중학교 급식 만족도에 영향을 주는 급식 품질 속성 비교 연구 - 연도별 변화 추이를 중심으로 - (Comparative Analysis of the Quality Attributes Affecting Students' Satisfaction on School Lunch Service of Middle School by Year)

  • This study was conducted to investigate quality attributes which could affect foodservice satisfaction by the year (2005, 2008, 2011) and dining area (classroom vs. dining hall) in order to find ways to improve school lunch service and foodservice satisfaction of middle school students. The numbers of those surveyed were 1,103 students in 2005, 1,917 students in 2008, and 1,921 students in 2011. Overall foodservice satisfaction was significantly increased gradually in dining hall food service: $3.29{\pm}1.21$ in 2005, $3.45{\pm}1.00$ in 2008, $3.94{\pm}0.98$ in 2011. In classroom food service, overall foodservice satisfaction was not significantly different between in 2005 ($3.09{\pm}0.97$) and in 2008 ($2.98{\pm}1.02$), but it was significantly increased in 2011 ($4.05{\pm}1.00$). Stepwise multiple regression analysis showed that overall foodservice satisfaction was most affected by the taste of food. The importance of 11 quality attributes except food sanitation and gathering feedback on school meals was significantly increased in 2011 compared with 2005. Food sanitation among 13 attributes was most important attribute in 2005 and 2011. The numbers of quality attributes affecting students' overall foodservice satisfaction were 5 to 7 by year, those attributes were almost identical with attributes which students thought importantly. Therefore, in order to increase the overall foodservice satisfaction of the school lunch service continually, it is recommended to identify the quality attributes that are important to students, and to check their levels of performance in order to overcome their differences.

어린이급식관리지원센터 지원 서비스 만족도 조사를 통한 성과 분석과 발전 방향 (A Performance Analysis by the Satisfaction Survey for Center for Children's Foodservice Management and Developmental Direction)

  • This study sought to understand the requirements of registered institutions and parents of beneficiary children's through a satisfaction survey conducted at Center for Children's Foodservice Management (CCFSM) and to improve quality to create a model example of site-based meal safety management in accordance with population trends. In 2019, the comprehensive satisfaction level of the director and parents rose 2.4 points and 2.9 points, respectively, compared to the previous year, and the comprehensive satisfaction level of the director and parents continued to rise from 2015 to 2019. The gap between the highest and lowest institutions is narrowed to 13.5 points year-on-year from 21.4 points. National Institute of Food and Nutrition Service will need to make efforts to upgrade regional centers through (Human Resource Development(HRD) training to strengthen their job-specific capabilities and minimize the standard deviation of each center. Since local centers are distributed across the country and have field-oriented service support systems, CCFSM will need to manage the healthy eating habits of the underprivileged, provide information necessary to establish proper eating habits, strengthen education, and establish a customized food safety service system.

충북지역 유치원 급식품질에 대한 학부모 만족도 (Parents' Satisfaction on Foodservice Quality of Kindergartens in Chungbuk Province)

