Etiological Agents Implicated in Foodborne Illness World Wide

  • This mini review focuses on foodborne illnesses and outbreaks caused by food-producing animals because statistical information of the foodborne illnesses is important in human health and food industry. Contaminated food results in 600 million cases of foodborne diseases and 420,000 deaths worldwide every year. The world population is currently 7.8 billion, and 56 million people die every year; of these, every year, 7.69% of people experience foodborne diseases, and 7.5% of annual deaths (56 million deaths) was died by foodborne illness in the world. A majority of such patients are affected by norovirus and Campylobacter. Listeria monocytogenes is the most fatal. In the United States, except for those caused by Campylobacter, the number of foodborne diseases did not decrease between 1997 and 2017, and cases caused by Toxoplasma gondii are still being reported (9 cases in 2017). The percentage of foodborne illnesses caused by food-producing animals was 10.4%-14.1% between 1999 and 2017 in the United States. In Europe, foodborne illnesses affect 23 million people every year and cause approximately 5,000 deaths. Europe has more Campylobacter- and Salmonella-related cases than in other countries. In Australia, the highest number of cases are due to Campylobacter, followed by Salmonella. In Korea, Escherichia coli followed by norovirus. Campylobacter- and Clostridium perfringens-related cases have been reported in Japan as well. This review suggests that Campylobacter, Salmonella, L. monocytogenes, and E. coli, which are usually isolated from animal-source food products are associated with a high risk of foodborne illnesses.

A study on Kudoa septempunctata infection from sashimi and sushi of olive flounder Paralichthys olivaceus in Busan, South Korea

  • Kudoa septempunctata has been reported as a new parasite in aquacultured olive flounder Paralichthys olivaceus, and also as a causative agent of food poisoning in humans. This paper investigated the infection of K. septempunctata in 216 sashimi and 20 sushi made of olive flounders in Busan, Korea. Among 236 samples, K. septempunctata was detected in eleven sashimi with 6-7 polar capsules by the microscopy. Among eleven sashimi, five sashimi were positive in Polymerase Chain Reaction (PCR) assay with the targets of 18S rDNA and 28S rDNA. The genotype of all the five PCR results is identified as the genotype ST3 which is common in Korea. K. septempunctata was found in olive flounders sashimi from Samcheonpo and Wando outside of Jeju Island. These findings would contribute to establish the standard of K. septempunctata for preventing food-borne outbreaks in advance and providing further preventive management for the seafood safety.

  • Foodborne diseases are serious problems throughout the world, because new pathogens have emerged. Nowadays many students eat school lunch provided by school lunch program. They are threatened by pathogens transmitted by foods. Many school children became victims of foodborne diseases. Most foodborne outbreaks were caused by mishandling foods at food serivece establishments. Temperature control is the most critical point of keeping the foods safe. In order to prevent foodborne diseases in schools, the managers in charge of school lunch program and officials in charge of food safety of local health department try to make sure that foods are out of danger zone of temperature. Prevention of cross sontamination, and sanitization of raw foods and utensils are also emphasized by school lunch program managers and health officials.

In the study, the reported data was reviewed, but only the data during recent five years were mainly analyzed because of data shortage.

  • 식중독(식품 매개 질병)은 전 세계적으로 심각한 공중보건 문제와 경제적 손실을 초래한다. 최근 몇 년 간 새로이 발생한 식중독은 주로 동식물에서 유래하는 새로운 박테리아, 바이러스, 원생 동물, 곰팡이독, 그리고 프리온에서 발생했다. 유해 박테리아, 바이러스, 기생충 또는 화학 물질이나 자연 발생 독소 등으로 오염된 불안전한 음식의 섭취는 질병의 발병률과 사망률을 높인다. 그러나 특정 병원성 또는 화학적 위험요인, 불충분한 보고 사례, 감염 전염 방식 및 시기 진단 등에 대한 식품 소재 귀인(歸因)의 어려움 때문에 식중독의 발병률과 부담을 추정하는 것은 전 세계적으로 큰 도전이며 식중독을 통제하는 것은 매우 어렵다. 그러므로 종합적인 식품 안전 전략 및 정책의 시행, 관리 감독 강화, 탄력적인 건강 시스템 보장, 안전한 식품 보장 및 식품 매개 질병 예방을 위한 교육 및 훈련 강화에 대해 모두가 책임져야 한다.

  • Food safety is increasingly becoming an important public health issue, as foodborne diseases present a widespread and growing public health problem in both developed and developing countries. The rapid and precise monitoring and detection of foodborne pathogens are some of the most effective ways to control and prevent human foodborne infections. Traditional microbiological detection and identification methods for foodborne pathogens are well known to be time consuming and laborious as they are increasingly being perceived as insufficient to meet the demands of rapid food testing. Recently, various kinds of rapid detection, identification, and monitoring methods have been developed for foodborne pathogens, including nucleic-acid-based methods, immunological methods, and biosensor-based methods, etc. This article reviews the principles, characteristics, and applications of recent rapid detection methods for foodborne pathogens.

