  • This study was designed to investigate factors related to recovery from cerebrovascular accidents(CVA). Medical charts of 100 CVA patients(40 males and 60 females) who had been treated at Bul-Guang hospital in Teagu from June to December 1994 were reviewed to assess their recovery from CVA. Not only types of CVA, blood pressure and serum cholesterol and triglyceride were factors affecting recovery from CVA, but also smoking and drinking status and food preference seemed to be important factors. The percentages of recovered patients were higher in the order of cerebral thrombosis(83.3$\%$), subarachnoid hemorrhage(57.1$\%$), cerebral embolism(50.0$\%$), and cerebral hemorrhage(26.7$\%$). Recovery rates of patients with serum cholesterol below 200mg/dl, 200-239mg/dl, over 240mg/dl were 81.8$\%$, 66.6$\%$, and 16.6$\%$ respectively. Recovery rates of patients with serum triglyceride below 160mg/dl, 160-209mg/dl, and oover 210mg/dl were 84.6%, 72.8$\%$, and 35.7$\%$ respectively. Patients with standard weight recovered better than those with overweight or obesity. Recovery rates of underweight, standard weight, overweight and obesity patients were 73.3$\%$, 85.7$\%$, 45.8$\%$, and 31.6$\%$ respectively. Smoking and drinking seemed to be important factors which inhibited recovery from CVA. Patients preferring spiced foods were recovered better than those preferring salty or pungent foods. • The purpose of this study was to investigate the eating behavior and life habits of kindergarten children 5 to 7 years old in Chuncheon area. This study was conducted in December, 1996. Anthropometric indices(height, weight, skinfold thickness, mid-arm circumference) were measured and body mass index(BMI), Rohrer index, arm fat area were calculated to estimate children’s body fatness. Also the eating behavior and life habits were determined tv using questionnaire method. The results were as follows: Body fat rate of the children was almost normal according to Rohrer index and BMI. There was significant difference in birth weight between male and female. The problems of the eating behavior were frequent skipping breakfast and eating-out. The rate of the children who took snacks 2 times a day was 46.9%. Most children tended to take sweet snacks such as ice-cream, chocolates, cookies, and they tended to prefer meats and fishes to vegetables. The rate of breast feeding was 28.3% and the rate of weaning foods prepared at home was 61.1%. Many children preferred indoor activities such as watching TV, toy furniture play, building block to outdoor activities such as roller-skating, cycling, jogging in their spare time. The rate of the children who took exercise regularly was 15%. Children tended to eat kimbap, fried chicken, ramyeon more frequently in various instant foods. The intake rates of fruit juice and barly tea were relatively high and children's favorite fruits were watermelon and mandarin orange. From this results, skipping breakfast, frequent eating-out and the monotony of food preference appears to cause imbalance in nutrient intakes of the children and to have bad influence on children’s health. Accodgingiy, the comprehensive nutrition education and proper modification program should be needed for the children and their parents to correct the eating behavior and life habits. The reasonable exercise programs are needed to motivate outdoor activities of the children, and the importance of breast feeding and weaning foods should be emphasized to lactating women and pregnant women.

  • In this study, we compared the quality and sensory characteristics of 4 types of fresh tomatoes and 2 types of canned tomatoes, and then determined the most preferred quality characteristics and tomato type for the production of tomato sauce. The sample tomatoes were prepared by cutting after either peeling or heating for 5 min. Soluble solids were in the following order: Italian canned >American canned, Cherry> Vita king > Aranka > general tomatoes. The primary free sugars were fructose and glucose, and we determined that fructose and glucose were the most prevalent sugars in the cherry and American canned tomatoes. The total sugars, which were the sum of the fructose and glucose contents, were consistent with the soluble solid contents. pH was measured in the following order: general> Italian canned> Cherry, Vitaking> Aranka> American canned tomatoes. The most abundant amino acid was glutamic acid, and its content in the unheated tomatoes occurred in the following order: American canned> Italian canned> Vita king> Cherry> general tomatoes; however, after heating, the Vita king tomato was followed by the American canned tomato. The lightness (L value) of the fresh tomatoes tended to be higher than that of the canned tomatoes, and it decreased after heating. The redness (a value) of the unheated tomatoes was in the following order: Italian canned> American canned> Vitaking tomatoes; after heating, the Vitaking evidenced the highest values, followed by the canned tomatoes. The result of our QDA profile of sensory characteristics according to redness, aroma, sweet taste, sour taste, palatability, and viscosity was in the following order: Italian canned > American canned > Vitaking tomatoes, which evidenced the most balanced hexagonal shape. In the preference test, 2 types of canned tomatoes and Vitaking tomatoes were the most preferred among the fresh tomatoes. From the correlation coefficients among the sensory characteristics, canned tomatoes were the most preferred for the production of tomato sauce due to its high redness, flavor, palatability, and viscosity values. Vitaking tomatoes were the most appropriate among the fresh tomatoes.

