A Survey of Mycotoxins In Commerical Foods and Fate of Mycotoxins During Food Processing

  • The natural occurrence of mycotoxins in food and foodstuffs and the fate of mycotoxins during food processing were investigated. Aflatoxins and /or Fusarium mycotoxins(nivalenol, deoxynivalenol and zearalenone) were detected in commercial samples of various foods and foodstuffs collected at Tokyo markets. It was found that the mycotoxins were decomposed at high temperature, but some remained after heating at usual temperatures for an ordinary period for domestic cooking(boiling, deep-frying of grilling). Industrial food manufacturing processes were relatively effective for removing mycotoxins.

식품에 대한 방사능 오염실태 조사 (Monitoring on Radioactivity in Foodstuffs)

  • 본 연구는 국내에서 생산된 식품과 수입식품에 대한 방사능 오염실태를 조사하고 그 결과를 바탕으로 식품에 대한 방사능 오염의 기준 및 규격 설정을 위한 기초자료 생산을 목표로 수행되었다. 조사 대상시료는 국민식생활에 근거하여 곡류, 두류, 근채류, 인삼류, 어패류, 육류 등으로 선정하였다. 국내 생산된 식품 중에서 쌀, 대두, 감자, 쇠고기의 경우는 지역별 오염실태 차이를 파악하기 위해 국내 원자력발전소 주변지역에서 시료를 구입하였다. 모든 시료는 건조하여 회화시킨 후 사용하였으며, 방사능 농도는 감마핵종분석기를 이용하여 측정하였다. 인공방사능인 Cs-137의 방사능농도는 곡류의 경우는 0.025-0.053 Bq/kg-fresh, 두류는 0.045-0.500Bq/kg-fresh, 근채류(감자)는 0.062-0.105 Bq/kg-fresh, 인삼류는 0.025-1.151 Bq/kg-fresh, 육류(쇠고기)는 0.021-0.145 Bq/kg-fresh, 어패류는 0.046-0.155 Bq/kg-fresh의 범위를 나타냈으며, 다. 본 조사 결과 2002년도에 채취된 국내에서 생산된 식품 중 Cs-137의 농도는 지역별로 큰 차이를 나타내지 않았으며, 식품 중의 방사능 잠정허용기준치인 370Bq/kg에 훨씬 못 미치는 무시할 정도의 값으로 나타났다. 또한, 수입식품 중 2002년도에 채취된 시료인 쌀(태국산), 밀(미국산), 대두(러시아산), 홍합(뉴질랜드산), 수삼(중국산), 쇠고기(호주산, 미국산)의 경우도 국내산과 큰 차이를 나타내지 않았다. 그러나 조사항목 중 중국에서 수입된 인삼(건삼) 중의 방사능 농도가 다른 식품시료에 비해 상대적으로 높다는 것은 특이할 만한 사항이다.

  • The purpose of this study is to survey the learner’s need achievement, interest and practical level of the learning objectives according to the teacher’s teaching method in home economics of middle school(Dietary Life Unit), to examine the differences according to the local situation, and to get some information to improve the teaching method. This study surveyed the eight units of dietary life with 459 students in the rural community (224 students) and Seoul(235 Students). The collected data were analyzed by T-test, F-test. To sum up this study are as follows: 1. When the need, achievement, interest and practical level of unit “food”are compared the students of seoul with those of rural community, the student of Seoul show high in “The use of Processed Foodstuffs” and low in “Cooking the Processed Foodstuffs.”The student of rural community show in “A kind of Cooking Method”and low in “Environment and Food Life”. 2. The need, achievement, interest, practical level of the whole unit in rural community is higher than those is Seoul. 3. According to teaching method, comparison Seoul with rural community is revealed as follows. Seoul region is revealed significance to discovery learning in “Cooking Foodstuffs(The achievement and interest level) and ”Environment and Food Life”(interest level). Rural community is revealed significance to discussion learning in “The constituent and Food Life”(The need level, interest level). Rural community is revealed significance to explanation learning in “Environment and Food Life”(The achievement level).

