Physicochemical Properties of Cooked Rice as Affected by Cooking Methods and Thawing Conditions (취반 및 해동방법에 따른 쌀밥의 이화학적 특성)

  • This study was conducted to investigate performance of methods for cooking and thawing frozen cooked rice to retard retro-gradation of cooked rice. For this research, That was executed rice's physicochemical and sensory characteristics test through the way of boiling rice or thawing, and found out best way for retro-gradation and taste. This study showed the rice cooked by pressure rice pot has less dehydration during freezing and thawing, and thawed rice by micro wave has less dehydration. Repetition of freezing and thawing resulted increasing of hardness and chewiness, and decreasing of adhesiveness and cohesiveness. The rice cooked by convotherm oven or pressure rice pot has less increased hardness while freezing and thawing. Adhesiveness was superior when rice was cooked by pressure rice pot. The rice thawed by microwave had more hardness than thawed in room temperature.

Unsaturated Soil Properties of Compacted Soil at Sub-Zero Temperature (영하온도에서 다짐된 지반의 불포화 특성)

  • Recently, construction disasters in thawing season are increasing due to the ground collapse and it is related to the improper compaction during winter season. Compaction at sub-zero temperature reduces the compaction effect and the research of mechanical properties of thawed soil after winter compaction can be used as useful data to understand the behavior of the ground in the thawing season. On the other hand, the research interest in the unsaturated soil mechanics has been increasing in the field of the geotechnical engineering. Therefore, it is expected that the research of unsaturated characteristics under the compaction of sub-zero temperature and freezing & thawing condition provides information to the researchers in the related fields. Therefore, in this research, unsaturated soil-water characteristics test and unsaturated uniaxial compression test were conducted on the specimens compacted at sub-zero temperature and continuous freezing & thawing condition to investigate change of unsaturated characteristics and matric suction. Based on the test results, the change of matric suction and the decrease of strength and stiffness were observed with the freezing & thawing conditions. Especially in case of the weathered soil, the strength and matric suction were significantly reduced with lower temperature and more repetition of freezing & thawing cycles. This result implies that compaction of sub-zero temperature and freezing & thawing cycles will have a considerable influence on the stability of the ground.

A study on the design of tunnel lining insulation based on measurement of temperature in tunnel (터널 온도계측을 통한 라이닝 단열 설계에 관한 연구)

  • In case of tunnels in cold regions, a freeze of groundwater around tunnel may act as a barrier of tunnel drainage in winter, or may cause the inner extrusion of lining. In spite of that, a design of insulation for preventing the frost damage of tunnel lining has not been introduced in Korea, while foreign countries such as Norway and so on have a standard on insulation. In this study, a few freezing cases of road tunnels have been reviewed, and the results show that the freezing protection is necessary. In order to characterize the thermal distribution in the tunnel, following measurements have been performed at Hwa-ak tunnel; the temperature distribution by longitudinal lengths, the internal temperature of lining and the temperature distribution of the ground under pavement. From these measurements, the characteristics of the tunnel's internal temperature distribution due to temperature change in the air has been analyzed. Based on the measurement results on the temperature distribution at Hwa-ak tunnel, thermal flow tests on the rock specimen with and without insulation have been performed in the artificial climate chamber to investigate the performance of the insulation. Also, a number of 3D numerical analyses have been performed to propose appropriate insulation and insulation thicknesses for different conditions, which could prevent the frost damage of tunnel lining. As a result of the numerical analysis, air freezing index of 291$^{\circ}C{\cdot}$ Hr has been suggested as the threshold value for freezing criteria of groundwater behind the tunnel lining.

  • The processes of formation and dissociation of gas hydrates were investigated by monitoring pressure and temperature variations in a pressure cell in order to understand the kinetic behavior of gas hydrate and the controlling factors fur the phase transition of gas hydrate below freezing. Gas hydrates were made kom guest gases ($CH_4,\;CO_2$, and their mixed-gas) and fine ice powder. We found that formation and dissociation speeds of gas hydrates were not controlled by temperature and pressure conditions alone. The results of this study suggested that pressure levels at the formation of mixed-gas hydrate determine the transient equilibrium pressure itself.

  • When fresh concrete is exposed to low temperature, the concrete may suffer frost damage due to freezing at early ages and strength development may be delayed. One of the solution methods to resolve these problems is to lower freezing temperature of concrete by the use of chemical admixture called Accelerators for Freeze Protection. In this study, it was the results of appling cold weather concrete using Accelerator for Freeze Protection in the Daewoo Trump world field. Before the application of the cold weather concrete using accelerator for freeze protection, we executed the some test in the laboratory and mock-up test in the field. We examined the manifestation of compressive strength complying with the amount of Accelerators for Freeze Protection and curing conditions, and then made a selection of most suitable amount of Accelerators for Freeze Protection.

