단메밀과 콩 추출물들의 생리 기능성 (Physiological Functionality of Various Extracts from Danmemil and Legumes)

  • 단메밀과 콩 등으로부터 생리기능성 물질을 추출하여 건강식품을 개발하고자 먼저 물과 에탄올을 사용하여 extracts를 추출한 후 엔지오텐신 전환효소 (ACE) 저해활성과 항산화활성 및 SOD-유사활성 등을 측정하였다. 단메밀의 ACE저해 활성과 tyrosinase 저해 활성은 물 추출물에서 각각 53%와 58%로 에탄을 추출물보다 더 높았고 전자공여능은 에탄을 추출물에서 제일 높은 72%를 보였다. 검정종 1호와 태광콩의 ACE 저해 활성과 전자공여능은 물 추출물에서 높았으나 SOD-유사활성은 에탄을 추출물에서 가장 높았다. 단메밀 중의 ACE 저해물질과 tyrosinase 저해 물질들은 20배의 증류수로 35$^{\circ}C$에서 각각 24시간, 36시간 처리했을 때 가장 많이 추출되었고 전자공여능을 나타내는 항산화물질은 5$0^{\circ}C$에서 18시간 처리했을 때 가장 많이 추출되었다. 또한 검정콩 1호의 ACE 저해물질은 2$0^{\circ}C$, 24시간에서 가장 많이 추출되었으나 그 밖의 기능성 물질들은 2$0^{\circ}C$에서 18시간 추출하였을 때 가장 많이 추출되었다.

고품질 배 와인 제조를 위한 최적 발효 조건과 품질특성 (Optimal Fermentation Condition for Development of High Quality Pear Wine and Characteristics of Pear Wines)

  • The goal of this study was to develop new functional pear wine using six Asian pears (Pyrus pyrifolia, Nakai), namely Wonhwang, Niitaka, Whangkeumbae, Whasan, Gamcheonbae and Chuwhangbae. To select optimal yeast and pear, we investigated the physicochemical properties of the pear wines from fermentation of musts of six pear cultivars at $25^{\circ}C$ for 7 days by several yeasts. $11.2%{\sim}12.4%$ of ethanol from musts of 'Wonhwang', 'Whangkeumbae' and 'Whasan' were produced by Saccharomyces cerevisiae K-7 and 12.8% of ethanol was also produced from 'Niitaka' by commercial Saccharomyces cerevisiae C-2. 9.9% and 11.4% of ethanol were produced from musts of 'Gamcheonbae' and 'Chuwhangbae' by Saccharomyces cerevisiae KCTC 7904, respectively. Among several pear wines, Niitaka pear wine showed the best acceptability in the sensory evaluation, and Niitaka pear wine and Whangkeumbae pear wine showed 31.1% and 27.8% of antihypertensive angiotensin I-converting enzyme(ACE) inhibitory activity, respectively. However, the other functionalities were not detected or very low. Furthermore, Niitaka-strawberry mixed fermentation wine was showed the excellent acceptability and high antihypertensive ACE inhibitory activity of 64.9%.

세포주를 이용한 군소 다당류와 Glycosaminoglycan의 기능성 검색 (Screen of Functional Activity of Polysaccharide and Glycosaminoglycan from Sea Hare (Aplysia kurodai) by Cell Line)

  • 군소에서 정제한 GAG는 대식세포주인 RAW 264.7에서 세포독성은 보이지 않았으며 NO 생성량, TNF-$\alpha$, IL-6 생성량을 증가시켜 면역조절 효과가 있음을 확인하였다. 그리고 $100{\mu}g$/mL 농도에서 배양 72시간 후 약 40%에 가까운 위암세포(AGS) 성장 억제 효과가 나타났고, 정상세포 IEC-6에는 독성을 보이지 않았다. 이 같은 결과는 면역조절을 위한 기능성식품 혹은 위암 치료제로서 군소의 당 추출물과 GAG의 활용 가능성을 제시한다.

일부지역 성인여성의 사회경제적요인, 건강관련의식구조 및 식생활태도와 채소류 소비에 미치는 영향 (Influences of Socio-demographic Factors, Health-related Recognitions and Dietary Behaviors on Use and Purchasing of Vegetables among Adult Women)