  • This study was performed to evaluate the quality characteristics of curd yogurt with different contents [0.5~2.0% (w/w)] of Korean rice wine lees powder (KRWLP). Yogurt was fermented with commercially available mixed lactic acid bacteria (Lactobacillus acidophilus, Bifidobacterium longum, Streptococcus thermophiles) at $40^{\circ}C$ for 15 h. Acid production (pH and titratable acidity) of yogurts increased with increasing KRWLP content. After 12 hours fermentation, titratable acidity of KRWLP yogurt was 1.19~1.29 % and was higher than that (1.07 %) of yogurt made without KRWLP. And also, the number of viable lactic acid bacterial cell increased and the culture time to obtain maximum number of lactic acid bacteria cell decreased with the addition of KRWLP. The curd stability in yogurt was significantly enhanced by repression of whey separation in KRWLP yogurt. In sensory evaluation, there was a similar preference for KRWLP yogurts and the control. These results suggest that KRWLP can be used as foodstuff to improve the quality characteristics of yogurt.

  • The pacific oyster Crassostrea gigas has a desirable taste and flavor that differs from those of other fish and shellfish. In order to develop a high value-added product from individually quick-frozen oyster extract (IQFOE), we prepared an oyster granular flavor seasoning (OGS) from IQFOE and characterized its qualities. The OGS was prepared by granular molding and fluidized bed drying with inosine monophosphate (IMP, 0.1%), yeast extract powder (1.4%), tangle extract powder (0.6%), monosodium glutamate (MSG, 5.0%), microcrystalline cellulose (0.6%), lactose (27.5%), salt (33.0%), spray-dried IQFOE (22.5%) as a powdered materials, and IQFOE ($Brix\;25^{\circ}$, 7.0%), soy sauce (0.4%) and water (1.7%) as a liquid materials. The moisture, crude protein, pH and salinity of the OGS were 3.4%, 12.5%, 6.50 and 32.0%, respectively. Especially, the OGS revealed very higher amino-N content (1,856.0 mg/100 g) than that (1,291.2-1,610.2 mg/100 g) of other commercial flavor seasonings. In taste-active compounds, free amino acid contents was 1,359.0 mg/100 g, and major ones were glutamic acid, taurine, hydroxyproline, glycine, lysine, phosphoserine, proline in order. And OGS showed good organoleptic qualities for taste, odor and general preference compared with commercial flavor seasonings on a local market.

  • The purpose of this study was to synthesize tasty and healthy solomon's seal coffee by combining solomon's seal and a coffee-making process. Therefore, this study was carried out to establish the most suitable conditions for coffee-making by surface response surface methodology. Using the center synthesis method, we synthesized solomon's seal coffee by considering three factors (solomon's seal, coffee, and temperature) and three levels. The sixteen experimental items for solomon's seal coffee based on surface-reaction analysis were scent (crust break-scent when pouring water in solomon's seal coffee, flavorscent when tasting solomon's seal coffee), taste (clean-cup-pure taste without loose scent, sweetness, and acidity), mouth-feel, aftertaste, overall quality, and other taste degrees. Scores were from 1 to 7, with 7 indicating the highest preference. The optimum mixing rates which meet sensory items were coffee 19.51g, solomon's seal 2.07g, and temperature $93.39^{\circ}C$. Based on the above results, solomon's seal seems to be well suited for coffee. It was also found that solomon's seal has great potential to be well suited with other foods.

  • In this study, manufactured a cream soup by varying addition of Hericium erinaceus and decided its recipe, and conducted particle size analysis, calorimetry, sensory test for investigating physicochemical characteristics and quality characteristics (salinity, sugar content, color value, pH, viscosity), antioxidant activities of soup, and mechanical sensory test for objectivity. This study found that moisture content in Hericium erinaceus powder was 6.16%, crude protein 26.87%, crude fat 4.62% and crude ash was 10.75% respectively. No significant differences were found in salinity, sugar content, pH according to addition of Hericium erinaceus. As for color value of cream soup manufactured by adding Hericium erinaceus, L value decreased with increase in addition of Hericium erinaceus, whereas a value and b value increased. The more the addition of Hericium erinaceus, the higher the viscosity, which increases concentration of soup. As result of analysis on antioxidant activities of Hericium erinaceus cream soup, antioxidant activities increased with increase in addition of Hericium erinaceus. Particle size analysis showed results similar to that of viscometry, which means that the smaller the particle size, the higher the viscosity, whereas viscosity lowered vice versa. Calorie of cream soup showed no significant difference notwithstanding the amount of addition. As a result of sensory test, S5 with 5% of Hericium erinaceus powder was highest rated in color, flavor, taste, umami taste and overall preference. As a result of mechanical sensory test, umami taste increased with increase in addition of Hericium erinaceus powder, whereas bitterness taste lowered significantly (p<0.05) with addition of Hericium erinaceus. As for salty taste, both control group and experimental group that added Hericium erinaceus powder showed no significant difference. Accordingly, experimental group with 5% of Hericium erinaceus powder was proved to be the most desirable.

