대전 지역 일부 재래 시장과 대형 마트에서 시판되는 반찬류의 나트륨 및 칼륨 함량 비교 (Analysis of Sodium(Na) and Potassium(K) Content of Side Dishes Purchased from Traditional and Super Market in Daejeon Area)

  • This study was performed to evaluate the sodium and potassium content of the 19 kinds of side dish purchased from traditional market and super market in Daejeon area. The results are summarized as follows. Sodium content(mg/100 g) among samples was the highest in the Jangachies. The sodium contents of Yeongeun jorim, Bellflower saengchae, Kkaetip jangachies, Chonggak kimchi, Changranjut in super market were significantly higher than those of the traditional market (p<0.05). On the other hand, the sodium contents of the other side dishes in traditional market were significantly higher those in super market. These results suggested that the sodium content of side dishes in the traditional market were higher than those in the super market. Sodium intake from Kimchi and Jangachies per one serving size is estimated significantly highest among samples. Also, potassium content of side dishes were low detected compare to sodium content and potassium content of side dishes in the traditional market were higher than those in the super market. From these results, it was suggested that food labeling (Na content) on the package of side dishes is to be required for lowering Na intake, and standard cooking methods is to be established.

  • 온라인 식재료 시장이 활성화되고 세분화되면서 온라인 프리미엄 푸드마켓이 활성화 되고 있다. 본 연구에서는 온라인 프리미엄 푸드마켓에서 소비자가 체험하는 경험요인을 밝히고, 오프라인과 어떠한 차이가 있는지 정의하였다. 이를 통해 온라인 프리미엄 푸드마켓은 오프라인 프리미엄 푸드마켓과 인지적, 심미적, 감성적 경험을 체험할 때 어떤 차이가 있는지 밝혀 콘텐츠와 서비스를 제공시 차별화해야 한다는 시사점을 도출하였다. 또 온라인 프리미엄 푸드 마켓을 소비자가 접하게 되는 채널은 온라인과 오프라인을 아우르는 경험을 하게 됨으로, 일관성 있는 경험을 제공해야 한다는 것을 밝혔다. 본 연구를 통해 도출된 소비자 경험은 온라인 프리미엄 푸드 마켓의 서비스 디자인 시 소비자 관점에서 콘텐츠와 서비스를 제공하기 위한 기초자료로 활용되기 위함이다.

우리나라 수출농업 활성화를 위한 농식품 수출 발전방안 (Development Strategies of Agri-food Exportation for Agricultural Export Promotion in Korea)

  • With the launching WTO, the world economy has been changing new competitive environment. Agricultural exports should be pursued actively in the market of opening era to develop the foreign agricultural product market and to improve the domestic agribusiness quality and strengthen its competitiveness. The purpose of this is paper is to understand agricultural export status of Korea to detect challenges and matter for improvement, to find new measures of export strategy for the foreign market, recent emerging export promotion with high potential growth, and to increase Korea agricultural export to new world market by using a new method. The profit and loss status is volatile since the agricultural export is in its infancy. However, we have learned lessons from previous success and failure that prior analyzing of agricultural export feasibility, phased-in expansion of agri-food export volume, connection of agri-food export and agri-food market policy. In relation to this, this paper introduces Efficient and Effective Utilization of Communal Facilities in agri-food export. Consequently, First, Export promotion scheme for agri-food is to precise analysis of import countries and to collection agri-food export procedure and agri-food market system. Second, In order to expand export agricultural products to new world market, we need to direct 3rd support program to enhancing competitiveness in expanding export of agricultural export.

  • There is difference between European Cuisine and Korean Cuisine in various ways. In order to advance Korean Food into European Market, we should understand well European food-culture and food-custom. There are several process for push into the European Market. First, we inform European like that Korea traditional food (repast tool, the interior of Korean restaurant, traditional music, food-sequence, service method etc.). Second, we can introduce them ' Korean Fusion Food ' and that Korean Cuisine is ' Health foods '. For globalization of Korean Cuisine, we must understand exactly European market situation and know well the field law and tax system for business. Next, we establish the prior plan to supply with Korean food material till faraway region.

  • The wide range of price found in food market allows consumer reduce the cost of food purchases through comparison shopping into one more stores. Littles known however about how much can be saved by comapring price for a whole market basket of food items. This paper present evidence relating to the comparison shopping through the theories on price is dispersion and show validity constructing methods of food market basket. It is found that the savings of comparison shopping to consumers are likely to be gains in food Markets and three market basket on foods suggest in study found to be validity.