원전 중대사고시 피폭경로 및 핵종의 방사선 피폭에 대한 상대적 중요도 해석 (Analysis of Exposure Pathways and the Relative Importance of Radionuclides to Radiation Exposure in the Case of a Severe Accident of a Nuclear Power Plant)

  • 원자력발전소의 중대 사고시 대기로 방출된 방사성물질에 의해 피폭자가 사고후 일생동안 받게 될 전신 피폭선량과 핵종의 상대적 중요도를 방출점으로부터 거리에 따라 각 피폭경로에 대해 평가하였다. 방사능운과 지표에 침적된 방사성물질에 의한 외부피폭, 호흡과 오염된 음식물섭취에 의한 내부피폭이 피폭경로로 고려되었다. 오염된 음식물섭취에 의한 영향은 우리나라 환경을 고려하여 개발된 동적 삽식경로모델 KORFOOD을 사용하여 침적시점과 침적후 시간에 따른 음식물내 방사성물질의 농도 변화를 고려하였다. 방출점으로부터 80km까지 피폭선량을 평가한 결과, 오염된 음식물섭취에 의한 영향이 가장 높았다. 핵종별 기여도는 방사능운에 의한 외부피폭과 호흡에 의한 내부피폭의 경우 I, 침적된 방사성물질에 의한 외부피폭의 경우 Cs에 의한 영향이 가장 높았다. 오염된 음식물섭취에 의한 내부피폭의 경우 Cs은 여름철 침적, Sr은 겨울철 침적에 보다 중요한 영향을 미쳤다.

  • 35 samples of Korean fermented foodstuffs were tested to isolate and to identify for aflatoxins. Aflatoxin $G_1$ was detected in samples of soybean and Kanjang (Soybean sauce), and aflatoxins $G_1$ & $G_2$ in Meju (fermented soybean mass) and Dwenjang (fermented soybean paste). In the culture media of Aspergillus flavus aflatoxins $B_1,\;B_2,\;G_1\;and\;G_2$ were also isolated and identified. Aflatoxins were confirmed by the thin layer chromatography with methanol : chroroform (5:95v/v) developer and the ultra violet absorption spectrum.

  • Thirtythree strains of the Aspergillus spp. isolated from foodstuffs were observed through some physiological characteristics for detection of identification key of Aspergillus spp. 1) Each strain of Aspergillus spp. had their specific characteristics and could be used for identification of species. 2) Excellent amylase-producing fungi were observed among the isolated strains of Aspergillus spp. 3) Amylase activities increased for one week incubation period. 4) In the tests of common characters of aflatoxin-producing fungi among the 33 strains of Aspergillus spp., for example, conidial size, presence of sclerotia, kojic acid, and pigment production, coloration of phenol, reduction of methylene blue, etc.

Spectrophotometric Determination of Copper(II) Using Diamine-Dioxime Derivative

  • A simple, rapid and sensitive spectrophotometric method is herewith proposed for the determination of copper(II) by using diamine-dioxime ligand, meso-3,6,6,9-tetramethyl-4,8-diazaundecane-2,10-dione dioxime or meso-HexaMethyl Propylene Amine Oxime (meso-HMPAO). This method is based on the formation of a stable 1 : 1 red-pink complex between copper(II) and meso-HMPAO in aqueous solution. Absorption measurements were carried at 497 nm, with a molar absorptivity value of 338 L $mol^{-1}\;cm^{-1}$. Beer's law was obeyed over the concentration range of 0.5-370 ${\mu}$g $mL^{-1}$ with a Sandell's sensitivity value of 0.18 ${\mu}$g $cm^{-2}$. The proposed method has been successfully applied for determination of copper(II) in foodstuffs and pharmaceutical samples. The results obtained from this method are comparable with those obtained AAS.

  • Twenty culture filtrates among the various isolated strains from foodstuffs were submitted for toxicity screening using HeLa cells and mice. Fourteen strains(70%) were toxic to both HeLa cells and mice, 17 strains(85%) to HeLa cell alone and 14 strains(70%) to mice alone. As a mass screening this method employed is feasible to detect mycotoxin-producing fungi. In most instances, the results obtained by HeLa cells were in good parellelism with those obtained by mice.