  • 본 연구는 충북지역 유치원 재학원아의 학부모 312명을 대상으로 급식의 이용실태, 인식, 31개 급식품질특성에 대한 중요도 및 수행도와 전반적인 만족도를 분석함으로써 향후 유치원 급식의 질 향상과 합리적인 운영에 기초가 되는 자료를 제공하고자 하였다. 조사대상인 학부모 중 여성이 66.7%, 남성이 33.3%이었으며, 아버지의 직업은 84.5%가 직장인이었으며 어머니의 직업은 54.5%가 직장인이었다. 조사대상 유치원에 재학 중인 자녀는 남자가 61.2%, 여자 38.8%로 나타났고 자녀의 나이는 만 5세가 36.5%로 가장 많았다. 유치원의 급식담당자를 대상으로 급식 운영 실태를 조사한 결과 영양사가 배치된 곳은 77.3%이었으며 영양사 미배치 시 식단 작성은 원장, 원감 또는 보육정보센터를 이용하는 경우가 40%로 높았다. 조리사가 배치된 유치원은 81.8%이었으며 배치된 조리사의 수가 1명인 경우가 대부분으로 조사되었으며 식사장소로는 유치원 전용급식실 이용하는 곳이 29.6%로 나타났고 급식비는 1달 20일 기준으로 평균 1927.95원이었다. 학부모대상 유치원 급식에 대한 의견조사 결과 급식 참여이유에 대해 '시간 연장제, 종일제 수업으로 인하여'가 50.5%로 가장 높은 응답률을 나타냈고, 점심급식 이외의 추가급식을 원하는지에 대해서는 추가급식을 원하지 않는 경우가 71.5%로 나타났다. 학부모의 급식 필요성에 대한 인식도 조사 결과 평균 4.46점으로 나타나 높은 수준인 것으로 나타났으며 유치원 급식서비스 품질특성에 대한 중요도 및 수행도 측정도구의 타당성을 검증하기 위한 요인분석결과 31개 속성들은 음식, 메뉴, 시설, 위생, 분위기, 급식효과 영역의 6개 영역으로 구분되었다. 급식 품질특성에 대한 중요도와 수행도 분석결과 속성과 영역 모두에서 중요도가 수행도 보다 높게 평가되어 모든 품질에 대해 개선이 요구되는 것으로 나타났다. 중요도-수행도 분석결과를 도식화 한 결과 '식탁 및 의자의 안전성', '환기', '식기의 위생', '식탁 및 의자의 위생', '식탁 및 의자의 위생'으로 속성이 중요하다고 판단되지만 잘 수행되지 않는 것으로 나타났다. 유치원이 위치한 지역, 시설유형, 급식운영 형태에 따라 학부모가 인식하는 급식의 중요도 및 수행도를 비교한 결과 군지역의 중요도 및 수행도 점수가 더 높았고 위생영역은 사립유치원에서, 급식의 효과 영역은 국 공립 유치원에서의 수행도 점수가 높았으며 공동운영일 경우 중요도 및 수행도 점수가 더 높았다. 유치원 급식에 대한 전반적인 만족도를 조사한 결과 평균 3.74점으로 보통수준의 만족도 점수를 나타냈다. 전반적인 만족도에 영향을 주는 급식품질속성을 분석한 결과 31개 속성들이 전반적인 만족도에 대해 46.31%의 설명력을 보였으며 '안전한 식재료'가 전반적인 만족도에 가장 유의한 영향을 주는 것으로 나타났다. 따라서 정부보조금의 확대와 시설운영에 있어서 보다 적극적인 행정기관의 지원 체계 강화가 요구되며 급식의 원료자원인 음식 및 물적 자원인 급식관련 시설 위생과 식사시설의 지속적인 개선이 요구된다. 또한 전반적인 만족도에 영향을 주는 급식서비스 품질속성을 고려하여 보다 보완되고 체계화된 유치원 급식프로 그램의 명문화가 요구된다.

부산지역 요양병원 영양사의 직무수행도, 중요성인식도 및 직무만족도 (Job Performance, Perception of Job Importance, and Job Satisfaction in Dietitians Working in Geriatric Hospitals in Busan)

  • This study was carried out to investigate the job performance, perception of job importance, and job satisfaction in dietitians working in geriatric hospitals in Busan. A survey was conducted from April 28 to June 30, 2011, and the data were analyzed using the SPSS program. The age of over 41 group showed higher job performance in terms of sanitation and safety management than the age of under 25 group but showed lower job performance in terms of nutrition management than the age of 31~40 group. The subjects who worked for shorter than 2 years at their present jobs showed the lower job performance in terms of menu management and accounting management than the other groups, whereas those who worked in 'over 200 bed' hospitals showed the higher job performance in terms of sanitation and safety management than the others. The subjects who worked for longer than 6 years showed the higher job satisfaction in terms of communication and working environment than the others. Job performance showed a significant positive correlation with perception of job importance, whereas it showed no significant correlation with job satisfaction. More work experience correlated with a higher monthly income, and younger workers showed higher job performance. Younger age and more work experience at a present job correlated with a higher perception of job importance. More work experience at a present job, higher monthly income, and shorter work experience were correlated with higher job satisfaction. These results suggest that it would be effective to adopt training programs for appropriate nutrition service and provide continuous education programs for professional development.