  • Purpose - The continuously fluctuating consumer who desires simplicity and convenience has had much influence on the food industry. This trend has led to a new food market sector known as HMR (Home Meal Replacement). This study aims to understand the status of the HMR market in United States. Research Design, Data, and Methodology - In order to research the status of the HMR market, quantitative analysis and secondary research were carried out. By using data from Euromonitor, Agriculture and Agri-Food Canada, we have estimated food segment sales contributions to the HMR market in United States. Results - HMR products are being sold in various channels such as traditional stores, convenience stores, and even farmers' markets. Some restrictions on the HMR products exist for food safety. Conclusions - HMR industry in United States has expanded continuously. To keep pace with the growth of the HMR market, the United States government has focused on food and safety regulations with regards to the products used in HMR. Finally, this study discusses the implications for Korean HMR market.

Analysis of Global Food Market and Food-Energy Price Links: Based on System Dynamics Approach

  • The situation of the global food markets has been being rapidly restructured and entering on a new phase by new dynamic and driving forces. The factors such as economic growth and income increase, high energy price, globalization, urbanization, and global climate change are transforming patterns of food consumption, production, and markets. The prices and markets of world food and energy are getting increasingly linked each other. Food and fuel are the global dilemma issues associated with the risk of diverting farmland or of consuming cereals for biofuel production in detriment of the cereals supply to the global food markets. An estimated 100 million tons of grain per year are being redirected from food to fuel. Therefore, the objectives of this study are as follows: Firstly, the study examines situations of the world food and energy resources, analyzes the trends of prices of the crude oil and biofuel, and formulates the food-energy links mechanism. Secondly, the study builds a simulation model, based on system dynamics approach, for not only analyzing the global cereals market and energy market but also forecasting the global production, consumption, and stock of those markets by 2030 in the future. The model of this study consists of four sectors, i.e., world population dynamics sector, global food market dynamics sector, global energy market dynamics sector, scenario sector of world economic growth and oil price.

온라인.오프라인 식품구매 실태조사 (A Study on the Food Purchasing Status through On-line.Off-line Food Market)

  • This study was implemented to offer materials for the activation of On-line food shopping mall though census about purchasing food. A percentage of people who had accessed to On-line food shopping mall was 53.8%, and who had an experience of purchasing food at the On-line sopping mali was 18.9%. The number of food purchasing in On-line food market is $1{\sim}3$ times(67.7%). It is general that an amount of food purchase is less than 100,000 wons. And the health assistant food is the most interesting item followed by Meet, Special products like a laver and mushroom, and an anchovy. in purchasing food at On-line market, customer thought that the confidence and the freshness of food are important because customer can't choose a product directly. In the future of food purchase using On-line shopping mall, 38.1% of people show their intend of purchasing at the mall. People who had experience of food purchase though the Internet have more positive view about repurchase than ones had not.

  • Subsidies are an instrumental policy making tool for many governments, but their importance depends on the market situation of the national economy. Efficient subsidy implementation would allow the government to correct market failure thereby aligning social and private costs and benefit. The general objective of this study is to justify the need to rationalise subsidies for food items such as flour. This study assessed the structure and conducts of the general purpose flour market in Malaysia; and analysed the impact of subsidies on market performance to recommend policies to increase market efficiency under the subsidy rationalisation program. To accomplish these objectives, the study adopted a microeconomics market analysis as well as the standard structure and performance analysis method. These two approaches showed the characteristics of an industry's consumer behaviour, competition, as well as the efficiency associated with government regulatory policies on the flour industry. One of the biggest influences on the domestic market is related to the food consumption behaviour of the general population. Food consumption behaviour reflects global trends. As income rises, food trends tend to be consumed in processed form or in such a way that adds value in another manner such as the preparation of food products.

건강기능식품과 유가공 산업 (Functional Health Food and Milk Product Industry)

  • During the past decade, functional foods and nutraceuticals have emerged as a major consumer-driven trend, serving the desire of aging populations to exercise greater control over health, delaying aging, prevent disease and enhance well-being and performance. On a global basis, retail sales of functional food were worth an estimated USD 1,501 billion in 2001. The market for functional food in Korea has increased in the last three years above 10%. Especially value sales rose by over 30% between 1999 and 2001, and are worth around 12,000 billion won in 2001. To regulate functional food represented a rapidly growing market in Korea a new act 'Functional Health Food Act' was announced officially in 2002. The type of functional milk product in Korea market is conventional food containing various functional ingredient. To promote functional food market in milk product sector the introduction of functional and health claim should be taken into account in the future in Korea.