  • The study surveyed 1,127 mothers whose children aged 3 to 5 went to 25 randomly selected kindergartens, which were located in Busan Metropolitan City and the adjacent Gimhae City, and analyzed the preventive health behaviors on their children and the condition of home health education on their children. As the compulsory kindergarten education will e to be implemented within 4 years, this study aimed to draw up the rudimentary material for health education at kindergartens. The study results are summed up as follows: 1. Mothers' awareness of health-related attitude and behavioral level for their children at kindergarten: 1) The general health condition of the children, which mothers are aware of, was that they were healthy on the whole. As their children becomes older, the income level of the parents is lower, and mothers have lower level of educational standard, the health condition of the children was found a little lower. 2) In terms of mothers' recognition of the practice level of preventive health behaviors, the items such as going to bed regularly, washing hands and feet well, and having meals regularly were high in the practice level, while exercise and tooth-brushing were not practiced well. 2. The condition of mothers' health education of their children: 1) It was found that washing hands and feet, restriction of overeating and preference for specific kinds of food, guidance on regular sleep and regular meal were practiced well among items of home health education targeting kindergarten children. 2) Mothers have obtained information on family health from printed matter such as newspaper or magazine rather than the visual media. 3) From the cross analysis of mothers' health education on children and children's health behaviors, as the standard of education of mothers was higher, so was the level of preventive health behaviors of children. 3. From the result of multi regression analysis of the factors influencing the preventive hygiene of kindergarten children, it was found that as the home health education level was higher, so was the health behavior of children. On the other hand, as the mothers were older, the health behavior of children became lower.

  • This study was performed to improve the quality index of paprika by assessment of instrumental test and sensory attributes. Red paprika (11 cultivars), orange paprika (9 cultivars), and yellow paprika (10 cultivars) were provided by GyeongNam (GN) and JeonBuk Agricultural Research and Extension Services (JB). We measured hardness and color values using a colorimeter and TPA as well as developed new terminology such as cucumber taste, grass taste, green pepper flavor and appearance (size, color size, color, and glossiness), texture (hardness, juiciness), and taste (sweetness, pungency, sourness) to describe paprika quality attributes by trained panels. a* value of red 'Nagano' cultivar provided by JB was significantly low, and only b* value of orange paprika was significantly different among the samples. In the case of yellow paprika, b* values were not significantly different, and hardness was significantly different. Overall color values were different among samples provided by GN. Oranos, orange paprika, L value, b value, and hardness were different among the samples. Bitterness was negatively correlated with sweetness and positively correlated with green pepper aroma (p<0.05). Overall acceptability was positively correlated with size, juiciness, and sweetness (p<0.01) and negatively correlated with pungent (p<0.05) and bitterness (p<0.01). In conclusion, negative attributes such as bitterness and pungentness as well as positive attributes such as size, juiciness, and sweetness must be considered as important factors for consumer preference and breeding of new cultivars.

  • This study was conducted to investigate the effect of baking on the physicochemical and sensory properties of white pan bread with red wine (RW). RW was substituted for water at four levels (0, 19, 38 and 63%). For bread crumb color, lightness decreased with increasing levels of RW, whereas redness and yellowness increased (p<0.05), in proportion to RW levels. Compared to control bread, specific volume of breads added with RW was decreased. The degree of dough raising power decreased significantly depending on the amounts of RW. The hardness of control bread was $87.35g/cm^2$ while the hardness of breads with RW ranged from 85.37 to $94.19g/cm^2$. Hardness, cohesiveness, springiness and gumminess of breads added with RW showed higher scores than the control group. In the sensory evaluation, the highest flavor and taste preference scores were observed in bread containing 38% RW, whereas the lowest score was observed in bread with 63% RW. Accordingly, the quality of bread can be improved by addition of 38% RW substituted for water.