병원 영양부서 평가지표에 대한 중요도-수행도 분석 (Importance-Performance Analysis of Evaluation Indicators in Hospital Nutrition Department)

  • This study has attempted to collect actual spot's opinions and analyze importance-performance of indicators for the evaluation of hospital nutrition department. The results of this research were as follows: first, the average score of self-estimated performance was 3.75 based on a 5-point scale. The degrees of importance of hospital foodservice and nutrition department management were in the range of 3.71~4.85 out of 5.0 and the mean importance degree score was 4.37. Second, the average score of self-estimated performance in each category was significantly higher in the case of general special hospital compared to general hospital. Especially average performance score of nutrition management in the general special hospital was higher than that of general hospital (P<0.001). The average performance score of the hospital with more beds was significantly higher than that with less beds. Contract managed hospital's score was significantly higher than that of self-operated hospital in two categories, "facilities management" and "nutrition management" (P<0.05, P<0.01). In foodservice and nutrition management of task-separated hospitals, the average performance scores were significantly higher than those of not-separated hospitals (P<0.01, P<0.001). Third, according to the importance-performance analysis of recognition about indicators for the hospital nutrition department's operations evaluation, 'foodservice facilities management' and 'foodservice sanitation management' were in 'doing great', 'nutritional management' and 'operational management' were in 'low priority', and 'other foodservice management' was in 'overdone'. In conclusion, there's a need for institutional specific standards of sanitation for Korean hospital foodservice.

중요도-수행도 분석을 이용한 대학 기숙사 급식소의 서비스 품질 속성에 대한 고객 인식분석 (Customer Perception Levels towards Service Quality Attributes of University Residence Hall Foodservice by Importance-Performance Analysis)

  • The purpose of this study was to analyze university students' perception of service quality attributes in residence hall foodservice. Questionnaires were hand delivered to 1,210 university students residing in a residence hall. A total of 1,011 was usable, resulting in an 83.6% response rate. The survey was conducted between October, 1998 and May, 1999. A statistical data analysis was completed using the SAS/Win 6.12 for Descriptive Analysis, $X^2$-test, t-test, ANOVA, Spearman Correlation, and Common factor Analysis, and Importance- Performance Analysis(IPA) was completed. Significant negative correlations between importance and performance were found with 'abundance of foods'(p < 0.001), 'discontent handling'(p < 0.001), and 'availability of new menus'(p < 0.01). factors including food, menu, sanitation, atmosphere, facilities, employee's attitude, and convenience were rearranged and a new dimension was created with the service. Employee's attitude and service factors received the highest scores in customer perception of importance and performance. Food, menu, and convenience factors were included in Quadrant A. female students had significantly higher importance mean scores than males, while males had significantly higher Performance mean scores. IPA분석을 통한 미취학 아동 급식의 급식서비스 품질특성 및 급식운영 평가 - 한국·중국·일본의 미취학 아동을 자녀로 둔 부모를 대상으로 - (An Evaluation of the Foodservice Quality and Management of Preschool Foodservice Establishments by IPA - Focusing on Parents of Preschoolers in Metropolitan Area of Korea, China and Japan -)

