외식산업 서비스회복공정성 지각과 관계혜택, 관계만족 및 장기관계지향성간의 인과관계 연구 (The Causal Relationship between Perceived Service Recovery Justice, and Relationship Benefit, Relationship Satisfaction and Long-tenn Relationship Orientation)

  • 본 연구는 외식산업 고객을 대상으로 외식산업의 서비스회복 공정성이 관계혜택, 관계만족과 장기관계지향성에 미치는 영향을 알아봄으로써 마케팅 경영전략 차원에서 효과적인 마케팅 전략을 수립하는데 목적을 갖고 연구하였다. 연구결과 서비스 회복 공정성의 절차, 상호작용, 분배공정성에 따른 관계혜택에 긍정적인 영향을 미치고, 관계혜택을 통해 고객만족을 극대화시켜 종국적으로는 장기적 우호고객으로 상호관계가 지속될 수 있음을 시사해 주었다. 이는 서비스기업들이 서비스와 관련된 목표를 정하고 여러 가지 노력에도 불구하고 서비스 실패는 다양한 내 외부적 요인에 의하여 빈번하게 발생하고 있으므로 이러한 서비스 실패에 적극적으로 대처하고 고객만족과 장기관계지향성을 유지하기 위하여 서비스 회복전략차원에서 공정한 관계혜택을 통한 적극적인 노력이 요구됨을 입증해 준 것이라 할 수 있다.

경북 지역 전통식품 가공업체의 생산.경영 및 수출실태 연구 (Studies on the Actual Status of Production, Management and Export of Traditional Food Processing Company in Kyungpook Province)

  • The actual status of production, management and export of 96 traditional food processing companies which supported by the government in Kyungpook province were investigated. Governmental support contributed to the increase of farmhouse income, employment and depreciation of agricultural products a bit, but it was supported mostly to unexperienced party. Technologies for food processing developed in institute and college were little. 42 percent of packaging design was developed by service commission, but the agency was very limited. Total export price in 1996 was 2.3 billion Won, but it was decreased in 1997. The responce to the prospect of traditional food processing work, 37.5 percent replied that this work can bring up as exportable product, but ambiguious response was a little. To settle a weakness of farming food processing work, the establishment of special marketing comapny was required and this company should accomplish marketing advertizing and exporting business.

건설 사업장 휴게시설이 재해감소에 미치는 영향에 관한 연구 (A study on effects of resting facility on the Reduction of Disasters in Construction Projects)

  • This researcher selected basic variable to investigate the effective relations of establishment and management of resting facility on reduction of constructional disasters and safety accidents and improvement of working efficiency for construction workers. Based on the measured variables, this researcher investigated phenomenon, recognition and satisfaction for using and demanding resting facility by long-term construction in construction site for workers of huge construction site in Seoul, conducted survey of total 219 questionnaires so as to grasp implications of workers' resting facility demanded in long-term huge construction site and effects on reduction of disasters and conducted structural equation analysis. As a result, resting faciity factor, management factor, and hygienic service factor were significant and resting and food factors were not significant. Therefore, it's expected to reduce personal disaster by improving quality of constructional resting facility, hygienic service, and resting facility management and especially, resting facility management factor makes lots of effects on prevention of personal disasters, so it was a strongly main factor. By suggesting the guideline of establishment and management service of proper resting facility through this research, positive recognition and constructional disaster reduction can be expected in construction site.

  • The production, processing, sale and service of food materials are not subject to attainment via a single country. In accordance with internationalization of the world, issues related to food safety have emerged as critical international concerns and they are closely associated with the health and interest of domestic consumers, producers, manufacturers, and distributors. As a third party certification standards, ISO 22000 is in progress International Organization for Standardization(ISO) and the Draft International Standard(DIS) has already been presented on December 2004. The purpose of this study is to analyze the international standards, guidelines and legislation in regard of Food Safety Management System(FSMS) including ISO 9001, Hazard Analysis Critical Control Point(HACCP) and Product Liability(PL) so as to present Korean-model Food Safety Management System requirements and system establishment model.

