올리고당을 사용한 스폰지 케이크의 물리적, 관능적 및 텍스쳐 특성 (Effects of Oligosaccharides on Physical, Sensory and Textural Characteristics of Sponge Cake)

  • Effects of oligosaccharides substituted for sucrose on the sponge cake quality were investigated. Fructooligosaccharide and isomaltooligosaccharide were used as oligosaccharides. Oligosaccharides decreased batter specific gravity, and increased cake specific volume and expansion ratio, showing that oligosaccharides had higher foaming ability and foam stability than sucrose. Oligosaccharides darkened the crust and crumb color of cakes. Addition of oligosaccharides made cakes darker, softer, more moist and more acceptable as perceived by panels. The acceptability was significantly correlated with crust and crumb color, softness, moistness and flavor(p<0.01). The textural characteristics including hardness, chewiness and gumminess of cakes were decreased by replacing sucrose with oligosaccharides. The hardness, gumminess and chewiness among sensory characteristics were negatively correlated with acceptability(p<0.05). Therefore, oligosaccharides should be a good alternative for sucrose in cake making because the sponge cake quality was greatly improved by partial repacement of sucrose with oligosaccharides.

Effects of Dietary Fructooligosaccharide on Digestive Enzyme Activities, Intestinal Microflora and Morphology of Growing Pigs

  • One hundred and twenty-eight growing barrows (Jiaxing Black${\times}$Duroc${\times}$Landrace) at an average BW of 20.8 kg were allocated to four treatments for 42 days, each of which was replicated four times with eight pigs per replicate and used to investigate the effects of fructooligosaccharide (FOS) on digestive enzyme activities, intestinal microflora and morphology of growing pigs. The pigs received the same basal corn-soybean meal diet and FOS was added to the basal diet at 0, 2, 4, 6 g/kg diet at the expense of corn, respectively. As compared to control, supplementation with 4 and 6 g/kg FOS significantly improved average daily gain and feed efficiency. Addition of FOS enhanced the growth of Bifidobacterium and Lactobacillus, but inhibited Clostridium and Escherichia coli in the small intestinal and proximal colonic contents. Supplementation with 4 and 6 g/kg FOS significantly improved the activities of total protease, trypsin and amylase in the small intestinal contents. However, FOS had no significant effect on the activity of lipase in the small intestinal contents as well as the digestive enzymes in pancreas. Morphological measurement of jejunal mucosa did show response to consumption of FOS. Villus height and the villus height to crypt depth ratio at the jejunal mucosa were significantly higher with 4 and 6 g/kg FOS supplementation as compared to control.

Fructooligosaccharides Alter Profiles of Fecal Short-Chain Fatty Acids and Bile Acids in Rats

  • We investigated the effects of fructooligosaccharides and chicory inulin on the profiles of cecal and fecal short-chain fatty acids (SCFAs) and fecal bile acids in rats. Thirty-six Sprague Dawley male rats weighing about 190 g were randomly divided among four treatments; control diet, control diet +6%(w/w) fructooligosaccharide (POS), control diet +6% chicory inulin oligosaccharide(CIOS), and control diet +6% chicory inulin(CI). The rats were pair-fed and experimental diets were maintained for 5 weeks. Cecal and fecal pH was significantly decreased in rats that were fed fructooligosaccharides and chicory inulin. Cecal propionate was significantly elevated in rats fed CIOS diets, and butyrate was lower in rats fed FOS and CI than control values. Cecal lactate was significantly higher in the FOS group than in the control group. The fecal excretions of acetate and total SCFA were 200-300% higher in rats that were fed fructooligosaccharides and chicory inulin than in the control group. Lactate excretion was highest in rats that were fed FOS, followed by those fed CIOS and CI. The cholic acid and total bile acid concentrations in feces were significantly lower in the rats that were fed fructooligosaccharides and chicory inulin. The deoxycholic acid concentrations in wet feces were significantly lower in the groups of rats that ate CIOS (0.186 mM), FOS (0.274 mM), and CI (0.362 mM) than in the control group (0.595 mM). Among the fructans, short-chain fructooligosaccharide was more effective at decreasing colonic pH and lactate production, but medium-chain chicory inulin oligosaccharide was more effective at increasing fecal butyrate and lowering the fecal secondary bile acid concentration.