$CaF_2$ crystal growth for using optical components of laser

  • Large vacuum Bridgman-Stockbarger (BS) equipments was composed for growing large diameter CaF2 crystals. The CaF2 crystal of 4.5-inch was grown under the conditions of freezing temperature gradient of 12$^{\circ}C$/cm and growing rate of 3mm/hr. Also the 6-inch crystal was grown by using thermal stabilization method under freezing temperature gradient of 14$^{\circ}C$/cm and growing rate of 2mm/hr. The dislocation density was characterized for evaluating the quality of crystals. And the optical properties such as transmittance, refractive index and fluorescence were analyzed in order to investigate on the applications of optical components.

  • The economic efficiency for fishery products can be related to their freshness and the quality. In order to freshly storage the product, freezing equipment system is necessary for fishing vessels. For this purpose, the horizontal plate freezer (HPF) is mostly used. In this research, our major objective is to improve the freezing performance of the HPF. Therefore, it is important to analyse the relationship between the shape of channels and the cooling temperature of the HPF. In order to save calculation time while checking the trend analysis between shape and performance, we used scaled models, and evaluate the cooling temperature of full scale model based on trend analysis results. The produced HPF in domestic was used, and the same operating conditions are considered. Based on this paper, the future research will be a comparison and verification through the experiments.

Resposes of Two Cold - Regulated Genes, BN28 and BN115, in Field -Grown Canola (Brassica napus L.) (포장에서 케놀라 저온반응성 유전자 발현)

  • Cold acclimation involves changes in gene expression. BN28 and BN115 are two genes which are regulated by cold temperature and assumed having roles in cold acclimation. The objectives of this experiment was to explore the expression of BN28 and BN115 under field conditions. Six winter cultivars were planted at three different dates during the fall. The expression of the genes was determined by northern blot analysis of total RNA taken from leaves 15 to 30 day-intervals after planting. The expression of the two genes was detected within 15 days after planting well before onset of freezing tolerance in plants. This suggestes either their expression was a prerequisite of the freezing tolerance or their expression was regulated by other environmental factors as well as temperature. Two genes showed a different expression pattern suggesting they had a different regulatory system. Although timecourse increase in expression of the cold-regulated genes was matched with increase in freezing tolerance, the difference of expression in cultivar level at specific times of measurement was not correlated with freezing tolerance at the moment.

  • This study aimed to analyze the deck floor heating system of an outdoor swimming pool in terms of the thermal capacity/output and the surface temperature distribution based on the outdoor temperature, to design for anti-freezing during winter. Through the transient heat transfer simulation with PHYSIBEL and theoretical equations, the surface temperature distribution of the floor heating system at two outdoor conditions in Jeju, were calculated and evaluated. The results indicate that the specific thermal output required for maintaining $4^{\circ}C$ surface temperature at the design outdoor temperature of $0.1^{\circ}C$, was about $90W/m^2$. This performance analysis can be applied for future design criteria, including optimizations of system capacity and size.

Effects of Storage Temperature and Packaging Methods on the Physicochemicl Quality of Boiled-Dried Anchovies (저장온도 및 포장조건이 건멸치의 이화학적 품질에 미치는 영향)

  • For improved preservation of boiled-dried anchovies, the current preservation method of corrugated-cardboard box packaging and freezing below -18$^{\circ}C$ was compared to the nylon/polyethylene(NY/PE) packaging along with cooling temperature ranging from 5$^{\circ}C$ to 1$0^{\circ}C$ as well as ambient condition for eight months by determining physicochemical quality of stored samples. Lipid oxidation of stored anchovies and their browning increased with storage time. The phenomenon was delayed under the conditions of lower temperature and air-tight packaging. As quality-indicative criteria of stored anchovies, carbonyl value(r=-0.989), browning (r=-0.949) and color a value(r=-0.989), browning(r=-0.965), Hunter's color b value(r=-0.949) and color a value(r=-0.940) showed a highly-negative correlations with organoleptic qualities of the samples. Based on the above results, air-tight packaging in a laminated film and subsequent storage at cooling temperature was found to be a possible alternative to the current freezing-storage of boiled-dried anchovies from the physicochemical point of view.
