The composition of each diet was indicated in Table 3. The allowance' of each nutrient per head per day in each diet were as follows. a) In the rice diet; protein:139.5 g (animal source:64.6 g, vegetable source:74.9 g), fat:25.3 g (animal source:11.3 g, vegetable source:14.0 g), carbohydrate: 644.0 g, calcium:982.3 mg, phosphorus: 2369.2mg, thiamine:2.1 mg, riboflavin: 1.6 mg, and 3211 Cal. b) In the general mixed diet; protein: 97.4g (animal source: 10.5 g, vegetable source: 86.9 g), fat:40.3 g (animal source:7.1 g, vegetable source:33.2 g), carbohydrate:620.7 g, calcium:887.1m g, phosphorus:2200.8m g, thiamine: 1.8m g, riboflavin:1.9m g, and 3158 Cal. c) In the high animal protein diet; protein: 135.6 g (animal source:68.8 g, vegetable source:66.8 g), fat:32.5g (animal source:17.9 g, vegetable source:14.6 g), carbohydrate:930.9 g, calcium: 626.0 mg, phosphorus: 1998.9 mg, thiamine: 1.5 mg, riboflavin: 1.5 mg, and 3194 Cal. The absorption rates of protein, fat, carbohydrate, calcium, phospherus, thiamine and riboflavin in each diet were observed. The results obtained were summarized as follows: 1. The absorption rates of protein and fat in the rice diet were 88.t % and 71.3.%. 2. The absorption rates of protein and fat in the general mixed diet were 83.4% and 86.4%. 3. The absorption rates of protein and fat in the high animal protein diet were 86.8% and 82.4%. 4. The nitrogen balances in the rice, the general mixed and the high animal protein diet groups were +5.7g, +2.3g and +4.0g respectively. 5. The absorption rates of carbohydrate in each diet were all above 95 % and so seemed to be almost completely absorbed except the cellulose in the diets. 6. The calory utilization rates in each diet were all above 93 %. 7. The minimum absorption rates of protein, fat and calory were 83.8%, 63.3%, and 89.7% in the rice diet, 80.0%, 80.9% and 85.9%, in the general mixed diet and 83.6%, 75.7% and. 89.3 % in the high animal protein diet respectively. Therefore, it is assumed that these data might be significant in practical use. 8. The protein absorption rates of the rice diet (88.1 %) was better than that of the general mixed diet (83.4 %). 9. The fat absorption rates of the general mixed diet and the high animal protein diet (86.4% and 82.4%) were signficantly better than that of the rice diet (71.3%). 10. The calcium absorption rates of each diet, rice diet, the general mixed diet and the high animal protein diet were 41.6%, 36.0%, and 27.7%, respectively. 11. The phosphorus absorption rates of each diet were 51.4%, 56.0% and 52.3%, respectively.12. The phosphorus absorption rate seemed better than that of calcium. 13. The thiamine absorption rates of each diet seemed 27.0 %, 42.9 % and 29.5 %, respectively. 14. The riboflavin absorption rates of each diet seemed above 30.6%, 27.1%, and 39.3% respectively. 15. The excretion amounts of thiamine or riboflavin were much more than the amounts ingested of the both vitamins. Therefore, the certain amount of both vitamins seemed to synthesize in the intestine.

  • Using the diet rice bowl, this study examined whether visual cues related to portion size can influence intake volume without altering satiation. 24 subjects ate lunch and subsequent dinner meal in the lab once a week for 2 weeks. Each week at noon, they were served one of two different sizes of a rice (150 g of rice by the diet rice bowl and 210 g of rice by the general rice bowl) but recognized the same volume of which they could eat as much as they wanted of side dishes. Subjects returned to the lab five hours later for a standard dinner, which was consumed ad libitum. Results showed that the subjects who were eating from the diet rice bowl ate less rice (222.4 Kcal vs 306.5 Kcal, p < 0.001) and total energy intake (412.5 Kcal vs 499.2 Kcal, p < 0.001) than those eating from a general rice bowl at lunch. However, despite consuming 21% less energy intake at lunch, the rates of satiety were not significantly different after eating from the diet rice bowl and from the general diet bowl. And there were no significant difference in rice intake and energy intake at dinner between the diet rice bowl and the general rice bowl. These results suggest decreasing the portion size by the diet rice bowl with biased visual cues leads to decreased rice intake and energy intake without altering the satiation. This is, the decreased amount of rice in a diet rice bowl may implicitly suggest what might be construed as an appropriate amount to consume and eventually it suggests smaller consumption norms.

