Reading and Understanding of Food & Nutrition Labels and Dietary Behaviors of Female Middle and High School Students (여자 중.고등학생의 식품영양표시제 이용과 영양표시 이해도 및 식행동 조사)

  • This study investigated the use and understanding of food and nutrition labels in 498 female adolescents (middle school students: MS 248, high school students: HS 250) in Gyeonggi-do. Fifty percent of the MS and 47.2% of the HS read food labels, and the most common reasons for reading labels were to find a product's expiration date and price. The food label information considered most important by the subjects was the name of the manufacturing company and expiration date. Over 80% of the subjects read nutrition labels. The MS read nutrition labels to find nutrients and their amounts in foods, while the HS read labels mostly in an effort to control body weight. These subjects gave more attention to calories and fat, the nutrients related to body weight, than to other nutrients. The subjects were highly aware of the necessity and positive effects of nutrition labels, because they believed labels could make it easier for them to choose healthy foods. However, scores for understanding nutrition labels showed the subjects failed to understand label information accurately. Generally, the MS showed better dietary behaviors than HS. But the HS had significantly higher scores than MS for the item "know relative weight with height." Those that read food labels had significantly better BMIs, dietary behaviors, and awareness and understanding of nutrition labels. There were significant positive relationships among awareness & understanding of nutrition labels and subjects' dietary behaviors. The study findings can be utilized to better plan nutrition education programs aiming to improve use and awareness of food and nutrition labels among adolescents.

  • From 1982, the Korean Ministry of Employment and Labor has executed the risk assessment regulation for manufacturing industries. When a manufacturing company install, transfer, or modify the major facilities, the program inspects and verifies safety of the working place to ensure safety against risks. This study performed cost-benefit analysis of the program for the eight industrial categories that were free from the program. The cost-benefit analysis is the basic method to estimate the effect of the policy execution, and used to justify the policy effectiveness. As a result, there is the biggest benefit in the manufacture of basic metal products and then motor vehicles, trailers and semitrailers, other manufacturing, other machinery and equipment, wood products of wood and cork, rubber and plastic products, food products, furniture in order. Thus the hazard prevention program should be applied into the 8 industrial categories in order to strengthen national competitiveness, protect labors's safety, reduce the social cost and improve the welfare.

The Effects of Technology Commercialization Capability and Competitive Strategy of Agri-food Venture on Growth Prospects: Focused on Mediating Effect of Business Model Innovation (농식품 벤처기업의 기술사업화역량과 경쟁전략이 성장전망에 미치는 영향: 비즈니스모델 혁신의 매개효과를 중심으로)

  • Interest and investment in agri-food ventures is increasing worldwide. Agri-food venture startups are also increasing in Korea, but there are constraint factors due to industrial characteristics, and infrastructure and investment for growth are insufficient. This study confirmed the effect of technology commercialization capability and competitive strategy on the growth prospects of agri-food venture companies and the mediating effect of business model innovation. And, through comparison with previous studies, the industrial characteristics were identified by confirming the difference between all venture companies and agri-food ventures. For this, only agri-food ventures data were extracted from the original data of the Research on the Precision Status of Venture Firms 2021. And empirical analysis was conducted. As a result, manufacturing capability, cost leadership and product differentiation had a positive(+) effect on growth prospects. The mediating effect of business model innovation between manufacturing capacity, product differentiation and growth prospects was verified. Through the research results, factors affecting the long-term growth prospects of agri-food ventures were identified in consideration of industrial characteristics. In addition, practical implications in connection with business model innovation of agri-food ventures were presented. In future research, it is necessary to develop an objective measurement tool and to conduct a detailed analysis according to business history and company size.

3D Simulation Study to Develop Automated System for Robotic Application in Food Sorting and Packaging Processes (식품계량 및 포장 공정 로봇 적용 자동화 시스템 개발을 위한 3D 시뮬레이션 연구)

  • Small and medium-sized food manufacturing enterprises are largely reliant on manual labor, from inputting raw materials to palletizing the final product. Recently, there has been a trend toward smartness and digitization through the implementation of robotics and sensor data technology. In this study, we examined the effectiveness of improvement through 3D simulation on two repetitive work processes within a food manufacturing company. These processes involve workers whose speed cannot match the capacity of the applied equipment. Two manual processes were selected: the weighing and packing process performed by workers after skewer assembly, and the manual batch process of counting randomly delivered frozen foods, packing (both internal and external), and palletizing. The production volume, utilization rate, and number of workers were chosen as verification indicators. As a result of the simulation for improving the 3D process, production increased by 13.5% and 56.8% compared to the existing process, respectively. This was particularly evident in the process of applying palletizing robots. In both processes, as the utilization rate and number of input workers decreased, robots could replace tasks with high worker fatigue, thereby reducing work overload. This study demonstrates the potential to visually compare the process flow improvement using 3D simulations and confirms the possibility of pre-validation for improvement.