  • This study was targeted on the Korean, Chinese, and Japanese parents of preschoolers to investigate the importance and satisfaction of foodservice quality and the importance and performance of foodservice management of the preschool foodservice establishments. The present study conducted a survey on 390 randomly chosen parents of preschoolers (130 Korean, 130 Chinese, and 130 Japanese). Respondents' importance-satisfaction of foodservice quality characteristics and their importance-performance of foodservice management were measured. In order to test for differences between the groups, paired t-test, one way ANOVA, and IPA (Importance-Performance Analysis) were performed. The results were as follows. The importance of foodservice quality was significantly higher than the satisfaction on all items, according to the parents of Korea, China, and Japan. The importance of foodservice quality was higher in Korean parents than in Chinese and Japanese parents. According to ISA results with foodservice quality characteristics, the characteristics with relatively low satisfaction but high importance (II quadrant) was 'Diversity of menu' in both Korean and Chinese parents, and 'Sanitation of tables and chairs' in both Korean and Japanese parents. The importance of foodservice management was significantly higher than performance on all items in Korean, Chinese and Japanese parents. The performance of foodservice management was higher in Chinese than in Japanese and Korean parents. According to IPA results with foodservice management, the management with relatively low performance but high importance (II quadrant) was 'Preparation' in Korean parents, and 'Facility and equipment' in Japanese parents. Therefore, the items with relatively low satisfaction (performance) and high importance should be well-managed.

충북지역 학교급식의 만족도 분석 (An Analysis on the Satisfaction with the Quality of School Foodservice in Chungbuk Province)

  • The purposes of this study were to identify the students’ perception and to evaluate the satisfaction with the quality of school foodservice in Chungbuk Province. A questionnaire survey of 900 students was conducted and 370 completed questionnaires were available for the purpose of the statistical evaluation. Statistical analyses were performed on the data utilizing the SAS V8.2 program. Importance, performance and satisfaction scale were composed of 5-Likert scales. The main results of this study were summarized as follows: The degree of importance and performance on twenty three attributes and the degree of satisfaction with four dimensions and overall satisfaction were measured according to type of school, location of school, place for eating, type of foodservice system and type of foodservice operation. The importance score was significantly higher than the performance score at all quality attributes except for the food appearance. The performance score of ‘waiting time’ and ‘atmosphere’ was less than 3 point out of 5 scale. The average satisfaction score for the quality dimensions of food, sanitation and service was 3.35, 3.19 and 3.10 point out of 5 scale, respectively. The satisfaction score for dimension of environment was 2.93 point out of 5 scale. The score for overall satisfaction was 3.27 point out of 5 scale. The satisfaction score for elementary school foodservice management was significantly higher than middle and high school foodservices. The satisfaction score for commissary foodservice operations was significantly higher than conventional foodservice operations. Using survey results as a base, the dieticians of school foodservice are required to meet the needs of the students and increase students’ satisfaction.

부산지역 고등학교 급식서비스에 대한 학생과 급식종사자의 평가 (An The Evaluation of the Perception of Students and Employees for Foodservice Characteristics of in High Schools in the Busan Area)

  • The purpose of this study was to evaluate the perception of students' and employees' perception with for their high school foodservicein Busan area. For this purpose, questionnaires were distributed among the 324 students and 93 employees in 12 high schools in the Busan area. The students assessed the importance and performance of school foodservice as 4.00/5.00 and 2.97/5.00., respectively, and T the employees assessed the importance and performance of as 4.07/5.00 and 3.77/5.00, respectively. The importance mean scores of students wereshowed significantly (p<0.01) higher scores in internal environment factor and sanitation factor than those of employees, but the performance mean scores of students wereshowed significantly (p<0.01) lower scores in all the factors than those of employees. The importance grid of students and employees showed that the items of the high with to the low with of consideration of preference in menu, appropriate the meal hours, rapidnessrapidity of service, and prompt dealing with complaints were high scores to the students, but low scores to the employees. The performance grid of students and employees showed that the items of the low with students to the high with employeesfreshness of food ingredients, offering the consistency of consistently good service, rapidnessrapidity of service, prompt dealing with complaints, communication between students and employees, and food cleanliness were low scores to the students, but high scores to the employees of dish. Therefore, it would seem to be desirable that the foodservice manager may be plans the strategies with the involvement of students in the process from planning the menu to proposinge of ideas for improvement.

