온라인 위생교육프로그램의 지속적 제공이 어린이급식소 위생관리 수행도에 미치는 영향 (The Effect of Continuous Provision of On-line Hygiene Education Program on Hygiene Management Performance of Children's Cafeterias)

  • The purpose of this study was to investigate the effect of developing and continuously providing on-line hygiene education programs on the improvement of hygiene conditions in children's cafeterias. As a result of the 2020 sanitation and safety checklist analysis, 6 items (personal hygiene, separate use, clean ventilation, temperature control of refrigerators, country of origin, food distribution) were derived and on-line hygiene education programs for each of 6 items were produced. ① Customized educational materials and self-inspection checklists were provided to 208 children's cafeterias. After that, educational videos were provided through Kakao Talk twice a week for 6 months, and they were made available for viewing at any time through YouTube upload, ③ Kakao Talk Through this, a quiz related to the educational video was conducted to give feedback for interaction with the cook. As a result of analyzing the total hygiene and safety checklist score of all registered facility catering centers by visit order, in 2020 it was 82.8 points/100 points, but in 2021, it was 84.2 points (1st round), 89.3 points (2nd round), 91.4 points (3 points) The score improved significantly (p<0.001) as the on-line hygiene education program continued. As a result, significant (p<0.001) changes were observed in the items of 'Knife, chopping board' and 'Sanitation clothes, sanitary hat, sanitary shoes, apron, and sanitary gloves', confirming a clear improvement effect. Therefore, it is considered that the on-line hygiene education program will play a positive role in showing a lasting effect on improving hygiene management in children's cafeterias.

Development of a Multiplex Polymerase Chain Reaction Method for Simultaneous Detection of Genetically Modified Soy and Maize

  • This study was aimed to develop a novel qualitative multiplex polymerase chain reaction (PCR) for simultaneous detection of genetically modified (GM) soy and maize within a single reaction. The specific primers designed to detect four respective GM events (A2704-12, MON88017, Bt11, and MON863) were included in the tetraplex PCR system. Each of PCR products for four GM events could be distinguished by agarose gel based on their different lengths. The specificity and reproducibility of this multiplex PCR were evaluated. This multiplex PCR consistently amplified only a fragment corresponding to a specific inserted gene in each of the four GM events and also amplified all four of the PCR products in the simulated GM mixture. These results indicate that this multiplex PCR method could be an effective qualitative detection method for screening GM soy and maize in a single reaction.

우리나라의 식중독에 관련된 문헌고찰 (A Review Study of Food Poisoning in Korea)

  • 과거 30년간(1959~1988년) 국내에서 연구·발표된 식중독과 관련된 보문을 중심으로 고찰하였다. 32개의 학술지 및 기타 자료로부터 원저, 종설, 특간등 총 353편을 발췌하였고 연도별, 내용별, 주제별로 분류하였다. 1960년대 중반 이후부터 발표건수가 뚜렷이 증가되었고. 1960년대 말부터 환경오염과 관련된 저요인들에 대한 연구가 시작되어 식중독 연구의 폭이 넓어지는 경향이었다. 1970년대부터는 주요한 원인균을 포함하여 기타 희귀 원인에 대한 검색도 이루어졌으며 , 1980년대에 들면서부터 보다 많은 논문들이 각 학술지별로 다양하게 보고되고 있으며, 특히 식품위생 전문 학술지의 출현으로 그 빈도가 높아지는 경향이었다. 가장 많은 편수가 게재된 것은 국립보건원보였고, 가장 꾸준히 그리고 가장 많이 다루어졌던 주제는 Salmonella 식중독이었다..

DACUM 기법을 이용한 영양사의 직무분석 - 중요도, 수행도 및 난이도 분석 - (Job Analysis of Dietitian Using DACUM Technique - Importance, Performance, and Difficulty Analysis -)

  • The purpose of this study was to develop a standardized job description for dietitians using the DACUM technique. To examine the validity of job description through DACUM, dietitians were surveyed relative to importance, performance, and difficulty. The survey was conducted April 1-30, 2014. A total of 217 questionnaires were used in the analysis. The final developed job description for dietitians included six duties, 38 tasks, and 210 task elements. DACUM's findings include six duties: nutrition management, food service operation management, hygiene safety management, community food and nutrition program management, organization management, and professionalism strengthening. There were 5.1 points regarding importance, 4.1 points regarding performance, 4.9 points regarding difficulty, and statistically significant differences (p<0.001). Dietitians responded that 'nutrition management' and 'hygiene safety management' were the most important. 'Hygiene and safety management' showed the highest performance, and 'community food and nutrition program management' and 'professionalism strengthening'' showed the highest difficulty. Thus, it is considered that the job analysis results can be used to evaluate and improve the subjects' training program. Dietitians' jobs are subject to various environmental changes, such as demographic changes, health care system changes, and the development of the food industry, and thus, should be reviewed and analyzed periodically.