  • The aim of this study was to investigate the effects of socio-demographic and health-related perceptions and twenty dietary behaviors on the superiority and preference, convenient use of and purchase motives of vegetables among 370 women(mean age 43.9) in Seoul and metropolitan and Gangwon area. Data was collected using a questionnaire developed in advanced studies. Almost all subjects rated vegetables more predominantly than grains or meats on the basis of health, diversity, and convenience to purchase. Recognition of healthly funcions of diet, purpose of diet and some dietary behaviors had influence on preference for vegetables. Those who recognized that diet had the function of disease control and prevention, knew the healthy options vegetables provide us, such as, preventing us from geriatric diseases, good sources of vitamins and minerals and considered other motives aside from health issues. From Pearsons's correlation analysis, it was revealed that sufficient time for meal preparation and pleasant eating and desirable life style and dietary attitudes, and a better understanding of nutrition were positively correlated with consumption of more vegetables and convenient use of vegetables. The subjects who recognized the ability of food to help prevent diseases, had a preference for vegetables and attitude to use nutritional knowledge and also considered the nutrition values of vegetables and environment friendliness. Everyday use of vegetables such as consuming a variety of different vegetables, a families favorite vegetables and variation of cooking methods had correlated positively with purchase motives. Therefore to encourage consumption of vegetables, it is important to notice three points continuously; first, practical information of nutritive values of vegetables, the contribution of vegetables in current animal protein foods centered diet and healthful functionalities. Second, the importance of regular diet and steadfast attitude and lifestyle. Finally, the quality of the market where the products are bought such as, quality control of freshness, sanitation, expression of producer and a pleasant environment to shop in.

캐모마일(Matricaria chamomile)을 이용한 전통 민속주의 제조 및 생리기능성 (Manufacture and Physiological Functionality of Korean Traditional Liquor by using Chamomile (Matricaria chamomile))

  • 캐모마일(Matricaria chamomile)을 이용한 새로운 전통민속주를 개발하기 위하여 먼저 알콜 발효 조건을 검토하였고 캐모마일을 각각 1%, 5%, 10%, 20% 첨가하여 발효주를 제조한 다음 관능검사를 실시하여 기호도가 제일 높은 발효주를 선정하였다. 선정된 발효주의 생리 기능성으로 Angiotensin-converting enzyme(ACE)저해활성과 혈전용해 활성 및 전자공여능 등을 조사하였다. 20%의 캐모마일을 함유한 덧밥에 누룩을 15% 첨가하고 Saccharomyces cerevisiae를 이용하여 제조한 주모를 첨가한 후 $25^{\circ}C$에서 10일간 발효시켰을 때 에탄올이 가장 많이 생성되었다. 캐모마일을 1%, 5%, 10%, 20%씩 각각 첨가하여 제조한 발효주의 관능검사를 실시한 결과 캐모마일을 5% 첨가하여 제조한 C-5 캐모마일 발효주가 기호도가 제일 높았고 색상도 미황색으로 우수하였다. 또한, C-5 캐모마일 발효주는 혈전용해활성과 tyrosinase 저해활성 및 아질산염 소거활성 등이 일반 발효곡주보다 우수하였다.

Evaluation of physiological functionalities of Codonopsis lanceolata root extracts on the storage temperatures and durations

  • The effects of bioactivity, binding polyphenolic contents, DPPH radical scavenging activity, ABTS radical scavenging activity, xanthine oxidase and immune activity on the storage temperature and durations of Codonopsis lanceolata root were evaluated in vitro. The contents of total polyphenol and flavonoid content by storage temperature and storage period was no significant difference according to the storage period, but it was found that the content was higher at lower storage temperature. The DPPH free radical scavenging activity at six different concentrations, 500, 1000, 2500, 5000, 10000 and 20000 mg/L are measured, the scavenging activity according to different storage temperature and storage period showed relatively the higher the activity in the shorter storage period or the lower storage temperature. The ABTS radical scavenging activity did not show a significant difference under various storage temperature and storage period conditions. The xanthine oxidase inhibitory activity of C. lanceolata extract tended to decrease more, depending on the longer storage period or the higher storage temperature. In different storage period and storage temperature conditions, the immune cell growth of C. lanceolata extract promoted a concentration-dependent manner in both human T cell and B cell, and did not show a significant difference. These results of this study suggested that the root of C. lanceolata may assist in the potential biological activities, and can be used as a source of human health products.

유색미 지용성 성분들의 변이원성.항변이원성.항산화 효과에 대한 상관관계 (Correlation of Lipid Soluble Compounds of Colored Rices and its Mutagenicity, Antimutagenicity and Antioxidativity)

  • 유색미 19품종에서 염화메틸렌으로 추출한 각 성분들의 항변이원성 및 항산화 효과간의 상관성을 검토하였다. 항변이원성은 $(3.{\beta},22Z)-acetate-stigmasta-5,22-dien-3-ol$, 24-oxocholesterol acetate, 6E,8(E)-heptadiene 및 eicosane의 함량과 정의 상관성이 있었다. 항산화 효과 중 DPPH radical에 대한 전자공여능은 (24R,25S)-aplysterylacetate의 함량과 정의 상관성이 있었고, hydroxy radical 소거활성은 tetradecanoic acid 및 methyl ester-hexadecanoic acid, $(3.{\beta},24S)-stigmast-5-en-3-ol$ 들의 함량과는 각각 부의 상관성이 있었다. 또한 지질과산화 억제효과는 $(3.{\beta},24S)-stigmast-5-en-3-ol$ 함량과는 정의 상관을 그리고 3',3'-dimethylspiro [acridane-9,1'-indane] 및 $(3.{\beta})-24-methylene-9,19-cyclolanostan-3-ol$ 등의 함량과는 부의 상관성이 있었다.

