Effects of Carrageenan on the Gelatinization of Salt-Based Surimi Gels

  • The influence of carrageenan addition on the gelatinization of salt-based surimi gels was investigated by measuring compressive properties and Hunter color scale values. Hydrocolloid kappa (${\kappa}$)-carrageenan at 0%, 0.2%, and 1.0% and NaCl (2% w/w), KCl (1.5% w/w), and a mixture of NaCl (2% w/w) and KCl (1.5% w/w), were added to Alaska pollock surimi. Gel compressive properties were assessed by measuring the breaking force and gel strength. The gelling property of ${\kappa}$-carrageenan-induced surimi gel was significantly increased by the incorporation of KCl rather than NaCl. The addition of ${\kappa}$-carrageenan increased the breaking force and gel strength of surimi gels. Gels with 1% ${\kappa}$-carrageenan and KCl had the highest breaking force and gel strength. The addition of ${\kappa}$-carrageenan caused an increase in the whiteness values of the surimi gels.

Preparation and Texture Characterization of Surimi Gel Using a Unmarketable Rearing Olive Flounder (저상품성 양식 넙치를 이용한 연제품 제조 및 텍스튜어 특성)

  • The properties of surimi gel from Olive flounder Paralichthys olivaceus were evaluated with addition of various food additives and by heating under different conditions. The optimum heating conditions for get good textured surimi gel from Olive flounder was 40 minutes at $85^{\circ}C$. Optimum texture characteristics such as hardness, cohesiveness, chewiness, gumminess and gel strength of olive flounder fish paste can be acquired by washing the paste 2 times and by adding sodium chloride (2.5%), sodium polyphosphate (0.3%) and starch (4%), respectively. Furthermore, we compared gel texture characteristics and strength of manufactured Olive flounder fish surimi with commercial Alaska pollack to determine their commercial applicability. Texture characteristics and gel strength of Olive flounder surimi were higher than those of the commercial Alaska pollack surimi. In addition, both lightness and whiteness were higher in surimi gel from Olive flounder than from the commercial Alaska pollack.

The Prevention Effect of Seawater Penetration of Gel Coat Applied in Repair of FRP Fishing Vessel (FRP 어선 보수에 적용되는 겔코트의 해수 침투 방지 효과)

  • Ships may collide with reefs or other objects during operation, when arriving or departing ports. The hull plate may be damaged due to the contact with other ships. The total number of domestic powered fishing vessels has decreased, but that of FRP fishing vessels has increased by 0.7% and the ratio of FRP fishing vessels to the total fishing vessels increased to 96%. Recently, fishing vessels has been used as fishing boats for income of non-fishermen as well as fishermen. Therefore, safety management for repair and maintenance is necessary. The penetration of moisture and moisture in the composite material such as FRP may deteriorate the mechanical properties and the salt (NaCl) component of the damaged portion may cause a relatively high deterioration in material strength. The gel coat painting is the final stage of repairs ans maintenance of FRP fishing vessels. The thickness criteria in the domestic and foreign gel coat is 0.3~0.762 mm. The joint specimens, which was immersed in seawater for 120 days, were compared with those without seawater immersion. As a result, the tensile strength was 83 ~ 121.8% and the flexural strength was 83 ~ 113% compared with the specimens without seawater immersion. According to the previous study the tensile strength decreased by more than 29% and the flexural strength decreased by more than 50% when the composite material was immersed in seawater for 1,083 hours without coating. As a result, it was found that the gel coat with 0.5 mm thickness is very effective in preventing the strength decrease of the composite material.