Actual Use Condition and Satisfaction of Dietitians and Cooks over Combi-steam Oven of School Foodservices in Gyeonggi (경기도지역 학교급식 다기능오븐의 이용실태 및 영양(교)사와 조리사의 만족도)

  • The purposes of this study were to identify the actual utilization condition of combi-steam ovens and to evaluate the importance and the satisfaction of dietitians and cooks who used the oven in school foodservice. A survey of 300 schools, 1 dietitian and 1 cook from each school respectively; total 600, was conducted and 202 completed questionnaires were available for the purpose of the statistical evaluation. The main results of this study were summarized as follows: Among the schools, 70.5% set up the oven during 2007~2009, the most commonly used cooking method was 'Baking (87.0%)' and the way of acquiring recipes for the oven was 'from oven manufacturing company (50.0%)'. The advantage of using the oven was 'the convenient use of the oven (63.3%)' and the disadvantage was 'Difficulty of cooking foods evenly (59.8%)'. The degree of importance and satisfaction on twenty six attributes were measured according to type of school, location of school, number of meal service per day, and number of total serving per day. Among quality attributes of importance of the oven utilization, 19/18 characteristics were assessed over 4 point (important) out of 5 scale by dietitians/cooks respectively and in satisfaction 16/18 were over 4 points (satisfied) by dietitians/cooks respectively. When it comes to the most satisfied factor of combi-steam oven, 'Improvement of cooking baked foods' was highest for dietitians (4.60 point) and 'Checking temperature of cooked foods' was for cooks (4.49 point). In overall satisfaction of the oven use, the average score was 4.10 point for dietitians, 3.98 point for cooks out of a 5 point scale. Using the survey results as a base, school foodservices are required to use the combi-steam oven efficiently to serve high quality of meals for students.

Analysis of the Level of Microbial Contamination in the Manufacturing Company of Ginseng Products (인삼류(홍삼, 백삼) 제조·가공업체의 미생물 오염도 조사)

  • The aim of this study was to investigate microbiological contamination levels in the manufacturing company of ginseng products (white and red ginseng). Firstly, the contamination level for ginseng and each stage ginseng were 1.8~4.9 log CFU/g (total bacteria), 1.2~3.0 log CFU/g (coliform), 0.8~4.1 log CFU/g (fungi). However, only Bacillus cereus among pathogenic bacteria was detected from a few sample. The contamination of total bacteria tended to decrease as ginseng was being processing. Therefore, that of finished products (white and red ginseng) showed the lowest contamination level among each stage ginseng sample. That of fungi decreased steadily, although the contamination of fungi has tended to increase right after ginseng was steamed. Secondly, the contamination level for working tools and facilities were $1.7{\sim}4.7log\;CFU/cm^2$ (total bacteria), $0.4{\sim}4.0log\;CFU/cm^2$ (coliform), $0.9{\sim}4.2log\;CFU/cm^2$ (fungi). Especially, washing and peeling machines were higher contamination level. Finally, the contamination level of worker who washed and steamed ginseng was higher than worker who shaped, sorted and stored ginseng. Also, Staphylococus aureus was detected at 0.2~0.7 log CFU/hand on some wokers' hands. These results showed proper heating condition (temperature and time) and tidy manufacturing facility are the most important to avoid developing any microbiological problem of Ginseng Products.

A Stidy on the Real Management of Experimental-practice and Spot-practice at Department of Food and Nutrition of Junior College in Korea (전문대학 식품영양과의 실험실습 및 현장실습 운영실태에 관한 연구)

  • This study was conducted to gather the baseline data on realities of experimental-practice and opinions toward spot-practice, and to examine how to cope with the problems raised at the Department of Food and Nutrition of Junior Technical College in Korea. Questionnaires were gathered from 42 chairmans of the Department of Food and Nutrition and 140 Present dieticians worked in Seoul, Bucheon am Seongnam area. The results are as follows, First, as a whole, each college had 2~3 experimental laboratory (Lab), in which Cooking Science Lab. Chemistry Lab and Microbiology Lab were occurred at higher frequency as Lab's name. Second, the numbers per experimental-practice class were more than 40 at most colleges. 85% of Present dieticians have answered to feel too much numbers per the class during their college days, whereas professors' opinions toward the numbers per class were suitable at 20~30 persons per class. Third, professors' opinion toward the adquate ratio of the theory subject classes to experimental subject classes was suitable at 60 : 40. Dieticians answered to take the theory subject classes partly or mostly on behalf of the experimental-practice classes. Fourth, the main reasons which inhibited normal experimental-practice class were the class for emphasis on examination, the shortage of experiment budget, the excess of class members, the shortage of experimental Lab Also, this results showed same propensity to present dieticians' opinion toward the same question above. Fifth, among the experimenta1-practice subjects established at the Department of Food and Nutrition, Diet Therapy Lab was highest frequency class emphasized on theory followed by Nutrition Counselling Lab, Food Processing and Storage Lab, Food Hygiene Lab and Food Microbiology Lab in that order. Here, Basic Chemistry Lab, Biochemistry Lab, Food Microbiology Lab were pointed as subjects far from the present task of dieticians. Sixth, Department of Food and Nutrition, as a whole, has conferred with spot-practice arrangement About 50% (all who want to join spot-practice) of second year students took part in spot-practice. In the other way, all colleges except for 2 colleges didn't give the credit for the spot-practice system. Seventh, according to the on analysis on spot-practice places, manufacturing company was at highest frequcney followed by hospitals, elementary school having group feeding system in that order. Especially, 16.7% (5 colleges) of the total colleges sent the students to the research institute related to food industry for spot-practice experience. Eighth, Professors' opinions toward the spot-practice time and period were preferable on summer vacation of second year and for 1~2 weeks, respectively. On the contrary, 74 dieticians answered to the adquate period as for 4 weeks. Ninth, 86 dieticians of the total 140 answered to complete the spot-practice during their college days, which helps the present task of them. Lacks of spot-practice program, Lacks of comprehension of upper personals and lacks of group feeding equipments ranks higher as difficulties in spot-practice management.

