The purpose of this study is to evaluate dietary quality of Korea Antarctic expedition by menu analysis. Basic menu pattern, intake of dish and dish group, DDS (dietary diversity score), daily nutrients supply, and NAR (nutrient adequacy ratio) & MAR (mean adequacy ratio) were analyzed using 1 year menu list for the 10th Korea Antarctic expedition. Most frequently served basic menu patterns were ${\ulcorner}$Rice + Soup + 2 Side dish + Kimchi (53.5%)${\lrcorner}$ and ${\ulcorner}$Rice + Stew + 2 Side dish + Kimchi (13.4%)${\lrcorner}$. In the analysis of dish group, excluding Rice and Kimchi, ${\ulcorner}$Grilled foods${\lrcorner}$ and ${\ulcorner}$Pan-fried foods${\lrcorner}$ were served more than 25% per month. Most frequently served dishes were "pan-fried rolled egg", "grilled seaweed", "kimchi soup", "fruits cocktail, canned" and "salt-fermented squid". The kinds of served dishes were very restrictive. The average score of DDS showed 2.88 for summer and 2.97 for winter. Dairy group was almost not served. Fruit & Vegetable groups were also served a little as canned product. The energy ratio of Carbohydrate : Fat : Protein was 56.5 : 23.9 : 19.2, and 56.9 : 24.5 : 18.3, for summer and winter, respectively. Both seasons had higher ratio of carbohydrate and lower ratio of fat compared to the recommended ratio (44 : 40 : 16) in polar area. Ca : P ratio was very poor, 0.40 in both seasons. NAR scores of Ca, vitamin A, vitamin $B_2$ and vitamin C were also very low, ranged from 0.6 to 0.7. Consequently, a well-planned menu supplying adequate amount of dairy, fruit and vegetable is necessarily required including Ca, vitamin D, vitamin A, vitamin $B_2$ and vitamin C intake, and some nutritionally well-educated members are urgently needed to join in the expedition.
This study was designed to investigate the effects of 8-week resistance exercise by using dumbell on the body com-position, serum hormone profiles and feeding patterns in young and healthy female students with over 30% of body fat, aged 22 years in Masan, Korea. The subjects were all six, performed successfully the entire exercise-program. Anthropometry, serum lipid and neurohormone profiles of subjects were analyzed at 0, 4 and 8 weeks after exercise. And also their food and nutrient intakes were self-reported by 3-day record and food frequency questionnaire. Triceps skinfold-thickness of the subject students significantly reduced after the exercise to 46% less than before (p < 0.002) . The serum concentrations of leptin, insulin and catecholamine appeared to decrease steadily, but not significantly. Total protein in serum increased significantly (p<0.05), and Na (p<0.005), K (p<0.001) and Fe (p<0.058) concentrations increased remarkably within the normal range. The 8-week resistance exercise tended to induce fiber consumption (p<0.089) of subject students and changed the P/M/S ratio changed into the desirable way from 0.8 : 1 : 1 to 1 : 1 : 1, and that of n-6/n-3 PUPA from 11 : 1 to 6 : 1. After taking exercise, the intake frequency of cookies (p<0.058) and raymeun (p<0.085) decreased, but finally this feeding pattern returned to the way as before even though at marginal significance. Consequently the resistance exercise may induce the desirable changes of body fat and improve serum lipid profiles and feeding patterns in young obese females.

Objective: The purpose of this case study is to report the effectiveness of the Korean medicine Beewha-eum as a treatment for functional dyspepsia (FD). Methods: A patient diagnosed with a spleen-stomach deficiency-cold pattern in Korean medicine was treated with herbal medicines, including Beewha-eum. Symptom severity was assessed using the degree of self-reported dyspepsia (%), self-reported energy level, amount of food intake (%), total parenteral nutrition rate (cc/hour), body weight (kg), Nepean dyspepsia index (NDI-K), functional dyspepsia-related quality of life questionnaire (FD-QoL), and short form 36-item health survey (SF-36) score. Results: After treatment, the symptom severity of self-reported dyspepsia decreased from 100% to 10 to 15%, and the self-reported energy level increased from 20 to 80. The amount of food intake increased from 5% to 100%, and the total parenteral nutrition rate started from 60 cc/hour end in week 5. Body weight increased from 53.1 kg to 62 kg. The NDI-K score decreased from 105 to 31. The FD-QoL score increased from 19 to 68. The SF-36 score also increased from 102 to 116. Conclusion: The results suggest that the Korean medicine Beewha-eum could be an effective option for treating FD.