스폰지 케이크에 함유된 프락토올리고당과 이소말토올리고당이 여대생의 변비개선에 미치는 효과 (Improving Effects of Fructooligosaccharide and Isomaltooligosaccharide Contained in Sponge Cakes on the Constipation of Female College Students)

  • 설탕의 40%를 프락토올리고당이나 이소말토올리고당으로 대치하여 구운 스폰지 케이크를 2주간 섭취하게 하여 여대생의 변비개선에 대한 효과를 살펴보았다. 두 올리고당 모두 섭취 후 배변 횟수와 변의 경도를 유의적으로 개선시켰다. 프락토올리고당을 첨가한 스폰지 케이크를 섭취한 군에서는 배변시간이 섭취 1주 후부터 유의적으로 감소하였으며, 이소말토올리고당을 첨가한 스폰지 케이크를 섭취한 군에서는 변의 모양, 변색, 배변 시 노력과 배변 후 상쾌함 등이 섭취 전보다 섭취 후에 유의적으로 개선되었다. 섭취 중에 나타난 소화장애 현상으로는 설사, 복통, 메스꺼움, 더부룩함, 방귀, 식욕 감소, 체중감소, 복부 팽만감 등이 나타났고, 프락토올리고당을 첨가한 스폰지 케이크 섭취 군에서는 이들 장애현상 중 복부 팽만감이나, 방귀, 메스꺼움 현상이 섭취 후 1~2시간 안에 나타나기 시작하여, 실험 기간 내내 지속되었다. 반면 이소말토올리고당을 첨가한 스폰지 케이크를 섭취한 군에서는 2~3일 정도 소화장애 현상이 나타났으나, 그 후에는 섭취 후에 장애 현상이 없어졌다. 섭취종료 일주일 후에는 프락토올리고당에 의한 소화장애 현상은 곧 사라졌으나, 대부분의 피검자들은 섭취 전에 나타난 변비현상이 다시 나타났다. 배변상황의 개선여부와 소화장애 현상을 종합적으로 판단하였을 때, 두 올리고당 모두 인체의 장기능 개선에는 효과가 있었으나, 비교적 안전성이 좋은 이소말토올리고당을 첨가한 스폰지 케이크 섭취가 변비 치료에는 더 긍정적으로 나타났다.

가래떡 노화 억제에 대한 당류 물질의 효과 (Effects of Carbohydrate Materials on Retarding Retrogradation of a Korean Rice Cake (Karedduk))

  • 가래떡의 노화 특성을 규명하기 위하여, 미분당, 트레할로스, 프락토올리고당(95%), 이소말트, 헬스리고 및 갈락토을리고당(50%) 등 6종류 당류 물질을 쌀가루 기준으로 0, 1, 5 또는 10%의 농도로 첨가하여 쌀가루의 pasting 특성을 측정하였고, 가래떡을 제조하여 $5^{\circ}C$ 냉장 보관하면서 0, 2, 4, 6, 22, 24, 28및 30시간 경과 후 조직감의 특성 중 경도의 변화를 Avrami 방정식에 따라 노화 특성 분석을 하였다. 쌀가루의 pasting특성에서 전분 노화와 관계가 있는 break-down, consistency는 무첨가군과 비교한 결과 실험군의 값이 낮았고 대부분 첨가물에서 노화억제 효과가 있었다. Avrami방정식에 따른 노화 특성 분석 결과는 실험에 사용한 첨가물 중 프락토올리고당(95%) 10%와 트레할로스 10% 첨가 수준에서 Avrami(n)지수 값이 1.977과 2.004로 낮았고, 헬스리고 1% 첨가 수준에서 3.297로 가장 높았다. 노화의 속도를 나타내는 시간상수(1/k)는 트레할로스 10% 첨가된 떡은 238.10으로 노화의 진행 속도가 가장 낮았고, 프락토을리고당(95%) 5%와 헬스리고 1%군은 무첨가군에 비해 그값이 낮아 노화속도가가 빠른 것으로 나타났다. 따라서 무첨가군에 비해 노화 진행 속도가 빠른 것으로 나타난 프락토을리고당(95%) 5%군과 헬스리고 1%군을 제외한 다른 모든 실험군은 노화속도를 늦추는데 효과적이었다.

  • This study was carried out to investigate the effects of oligosaccharide addition on Jeung-Pyun fermentation. Fructooligosaccharide (FOS), isomaltooligosaccharide (IMOS), galactooligosaccharide (GOS) were used at the concentration of 15%, 25% or 35% of the rice in Jeung-Pyun ingredients. The physicochemical properties, sensory evaluation and instrumental characteristics were examined. The internal structure of Jeung-Pyun samples was observed by SEM. The pH of Jeung-Pyun batters was decreased as the fermentation progressed. Compared with the control using sucrose, the specific volume of Jeung-Pyun was higher in the 15% and 25% of oligosaccharide-added samples. The degree of gelatinization decreased more slowly than control as the storage time increased both at 20$\^{C}$ and 4$\^{C}$. In sensory evaluation, Jeung-Pyun with FOS and IMOS at the levels of 25∼35% and GOS at the levels of 25% showed the best scores. In instrumental characteristics, springiness, gumminess, hardness and cohesiveness were similar among all samples during storage at 20$\^{C}$ and 4$\^{C}$. In the internal structure of Jeung-Pyun observed by SEM, Jeung-Pyun substituted with oligosaccharide at the levels of 25% for sucrose showed large and regularly distributed air pores. In conclusion, the replacement of sucrose with oligosaccharide in Jeung-Pyun ingredients appeared acceptable in terms of fermentative aspects.