COMPARISON ON TENSILE BOND STRENGTH OF PERMANENT SOFT DENTURE LINERS BONDED TO THE DENTURE BASE RESIN (수종의 영구 탄성 이장재와 의치상용 레진간의 인장 결합 강도)

  • For many years permanent soft denture liners has been widely used in dental practice directly or indirectly because of its function in absorbing and distributing the impact force. However, it reveals problems such as lack of permanency and decreased bond strength in long term use. The purpose of this study is to measure the bond strength and failure between denture base resin and several permanent liners. Lucitone 199 was used as denture base resin with soft acrylic liners (Triad, Tokuso Rebase) and silicone elastomers (Tokuyama, Ufi Gel C) bonded to measure the tensile strength before and after thermocycling. The thermocycling was done in 2000 cycles at $5^{\circ}C,\;26^{\circ}C\;and\;55^{\circ}C$ and the measured tensile strength values before and after thermocycling were compared. The mode of failure was investigated in the separated specimens. The results are as follows. 1. As to tensile strength, the strongest material is Tokuso Rebase followed by Triad, Tokuyama, Ufi Gel C in before thermocycling and the order of Triad, Tokuso Rebase, Tokuyama, Ufi Gel C in after thermocycling state. There was significant difference between the values of Triad, Tokuso Rebase and Tokuyama, Ufi Gel C(p<0.05). 2. As to degree of displacement, Ufi Gel C showed most displacement with or without thermo-cycling treatment and also the difference was significant with the other materials(p<0.05). 3. As to comparisons before and after thermocycling, Tokuso Rebase and Tokuyama showed significant difference in bond strength, whereas Triad and Tokuso Rebase showed significant difference in the degree of displacement(p<0.05). 4. In debonded specimens, Triad and Ufi Gel C showed adhesion failure and Tokuyama showed cohesion failure. Both failures were observed in Tokuso Rebase with adhesion failure up to 70%. The results of this study showed that degree of bond strength between permanent soft denture liner and denture base resin were variable. There was a significant difference between soft acrylics and silicone elastomers with regard to bond strength. Further research in improving bond strength of widely used silicone elastomers and in developing the method of measuring bond strength between denture base resin and the lining materials is needed.

Property and Bio-adhesiveness in Hydrogel Material with Content of Ketorolac and Gardeniae Fructus Hydrolysis Products (케토롤락과 치자엑스 가수분해물이 함유된 하이드로겔제의 물성 및 생체 부착성)

  • This study manufactured hydrogel, which was contained NSAIDs(non-steroidal anti-inflammatory drugs) Ketorolac tromethamine and hydrolyzed products of gardeniae fructus extract, and experimented viscosity, surface tension, tensile strength and bio-adhesiveness by using hairless mouse. Thus, it was performed in expectation for being probably able to develop as effective auxiliary agent of periodontal disease after non-surgical or surgical periodontal treatment. As a result, the following conclusions were obtained. 1. Out of KGE and KGH gel materials, the content of ketorolac tromethamine was 1.02~0.97%. The content of geniposide was 0.34% in KGE gel A and C. However, it got lower to 0.11% in KGH gel B and D. The content of genipin wasn't shown in KGE gel A and C, but was shown with 0.13% in KGH gel B and D. 2. As for viscosity according to temperature in gel material, the gel, which used independently Carbopol 940 as gel inoculant, maintained the higher viscosity than the gel, which added Poloxamer 407. The surface tension in each material showed 34.77~40.58 dyne/cm at 37. As for tensile strength in material, KGH gel B was shown the higher tensile strength in about 3.5 times compared to the control group. 3. As for bio-adhesiveness, the back-skin upper part(epidermis) and abdomen skin were shown to be 50.62 N in KGH gel B, thereby having indicated higher value in about 5 times compared to control group. The back-skin lower part(dermis) and abdomen skin were shown to be 35.93 N in KGH gel B, thereby having indicated higher value in about 3.5 times compared to control group.

Characteristic evaluation of waxy oil behavior using vane rheometer (베인 레오미터를 이용한 왁스오일의 특성 연구)

  • Apart from hydrates, asphaltenes, and inorganic minerals, paraffinic waxes are also very important in flow assurance area. Evaluation of wax gel behavior has been important as off-shore oil recovery becomes more popular in oil production. Restart after either planned or emergency shutdown requires pump operation in high pressure since a waxy oil forms troublesome gel. In this paper, vane method is introduced to determine wax gel strength by determining yield stress. Prediction of gel strength are discussed in qualitative and quantitative manners.