This study attempted to estimate the dietary quality and the food diversity by analyzing the military foodservice menu. To evaluate the dietary quality, an analysis of NAR(Nutrient Adequacy Ratio) and MAR(Mean Adequacy Ratio) were carried out. DDS(Dietary Diversity Score), DVS(Dietary Variety Score) and DMGFV(Dairy Product, Meat, Grain, Fruit, Vegetable group) were used for assessment of food diversity. A Can-pro 3.0 and an excel were used for dietary data analysis and SPSS 12.0 program was used for statistical analysis. The results were as follows. The NAR of the 9 nutrients was above the RDAs and MAR was $1.71{\pm}0.19$. For 19 days(61.3%), DDS was 5 and for 12 days(38.7%), DDS was 4. The average of DDS was $4.6{\pm}0.25$. The Fruit & vegetable groups were not often served compared to other groups and especially fresh fruit were not given enough. The average of DVS and DVSS were $22.48{\pm}0.61$ and $29.26{\pm}0.66$ each. The most frequent food pattern was 'DMGFV=11111' which was served for 19 days(61.3%) and second frequent pattern 'DMGFV=11101' was served for 12 days(38.7%). DDS was significantly associated with Vit. C intake and DVS and DVSS was significantly related to Vit. $B_1$ and Vit. $B_2$ intakes. The MAR was significantly correlated with only DVSS. It could be interpreted that DVSS is a useful parameter for evaluating nutrient intakes as previous studies verified. Based on these findings, it can be said that military foodservice was provided with adequate nutrition and diversity. Menu was well composed of various foods which met the nutrition standards, but should provide more fresh fruits for adequate provision of vitamins and minerals.
The purpose of the present study was to investigate the relationship between nutrient status, and bone mineral state which influenced by aging process. The subjects were 196 people over 65 years old(male 72, female124). The present dietary intake was estimated by the 24-hr, recall method, and individual dietary history concerning consumption of meat, fish and dairy products was obtained by questionaires. The syndrome of senility including seniliy was evaluated according to "Cornell Medical Index". The five subjects who showed 'Good' grade in bone senility, and five subjects who showed 'Risk' and 'Danger' grade were selected and their spine and femur bone density was measured by "Dual Photon Absorptiometry". The bone density measurement showed that the subjects with 'Good' grade in bone senility had bone density above that of normal person, and their nutrient status were satisfactory, whereas the subjects with 'Risk' and 'Danger' grade in bone senility had severe osteoporotic pattern, and their nutrient status were very poor. The food consumption score showed that the subject with higher intake of meat rather than milk had good grade in bone senility (p<0.05). Therefore, past meats consumption can be considered to be a significant factor in the present bone status. The nutrient intakes appeared to be significant factors in bone status in male, whereas there was little effect of nutrients intakes in female. Therefore, the risk of osteoporosis can increase as syndrome of bone senility and nutrient intakes were worse, and its is possible to evaluate bone status and predict osteoporosis simply from informations concerning syndrome of bone senility and nutrient intakes in old population over 65.
Dietary pattern analysis is important complementary approach for identifying associations between diet and chronic disease. A case-control study was conducted in order to examine dietary patterns and the risk of colon cancer in Korea. Data were collected from both 137 cases with either colorectal cancer or large bowl adenomatous polyps and 134 controls regarding social-demographic characteristics and food intake using a semi-quantitative food frequency questionnaire. We conducted factor analysis and identified 6 major dietary patterns: 'Well-being diet' characterized by higher intakes of potatoes, yogurt, soybean paste and vegetables, 'Meat & fish', 'Milk & juice', 'Pork & alcohol', 'Rice & kimchi', and 'Coffee & cake'. We calculated factor scores for each participant and examined the associations between dietary patterns and colon cancer risk. After adjusting for potential confounders, there was a relative risk for colon cancer of 0.16 (95% confidence interval, 0.07 - 0.34) when comparing the highest with the lowest tertile of the 'Well-being' pattern. Significant trends of decreasing risk of colon cancer also emerged with the 'Milk & juice' (OR = 0.40, 95% CI = 0.20 - 0.79). In contrast, inverse associations of the risk were found for 'Pork & alcohol' (OR = 1.92, 95% CI = 0.93 - 3.97), 'Coffee & cake' (OR = 2.18, 95% CI = 1.07 - 4.46). For the 'Meat & fish' pattern, the decreased risk of colon cancer was observed in the second tertile, but not in the highest tertile when comparing to the lowest. The 'Rice & kimchi' pattern had a nonsignificant association with the risk. These data suggest that major dietary patterns derived from the FFQ associated with the risk of colon cancer in Korea. Since foods are not consumed in isolation, dietary pattern research in natural eating behavior may be useful for understanding dietary causes of colon cancer.