  • Background: Tumors are largely unable to metabolize ketone bodies for energy due to various deficiencies in one or both of the key mitochondrial enzymes, which may provide a rationale for therapeutic strategies that inhibit tumor growth by administration of a ketogenic diet with average protein but low in carbohydrates and high in fat. Materials and Methods: Thirty-six male BALB/C nude mice were injected subcutaneously with tumor cells of the colon cancer cell line HCT116. The animals were then randomly split into three feeding groups and fed either a ketogenic diet rich in omega-3 fatty acids and MCT (MKD group; n=12) or lard only (LKD group; n=12) or a standard diet (SD group; n=12) ad libitum. Experiments were ended upon attainment of the target tumor volume of $600mm^3$ to $700mm^3$. The three diets were compared for tumor growth and survival time (interval between tumor cell injection and attainment of target tumor volume). Results: The tumor growth in the MKD and LKD groups was significantly delayed compared to that in the SD group. Conclusions: Application of an unrestricted ketogenic diet delayed tumor growth in a mouse xenograft model. Further studies are needed to address the mechanism of this diet intervention and the impact on other tumor-relevant parameters such as invasion and metastasis.

  • The present study was designed to investigate the effects of the level of calcium intake on it's apparent absorption rate in college women. Six college girls aged 19 to 20 were fed general dormitary meals containing approximately500mg of calcium for one week and thereafter, the experimental diets containing about 800mg of calcium were given for one week. Average values for calcium intake, fecal excretion of calcium, and apparent absorption rateof calcium in both periods were determined and these values for two periods were compared by using t-test. 1) Average intakes of calcium, protein, and fat of the subjects during the period of experimental diet were significantly higher than those of general diet period. 2) Higher consumption of three food groups; meat, poultry, and fishes, fruits and vegetables, and fats and oils were noted during experimental period. However, there was no significant difference in the consumption of cereals and milk groups during these two periods. 3) The apparent absorption rate of calcium during the experimental period was higher (64%) than the one for general diet period (56%). It was noteworthy that average calcium intakes was higher during the experimental diet period (785mg) than 536mg for general diet period while the fecal excretions of calcium in both periods were not significantly different.

  • Objectives : It was conducted to experimentally analyze the effects of acupuncture treatment at CV12, ST25, and ST36 on weight, FBCS, fat metabolism, microbiome, and metabolome changes in the general diet rat and the high-fat diet rat. Methods : It was classified into four groups: general diet & non-treatment group (ND), general diet & acupuncture treatment group (ND+AT), high-fat diet & non-treatment group (HFD), and high-fat diet & acupuncture treatment group (HFD-AT). After acupuncture treatment was performed on CV12, ST25, and ST36, changes in body weight, FBCS, fat metabolism, microbiome, and metabolome were analyzed. Results : Compared to the ND group, acupuncture treatment performed on CV12, ST25, and ST36 in the ND+AT group had no significant effect. Compared to the HFD group, CV12, ST25, and ST36 acupuncture in the HFD+AT group reduced weight, fat weight, inflammatory cytokine IL-6 expression, and lipid droplet accumulation in liver tissue. Acupuncture can promote fat metabolism and relieve inflammatory conditions. Differences in diversity between ND and HFD groups were clear in changes in microbiome, fecal metabolites, and serum metabolites. As a result of some microbiome and metabolites involved in fat decomposition, intestinal lipid absorption, and blood lipid concentration control, such as Intestinimonas, Ruminococcus 1, pyroglutamic acid, tryptophan, and inositol, it was observed that the acupuncture treatment effect was evident in the disease-induced imbalance. Conclusions : Acupuncture treatment performed on CV12, ST25, ST36 clearly observed various regulatory actions on obesity induced by high-fat diet, confirming that the action of acupuncture treatment mainly plays a role in controlling an unbalanced state.