  • 서비스산업이 국가경제에 미치는 영향이 커지고 국내 GDP비중과 고용비중에 미치는 영향이 지속적으로 증가함에 따라 2006년 12월에 정부가 서비스산업의 경쟁력을 강화시키기 위한 종합대책을 발표하였다. 이와 같이 서비스산업의 경쟁력을 제고시키기 위한 정부의 노력이 강화되고 있는 이 시점에서 서비스품질 평가에 관한 주제는 시사하는 바가 크다. 이러한 서비스품질 평가는 서비스산업의 생존과 수익성에 지대한 영향을 미치므로 서비스품질에 대한 객관적인 평가문제는 매우 중요하다. 따라서 본 연구의 목적은 주관적 환경에서 주관성을 고려하여 서비스품질을 평가하고, 평가결과에 대한 객관성을 보장하기 위하여 퍼지이론과 AHP모형을 이용한 통합모형을 개발하였고, 이는 서비스산업 경쟁력 제고뿐만 아니라 효과적인 의사결정 수립에 도움을 줄 것으로 사료된다.

학교급식 영양(교)사의 경험에 따른 로컬푸드 이용에 대한 인식 및 발전방향에 관한 질적 연구 (A Qualitative Research on Self-Awareness and Improvement in Local Food Utilization depending on the Experience of School Dieticians and Nutrition Teachers)

  • In the present study, we conducted in-depth interviews with school dieticians and nutrition teachers to determine the local foods they were aware of and their experiences with local foods. We also aimed to obtain more detailed measures for local food vitalization and suggestions for improvements. In-depth interviews were performed with 8 school dieticians and nutrition teachers, who stated that local food vitalization was needed for school food services, because it could be a foundation for securing safefood products, student healthi mprovements, environmental protection, and the establishment of a general consumption market. However, they were aware of a higher number of disadvantages than advantages in school situations and indicated the deterioration of the quality of food products as the biggest disadvantage. The most-suggested measurement items for local food vitalization in schools included improvement of the food distribution system, expansion of education, information sharing, prevention of monopolies, improvement of food-product quality, and mass production. In addition, it was suggested that school dieticians and nutrition teachers should invest efforts in the development of excellent recipes and varied diets utilizing local foods. Therefore, system supplementation is urgently required in order for school food service officials, and consumers, to efficiently introduce and vitalize local foods. It is also necessary to foster an environment that encourages trust-based relationships with producers to maximize the effect of system supplementation. This would be the foundation for improving the health of students, improving food-service quality, nutrition management, and vitalization of the regional economy in the future, and will positively affect students' food consumption patterns even after they become adults.

산업체 급식소에서 제공되는 콩국수의 미생물적 품질관리에 관한 연구( I ) (A Study on Microbiological Quality & Safty Control of Cold Sybean Noondles serviced by an Industry Foodservice Establishment)

  • This study is written to look into microbiological quality by passage of time and holding methods after making foods, by means of evaluating time, temperature and microbiological quality during various phases in product flow of cold soybean noodles serviced by an industry feeding operation for 500 persons a day, measuring pH & Aw and analyzing factors affecting microbiological growth conditions. The results were as follows: 1. According to phases in product flow of cold soybean noodles, it showed 15.6 hours of mean of needed time, $24.2^{\circ}C$ of room temperature, 5.1~7.6 of pH value & 0.95~0.98 of Aw except dry noodles. These conditions were good for multipling of microbe, and the phases with potential sanitary danger were ingredient, pre-preparation, holding before assembly and service and assembly & service. 2. As for holding methods and passage of time, holding at cold table was more effective than holding at room temperature as time past. 3. As for equipments using for making food, dipper, basket, kitchen board & kitchen towel showed high microbiological value in total aerobic plate counts and kitchen towel and stainless-steel were showed high microbioloical value in coliform counts. 4. E. coli, food poisoning bacteria was detected from barrel filled with soybean soup and also soybean itself.

