  • This experiment was conducted to study the effect of organic fertilizer on the growth of Peucedanum japonicum Thunberg and the change of soil chemical characteristics. The organic matter contents of coffee sludge and dried food waste powder were 44.26 and 51.18%, respectively. These values exceed the organic matter content of organic fertilizers recommended by the Rural Development Administration (RDA) of South Korea by more than 30%. Accordingly, they indicate the possibility of their use as organic fertilizers. The results from the analysis of soil properties after cultivation showed that the organic matter content of coffee sludge amended soils was two-fold higher than that of dried food waste powder amended soils. However, the content of available phosphorus was two times lower in the coffee sludge amendments. It is expected that the dried food waste powder was actively used to decompose organic substances, and that phosphoric acid was added by the soil microorganisms used to decompose organic substances. In terms of Peucedanum japonicum Thunberg growth, leaf discoloration was observed for all treatments except with the standard rate of dried food waste powder. The standard rate of dried food waste powder also produced relatively better results than other treatments with regard to other growth characteristics such as root length (34.08 cm), root diameter (0.78 cm), and fresh root weight (4.77 g plant-1). Therefore, the standard rate of dried food waste powder produced better results than other treatments and can be used as an organic fertilizer in the growth of Peucedanum japonicum Thunberg.

  • This study was conducted to investigate the application effects of dried food waste powder (FWP) and mixtures of FWP and organic fertilizer (MFOs) on the growth of lettuce and Chinese cabbage. The physicochemical properties of FWP and MFOs were analyzed. As FWPs containing 3.11% NaCl was applied at 250 kg, 500 kg and 1,000 kg per 10a, growth factors of lettuce and Chinese cabbage, such as a number of leaf, leaf length, leaf width, and dry weight were decreased than those of control appling organic fertilizer. The higher the FWP ratio in the MFOs, the lower the concentrations of N and P2O5 in the MFOs, while the higher the concentration of NaCl. As compared to dry weight of control after treating MFOs, lettuce were not significant in MFOs treatments containing 10~30% FWP, and Chinese cabbage in MFOs treatment containing 10% FWP.

  • An agricultural waste, pomegranate (Punica granatum L.) peel is known to be rich in total phenolics, which are flavonoids having strong antioxidant effects. In this study, pomegranate peel sponge cakes were prepared with varying ratios of freeze dried pomegranate peel powder (0, 1, 3, 5, 7% (w/w)) to examine their effect on quality characteristics, retrogradation and antioxidant activities. The specific gravity and moisture contents of 3, 5, and 7% pomegranate peel powder showed higher values than the control and 1% group. Addition of pomegranate peel powder increased the batter yield, while there was a significant decrease in baking loss. Increasing pomegranate peel powder content significantly decreased the lightness (L) (from 75.03 to 57.04) and pH values, whereas redness (a), yellowness (b) and ${\Delta}E$ were increased. Increasing concentration of the peel powder also increased the hardness and chewiness, while the springiness and cohesiveness decreased. Considering the Avrami equation, Avrami exponene (n) decreased from 1.8055 (control) to 0.9199 (7% pomegranate peel powder). Time constant (1/k) was lowest in control (at 17.64) and highest in the 7% group (39.84). Total polyphenol, flavonoid content, DPPH and ABTS radical scavenging activities significantly increased with increments in the content of pomegranate peel powder. A sensory evaluation by the 7-point scaling method showed that the sponge cake containing 7% pomegranate peel powder had the highest scores in color, flavor, sweetness, chewiness and overall acceptability. Hence, it is considered that sponge cake supplemented with 7% pomegranate peel powder is the most appropriate for quality characteristics, retrogradation and antioxidant activities.

