meal; 0.6 times for bread type meal; 0.9 times for the omission of meal. The study described that the subjects who had bread type breakfast consumed only 3.7 items of food, whereas the subjects who had Korean breakfast consumed 7.1 items, on the average. Better breakfast eating habits for an adequate daily diet should be emphasized through nutrition education for adolescents and at the worksite.