  • Domestic information service authority and company provide database services to introduce the newest scientific and technological information, trend, and research data. Among many databases, FSTA((Food Science and Technology Abstracts)) is a bibliographic database providing worldwide coverage of all scientific and technological aspects of the processing and manufacturing of human food products. To service FSTA database through KRISTAL search engine developed by KISTI(Korea Institute of Science and Technology Information) need many process such as data obtainment, building, search, modification, rebuilding, and statistics. In this paper, we present implementation of management tool used to build FSTA database effectively. The management tool provides graphical user interface and controls all process from data obtainment to building of KRISTAL information searching system. By building FSTA database fast and accurately, user can get information that they want to find from the newest FSTA database.

A Survey of Sanitation Management Practices of School Food Ingredients Manufacturing Company Workers in Daegu and Gyeongbuk Province (대구.경북지역 학교급식 식재료 납품업체 생산직원의 위생관리 실태조사)

  • The purpose of this study was to investigate factory workers' knowledge of sanitation management of school foodstuffs and sanitation practices. A questionnaire that identified employees' food safety sanitation management knowledge and practices was developed based on a review of literature. Subjects consisted of 221 factory workers employed at 34 factories in the Daegu and Gyeongbuk areas. Almost half of the factory workers were 40~49 years of age (45.7%), 34.8% had 1~3 years of work experience, 62.4% of the respondents received food safety education 1~2 times a month and 75.1% of the respondents were satisfied with sanitation education. However, the total score for factory worker sanitation knowledge was low: 4.63/9. Sanitation performance was self-evaluated using a Likert 5-point scale. The total mean score for the factory workers' sanitation performance was 4.63/5. Satisfaction level and the amount of sanitation education, application of sanitation knowledge, attitude regarding sanitation management, and sanitation management performance level were significantly high among workers employed in a HACCP certification facility (p<0.05). The difficulties were found to be sanitation management and the time to deliver food to schools. To instill a sense of duty and pride among workers and to ensure that the food suppliers provide best-quality school foodstuffs safely, school dietitians and factory managers must actively educate workers in safe food handling and sanitation.

Physicochemical Properties of Commercial Sweet Potato Starches (시판 고구마전분의 이화학적 특성)

  • Physicochemical properties of commercial sweet potato starches manufactured by 7 different companies were investigated in comparison with corn and potato starches. Crude ash and protein content varied from 0.36 to 1.02%, and from 0.04 to 0.14% based on dry weight, respectively. The protein contents were relatively smaller than that of corn or potato starch. But whiteness of the sweet potato starches was less than that of corn or potato starch. Mean diameter of the sweet potato starch granules varied from 14.23 to $21.08\;{\mu}m$ depending on the company and all sweet potato starches showed bimodal size distributions. Pasting viscosity measured by Rapid Viscoanalyzer(RVA) also showed variations among the starches of different companies. The starch from D company in Korea had the lowest pasting temperature$(74.00^{\circ}C)$ whereas the starch from a phillippine company(P) did the highest one$(80.35^{\circ}C)$. The peak viscosity of sweet potato starches was higher than that of corn starch but lower than that of potato starch. The D company starch also showed the highest peak viscosity(2283 cp) among the starches tested. Paste breakdown by hot shearing ranged from 524 cp (S company) to 1279 cp (HL company). Textural properties of the starch gels appeared significantly different among the starches of different manufacturers. The greatest hardness of the gel was $137.90\;g_{f}$ at 1 day storage whereas the lowest value was $31.53\;g_{f}$. Except the starches from 2 companies (P and S), the sweet potato starches formed very soft and weak gels. P or S company starches formed the gels similar to potato starch. Syneresis by freeze-thawing treatments appeared less for sweet potato starch gels than that for corn starch gels, but greater than that for potato starch gel. The overall properties of the sweet potato starches varied by the manufacturing companies, and ranged between those of corn and potato starches.