  • This study was conducted to investigate effects of mixture with dried food waste powder (FWP) and mixed organic fertilizer (MOF) on growth of pakchoi. As compared with non-fertilizer treatment (NF) or control (MOF treatment), growth of pakchoi in FWP treatments (2,500 kg/ha, 5,000 kg/ha, 10,000 kg/ha) was inhibited by salt (NaCl) content in the FWP. In comparison with control, mixtures of MOF and FWP (FWP10, FWP20, and FWP30 treatment) were not significantly different, and their salt content correlated with pakchoi growth factors negatively (P<0.05). Applied of FWP10, (FWP10: 2,500 kg/ha, 2FWP10: 5,000 kg/ha, 3FWP10: 7,500 kg/ha, 4FWP10: 10,000 kg/ha), growth factors of FWP10, 2FWP10 and 3FWP10 treatment were not significantly different than those of chemical fertilizer treatment, and of 4FWP10 decreased. Correlation coefficient between NaCl supply by FWP10 application and growth factor was negative (P<0.01). These results indicated that FWP was used as another source of organic fertilizer, and the organic fertilizers blending with FWP inhibited a pakchoi growth by increase of salt content containing in the them or of salt supplying amount after their application.

  • To utilize oyster cannery processing waste water effectively, this study was carried out to prepare instant powdered soup using oyster wash water. Instant powdered soup from oyster hot-water extracts (HWE) was prepared by mixing oyster spray-dried hot-water extracts (15 g) with table salt (5 g), cream powder (19 g), milk replacer (12 g), wheat flour (20 g), corn flour (15 g), starch (5 g), glucose (7.5 g) and onion powder (1.5 g). In preparing instant powdered soup from oyster wash water (OWW), powder from oyster spray-dried wash water instead of the spray-dried hot water extracts, was added and other additives were added in proportion to those in the HWE. The OWW consists mainly of carbohydrates (71.1%). It was not different from the instant powdered soup from hot-water extracts. The volatile basic nitrogen, vaible cell counts, coliform group of instant powdered soup from oyster wash water contains 29.4 mg/100g, $4.6{\times}10^4\;CFU/g$, <18 MPN/100g, respectively and its water activity has 0.246. So it was a hygienically safe and conservable instant food. The main fatty acid of OWW was 16 : 0 and 18 : 1n-9. Its chemical score of protein was 59.4% and its main inorganic matter was iron. According to a sensory evaluation, in contrast to the HWE, the OWW had a slightly lower aroma but better taste. It was concluded from the above chemical and sensual evaluation that the oyster wash water can be used as a flavor enhancer for instant powdered soup.

  • This study was conducted to evaluate the properties of mixtures of mixed organic fertilizer (MOF) and various organic sources such as livestock manure compost (LMC), dried compost of poultry manure (CPM), dried food waste powder (FWP) and amino acid by-product fertilizer (ABF) and their influences on growth of lettuce and Chinese cabbage. The content of N, P2O5 and K2O of mixture of MOF, LMC and FWP (MLF) was 3.6~3.9%, 2.1~2.2% and 1.3~1.4%, respectively. Lettuce dry weight of MLF3 treatment blending with MOF (60%), LMC (10%) and FWP (30%) was increased by about 29% than that of MOF. The content of N, P2O5 and K2O of mixture of MOF, CPM, FWP and ABF (MCFA) was 4.5~4.7%, 1.7~1.9% and 1.3~1.4%, respectively. Compared to MOF, growth factors of lettuce and Chinese cabbage in the MCFA treatments were not significantly deferent. These results indicated that MLFs and MCFAs, the mixtures of respectively organic sources and MOF, could be applied as orgnic fertilizer in the cultivation of lettuce and Chinese cabbage, and were expected that LMC and ABF might be used as another sources of organic fertilizer.