Optimizing the fermentation condition of low salted squid jeotgal by lactic acid bacteria with enhanced antioxidant activity

  • Lactic acid bacteria (LAB) are widely used as starter culture in food fermentation due to their harmless entity and health beneficial properties along with the ability to change texture, aroma, flavor and acidity of food products. In this study, five different LAB (FB003, FB058, FB077, FB081, and FB111) isolated from different Korean traditional fermented foods, assigned to Lactobacillus plantarum, Pediococcus pentosaceus, Weissella viridescens, Lactobacillus sakei, and Leuconostoc mesenteroides, respectively, on the basis of their physiological properties and 16S rRNA sequence analysis, to use as fermentation starter and check their ability to fasten the ripening time as well as the overall optimization in the fermentation condition. To check their suitability as starters, their safety, acid and bile tolerance, NaCl and temperature resistance, susceptibility to common antibiotics, and antimicrobial activities were determined. Squid jeotgal samples were prepared by adding $10^8CFU/g$ of each strain in different samples, which were then kept for fermentation at $4^{\circ}C$ and checked for their antioxidant activities at 0, 7, 15, and 21-day intervals. The samples fermented with FB003 and FB077 displayed the highest antioxidant activity. This study revealed two effective starter cultures (FB003, FB077) for squid jeotgal fermentation, which presented increased functionalities. The results of this study will lead to the development of novel industrial-scale production avenues for jeotgal preparation, and offer new insights into the prevention and control of chronic diseases.

어류 알로부터 알칼리 가용화공정을 통해 회수한 Collagenous Protein 획분의 식품 기능특성 (Food Functionality of Collagenous Protein Fractions Recovered from Fish Roe by Alkaline Solubilization)

  • This study investigated the potential of collagenous protein fractions (CPFs) as functional foods. The specific CPFs studied were recovered from the roe of bastard halibut (BH), Paralichthys olivaceus; skipjack tuna (ST), Katsuwonus pelamis; and yellowfin tuna (YT), Thunnus albacares through the alkaline solubilization process at pH 11 and 12. The buffer capacity, water-holding capacity and solubility of CPFs with pH-shift treatment were significantly better at alkaline pH (10-12) than at acidic pH (2.0). At pH-shift treatment (pH 2 and 12), the foaming capacities of CPFs from ST and YT were improved compared to those of controls, but they were unstable compared to BH CPFs. The emulsifying activity index (EAI, $m^2/g$ protein) of CPFs (controls) was 16.0-21.1 for BH, 20.1-23.9 for ST and 9.3-13.7 for YT (P<0.05). CPFs adjusted to pH 12 showed improved EAI and YT CPFs showed significantly greater emulsifying ability than those from BH and ST. CPFs recovered from fish roe are not only protein sources but also have a wide range of food functionalities, confirming the high availability of fish sausage and surimi-based products as protein or reinforcing materials for functional foods and alternative raw materials.

흑진주벼 미강으로부터 생리기능성 물질의 탐색 및 추출조건 (Detection and Extraction Condition of Physiological Functional Compounds from Bran of Heugjinju rice (Oryza sativa L.))

  • 혹진주벼 미강으로부터 생리기능성 물질을 추출하여 이들을 이용한 생리기능성 제품을 개발하기 위하여 먼저 흑진주벼 미강에 함유되어있는 유용물질들을 추출한 후 이들의 생리기능성을 측정하였고 미강 중에 많이 함유되어있는 ACE저해활성물질과 혈전용해활성물질, 전자공여물질과 tyrosinase 저해물질들의 추출최적조건을 검토하였다. ACE 저해활성과 혈전용해활성 및 tyrosinase 저해활성은 물 추출액에서 높았고 전자공여능은 hexane 추출액에서 높았다 그러나 SOD 유사활성과 아질산염 소거활성은 없거나 매우 미약하였다. 흑진주벼 미강에 물을 1 : 20으로 첨가하여 2$0^{\circ}C$ 에서 12시간 추출하였을 때 ACE 저해활성물질이 가장 많이 추출되었고 물을 1 : 10으로 하여 35$^{\circ}C$에서 18시간 추출하였을 때 혈전용해활성물질이 가장 많이 추출되었다. 또한 전자공여물질은 20배의 hexane으로 2$0^{\circ}C$에서 18시간, tyrosinase 저해제는 10배의 물로 2$0^{\circ}C$에서 18시간 추출하였을 때 가장 많이 용출 되었다.
