한국, 미국, 일본의 식품성분표 비교 (International Comparison of Food Composition Table)

  • This study was conducted to compare the composition table of Korean food with that of foreign food. Analysis was made for Korean food composition table($5^{th}$ revision), Korean food composition table in Appendix of Recommended Dietary Allowances for Korean(6$^{th}$ th/ edition), Standard tables of food composition in Japan($5^{th}$ revised edition) and USDA Composition of Foods - Raw, Processed, Prepared. The method of content analysis was applied for this study and such differences were pointed out as the classification of food items, food items enlisted, the content unit of food and food components presented etc. To improve Korean food composition table, new food items and components should be added and old food items be eliminated based on the change of people's food consumption pattern. Also analysis for the domestic foods consumed by local people should be accomplished rather than borrowing foreign country's data.

대학생의 거주형태에 따른 영양상태 및 식사의 질 비교 연구 (Nutritional Status and Dietary Quality by Their Residing Types in College Students)

  • The purpose of this study was to evaluate the dietary habit, nutritional condition and quality of everyday meal for college students. The number of the subjects was 102 and they were divided into three groups by their residing types; students living with their parents (n=34), students living in dormitory (n=34) and students living independently off the campus (n=34) Questionnaire, 24hour dietary recall for food intakes, and body composition analysis were used. SPSS program was used for the statistics. In general health matter, the average age for each group of students was $21.2kg/m^2$, $20.9kg/m^2$, and $21.9kg/m^2$ respectively. And heights, weights, muscle mass, body fats and BMI were not significantly different between groups. Results on dietary habit showed that students living with their parents had better meal pattern and regularity for breakfast than other groups. Also, for dietary evaluation, students living with their parents showed better extent of intake of milk than other groups. Evaluation on nutrients intake showed that amount of calcium, vitamin $B_2$, folic acid intake in student living independently off the campus were lower than those of the other groups(P<0.05). And MAR(Mean Adequacy Ratio) was not significantly different between groups, however INQ(Index of Nutritional Quality) and NAR(Nutrient Adequacy Ratio) of calcium were lower in off the campus group than other two groups. In conclusion, students living independently had worse eating habits and showed lower intake of calcium than those living with their parents or living in a dormitory. Therefore nutritional education for improving well-balanced dietary habits and optimal intake of nutrients are required especially for students living independently off the campus.

제주산 감귤류의 영양성분 함량 비교 (Comparison of the Nutritional Composition of 3 kinds of Citrus produced on Jeju Island, Korea)

  • To identify and compare the nutritional composition of different kinds of citrus, three examples (Citrus fruit, Kumquat, and Hallabong) were taken from Jeju island in Korea at the same time and their nutritional compositions were measured using the Association of Official Analytical Chemists (AOAC) method. The proximate components (moisture, protein, fat, fiber, ash, and carbohydrates), mineral and vitamin contents were measured. The Nutrient composition revealed some significant differences among the Citrus. The Citrus fruit has more moisture and Fe content than those of the Kumquat. The Kumquat contained more ash, Ca, Na, Mg, Zn, Vitamin A, and B1 than the other Citrus specimens, while the Hallabong had the most protein and Fe. However, fiber, K, Vitamin B₂, C and niacin contents were not significantly different among the specimens. The results demonstrate that the three kinds of citrus used in this study have different nutritional compositions, but they can all be used as a good food for supplementation of K, vitamin A and C. We hope the nutritional analysis of Citrus specimens will be helpful in meeting the consumer's interest in these Citrus, and increase the export of our Citrus produce.

한국 독거노인의 식사패턴에 따른 식사의 질 평가: 2016-2018 국민건강영양조사 자료를 이용하여 (Evaluation of Diet Quality Determined by Dietary Patterns of Elderly Koreans Living Alone: Data Retrieved from the 2016-2018 Korea National Health and Nutrition Examination Survey)

  • This study was undertaken to identify dietary patterns of Korean elderly people living alone, and to compare the quality of diet consumed. Data of 821 elderly people aged 65 years or older who were living alone, was obtained from the 2016~2018 National Health and Nutrition Survey. The percentage energy intake from 24 food groups was calculated, and a cluster analysis was applied to identify dietary patterns. General characteristics, energy and nutrient intake, nutrient adequacy ratio (NAR), mean adequacy ratio (MAR), and index of nutritional quality (INQ) were analyzed. Dietary variety score (DVS) and dietary diversity score (DDS) were subsequently calculated. The rice-centered diet group and mixed diet group were characterized as consuming higher intake of rice and a wider variety of food groups, respectively. The mean age and percentage of participants living in rural areas were higher, whereas education level and monthly income were lower, in the rice-centered diet group (P<0.001 for all). Intakes of energy and all other nutrients (except carbohydrate and thiamine) were lower in the rice-centered diet group (P<0.001 for all). The NAR for all nutrients (except thiamine), MAR, and INQs (except thiamine and iron) were significantly lower in the rice-centered diet group (P<0.001 for all). The rice-centered diet group had significantly lower DVS (P<0.001) and DDS (P<0.001), as compared with the mixed diet group (P<0.001). Due to the insufficient energy and nutrient intake in the rice-centered diet group, it is necessary to develop nutritional monitoring and customized nutrition policies for these individuals.

대구지역 여대생의 거주형태에 따른 식사 행동과 영양소 섭취 및 질적 상태에 관한 연구 (The Dietary Behavior, Nutrient Intake Status and INQ of College Women Residing in the Daegu Area)

  • This is an analysis of the dietary behavior, nutrient intake status and INQ(Index of nutritional quality) of 129 college women according to their residences in the Daegu area. The average height and weight were 160.0 cm and 54.5 kg respectively. Diet intake data were obtained by using the 24-hour recall method to evaluate the usual diet of the subjects. The energy intake of the group, living alone was higher than that of living a roommate and living at home. Ca, Fe, Zn and folate intakes were low in all the groups. The composition rate of carbohydrate, protein and fat for energy intake was 58.9 : 15.5 : 25.6 in living alone, 59.9 : 15.1 : 25.0 in living with a roommate and 61.2 : 15.5 : 23.3 in living at home, compared with the preferred of 65 : 15 : 20. The group living alone showed significantly better mean adequacy ratio(MAR, 0.7) than the other groups (p<0.05). The group living with a roommate showed significantly better INQ in vitamin $B_6$ (p<0.01) and Fe (p<0.05) than the other groups did In conclusion, this study indicates that nutrient intake in college women in Daegu is considerably lower than the RDA values. Furthermore the group living alone showed better dietary behavior and nutrient intake status than the other groups. A nutrition education program for college women is necessary.