  • This study was carried out in order to investigate the feasibility of utilizing concentrated sunmul (soybean curd whey), which is a waste by-product of soybean curd processing, as a functional food ingredient. Sunmul Powder was concentrated by ultrafiltration and spray dried with or without dextrin. Oil adsorption capacity of UF retentate powder was similar to that of ISP (Isolated Soy Protein) and higher than that of sunmul powder, whereas water holding capacity of UF retentate powder was lower than that of ISP. Protein solubility of all types of UF retentate powder was significantly higher than that of ISP at pH 2.0-10.0 with the lowest protein solubility seen at pH 4.0 and solubility increasing as the conditions became more acidic or alkaline. Emulsifying activity indexes of UF retentate powder at pH 2.0-10.0 were not influenced by pH. Emulsion stability of 4% sunmul solution was lowest at pH 4.0, but that of UF retentate powder was higher at acidic pH values and decreased with increasing pH. Foaming capacities of sunmul and UF retentate powder were high at pH 4.0-6.0, but the foam of UF retentate powder disappeared within 20 minutes in all conditions of pH.

  • This study examined the characteristics of eggs obtained from layer chickens reared with feed that included Tenebrio molitor larvae, which were in turn bred using feed that included dried food waste powder. The eggs showed a tendency to be slightly thinner in the treated groups, but the Haugh unit indicating freshness was higher in the treated groups than the control group, and the 5% larval-treated group showed the highest value. The color of the yolk tended toward higher redness, lower brightness, and lower yellowness in the 5%-treated group, which also showed similar crude fat and protein values to the control group; the 10%- and 15% larval-treated groups had lower crude fat and protein values, although the carbohydrate content was higher. Structural amino acids in the treated groups showed a higher ratio of non-essential amino acids to essential amino acids than the control. The polyphenol content, which is an index of antioxidants, was highest in the 5%-treated group, and it is thought that this may affect the storage and antioxidant properties of the eggs. Thus, when employed with a feed source to maintain high protein and high fat, T. molitor larvae may cause critical changes in the nutrient content of eggs and improve their freshness.

  • This study was designed to investigate the feasibility of utilizing concentrates of sunmul(soybean curd whey), the waste by-product of soybean curd processing, as functional food ingredients. Sunmul was concentrated by nanofiltration fo11owing ultrafiltration and then freeze-dried. The oil adsorption capacity of the nanofiltraion(NF) powder(97.33g/100g) was similar to that of sunmul powder(94.17g/100g), but was lower than that of ISP(isolated soy protein). However, the water holding capacity of NF powder could not be determined because the NF powder completely dissolved in water. The protein solubilities of sunmul powder and ISP in distilled H$_{2}$O, 0.1M and 0.5M NaCl were lowest at pH 4.0 and increased at more acidic or alkaline conditions. However, the protein solubility of NF powder was at its minimum at pH 6.0 and increased at more acidic or alkaline conditions. Emulsifying activity indexes of NF powder in 4% and 6% solution were minimal at pH 4.0 and 6.0, respectively, which were 3 to 8 times lower than that of sunmul powder. The emulsion stability of 4% sunmul solution was lowest at pH 4.0, but that of NF powder was highest at pH 5.0 and decreased at more acidic or alkaline conditions at all concentrations of solution. The total free amino acid contents of protein in sunmul, and NF power were 99.07 and 2,110.10mg%, respectively, and NF powder exhibited especially high threonine content. Rapid viscosity analysis of dough with 1 to 5% added NF powder demonstrated that all of the peak and final viscosities decreased with increasing NF powder concentration compared to the control.

  • The removal of chlorine from aqueous solutions on dried Chlorella vulgaris(DCV) and green tea powder(GTP) were investigated as a function of contact time, pH and initial chlorine concentration. Removal by DCV and GTP reached equilibrium after 3hrs and 0.5hr, respectively. Optimum removal pH values of DCV and GTP were determined as above 10. Both Langmuir and Freundlich adsorption models were suitable for describing the short-term removal of chlorine by DCV and GTP. According to Langmuir adsorption isotherms the maximum removal capacity of DCV (2.75mg $Cl_2/mg$) was nearly two times greater than those of GTP (1.53mg $Cl_2/mg$) and activated carbon (1.47mg $Cl_2/mg$). These results suggested that Chlorella vulgaris biomass might potentially be used as an alternative to traditional water treatment materials for removal of residual chlorine in drinking water or process waste-water.