올리고당을 사용한 스폰지 케이크가 흰쥐의 소화관 생리과 혈청지질에 미치는 영향 (Effects of Cakes Containing Sponge Oligosaccharides on Blood Lipids and Intestinal Physiology in Rats)

  • The aim of this study was to evaluate the effects of oligosaccharides(fructo or isomalto ) contained in sponge cake on blood lipids and intestinal physiology in rats. The experimental diet was mixed with 30% sponge cakes. Normal male Sprague Dawley rats weighing about 530g were randomly assigned to three groups and placed experimental diets and deionized water at free access for 25 days. Rat in control group received a diet mixed with sponge cake containing sucrose only at 21.58g/100g diet and rats in the other two groups received diets mixed with sponge cakes of which 40% sucrose was replaced with each oligosaccharide. The results obtained were as follows: No significant differences in efficiency of food, liver weight and intestinal length were observed among groups. The cecal contents and cecal wall weights were increased more in fructooligosaccharide(FO) group than control. The pH of cecal contents decreased significantly in two oligosaccharide groups. The water contents of fresh feces in FO group were the highest and the those of two oligosaccharide groups were higher than that of control. Dry fecal weight increased significantly in isomaltooligosaccharide(IMO) group. Total serum cholesterol concentration was significantly lower in FO group. Serum triglyceride(TG) was not significantly different among three groups at p<0.05, but serum TG of FO group was lower than those of other groups. In conclusion, 40% replacement of sucrose with oligosaccharides in sponge cake may have beneficial effects on lipid metabolism and intestinal function in rats.

Fructooligosaccharide의 섭취에 의한 인체의 장내세균(腸內細菌) 및 분변(糞便) 성상의 변화 (Effects of the Fructooligosaccharide Intake on Human Fecal Microflora and Fecal Properties)

  • Fructooligosaccharide (FOS) 섭취에 의한 장내 유익세균의 증식촉진 효과를 실험적으로 검증하기 위하여 건강한 성인 남자 5명에게 FOS를 4주동안 매일 8g씩 점심 식사 후에 섭취하도록 하였다. 시험 대상자로부터 매주 1회 분변을 수거하여 분변의 pH, 수분함량, Bifidobacteria 수, Lactobacilli 수, Coliforms 수를 측정하여 FOS 섭취에 의한 분변균총과 분변성상의 변화를 알아보았다. FOS의 섭취전 4주간을 control기간(평상시)으로 하였고 FOS 섭취기간과 FOS 섭취중단기간을 각각 4주로 하였다. 평상시 분변 수분함량은 $81.77{\pm}1.93%$이었으며, FOS의 섭취에 의하여 수분함량이 증가하였는데 4주째는 $84.66{\pm}1.00%$로 평상시의 분변 수분함량과 통계적 유의차가 인정되었으며(p<0.05), 이러한 수분함량의 증가현상은 FOS의 섭취를 중단한 후 4주동안 지속되었다. 평상시의 분변 pH는 $6.56{\pm}0.09$이었고 ,FOS의 섭취동안 pH가 유의하게 감소하여 4주후 $6.27{\pm}0.05$이었다. FOS의 계속적인 섭취가 분변의 pH를 현저하게 감소시켰으며 이와같은 분변의 pH 감소는 FOS의 섭취를 중단한 후에도 4주동안 지속되었다. 평상시의 분변 1 g중의 Bifidobacteria수는 $7.88{\pm}1.43(log_{10})$이었으며 FOS섭취에 의하여 2주째에는 $8.67{\pm}1.60$, 4주째에는 $9.22{\pm}0.53$으로서 평상시보다 통계적으로 유의하게 증가하였으나(p<0.05), FOS의 섭취를 중단한 후에는 거의 평상시 수준으로 환원되었다. FOS섭취 전인 평상시의 Lactobacilli수는 $6.76{\pm}1.34$였으나 FOS의 섭취에 의하여 균수가 점차 증가하였는데 3주째에 $7.67{\pm}1.32$, 4주째에 $8.15{\pm}1.05$를 나타내어 평상시 보다 유의하게 증가하였다(p<0.05). 평상시의 Colifoms수는 $6.65{\pm}1.03$이었으며 FOS의 섭취에 의한 통계적 유의성은 없었다.