울산 및 대구지역 레스토랑의 브랜드 퍼스넬리티가 브랜드 인지${\cdot}$연상, 브랜드 감성-관계 및 브랜드 이미지 및 브랜드 애호도에 미치는 영향 (The Effects of Brand Personality on Brand Awareness/Association, Brand Emotion-Relationship, Brand Image and Brand Loyalty in Family Restaurant of Ulsan and Daegu)

  • The present study assessed how restaurant brand personality affected customer’s awareness/association, emotional-relationship and image, and how these factors influenced brand loyalty. As well, the influence of restaurant brand personality to brand loyalty was assessed. The model was tested in family restaurants in the metropolitan cities of Ulsan and Daegu. Between January 1 and February 28, 2007, questionnaires were distributed to restaurant patrons. A total of 274 questionnaires were statistically analyzed. Empirical results confirmed that restaurant brand personality increased brand awareness/association, brand emotional?relationship and brand image, and that these attributes increased brand loyalty. Restaurant brand personality affected brand loyalty. The research findings indicate that managers of family restaurants should pay attention to the emotional reaction of customers to their establishment. This involves employee actions that make dining a pleasurable experience.

  • This review was conducted to evaluate the 'Korean Food Composition Table' and establish it as an internationally accepted database by examining its contents and evolution over time. The food composition table has been published by National Rural Living Science Institute, every 5 years, listing the nutrient content for each food, as both the raw agricultural product and processed foods, since the 1$^{st}$ edition in 1979 by RDA (Rural Development Administration). This is the basic data applied to the evaluation of the nutritional value of foods in Korea. The data is used as a useful tool in many fields, not only for the establishment of the National Food Supply Plan but also for nutritional research, the draft of National Food Policy, and in clinical and epidemiological research. The database is also utilized by food service providers and food processors, etc. Consumers and the international society have been interested in the quality and safety of foods and raw agricultural products. As these data expand in volume, the type of foods included in the composition table is expanded to cover new additions for the convenience of users of the 'Nutrient Data Base' as judged by the publishers. The form of these reports varies, according to the current information, from a simple booklet to CD-ROM and to the Web service. We expect to continue to make improvements in the National Standard Table for food composition through expanding both the quantity and quality of data in an orderly manner. This effort can help food composition data to be comprehensively developed systematically and gradually at the national level.l.

온라인 음식 배달 서비스 회복 전략의 실패가 소비자 태도 및 행동 의도에 미치는 영향: 공정성 이론(Justice Theory)을 중심으로 (The Effect of Failure of Online Food Delivery Service Recovery Strategies on Consumer Attitude and Behavioral Intention: Focusing on Justice Theory)

  • 본 연구에서는 코로나19로 인한 비대면 소비 증가로 크게 성장한 온라인 음식 배달 서비스(Online food delivery service, OFDS)기업에서 제시하는 서비스 회복 방안에 대한 불공정 인식이 소비자의 실망감에 미치는 영향을 실증적으로 분석하였다. 본 연구는 공정성 이론(Justice theory)을 기반으로 하여, 공정성 인식의 하위요인으로 절차의 공정성, 상호작용의 공정성, 정보의 공정성, 분배의 공정성을 채택하였다. 더불어, 서비스 회복 실패에 따른 실망감으로 인한 부정적 구전행동 및 전환의도 간의 관계에서 세대별(MZ세대와 그 외 세대) 차이점을 살펴보았다. 본 연구모델의 실증분석을 위하여 미국 내 성인 소비자 250명을 대상으로 온라인 설문조사를 실시하였고, 분석 결과 서비스 회복 방안 중 절차의 공정성과 분배의 공정성에 대한 부정적 인식이 소비자 실망감에 정(+)의 영향을 미치는 것으로 나타났다. 또한, 서비스 회복 전략에 대한 불공정성 인식으로 인한 소비자의 실망감은 소비자의 부정적 구전행동과 전환 의도에 정(+)의 영향을 미치는 것으로 확인되었다. 본 연구는 서비스 회복 전략의 실패로 인한 소비자의 역기능적 행동(Dysfunctional behavior)을 검증함으로써 서비스 회복과정의 공정성 인식에 관한 새로운 관점을 제시하며 관련 연구의 범위를 확장하였다. 본 연구의 결과는 소비자의 이중 이탈을 방지하기 위한 온라인 음식 배달 서비스 기업의 실무 전략 수립의 기초자료로 활용될 것으로 기대된다.