온라인 판매 신선편의식품 및 즉석섭취식품의 미생물 오염도 연구 (A Study of Microbial Contamination in Fresh-Cut and Ready-to-Eat Foods Purchased from Online Markets)

  • 2023년 2월에서 2023년 11월까지 온라인으로 구매한 신선편의식품 110건과 즉석섭취식품 115건을 대상으로 위생지표균(일반세균, 대장균군 및 대장균)과 식중독균(Staphylococcus aureus, Salmonella spp., Bacillus cereus, Clostridium perfringens, Listeria monocytogenes, 병원성대장균)의 오염도를 조사하였으며, 분리된 균주를 대상으로 병원성 유전자를 확인하였다. 배송 형태는 보냉제를 사용해 배송 시간은 평균 24시간이 소요되어 일반 택배로 배송되었고 제품 표면온도 평균은 11.3 ℃이었다. 일반세균 정량분석 결과, 신선편의식품의 평균 일반세균수는 4.5 log CFU/g, 즉석섭취식품의 평균 일반세균수는 10.6 log CFU/g로 나타났다. 대장균군 정량분석 결과, 신선편의식품, 즉석섭취식품 각각 평균 1.2 log CFU/g이었고, 대장균은 검출되지 않았다. S. aureus, Salmonella spp., C. perfringens, 병원성대장균은 모든 제품에서 검출되지 않았다. B. cereus의 경우 신선편의식품 및 즉석섭취식품에서 각각 3건(2.7%), 1건(0.9%) 검출되었고, 오염 수준은 신선편의식품에서 평균 0.05 log CFU/g, 즉석섭취식품에서 0.01 log CFU/g으로 나타났다. B. cereus 검출된 4건의 검체에서 B. cereus가 생성하는 독소 유전자 6종(hblC, bceT, entFM, nheA, CytK, CER)에 대한 유전자 확인시험 결과 4주가 분리되었고, 구토독소를 제외한 1개 이상의 장독소 유전자가 확인되었다. L. monocytogenes의 경우 즉석섭취식품에서는 검출되지 않았고, 신선편의식품 1건(0.9%)이 검출되었다. 분리한 L. monocytogenes에서 iap 등 6종의 병원성유전자가 검출되었고, 1/2a 혈청형이 확인되어 식중독 발생 위험이 있음을 확인하였다.

Detection and Identification of Vibrio Species Using Whole-Cell Protein Pattern Analysis

  • Outbreaks of foodborne diseases associated with Vibrio species such as V. parahaemolyticus, V. vulnificus, and V. cholerae frequently occur in countries having a dietary habit of raw seafood consumption. For rapid identification of different Vibrio species involved in foodborne diseases, whole-cell protein pattern analysis for 13 type strains of 12 Vibrio species was performed using SDS-PAGE analysis. Pathogenic Vibrio species such as V. parahaemolyticus, V. vulnificus, V. cholerae, V. alginolyticus, V. fluvialis, and V. mimicus were included in the 12 Vibrio species used in this study. Each of the 12 Vibrio species showed clearly specific band patterns of its own. Two different strains of V. parahaemolyticus showed two different SDS-PAGE whole-cell protein patterns, giving the possibility of categorizing isolated strains in the same V. parahaemolyticus species into two subgroups. The 36 Vibrio isolates collected from sushi restaurants in Busan were all identified as V. parahaemolyticus by comparing their protein patterns with those of Vibrio type strains. The identified isolates were categorized into two different subgroups of V. parahaemolyticus. The whole-cell protein pattern analysis by SDS-PAGE can be used as a specific, rapid, and simple identification method for Vibrio spp. involved in foodborne diseases at the subspecies level.

Review on Biosensors for Food Safety

  • Background: Frequent outbreaks of foodborne illness have been increased awareness of food safety. CDC estimates that each year roughly 48 million people gets sick, 128,000 are hospitalized and 3,000 die of foodborne diseases in US. In Korea, 6,058 were hospitalized and 266 incidents were reported in 2012. It is required to develop rapid methods to identify hazard substances in food products for protecting and maintaining safety of the public health. However, conventional methods for pathogens detection and identification involve prolonged multiple enrichment steps. Purpose: This review aims to provide information on biosensors to detect pathogens in food products to enhance food safety. Results: Foodborne outbreaks continue to occur and outbreaks from various food sources have increased the need for simple, rapid, and sensitive methods to detect foodborne pathogens. Conventional methods for foodborne pathogens detection require tremendous amount of labor and time. Biosensors have drawn attentions in recent years because of their ability to detect analytes sensitively and rapidly. Principles along with their advantages and disadvantages of a variety of food safety biosensors including fiber optic biosensor, impedimetric biosensor, surface Plasmon resonance biosensor, and nano biosensor were explained. Also, future trends for the food safety biosensors were discussed.