저항전분, 통호밀 및 프락토올리고당을 첨가한 식빵의 개발과 Glycemic index 감소 효과 (Glycemic Index Lowering Effects of Breads Supplemented with Resistant Starch, Whole Rye Grain and Fructooligosaccharide)

  • Low glycemic index (GI) foods have been reported to be very important in the control of blood glucose levels in diseases such as diabetes mellitus and obesity, which are becoming more prevalent in Korea. Bread consumption at breakfast and as a snack is also on the rise. To provide low GI alternatives, breads supplemented with dietary fibers-fructooligosaccharide (FOS), ground whole rye, and 2 types of resistance starch (RS2 and RS4)-were developed. The GIs for these breads were evaluated with 13 healthy college students (M6, F7) and sensory tests were done. Four kinds of breads were made through the modification of a basic recipe for white bread (the control, B) as follows: for Bf, the entire amount of sugar was replaced with FOS. For Ryef, 50% of the white wheat flower was replaced with roughly ground wholerye (20 mesh: 12-20 mesh = 1 : 3) in addition to replacing sugar with FOS. For RS2f and RS4f, 20% of the white wheat flower was replaced with RS2 or RS4, in addition to replacing sugar with FOS. The overall preference score of Bf was similar to that of B, while those of Ryef, RS2f and RS4f were lower than that of B, but showed the acceptable degree of the overall preference. The glycemic indices of Ryef and RS2f were 46.1 and 45.9 respectively, which were significantly lower than the GI of B, 67.8. The GIs of Bf and RS4f were, however, 66.7 and 80.5 respectively, showing no significant difference compared to B. The glycemic loads for a 30 g serving were 9.5, 5.9, 6.2, 11.0 and 9.0 for B, Bf, Ryef, RS2f and RS4f, respectively. In conclusion, addition of RS2 or roughly ground whole rye to the dough formula significantly lowered the GI. Since the preferences shown for those two breads were acceptable, they may be recommended as a substitute for white bread fir persons who need blood glucose management. More studies on the bread making process are required to improve preference and acceptance. Although GI lowering effects for F and RS4 were not found in this study, further studies are needed to verify their effects.

프락토올리고당 첨가 흑마늘 잼의 품질 특성 및 항산화성 (Quality Characteristics and Antioxidant Activities of Black Garlic Jam Prepared with Fructooligosaccharide)

  • 마늘을 고온에서 장시간 저장 및 숙성시켜 제조한 흑마늘로 잼을 만들어 품질 특성을 알아보았다. 산도는 대조군과 FTOS 첨가군이 가장 높았으며, 유의적인 차이가 없었다. 환원당 함량은 FTO 첨가군이 가장 높았고, 다음으로 FTOS 첨가군이었다. 점도는FTO 첨가군이 가장높고, 그 다음으로 FTOS 첨가군이었고, 대조군은 가장 낮았다. 색도는 명도는 FTO 첨가군이 가장 높았고, FTOS 첨가군이 가장 낮았으며 유의적인 차이를 나타내었다. 적색도는 FTO 첨가군이 가장 높았고, FTOS 첨가군이 가장 낮았으며 유의적이 차이를 나타내었다. 황색도는 FTO 첨가군이 가장 높았다. 기계적인 조직감은 경도, 탄력성은 FTO 첨가군이 가장 높았고, 대조군이 가장 낮았다. 항산화 실험 결과 중, DPPH radical 소거능은 모든 군이 대조군에 비해 $IC_50$ 값이 낮게 나타났고, FTO 첨가군이 가장 작은 값을 나타내어 항산화능이 가장 좋게 평가되었다. Hydroxy radical 소거능 역시 모든 군이 대조군에 비해 $IC_50$ 값이 낮게 나타났고, FTO 첨가군이 가장 작은 값을 나타내어 항산화능이 가장 좋게 평가되었다. Total phenol 함량 측정 결과, FTO 첨가군이 가장 높은 값을 나타났고, 모든 군이 대조군에 비해 Total phenol 함량이 높게 나타났다. 관능검사에서 강도 특성 및 수용도 평가 결과, 전반적인 수용도 및 구입의사에서 FTO 첨가군이 높은 점수를 받아 잼 제조 시 설탕을 넣거나 설탕과 올리고당을 혼합하여 흑마늘 잼을 제조하는 것보다 프락토올리고당을 대체할 때 관능적으로 가장 좋다고 사료된다. 이와 같은 결과를 종합해 보면 프락토올리고당 첨가가 흑마늘잼 제조 시 적합한 것으로 사료된다.