This study was performed to investigate the consumption pattern, perception and knowledge on milk of middle and high school students. The subjects were 1,195 students(590 middle school and 605 high school students) living in Geochang area. The survey was conducted by using a self-administered questionnaire in November, 2004. The results were as follows. Fifty-one point nine percent of the subjects drank milk 1-3 cups per day, and 51.7% of the subjects drank milk more than 5-6 times in a week. Amount and frequency of milk intake were higher in middle school students and male students than those in high school students and female students(p<0.001), and the consumption of milk was significantly higher in students with highly educated mother and nuclear family(p<0.01). Eighty-two point one percent of subjects perceived that they should drink milk or as much as possible, and 89.5% of them milk intake required per day is 1-3 cups, and male students perceived more than female students that milk should be taken a lot(p<0.001). In addition, half of the subjects slightly knew that milk contains various kinds of nutrients and a third knew it well, and the perception rate was higher in male students than those in female students(p<0.001). The average score of knowledge about milk was 5.71 out of 10 points and 5.94 points in female students, which was significantly higher than 5.48 points in male ones (p<0.001).

The purpose of this study was to investigate the relationship between oral cancer and such factors as smoking and drinking pattern, oral health status, dietary intake pattern, socio-economic status. Oral cancer patients and other disease patients who visited Yonsei University Dental Hospital from May to September in 2000 were selected as the study subjects. The numbers of cases and controls were 41, 108, respectively. Two groups were matched with age and sex for case control study. Oral examination and questionnaires survey was performed by the dentist. To assess the strength of associations between oral cancer and other variables, chisquare tests were performed. The results were as follows : 1. The durations of smoking and alcohol drinking were not related significantly with oral cancer. But the doses of smoking and alcohol intake increased the risk of oral cancer significantly(OR=2.52, 4.11, p<0.05). 2. Denture wearing, the number of missing teeth and spicy and salty food, coffee, tea and fresh fruit intake frequency did not significantly increase the risk of oral cancer. But low education level, residency in rural area increased risk of oral cancer significantly(p<0.01).
Objectives: The purpose of this study was to evaluate the consumption pattern of sugar-sweetened beverages (SSB) and compare body composition changes by SSB consumption based on 28 days of dietary records from a four-week time-restricted eating intervention among young adults in Korea. Methods: A total of 33 participants completed the four-week dietary intervention with 8-hour time-restricted eating (TRE). The body composition was measured by bioelectrical impedance analysis at baseline, and daily dietary records were collected for 28 days during the intervention after 4 weeks. Results: Based on 924 days of dietary records, the average eating occasion of SSB was 0.9 times per day, and the average amount of SSB was 205.8 g/times. Based on an individual's usual intake of 28 days, the average eating frequency of SSB was 16.6 times out of 28 days, and the average amount of SSB was 184.0 g/day. The average energy intake from SSB was 131.0 kcal /day (8.7% of energy), and sugar intake from SSB was 18.2 g/day (4.9% of energy). The sugar intake was 2.6% of energy from sweetened dairy products, followed by 2.0% from coffee drinks, 0.5% from soda and juice and 0.2% from others. When subjects were divided into high (14 days or more) and low (less than 14 days) SSB groups based on eating frequency, the weight change in the low SSB group was -2.0 kg over 4 weeks, which was significantly lower than -0.7 kg in the high SSB group. However, no significant difference was found in muscle mass, fat mass and body fat percent between the two groups. Conclusions: This study suggests that low consumption of sugar-sweetened beverages is more desirable in weight management despite having the dietary intervention of time-restricted eating without counting calories. Thus, further longitudinal studies on the association between SSB and obesity in Korean adults are necessary.
This study was done to analyze the consumption patterns of health functional food (HFF) as well as to perform needs assessment for the development of web-contents on HFF according to age of adults. The subjects were 238 male and female adults, divided into 4 groups by their age. This study collected all information by self-administrated questionnaires. The awareness on HFF was high in the older adults. The younger adults showed more negative responses to reliability and safety on HFF. The main reason for the consumption of HFF was to supplement nutrients and to prevent diseases. The main types of HFF consumed by adults were nutritional supplementary food, red ginseng products, and glucosamine products. There was higher consumption of nutritional supplementary food in the younger adults and glucosamine products in the older adults. Internet users had low level of satisfaction, with tendency to complain poor contents, reliability, difficulties in searching as problems of the pre-existing HFF websites. As useful methods for provision of information on HFF, most adults wanted general information, articles written by experts and videos. They also wanted to know the safety and side effects of HFF. Requirement of contents composition were various in-depth information, clear indication of citation, fresh updated data while that of display composition was easily-findable, uncomplicated, allowing mutual exchange of communication through bulletin board. These results can be used as basic data that reflect the consumer's needs for developing HFF web-contents according to age of adults.