Characteristics Strength of Silicasol-cement Grout Material for Ground Reinforcement (지반보강용 실리카졸 약액의 강도특성에 대한 연구)

  • This study was made on the fact that the compressive strength characteristic of the recently developed alkali silica-sol chemical grout material was examined, whose grout material used for this study was designed to understand its strength property through the uniaxial compressive strength test(homo-gel, sand-gel), permeability test, deflection strength test, etc. In order to compare with the engineering characteristics regarding alkali silica-sol grout material and sodium silicate grout material. The uniaxial compressive strength of silica-sol grout material was identified to be increased more than 3~5 times than sodium silicate grout material at the early stage(within 72 hours). When comparing with the uniaxial compressive strengths of Sand-gel and Homo-gel at the material age of 28 days in case of silica-sol grouting material the strength of Sand-gel was measured to be about 1.3 times higher than Homo-gel. In case of silica-sol, it is assumed to have the property to exert high strength when it is actually grouted into the ground. As a result of permeability test it is judged that it is possible to apply the silica-sol to the site in the place requiring the water cut-off as the silica-sol. As a result of testing the strength at the material age of 28 days of grouting-use silica-sol showed more than 3 times' difference than the sodium silicate grouting material.

Comparison Study of Physical Properties between Two Silicone Gel Sheets (새로 개발한 실리콘젤시트의 물성에 대한 연구)

  • Purpose: Silicone gel sheet(SGS) is used for preventing and treating keloid or hypertrophic scars. Because the product is weak in tear strength and adherence, it requires several replacements, which requires high cost. As a solution for this problem, we developed a new silicone gel sheet, named as Scar Clinic, and confirmed its physical properties. Methods: Tensile strength, elongation rate, adhesiveness, and water vapor transmission rate were experimentally compared between the most commonly used SGS product and the Scar Clinic. Results: The newly developed SGS showed better results compared to the existed SGS in regards to tensile strength, elongation rate, adhesiveness, and water vapor transmission rate. Conclusion: The Scar Clinic showed higher durability and flexibility. It will be a useful product for treating scars clinically.

Effect of Heating Temperature, Time and Protein Concentration on the Gel Properties and Heat Stability of a Mixed System of Pork Myofibrillar and Plasma Proteins (가열온도, 가열시간, 단백질농도가 혈장단백질과 근원섬유단백질 혼합물의 gel 특성 및 열안정성에 미치는 영향)

  • This study was carried out to investigate the effects of heating temperature, heating time and protein concentration on the gel properties and heat stability of a mixed system of pork plasma and myofibrillar to increase the utility of porcine blood as protein resources of the food industry, especially meat processing industry. The solubility of plasma protein and mixture (plasma + myofibrillar protein) decreased significantly at $70^{\circ}C\;to\;90^{\circ}C$ when heating temperature rised, whereas myofibrillar protein decreased slightly at $40^{\circ}C\;to\;60^{\circ}C$, and the gel strength and the turbidity of those increased significantly at these heating temperatures. The solubility of plasma protein and mixture decreased when the heating time increased at $75^{\circ}C$, whereas the gel strength and turbidity increased, and the solubility, the gel strength and the turbidity of myofibrillar protein showed no changes.

  • This experiment was carried out to improve the quality of high absorbent polymer which has excellent absorptivity and water retention compared to pulp and absorption sheet, through absorption characteristics-absorptive power, water retention, absorption rate, gel strength, pH, particle size, and moisture content. - of six polymers, namely, anionic polyacrylamide, cationic polyacrylamide, polyacrylic, acid polyvinyle alcohol 500, and 1500, and a-cellulose. and to examine the possibility of substitution of amide groups for carboxyl group and/or hydroxyl group which were commercial high absorbent polymer by comparing the absorption characteristics of the polymers. Polyacrylamide has high absorptive power and water retention, but has low gel strength and poor absorption rate. The rest of polymers were similiar to ${\alpha}$-cellulose in every respect. Thus, polyacrylamides could be replaced with polyacrylic acid and polyvinyl alcohol which are presently a high absorbent polymers. In comparing the absorption characteristics and the absorptive power of the polymers-anionic polyacrylamide, cationic polyacrylamide, polyacrylic acid, polyvinyle alcohol. a-cellulose-the absorptive power was in inverse proportion to the gel strength and absorption rates, affected by the particle size and pH change.