경북 지역 보육 시설 급식소의 위생 관리에 대한 중요도-수행도 조사 (Analyzing the Importance and Performance of Sanitation Management within Childcare Center Foodservice Facilities in Gyeongbuk Province)

  • 보육 시설 급식소의 위생 관리에 대한 문제점을 파악하고 위생 관리 개선방안 모색을 위한 기초 자료를 제공하고자 경북지역 급식 위생 및 안전교육에 참가한 보육 시설 관리자를 대상으로 보육 시설 급식소의 위생 관리에 대한 중요도-수행도를 조사한 결과는 다음과 같다. 1. 급식소의 급식 위생 교육에 참가한 보육 시설 관리자는 40대가 49.1%로 가장 많았고, 관리자의 학력은 대학교 졸업이 61.5%로 가장 많았다. 교육에 참가한 관리자 중 7.8%가 시설장이었으며, 교육 참가자 대부분의 고용 형태는 정규직 90.3% 였다. 시설 유형으로는 가정이 39.9%, 원아 수는 20명 이하가 45.3%로 가장 높게 나타났다. 2. 보육 시설 급식소 위생 관리에 대한 중요도-수행도 분석의 결과, 중요도는 5점 만점에 4.49점으로 '식재료 보관실은 항상 청결 유지'(4.87점), '식기류 및 조리기구의 세척 소독'(4.85점), '유통기한 확인 및 선입 선출 준수'(4.85점), '조리 후 관리 및 오염 방지를 위한 조치'(4.73점), '쓰레기 및 잔반은 즉시처리'(4.73점) 등의 순위로 중요도가 높았다. 한편, '표준 레시피를 작성'(4.06점), '영양사나 교사는 검식 후 검식일지 작성 및 배식 점검'(4.03점) 항목은 중요도 평가 점수가 상대적으로 낮았다. 수행도 평가 결과 '유통기간 확인 및 선입 선출 준수'(4.73점), '식기류 및 조리기구의 세척 소독'(4.72점), '조리 후 2시간 이내 배식'(4.68점) 순으로 높게 평가되었다. 한편, '영양사나 교사는 검식 후 검식일지 작성 및 배식 점검'(3.46점), '가열 식품의 중심 온도($74^{\circ}C$ 이상) 측정확인'(3.51점), '식재료 검수일지를 작성 보관'(3.53점), '표준 레시피를 작성'(3.56점)의 순으로 수행도가 낮았다. 3. 보육 시설 급식소 위생 관리에 대한 중요도-수행도 IPA 평가 결과, 중요도와 수행도가 모두 높게 평가된 항목은 현 수준을 유지하는 것이 적정하다고 본 항목은 '작업 전 건강상태를 확인(감기, 설사, 손 상처자 등 조리금지)', '유통기간 확인 및 선입 선출을 준수', '식재료 보관실은 항상 청결을 유지', '조리 후 관리 및 오염 방지를 위한 조치' 등 24개 조사 항목 중 14개 항목으로 전체 조사 항목의 58.2%였다. 중요도와 수행도가 모두 낮아 우선 순위가 낮은 것으로 평가된 항목은 '위생복, 위생화, 앞치마, 위생모 착용', '배식 시 배식 전용기구, 마스크, 위생장갑을 사용', '가열 식품의 중심 온도($74^{\circ}C$ 이상)를 측정 확인', '보존식 보존 및 관리기준을 준수', '식재료의 입고날짜를 기록한 라벨을 부착' 등으로 전체 조사 항목의 41.8%였다. 중요도는 낮지만 수행도가 높은 것으로 평가된 영역(D사분면의 'Overdone')은 나타나지 않았다. 위의 결과를 종합해볼 때 보육 시설 관리자가 인식하고 있는 중요도에 비해 수행도가 낮음을 알 수 있다. 따라서 보육시설 관리자들의 위생 관리에 대한 지속적인 교육이 필요하다고 사료된다.