  • In this study, 419 students of the 6th grade in three schools in Masan were surveyed. The students having less than 24 items among 48 protein-rich foods easily obtained were considered as unbalanced-diet students. Their general circumstances, character, status of growth and development and school performance were compared with those of balanced-diet students. The results were following. 1. The actual condition of unbalanced diets of protein-rich food 1) Female showed high degree of unbalanced diet in meat food while male in shell-food. Both sexes liked processed food stuffs such as ham, sausage and boiled fish paste but not salted. Both of them disliked beans. 2) The reason for unbalanced diet, they answered, was bad taste and smell of some foods. The reason, their mothers amswered, was they fed their children some particualr foods. 3) The attitudes of the mothers against unbalanced diets were coaxing their children to eat some foods for they are good for health or forcing their children to eat some foods. The most effective method on the children was coaxing and the next was changing cuisines. 2. The general circumstances of the students. 1) 168 students (male: 85, female:83) among 419 students who were studied were unbalanced-diet students and the extent of unbalanced diet was similar in both sexes. 2) The rate of unbalanced-diet students was higher among the students who were the first child in the family, had a small family or were fed milk or mixed milk. 3) The school career of unbalanced-diet student's mothers was higher and the rate of unbalanced-diet students was higher among the students who have rich families or career mothers. 3. The status of physical condition 1) The height and weight of unbalanced-diet students were lower than those of the standard of Korean children. The status of balanced-diet students were better than that of the standard. 4. Degree of school performance 1) The school records of unbalanced-diet students was 81.4 points in average, which was 1.3 points lower than the average of city students and that of balanced-diet students was 2.8 points higher than average. There was a significant gap between the two groups. 5. The relation between unbalanced diet and character 1) Compared balanced-diet students, unbalanced-diet students showed high degree of nervousness and coldheartedness and low degree of self-reliance and self-possession. There was a significant gap between the two groups and it showed that unbalanced diets affected the formation of character.

  • The objective of this study was to compare the effects of a combined treatment consisting of an isoflavone diet and aerobic exercise on the Caspase 9 levels, and Bcl-2 levels during menopause, using 30 S.D ovariectomized rats as a model, over 12 weeks. The ovariectomized rats were divided into 4 experiment groups, with 8 rats in each group, as follows: (1) General diet group (GD, n=8), (2) Isoflavone diet group (ID, n=8), (3) General diet + Exercise group (GEX, n=8), (4) Isoflavone diet + Exercise group (IEX, n=8). The findings of this study were as follows: 1. Combined treatment consisting of an isoflavone diet and regular exercise resulted in a significant reduction in the expression of caspase-9 proteins (p<0.05), and a significant increase in the expression of Bcl-2 proteins (P<0.001). In addition, apoptotic cells were more decreased (p<0.001) in GEX and IEX group. This also suggests that cardiovascular disease in postmenopausal women might be prevented or inhibited to exert positive apoptotic inhibitory effects by increasing Bcl-2 protein expression within aortic tissues during vascular movement and decrease caspase-9 protein.

  • BACKGROUND/OBJECTIVES: Given the increasing proportion of the Korean population that is aged 65 years and older, the present study analyzed the relationship between diet quality and sarcopenia in elderly persons by using data from the 2008-2011 Korea National Health and Nutrition Examination Survey (KNHANES). SUBJECTS/METHODS: Data for 3,373 persons aged 65 years and over (men: 1,455, 43.1%) were selected from the 2008-2011 KNHANES. Sarcopenia assessments are based on a formula that divides a subject's appendicular skeletal muscle mass (ASM) by their weight (wt) and multiplies that result by 100 ([ASM/wt] × 100). Sarcopenia is present if the subject's result was less than one standard deviation (SD) below the sex-specific mean for a young reference group. For evaluation of diet quality, data obtained via the 24-hour recall method were used to calculate the Diet Quality Index for Koreans (DQI-K). A general linear model was applied in order to analyze general information and nutritional intake according to sarcopenia status. For analysis of the relationship between diet quality and sarcopenia, a binominal logistic regression analysis was undertaken. RESULTS: The sarcopenia prevalence rate among the study subjects aged 65 years and over was 37.6%. The DQI-K of those without sarcopenia was 3.33 ± 0.04 points, while that of those with sarcopenia was 3.45 ± 0.04 points (P < 0.05). The relationship between diet quality and sarcopenia revealed that subjects aged 75 and older had a poor diet quality, and their odds ratio (OR) of sarcopenia presence was significantly higher (OR: 1.807, 95% confidence interval: 1.003-3.254, P < 0.05). CONCLUSIONS: This study revealed that poor diet quality was related to sarcopenia presence in Koreans aged 75 and older. In order to improve the diet quality of the elderly (aged 75 and older), it is necessary to develop dietary improvement guidelines.
